Egg Pie

Filipino Style Recipe: Egg pie is another popular Filipino dessert or snack that is almost available in all bakeries. Egg pie is similar to egg custard tart, it is made up of eggs, milk, sugar and then mix until well blended. Pour the mixture into a pie crust then bake until firm and done.

Estimated time of preparation: 10-15 minutes
Estimated time of baking: 60-70 minutes

Ingredients:
2 pieces pie crust

Filling:
1 can(375 ml) evaporated milk
1/4 cup water
3 pieces raw eggs + 1 raw egg, separate egg yolk and egg white
1 cup sugar
1 teaspoon vanilla extract(optional)

Procedures:
Filling
1. In a “microwave safe” bowl, combine evaporated milk and water then heat in microwave for 2 minutes.
2. In a large bowl, combine hot milk, 3 eggs, 1 egg yolk, vanilla then gradually add sugar while mixing.
3. Using an electric mixer, beat the egg white until soft peaks then fold into the mixture until the foams separate.(this will give a brown color on top of egg pie after baking)

Baking
1. Pour the filling on the pie crust then bake over 350 degrees Fahrenheit for about 15 minutes.
2. Lower the heat to 325 degrees Fahrenheit then continue baking for 40 minutes or until toothpick inserted in the filling comes out clean.
3. Remove from oven and let it cool for 2 hours before serving.

Pie Crust

Filipino Style Recipe: pie or pie crust is usually made of a pastry dough made of flour, butter, salt, sugar and cold water then mix until dough is formed. Pie crust usually contains various filling made of fruits, veggies, meat or any sweet ingredients. The crust can be purchase in grocery store under frozen section but if you prefer to do it by yourself, here is the recipe.

Estimated time of preparation: 10-15 minutes(plus chilling time)

Ingredients:
2 1/2 cups all-purpose flour
3 tablespoons sugar
1/2 teaspoon salt
1 cup unsalted butter, cut into cubes
1/4 cup cold water

Procedures:
1. In a bowl, combine flour, sugar and salt then mix well.
2. Add butter then mix thoroughly. Gradually pour cold water then mix until well blended.
3. Gather the dough into a ball shape then refrigerate for 30 minutes.
4. In a clean flat surface, sprinkled with flour then flatten dough using a rolling pin until 1/8 inch thick.
5. In a pie pan, arrange and press the flattened dough then cut off the excess.
6. Crimp the edges then refrigerate while preparing the filling.

Pork Adobo with Pineapple

Filipino Style Recipe: Pork Adobo with Pineapple is another variety of Filipino pork adobo, we just add pineapple chunks or tidbits which gives a sweeter and flavorful taste to our dish.

Estimated time of preparation: 10 minutes(plus marinating time)
Estimated time of cooking: 40-50 minutes
Good for 4-5 persons

Ingredients:
1/2 kilo pork, cut in serving pieces
1 cup pineapple chunks or tidbits
1/4 cup soy sauce
1/4 cup vinegar
1/2 cup pineapple juice
6 gloves garlic, crushed
1 white onion, sliced in rings
1 teaspoon peppercorns
2-3 pieces bay leaves
1 teaspoon sugar
salt to taste

Procedures:
Part 1
1. In a pot, combine pork, garlic, bay leaves, peppercorns, soy sauce and pineapple juice. Marinate for 30 minutes.

Part 2
1. Simmer in a low heat for 40 minutes or until pork is tender. Add water if necessary.
2. Pour vinegar and simmer for another 10 minutes then season with salt and sugar according to taste.
3. Add onions, pineapple then simmer for 2 minutes or until the sauce thickened.
3. Remove from heat then transfer to serving bowl then serve with steamed rice.

Potato Salad

Filipino Style Recipe: potato salad is comprises a potato as main ingredient. Combine with mayonnaise, mustard, hard-boiled eggs, lemon juice, chives, salt and pepper for salad dressing.

Estimated time of preparation: 20-30 minutes. Good for 3-4 persons

Ingredients:
1 kilo potatoes, cleaned
1 cup mayonnaise
1 tablespoon mustard
1/2 cup spring onion or chives, chopped
1 tablespoon lemon or calamansi juice
1 teaspoon sugar
1/2 teaspoon salt
1/2 teaspoon ground black pepper

3 hard-boiled eggs, peeled and chopped(optional)
1 cup cheddar cheese, grated (optional)
1 teaspoon dried thyme(optional)
1/2 cup celery, chopped(optional)
1/4 cup parsley, chopped(optional)
1/2 cup chicken breast flakes or smokey bacon tidbits(optional)

Procedures:
Part 1
1. In a large pot, boil water with salt then cooked potatoes for 15-20 minutes or until tender.
2. Let it cool then peel and chop the potatoes into cubes.
3. Place in a large bowl and set aside.

Part 2
1. In a bowl, combine the remaining ingredients and stir until well blended.
2. Pour over potatoes then toss gently to coat. Cover and refrigerate for 3 hours before serving.

No Bake Mango Cheesecake

Filipino Style Recipe: No-Bake Mango Cheesecake is another variety of soft and sweetened dessert. Like the usual cheesecake, it is consist of soft cream-cheese on hard biscuit crust then topped with mango glaze. Refrigerate until firm before serving.

Estimated time of preparation: 20-30 minutes(plus chilling time)

Ingredients:
Crust:
1 1/2 cups crushed graham cracker
1 tablespoon sugar
1/2 cup butter, melted
1/2 teaspoon cinnamon powder(optional)

Cheesecake Filling:
1 cup cream cheese
1 cup whipping cream or all-purpose cream
1/2 cup sugar

Mango Glaze:
1 tablespoon unflavored gelatin
2 cups hot water
1 cup mango or mango puree

Procedures:
Part 1(Crust)
1. In a mixing bowl, combine crushed graham, cinnamon powder, sugar and butter then mix until well combined.
2. Mixture should be moist, add more butter if too dry.
3. In a molding pan, spread and press down the crust mixture up to 1/2 inch thick then refrigerate for at least 10 minutes.

Part 2(Mango Glaze)
1. In a bowl, dissolved gelatin in hot water.
2. In a blender, combine mango, water and sugar. Blend until smooth. Strain to discard any fibers.
3. In a pan, combine mango mixture and dissolved gelatin then simmer over low heat for 5 minutes or until slightly thicken.

Part 3(Filling)
1. In a bowl, mix cream cheese until smooth then slowly add sugar and whipping cream. Mix until well blended.
2. Combine cream cheese mixture and half of mango gelatin mixture. Mix well.

Part 4(Assembly)
1. Pour and spread evenly the filling into the crust up to 1 inch thick then refrigerate for at least 15 minutes or until firm.
2. Pour and spread the mango glaze on top then refrigerate for at least 8 hours. Serve Chilled.

Tortang Giniling

Filipino Style Recipe: tortang giniling or ground meat omelette is another type of Filipino omelette that is usually served during breakfast. This dish is so easy to prepare wherein the ground meat stir cooked in potatoes and carrots. Mixed the mixture with beaten egg and then fry until done. I used longganisa meat to give the sweet taste and more flavorful in our dish.

Estimated time of preparation and cooking: 30-40 minutes

Ingredients:
500 grams ground meat or longganisa meat
5 gloves garlic, minced
1 onion, chopped
1 large potato, cut into cubes
1 medium carrots, cut into cubes
1 red bell pepper, cut into small cubes(optional)
2 tablespoons soy sauce
4 eggs, beaten
1 cup grated cheese(optional)
salt and pepper to taste
2 tablespoons olive oil
1/4 cup olive or cooking oil for frying

Procedures:
Part 1
1. In a pan, heat oil and saute garlic and onion.
2. Add ground meat, simmer until tender.
4. Add veggies, soy sauce, salt and pepper then stir cook for 5 minutes or until tender. Set aside.

Part 2
1. In a bowl, combine ground meat, beaten eggs and grated cheese. Mix well.
2. In a pan, heat cooking oil and pour about 1/4 cup of the mixture.
3. Fry each sides for about 1-2 minutes or until done. Drain on paper towels.
4. Repeat until the entire mixture is consumed.
5. Serve hot with rice and ketchup. Enjoy

Ginataang Tulingan

Filipino Style Recipe: ginataang tulingan or mackerel in coconut milk is another simple and easy Filipino dish. It is usually consist of mackerel(tulingan) cooked in a combination of coconut milk, vinegar and some spices.

Estimated time of preparation and cooking: 15-20 minutes
Good for 4 servings

Ingredients:
500 grams mackerel(tulingan)
1 piece onion, sliced
1 thumb-sized ginger, diced
2 pieces green chili(siling haba)
a cup of pure coconut milk
2 pieces eggplants, sliced
1/2 cup of vinegar
salt and pepper to taste

2 pieces small tomatoes, diced(optional)
3 pieces red chili(siling labuyo)(optional)

Procedures:
1. In a saucepan, arrange tulingan and eggplants.
2. Add the green chili, garlic, onion, tomatoes and ginger.
3. Pour in the vinegar and season with salt and pepper.
4. Let it boil for a few minutes and add the coconut milk.
5. Let it simmer 10 minutes or until tender and the sauce is creamy and oily.
6. Add red chili then adjust seasoning according to taste. Simmer for another minute.
7. Serve and Enjoy!

Kalingking(Sweet Potato Fritters)

Filipino Style Recipe: Kalingking or sweet potato fritters is another typical Filipino meryenda(mid-afternoon snack). Kalingking is normally consists of sweet potato(kamote) cut into strips then dipped in a combination of flour, milk, salt and sugar then deep fried until golden brown. Kalingking is similar to maruya or banana fritters.

Estimated time of preparation and cooking: 30-40 minutes
Good for 3-4 persons

Ingredients:
1 kilo sweet potato(kamote), cut into short strips
3 cup flour
1 cup milk or water
3/4 cup brown sugar
1/2 teaspoon salt(optional)
oil for frying

Procedures:
Part 1
1. In a bowl, combine flour, sugar, salt and milk. Mix well then dip sweet potato until well coated.

Part 2
1. In a pan, heat oil and deep fry the sweet potato(dipped in batter) until golden brown and crispy.
2. Drain then serve then sprinkle with sugar.

Puto Pao

Filipino Style Recipe: Puto pao is another Filipino delicacy that usually served during meryenda(mid-afternoon snack). Puto Pao is similar to plain puto stuffed with filling same as siopao. There are several versions of puto pao, in this recipe we will make asado for the filling.

Estimated time of cooking: 30-40 minutes

Ingredients:
Batter:
500 grams all purpose flour
250 grams white sugar
1/4 cup baking powder
2-1/2 cups water
1 cup powdered milk
3 pieces whole eggs
3 tablespoons butter

Filling:
500 grams ground pork or beef
1/2 cup soy sauce
1 piece laurel leaf
1 piece star anise
1/2 cup water
1/2 cup white sugar
1 teaspoon cornstarch
2 cloves garlic, minced
2 tablespoons cooking oil

Toppings:
1/2 cheddar cheese, sliced
4 salted eggs, sliced

Procedures:
Part 1
1. In a bowl, mix together the flour, sugar, baking powder then pour water, powdered milk and stir well.
2. Add eggs and butter then mix until well blended. Set aside.

Part 2
1. In a pan, heat oil and saute garlic then add ground meat and stir cook for 3 minutes.
2. Add the rest of the filling ingredients and cook until tender and the sauce thickened.
3. Discard anise and laurel. Set aside.

Part 3
1. In a muffin cups, pour a little amount of batter then add a tablespoon of filling.
2. Cover the filling with another amount of batter until cup is half full.
3. Top with salted egg and cheese then steam for 10-15 minutes or until done.(puto pao is done when a toothpick inserted in the center comes out clean.)

Pork Mechado

Filipino Style Recipe: mechado recipe is a beef stew originally from Spanish that has become very popular in Filipino cuisine. A typical mechado dish consists of a beef but we will used pork in this recipe. The meat cooked in tomato sauce with potatoes, carrots and bell peppers then usually seasoned with soy sauce, bay leaves and vinegar. It is similar to several other tomato-based dishes such as kalderata, menudo and afritada.

Estimated time of cooking: 45 minutes
Good for 3-4 persons.

Ingredients:
500 grams pork with fat, cut into chunk
2 cups tomato sauce or 1/2 cup tomato paste
1 onion, chopped
5 cloves garlic
3 bay leaves(laurel)
4 medium potatoes, quartered
1 bell pepper, sliced
2 cups beef stock or beef cubes dissolved in water
1/4 cup soy sauce
1 tablespoon fish sauce
salt and pepper to taste
3 tablespoons vegetable oil

1 carrot, cut into cubes(optional)
1/2 cup green peas(optional)
1/8 cup vinegar(optional)

Procedures:
Part 1
1. In a pan heat oil and fry potatoes and carrots until golden brown.
2. Drain and set aside.

Part 2
1. In a pot, heat oil and saute garlic and onions.
2. Add pork and fish sauce then continue sauteing until color turns to brown.
3. Pour tomato sauce, soy sauce, bay leaves and beef stock then simmer until tender. Add water if necessary.
4. Add vinegar and boil again for 2-3 minutes. Do not stir.
5. Add carrots, potatoes, green peas and bell pepper. Simmer for 3 minutes.
6. Adjust seasoning with salt and pepper according to taste.
7. Transfer to serving plate and serve with steamed rice.
