Sauteed Chicken Chayote

Ingredients:
1/2 kilo chicken fillet, cut into serving pieces
2 pieces chayote(sayote), cut into small pieces
3 cloves garlic, minced
1 onion, chopped
2 1/2 cups chicken broth or water
2 tablespoons vegetable oil
fish sauce, salt and pepper to taste

Procedures:
1. In a pan, saute garlic and onion.
2. Add chicken fillet, fish sauce and pepper then continue sauteing until light brown.
3. Add chayote then stir cook for a minute, pour water then cover and bring to boil.
4. Season with salt and pepper then simmer for 3-5 minutes or until tender.
5. Transfer to serving bowl then serve hot with steamed rice.

Stir Fried Ginger Beef and Broccoli

The beef strips marinated then cooked and simmered together with red bell pepper and broccoli until the meat is tender.

Ingredients:
300 grams beef sirloin, sliced thinly into strips
2 cups broccoli florets
2 cloves garlic, minced
1 thumb-sized ginger, grated
1 red bell pepper, diced
1/4 teaspoon chili flakes(optional)
3 tablespoons cooking oil

Marinade:
1/4 cup soy sauce
1/4 cup oyster sauce
1/4 cup water or soda
4 tablespoons brown sugar
1 teaspoon sesame oil
salt and pepper to taste

Procedures:
Part 1
1. In a bowl, combine beef and marinade then stir together. Set aside for 30 minutes.
2. Blanch broccoli in hot water for 1-2 minutes. Drain and rinse with cold water. Set aside.

Part 2
1. In a sauce pan, heat cooking oil and stir fry beef until for 2-3 minutes. Set aside.
2. In a same pan, saute garlic, ginger, bell pepper, chili flakes then pour marinade and bring to boil.
3. Pour dissolved cornstarch and adjust seasoning according to taste.
4. Add broccoli and beef then simmer in a minute.
5. Remove from heat then serve hot immediately with steamed rice.

Ginisang Sigarilyas

Filipino Style Recipe: ginisang sigarilyas or sauteed winged beans is another healthy yet affordable dish. The procedure is very easy and simple, normally the chicken or pork sauteed until brown then cook and simmer with winged beans until tender. Season with bagoong na isda or fish sauce according taste then serve with rice.

1 bunch winged beans(sigarilyas), sliced
300 grams chicken fillet or pork

2 tablespoons vegetable oil
salt and pepper to taste

Procedures:
1. In a pan, heat oil and saute garlic and onion.
2. Add chicken fillet and stir cook until brown then season with bagoong and pepper.
3. Pour water and bring to boil then add sigarilyas.
4. Cook for 3-5 minutes or until cook then adjust seasoning according to taste.
5. Remove from heat then serve with steamed rice. Enjoy.

Pesang Tilapia

Filipino Style Recipe: Pesang tilapia is an easy and simple fish dish similar to nilaga. Commonly the fish boiled until tender then add onion, leeks, peppercorn, salt, potatoes, bok choy or cabbage.

Ingredients:
1 big-sized tilapia or any fish, cleaned and cut into serving pieces
1 onion, chopped
1 thumb-sized ginger, slice thinly
2 onion leeks, chopped
1 teaspoon peppercorns
4 tablespoons fish sauce
1/4 head cabbage or a bunch of pechay
3/4 liter rice washing or water
salt to taste
1 medium-sized potatoes, quartered(optional)

Procedures:
1. In a pot, heat oil then saute ginger, onion and onion leeks.
2. Add potatoes and peppercorns then continue sauteing for a minute.
3. Pour rice washing and bring to boil then season with fish sauce.
4. Add fish then simmer for 3 minutes. Adjust seasoning according to taste.
5. Add cabbage then simmer for another 2 minutes. Turn off the heat.
6. Transfer to serving bowl then serve immediately.

Stir Fried Kangkong

Filipino Style Recipe: stir fried kangkong or water spinach is an easy yet healthy dish. The procedures is very simple, normally water spinach toss oyster sauce mixture in a blend of oyster sauce, red chili, fish sauce and brown sugar then stir fry in olive oil until wilted.

1 bunch water spinach(kangkong), trimmed
2 gloves garlic, minced
4 pieces red chili(labuyo), sliced

2 tablespoons olive oil

Procedures:
Part 1
1. In a large bowl, combine garlic, red chili, oyster sauce, fish sauce and brown sugar.
2. Add kangkong then toss to coat.

Part 2
1. In a pan, heat oil then add all the ingredients.
2. Stir fry to 1-2 minutes or until wilted. Serve immediately.

Buttered Vegetables

Ingredients:
6 cups cooked rice(preferably leftover)
200 grams prawns, peeled and deveined
1/2 cup sweet peas
1/2 cup carrot, diced
2 raw eggs, beaten
2 teaspoons soy sauce
4 cloves garlic, minced
3 stalks green onions, chopped
1/2 cup butter
salt and pepper to taste

1 tablespoon sesame oil(optional)
1 cup chinese sausages, sliced(optional)

Procedures:
Part 1
1. In the pan, melt butter then stir fry sausages for a minute.
2. Add garlic, green onion and carrots then saute for another minute.
3. Add shrimps and sweet peas then stir cook for another minute.
4. Add cooked rice, soy sauce and sesame oil then mix until rice is well coated.
5. Pour beaten egg then continue stirring until the egg is cooked.
6. Season with salt and pepper according to taste.
7. Transfer to serving plate and garnish with chopped green onions.

Denengdeng na Labong at Saluyot

Filipino Style Recipe: denengdeng na labong at saluyot is a native ilocano dish from Northern part of Luzon. It is a simple and easy yet healthy vegetable dish consisting of bamboo shoots, jute leaves, bagoong isda boiled until tender.

Ingredients:
500 grams bamboo shoots(labong), sliced
2 bundles jute leaves(saluyot) , trimmed
4 slices milk fish or tilapia(fried or grilled),(optional)
3 tablespoons fermented fish(bagoong isda)
1 onion, chopped
4-6 cups water
salt to taste

Procedures:
Part 1
1. In a pot, pour water then add bamboo shoots. uncover and simmer for at least 40 minutes or until soften. Drain and set aside.

Part 2
1. In a bowl, dilute bagoong isda in 2 cups hot water, strain and reserve the juice.

Part 3
1. In a pot, boil 4 cups water then add onion.
2. Pour the juice from bagoong isda and simmer for a minute. Remove the scum that rises.
3. Add labong and simmer for 3 minutes. Add jute leaves and fried fish then season with salt.
4. Simmer for a minute then turn off the heat. Serve with steamed rice

Ginisang Sitaw at Kalabasa

Filipino Style Recipe: Ginisang sitaw at kalabasa or sauteed sting beans and squash is a simple yet nutritious vegetable dish, basically it’s a combination of string beans and squash sauteed and simmered until tender. Add with shrimp or pork make the dish more delicious and truly enjoyed by most Filipinos.

Ingredients:
1/2 squash(kalabasa), peeled and cut into cubes

3 cloves garlic, minced
1 medium-sized onion, chopped
2 medium-sized tomatoes, chopped
1 cup water
fish sauce and ground pepper to taste

Procedures:
1. In a pan, heat oil then saute garlic and onion.
2. Add tomatoes then continue sauteing for 5 minutes or until soft.
3. Add shrimp and stir fry until red.
4. Add vegetables and stir cook for a minute, then add water and simmer for 5 minutes.
5. Season with fish sauce and pepper according to taste.
6. Cook until veggies are tender then transfer to serving plate and serve.

Notes:
1. You may also use pork meat instead of shrimps.

Vegetable Chowder Soup

Filipino Style Recipe: vegetable chowder soup is a creamy and healthy vegetable dish that is made up of chopped vegetables like broccoli, potatoes and carrots cooked in a blend of flour, milk and cheese.

Ingredients:
4 cups broccoli florets, chopped
2 medium potatoes, minced
2 medium carrots, minced
1-1/2 cups water
1 large onion, minced
4 cups evaporated milk
1/3 cup all-purpose flour
1 cup cheddar cheese, cubed
1 tablespoon olive oil
salt and pepper to taste

1 chicken bouillon cube(optional)
2 stalks celery, chopped(optional)
1 cup corn kernels(optional)
2 cups chicken fillet, cooked and shredded(optional)

Procedures:
Part 1
1. In a bowl, combine flour and 1 cup milk, mix until smooth. Set aside.

Part 2
1. In a saucepan, heat oil then saute onion.
2. Add celery, carrots and potatoes then continue sauteing for 5 minutes. Add a little water if needed.
3. Pour flour mixture, milk, chicken bouillon, salt and pepper.
4. Add the other ingredients then simmer for an hour or until sauce thicken. Keep stirring.
5. Remove from heat and add cheese just until melted. Serve.
