Filipino Style Recipe: Pastillas is one of the popular sweet delicacy in the Philippines. This delicacy is made of powdered milk and condensed milk mixed together until well blended. Mold into desired shapes then roll in granulated sugar. Pastillas can come in a variety of flavors (Pandan, Melon, Strawberry or Cookies and Cream).

Ingredients:
2-3 cups powdered milk
1 cup condensed milk
1/2 cup granulated sugar for coating

Flavoring:
Pandan Pastillas:
McCormick Pandan flavor
Green food coloring

Cookies and Cream Pastillas:
Crushed Oreo cookies

Melon Pastillas:
McCormick Melon Flavor

Strawberry Pastillas:
McCormick Strawberry extract

Procedures:
1. In a mixing bowl, pour condensed milk and flavoring. Add powdered milk gradually then mix until well blended then set aside for 30 minutes.
2. Scoop a spoonful of mixture and mold into desired shapes then roll in granulated sugar.
3. Repeat until all the mixture are consumed. Wrap into cellophane or paper.

Baked Cheesy Chicken Rice Mixed

Filipino Style Recipe: Baked Cheesy Chicken Rice Mixed is another easy and simple yet delicious complete meal. It is mainly made up of leftover rice, chicken and veggies mixed together and cooked in margarine. Topped with Cheese then bake until cheese is melted.

Estimated time of preparation and cooking: 40-50 minutes
Good for 3-4 persons

Ingredients:
3 cups cooked or leftover rice
1 cup chicken fillet, cut into serving pieces
2/3 cup broccoli florets, steamed
2/3 cup cauliflower, steamed
1/2 carrot, cut into cubes and steamed
76 grams baby corn, cut into serving pieces and steamed
6 cloves garlic, chopped
2 tablespoons margarine
2 tablespoons Parmesan cheese
Mozarella or QuickMelt cheese for toppings
2 tablespoons vegetable oil
salt and ground pepper to taste

Marinade:
1/2 cup soy sauce
1 1/2 tablespoons brown sugar
1 teaspoon peppercorn

Procedures:
Part 1
1. In a bowl, combine chicken, soy sauce, sugar, peppercorns then marinate for 30 minutes. Set aside.

Part 2
1. In a pan, heat oil then fry marinated chicken over low heat for 3 minutes or until light brown. Remove from the pan and set aside.

Part 3
1. In a pan, melt margarine then saute garlic until light brown.
2. Add cooked rice then toss until well coated.
3. Add chicken, veggies and Parmesan cheese then toss. Cook for 3-5 minutes.
4. Seasoned with salt and pepper according to taste.

Part 3
1. In a baking pan, lined with aluminum foil.Transfer the rice mixtures then spread evenly.
2. Top with grated Mozarella cheese then bake in a preheated oven at 300 degrees Fahrenheit for 15 minutes or until cheese is melted.
3. Transfer to serving plate then serve immediately.

Mango Papaya Smoothie

Filipino Style Recipe: Mango Papaya Smoothie is another healthy and refreshing beverage. This beverage is made of mango, papaya, sugar and crushed ice. This refreshing beverage is similar to other healthy shakes and best to serve during summer season.

Ingredients:
1 ripe mango
1 1/2 cup ripe papaya
4 tablespoon sugar
1/2 cup water
2 cups crushed ice

Procedures:
1. Put the ripe mango and papaya in the blender and pulse 4 times.
2. Add the sugar and crushed ice and water.Mix in the blender until all ingredients are smooth.
3. Pour on glass, serve and enjoy!

Beef Estofado

Filipino Style Recipe: Beef Estofado is another mouth-watering beef dish that is commonly served by Filipinos. Similar to adobo and patatim, this dish has a sweet and salty taste. The beef marinated then cooked together with peas, potatoes and carrots in a blend of soy sauce, vinegar and sugar.

Ingredients:
3/4 kilo beef sirloin, cut into cubes
1/4 cup vinegar
1 tablespoon cornstarch (dissolved in 1/4 cup water)
1 beef bouillon (optional)
4 cups water or beef stock
1/4 cup green peas, cooked
2 pieces potatoes, peeled and quartered
1 large-sized carrot, cut into cubes
salt and pepper to taste

Marinade:
5 cloves garlic, minced
1/2 cup soy sauce
1 1/2 tablespoons brown sugar
3 pieces bay leaves
1 teaspoon whole peppercorn
1/4 cup cooking oil for frying

Procedures:
Part 1
1. In a container, combine beef, garlic, soy sauce, sugar, bay leaf and peppercorn then marinate for 30 minutes.
2. Remove beef and reserve the marinade. Set aside.

Part 2
1. In a pan, heat oil and fry potatoes and carrots until light brown. Drain and set aside.
2. Fry beef for 3-5 minutes or until light brown. Drain and set aside.

Part 3
1. In a same pan, reduce oil to 1 tablespoon then saute garlic and beef.
2. Pour marinade, water and beef bouillon then simmer in a low heat for 40 minutes or until beef is tender. Add more water if necessary.
3. Add vinegar and simmer for another 5 minutes. Do not stir.
4. Add dissolved cornstarch, green peas, potatoes and carrots then cook for another 3 minutes.
5. Adjust seasoning according to taste. Simmer until the sauce has reduced and thicken. Serve.

Beef Chopsuey

Filipino Style Recipe: Beef Chopsuey is another variety of chopsuey originated from Chinese cuisine. Chopsuey also becomes popular in Filipino cuisine and other countries. Normally the beef marinated and stir cooked with beef broth, oyster sauce and cornstarch together with vegetables.

500 grams beef sirloin, cut into thin slices
6 cloves garlic, minced
1 onion, quartered
2 tablespoons cornstarch (dissolved in 1/4 cup water)

1 beef buillion
1 cup water
1 1/2 tablespoons sugar
2 tablespoons vegetable oil
salt and pepper to taste

Marinade:
1/4 cup soy sauce
1 tablespoon cornstarch
1 teaspoon sesame oil
1/4 teaspoon ground pepper

Vegetables:
1 cup broccoli florets
1 cup cauliflower
1 carrot, thinly sliced
100 grams snow peas (sitsaro)
100 grams baby corn
1 red bellpepper, cut into strips

Procedures:
Part 1
1. In a bowl, combine beef, soy sauce, cornstarch, sesame oil and pepper. Marinate for 30 minutes and set aside.

Part 2
1. In a pan, heat oil and saute garlic and onion.
2. Add marinated beef then stir cook for 3 minutes.
3. Pour water, beef cube and vegetables then cook for 5-7 minutes or until vegetables are half-done.
4. Pour dissolved cornstarch, sugar and oyster sauce. Simmer until the sauce thickens.
5. Adjust seasoning according to taste.
6. Transfer to serving plate then serve.

Crispy Oyster Mushroom

Filipino Style Recipe: Crispy Oyster Mushroom is a simple yet standout dish made of oyster mushroom coated in batter then deep-fried until medium brown. This is usually serve as appetizer or pulutan.

Ingredients:
150 grams oyster Mushroom, clean, rinse and pat dry
cooking oil for frying

Batter:
2/3 cup flour
1/2 cup cornstarch
1 cup ice cold water
1 tablespoon sesame oil
salt and white pepper to taste

1. In a bowl, combine batter ingredients and whisk well. Mixture should not too runny or thicken.
2. In a pan, heat enough oil for frying.
3. Dip oyster mushroom into batter then fry until medium brown. Drain on paper towel.
4. Transfer to serving bowl then serve with your favorite dip.

Sweet Chicken Adobo

Filipino Style Recipe: Sweet Chicken Adobo is another variety of popular Filipino Adobo. This dish has sweet sauce compare to the traditional chicken adobo. The chicken marinated in sweet soy sauce, vinegar and other spices. Fry the chicken until golden brown then cooked in marinade until tender. Season with sugar according to taste.

1/2 cup sweet soy sauce
1/3 cup vinegar

salt to taste
1/4 cup cooking oil
1-2 cups chicken broth

Procedures:
Part 1
1. In a pot, combine chicken, garlic, bay leaves, peppercorns, sweet soy sauce and vinegar.
2. Marinate chicken for at least 30 minutes.
3. Drain garlic and chicken then reserve the sauce. Set aside.

Part 2
1. In a sauce pan, heat oil and fry marinated chicken for 5 minutes or until golden brown.
2. Reduce oil to 1 tablespoon. Add garlic then fry until light brown.
3. Pour marinade and chicken broth then simmer for 20-30 minutes or until chicken is tender.
4. Add sugar then season with salt according to taste.
5. Remove from heat then transfer to serving bowl. Serve with steamed rice.

Spicy Hotdog and Cheese

Filipino Style Recipe: Spicy Hotdog and Cheese is another simple yet delicious dish made of hotdog and cubed cheese cooked in spicy red sauce. This can be served as appetizer or pulutan together with ice cold beer.

Crispy Orange Beef

Filipino Style Recipe: Crispy Orange Beef recipe is another mouth-watering beef dish. Normally the beef comes fried in a crispy batter then tossed in thick sauce made of orange juice, orange zest, sugar, vinegar, soy sauce and oyster sauce.

Ingredients:
500 grams beef sirloin, sliced thinly
2 teaspoons orange zest
orange slices, cut into small pieces

Cornstarch Mixture:
1/4 cup cornstarch
1/4 teaspoon ground pepper
1/4 teaspoon salt

Orange Juice Mixture:
3 tablespoons orange juice
3 tablespoons cup sugar
3 tablespoons vinegar
1 tablespoon soy sauce
1 tablespoon oyster sauce
1/4 teaspoon salt

Procedures:
Part 1
1. In a bowl, combine cornstarch, ground pepper and salt then mix well.
2. Pat dry the beef strips then dredge on cornstarch mixture.
3. Shake off excess cornstarch then refrigerate for 30 minutes.

Part 2
1. In a small bowl, combine orange juice mixture then mix well. Set aside.
2. In a pan, heat oil then fry beef until golden brown. Drain and set aside.

Part 3
1. In a same pan, remove excess oil except 1 tablespoon.
2. Saute garlic, ginger and orange zest for a minute.
3. Pour orange juice mixture and orange pieces then simmer until almost thickens.
4. Add fried beef then toss to coat evenly.
5. Transfer to serving plate then serve with steamed broccoli.

Buffalo Shrimp

Filipino Style Recipe: Buffalo Shrimp is another variety of American buffalo dish. Instead of traditional chicken wings, we used shrimp as main ingredient. The shrimp fried unbreaded then tossed in spicy sauce made of hot sauce, hot spices and butter.

Ingredients:
500 grams large-sized shrimp, peeled and deveined, tail intact
1 cup flour
1 teaspoon ground pepper
1 egg, beaten
1 cup milk
oil for frying

Buffalo Sauce:
1/4 cup butter
1/8 teaspoon paprika
1/8 teaspoon cayenne
1/8 ground pepper
2 tablespoons hot sauce
1/8 teaspoon garlic powder
1 tablespoon ketchup (optional)

Procedures:
Part 1
1.In a pan over low heat, combine sauce ingredients then stir until well blended. Cover and keep warm.

Part 2
1. In a bowl, combine egg and milk then mix well.
2. In a separate bowl, combine flour and ground pepper then mix well.
3. Dip the shrimp into egg mixture then dredge into flour mixture. Shake off to remove excess flour.
4.Dip again the shrimp into egg mixture then dredge into flour mixture. Shake off to remove excess flour.
5. Repeat the steps for the remaining shrimp. Set aside.

Part 3
1. In a pan, heat oil then deep fry shrimp for 2 minutes or until light brown. Drain on paper towel.
2. Toss shrimp in buffalo sauce until coated evenly. Transfer to serving plate then serve.
