Fish Fillet Curry

Filipino Style Recipe: Fish fillet curry is another variety of mouth-watering curry dish. This is similar to other curry dish. Normally the fish marinade then cooked in a blend of curry powder and coconut milk together with potatoes, carrots and bell peppers. Add half of red chili for more spicy taste. This dish is usually serve as main dish or during Lenten season.

Estimated time of preparation: 30 minutes
Estimated time of cooking: 15-20 minutes
Good for 2 servings

Ingredients:
1/2 kilo fish fillets(tuna, salmon, lapu-lapu, tanigue)
2 tablespoons curry powder
1 cup coconut milk
1 onion, chopped
3 cloves garlic, minced
1 thumb-sized ginger, minced
1 tablespoon fresh lime or calamansi juice
2 pieces potatoes, cut into cubes
1 pieces carrots, cut into cubes
2 pieces green and red bell peppers, cut into cubes
2 tablespoons olive oil
salt and pepper to taste

2 tablespoons cornstarch(optional)
1/2 red chili, sliced diagonally(optional)

Procedures:
Part 1
1. In a bowl, marinate fish with lime juice, pepper and salt for 30 minutes.
2. In a separate bowl, combine curry powder, coconut milk and cornstarch. Mix until dissolved.

Part 2
1. In a pan, heat oil then fry potatoes and carrots until light brown. Drain and set aside.

Part 3
1. In a pan, heat oil and saute ginger, garlic and onions.
2. Add the curry mixtures then stir and bring to boil.
3. Add fish then simmer in a low heat for 10 minutes or tender. (Do not stir but prevent fish from sticking.)
4. Add bell peppers, potatoes and carrots then season with salt and pepper according to taste. Simmer for another 2 minutes.
5. Transfer the fish into serving plate with sauce on top. Serve hot with steamed rice.

Shrimp in Tomatoes and Coconut Milk

Filipino Style Recipe: Shrimp in Tomatoes and Coconut Milk recipe is a quick shrimp stew. It usually consists of shrimp cooked in tomatoes and coconut milk.

Estimated time of preparation and cooking: 20 minutes
Good for 3-4 servings

Ingredients:
500 grams jumbo shrimp, peeled and deveined
1 can(400ml) coconut milk
2 large tomatoes, diced
1 red bell pepper, sliced thinly
1 white onions, sliced thinly
4 cloves garlic, minced
1 teaspoon olive oil
1 tablespoon lime juice
salt and pepper to taste

1/2 cup parsley(optional)
1/2 teaspoon red pepper flakes(optional)

Procedures:
1. In a pot, heat olive oil then saute red bell pepper until soft.
2. Add garlic, onions, red pepper flakes and parsley. Continue sauteing for a minute.
3. Add tomatoes, coconut milk, salt and pepper. Cover and simmer for 5 minutes in low heat.
4. Add shrimp and cook for another 3 minutes then add lime juice.
5. Adjust seasoning according to taste and continue cooking until sauce is thicken.
6. Transfer to serving bowl and top with remaining parsley. Serve and enjoy!

Tips:
1. You may also add curry powder to add more taste.

Grill Fish Steak Recipe

Filipino Style Recipe: grill fish steak recipe is normally the fish fillets marinade then grill on high heat until done. Serve with any sauce you desired, I prefer tartar sauce.

Estimated time of preparation: 40 minutes
Estimated time of cooking: 20-30 minutes
Good for 2 servings

Ingredients:
2 pieces (170 grams each) fish fillets(tuna, salmon, lapu-lapu, tanigue)
1 clove garlic, minced
6 tablespoons olive oil
1 teaspoon salt
1 teaspoon ground black pepper
1 tablespoon fresh lemon juice
1 tablespoon fresh parsley, chopped(optional)
1 teaspoon dried basil(optional)

Procedures:
Part 1
1. In a large bowl, combine olive oil, garlic, salt, ground pepper, lemon juice, basil and parsley.
2. Add fish fillets and marinade in refrigerator for 30 minutes, turning occasionally.

Part 2
1. Preheat the grill 4 inches from high heat then brush lightly with oil to prevent sticking.
2. Grill fillets for 5 minutes each side or until fillets is done.
3. Transfer the fillets to serving plate with tartar sauce.
4. Serve and enjoy!

Salmon with Tomatoes Recipe

Filipino Style Recipe: salmon with tomatoes recipe is another low-carbohydrate dish. It is usually consists of salmon fillets cooked with diced tomatoes, onions, garlic, peppers and lemon juice.

Estimated time of preparation and cooking: 20-30 minutes
Good for 4 servings

Ingredients:
1/2 kilo salmon fillets, cut into serving pieces
1 medium onion, chopped
2 cloves garlic, peeled and diced
2 large tomatoes, diced
3 tablespoons olive oil
1 lemon, juice
2 teaspoons freshly grated lemon zest
1 teaspoon pickled jalapeño peppers, chopped
1/3 cup white wine(I prefer chardonnay)
1/4 cup water
1 teaspoon sugar
Salt and pepper to taste
1 tablespoon fresh thyme leaves, chopped(optional)
2 tablespoons capers, drained(optional)

Procedures:
Part 1
1. In a bowl, marinate salmon fillets with lemon juice for 10-15 minutes. Drain and set aside.

Part 2
1. In a saucepan, heat olive oil on medium heat. Saute onion and garlic.
2. Add the tomatoes, lemon juice, lemon zest, sugar, thyme, capers and jalapeño peppers.
3. Simmer on high heat for 5 minutes, add a little water if necessary.
4. Adjust seasoning with salt and pepper.

Part 3
1. Add white wine and water. Bring to boil.
2. Place the salmon fillets, cover and cook for  another 5-10 minutes or until done on low heat.
3. Transfer salmon fillets to serving plate with the sauce.
4. Serve hot.

Seafood Pasta in Olive Oil

Filipino Style Recipe: seafood pasta in olive oil recipe is another simple and low-carbohydrate dish. It is usually consist of pasta cooked and sauteed in a combination of seafood and spices.

Estimated time of preparation and cooking: 15-20 minutes
Good for 4-6 persons

Ingredients:
1/4 cup extra virgin olive oil
1 head garlic, minced finely
seafood of choice(shrimp, squid, salmon, mussel, scallop, etc)
500 grams long pasta(I prefer whole wheat pasta)
1/2 cup parsley, chopped
1 teaspoon fish sauce
1 teaspoon ground black pepper
1/2 cup basil, chopped(optional)
3-4 pieces ripe tomatoes or 1 can of diced tomatoes, chopped(optional)
1/2 teaspoon red chili flakes(optional)
1/2 cup shredded Parmesan cheese(optional)

Procedures:
Part 1
1. In a large pot, prepare the pasta based on cooking instructions. Set aside
Part 2
1. In a pan, heat olive oil and saute garlic, tomatoes and chili flakes over low heat
2. Add seafood and cook for 3-5 minutes over medium heat.
3. When the seafood is cook, add pasta and toss together. Add more olive oil if necessary.
4. Add fish sauce and ground black pepper.
5. Add basil and parsley. Adjust seasoning according to taste.
6. When pasta is cooked perfectly, remove from heat.
7. Top with Parmesan cheese. Serve and enjoy!

Tips:
1. You may also add 1/2 cup black olives and mushrooms.

Tom Yam(Thai Prawn Soup)

Filipino Style Recipe: Tom Yam or Thai Prawn Soup is a popular Thai soup dish. It consists of shrimps with lemon, fish sauce and some herbs and spices.

Estimated time of preparation and cooking: 30-40 minutes
Good for 6 servings

Ingredients:
3/4 kilo medium-sized shrimps, wash peeled and deveined.(save the shells)
1/4 kilo fresh mushrooms, halved or quartered
2 stalks lemon grass(tanglad), peeled thinly
2 tablespoons cilantro leaves, chopped
1/2 cup lime juice
3 birdseye chiles(labuyo)
1 tablespoon fish sauce(preferably Thai fish sauce)
8 cups hot water
1-1/2 teaspoons salt
1 tablespoon vegetable oil

4 spring onions, chopped(optional)
4 lime leaves(optional)
2 ripe tomatoes, quartered(optional)

Procedures:
Part 1
1. In a pot, heat oil and saute shells until color turns to pink.
2. Add hot water, salt, lemon grass, lime leaves and chilies.
3. Bring to a boil, cover and simmer for 20 minutes. Strain stock.
Part 2
1. Return to a boil, add shrimps then add mushrooms after a minute.
2. Simmer for 4 minutes or until shrimps are cooked.
3. Remove from heat and add fish sauce, lemon juice, cilantro leaves, spring onions and tomatoes.
4. Serve hot and enjoy!

Ginataang Tilapia

Filipino Style Recipe: ginataang tilapia recipe is another simple and easy Filipino dish. It is usually consist of tilapia fish cooked in a combination of coconut milk and some spices. I used tumeric or luyang dilaw to add more flavor and color to our dish.

Estimated time of preparation and cooking: 20-30 minutes
Good for 4 servings

Ingredients:
4 medium-sized tilapia
1 piece onion, sliced
1 thumb-sized ginger or tumeric(luyang dilaw), diced
2 pieces green chili(siling haba)
a cup of pure coconut milk
1 eggplant(talong), cut in halves and sliced diagonally
1/2 cup of vinegar
salt and pepper to taste

a bunch of pechay(bok choy), (optional)
2 pieces small tomatoes, diced(optional)
3 pieces red chili(siling labuyo)(optional)

Procedures:
1. In a saucepan, arrange tilapia and eggplant.
2. Add the green chili, onion, tomatoes and ginger.
3. Pour in the vinegar and season with salt and pepper.
4. Let it boil for a few minutes and add the coconut milk.
5. Let it simmer or until the coconut is creamy and oily.
6. Adjust seasoning according to taste.
7. Serve and Enjoy!

Glazed Salmon with Spinach

Filipino Style Recipe: glazed salmon recipe with wilted spinach is a low-carbohydrate dish. It is usually consists of fried or grilled salmon fillets marinade with equal parts honey, soy sauce and brown sugar. Side with spinach.

Estimated time of preparation and cooking: 50 minutes
Good for 4-6 servings

Ingredients:
3/4 kilo skinless salmon fillets, cut into serving pieces
2 lemons, cut in half
1 tablespoon butter or margarine
2 gloves garlic, finely chopped
1 tablespoon brown sugar
1-1/2 tablespoon honey
1 tablespoon soy sauce
1 teaspoon olive oil
Salt and pepper to taste
12 ounces fresh baby spinach
1 1/2 tablespoons white wine(optional)

Procedures:
Part 1
1. In a bowl, marinate salmon fillets with lemon juice for 10-15 minutes. Drain and set aside.

Part 2
1. In a sauce pan, heat butter over medium heat. Saute garlic and add brown sugar, honey and soy sauce.
2. Bring to boil and let the mixture steadily until it reduces by half.
3. Pour the mixture over the salmon and let it sit for another 10 minutes.

Part 3
1. Sprinkle each side of salmon fillets with salt and pepper.
2. In a frying pan, heat olive oil and fry salmon fillets .
3. Brushing the top with mixture so the fish begins to caramelize.
4. Cook until the side turns to golden brown. Turn the salmon fillets over and do the same way. Set aside.

Part 4
1. In another pan, heat and melt the butter over medium heat.
2. Add the spinach, salt, and pepper. Cook for 1 minute or until the leaves begin to wilt.
3. Pour the wine and continue cooking for 1 to 2 minutes or until tender.
4. Remove from heat then drain any excess liquid from the spinach.
5. Transfer spinach to serving plate and arrange a piece of salmon on top.
6. Serve and Enjoy!

Sarciadong Isda

Filipino Style Recipe: sarciadong isda recipe or fish sarciado is another simple and easy Filipino dish. This dish is a way to re-cooked left over fish. It is usually consist of fried fish cooked in a combination of tomatoes and beaten eggs.

Estimated time of preparation and cooking: 20-30 minutes
Good for 2-3 persons

Ingredients:
2 medium-sized fish, cleaned
2 pieces eggs, beaten
4 medium-sized tomatoes, diced
1 medium-sized onions, diced
3 cloves garlic, minced
2 tablespoons fish sauce(patis)
1/2 cup water
1/2 teaspoon ground pepper
cooking oil
2 tablespoons chopped spring onion(optional)

Procedures:
Part 1
1. Wash and clean the fish. Make a slit on both sides and ensure that salt has been rubbed over the fish.
2. In a pan, heat cooking oil and fry fish until brown. Drain and set aside.

Part 2
1. In same pan, reduce the oil then saute onion, garlic and tomatoes until soft.
2. Add water, spring onion, fish sauce and ground pepper. Bring to boil.
3. Add beaten eggs, once the eggs curdles start stirring the mixture.
4. Adjust seasoning according to taste then add fried fish and simmer for 3 minutes.
6. Transfer to serving plate then sprinkle with remaining spring onion. Serve with rice. Enjoy!

Ginataang Sitaw at Kalabasa Recipe

Filipino Style Recipe: ginataang sitaw at kalabasa recipe or string beans and squash in coconut milk is a simple yet tasty and nutritious vegetable dish, basically it’s a combination of string beans and squash simmered in coconut milk. Add with pork or shrimp or crab make the recipe more delicious. This is another mouth-watering vegetable dish that is truly enjoyed by most Filipinos.

Ingredients:
1/2 squash(kalabasa), peeled and cut into cubes
1 bundle string beans(sitaw), cut in 3 inches long.
1/ 4 kilo pork diced or 1 cup shrimp meat
3 tbsp fish sauce or 1 tbsp shrimp paste
1 can coconut milk
3 cloves garlic, minced
1 small onion, chopped
2 pieces green chili(siling haba)
cooking oil
salt and pepper to taste

Ingredients:
1. In a saucepan, heat cooking oil and fry pork meat until color turns to light brown.
2. In the same pan, saute onion and garlic. Season with fish sauce then mix well.
3. Pour in coconut milk and bring to a boil.
4. Add the squash and string beans then simmer until vegetables are half-tender. Add water if necessary.
5. Add green chili then season with salt and pepper according to taste.
6. Remove from heat then serve and enjoy.
