Pininyahang Bistek(Beef Steak with Pineapple)

Filipino Style Recipe: Pininyahang Bistek is another mouthwatering and delicious beef dish. We innovate the dish by adding pineapple for maximum flavor. The meat is marinated for several hours then stir fry until just cooked. Then topped with onion rings together with the sauce.

Ingredients:
1/2 kilo beef(round, sirloin or tenderloin), sliced 1/4-inch think
1 small can pineapple chunks, reserved juice
1 tablespoon lemon juice or calamansi
5 tablespoons soy sauce
3 tablespoons oyster sauce
2 cloves of garlic, minced
1 large white onion, sliced in rings
salt and pepper to taste
4 tablespoons cooking oil
1/2 teaspoon cornstarch(dissolved in 1/4 cup water)(optional)

Procedures:
Part 1
1. Marinate meat in lemon juice, garlic, soy sauce and ground pepper for an hour or overnight inside the fridge.

Part 2
1. In a pan, heat cooking oil over medium heat. Lightly fry the onion rings. Remove from pan and drain. Set aside

Part 3.
1. In the same pan, add the marinated meat then stir-cook over high heat for 5 minutes or until just cook.(Don’t overcook, meat will become tough and rubbery).
2. Transfer the meat to a serving plate then set aside.
3. In the same pan, pour the marinated, onion, oyster sauce, pineapple and pineapple juice then bring to boil.
4. Add dissolved cornstarch, salt and pepper to taste then simmer until reduce in half.
5. Pour the sauce over meat then garnish with onion rings.
6. Serve hot and enjoy!

Spicy Fried Rice

Filipino Style Recipe: Spicy fried rice is another easy and simple rice dish. It is mainly made up of fried rice stir fried together with ham, shrimps and other spicy seasonings. This can be serve during breakfast together with your favorite dish and soup.

Estimated time of preparation and cooking: 20-30 minutes
Good for 4-5 servings

Ingredients:
5 cups cooked rice, leftover
1 head garlic, slice thinly
1/4 teaspoon dried chili flakes or chili powder
1/4 teaspoon paprika
1/4 teaspoon turmeric powder
1 green bell pepper, diced
2 pieces ham, diced
12 pieces shrimp, peeled and deveined
salt and pepper to taste
1 tablespoon butter or cooking oil
chopped spring onions and red chili for garnishing

Procedures:
Part 1
1. In the pan, heat oil then stir fry ham and shrimp for 2 minutes. Remove from pan and set aside.

Part 2
1. In a same pan, stir fry garlic until golden brown. Remove from pan and set aside.
2. In a same pan, ad bell pepper then stir cook for a minute.
3. Add cooked rice then sprinkle with paprika, turmeric and chili flakes. Mix well.
4. Add fried garlic, ham and shrimp then season with salt and pepper. Cook for another minute.
5. Transfer to serving plate then sprinkle with spring onions. Garnish with red chili.

Baked Pesto Cream Dory

Filipino Style Recipe: baked pesto cream dory is another simple and easy dish. This dish is consists of dory fillets baked in a blend of pesto sauce, oyster sauce, and cayenne pepper.

Ingredients:
700 grams cream dory, cut into 4 pieces
1 pack pesto sauce mix(dissolved in 1/4 cup water)
2 tablespoons oyster sauce
1/2 teaspoon cayenne pepper
1/2 teaspoon dried rosemary(optional)
2 tablespoons olive oil
salt and pepper to taste

Procedures:
1. In a bowl, combine oyster sauce, cayenne pepper, rosemary, pesto sauce, salt and pepper then mix until well blended.
2. In a baking pan, lined with aluminum foil then grease with olive oil.
3. Arrange fish fillet then spread pesto mixture until well coated.
4. Bake in a preheat oven over 300 degrees Fahrenheit for 15-20 minutes.
5. Transfer to serving plate then serve with your favorite dipping sauce.

Sinigang na Danggit

Filipino Style Recipe: Sinigang na danggit or rabbitfish is another simple and easy Filipino dish. The procedure is similar to other sinigang, normally the fish cooked in a combination of onions, tomatoes, vegetables and tamarind soup which gives a sour taste.

Ingredients:
1/2 kilo rabbitfish(Danggit), cleaned
1 pack sinigang sa sampaloc mix or 10 pieces tamarind(sampaloc)
3 cups water or rice washing
4 cloves garlic, minced
1 onion, sliced
1 thumb-sized ginger, sliced thinly
2 tomatoes, halves
a bunch potato tops(talbos ng kamote) or petchay
3 tablespoons olive oil
salt or fish sauce to taste
1 teaspoon ground pepper

Procedures:
1. In a pot, heat olive oil and saute garlic, onion, ginger and tomatoes.
2. Pour water and bring to boil. Add fish then cover and simmer for 3 minutes.
3. Add tamarind juice then simmer for another 4 minutes.
4. Season with pepper, salt or fish sauce according to taste.
5. Add green chili and potato tops and simmer for another 1 minute.
6. Transfer to serving bowl and serve hot.

Paksiw na Dilis

Filipino Style Recipe: Paksiw na dilis or anchovies is another quick and easy fish dish by Filipinos. The procedure is similar to other paksiw. Normally the fish and vegetables cook in a blend of vinegar and some spices like garlic, onion and ginger then cover and simmer for 10 minutes or until done.

Good for 3-4 persons

Ingredients:
500 grams anchovies(dilis), cleaned and discard heads
6 cloves garlic, pounded
1 onion, chopped
1 thumb-sized ginger, sliced and pounded
1/2 cup vinegar
1/2 cup water
1 teaspoon cooking oil
salt and pepper to taste
3 green chili(siling haba), sliced

Procedures:
Part 1
1. In a pan, arrange dilis, garlic, onion, ginger, salt and black pepper.
2. Pour water, vinegar, cooking oil and green chili.
3. Cover and simmer in a medium heat for 10 minutes or until almost dry and done.
4. Remove from heat and Serve.

Note:
1. You may also add vegetables like eggplants, okra or bitter gourd(ampalaya).

Baked Kamote Fries

Filipino Style Recipe: Baked kamote fries is a popular snack that consists of slices of sweet potatoes. The sweet potatoes coated in cornstarch then seasoned with olive oil, cayenne and salt. Baked in a preheat oven for 30 minutes or until browned and crisp then serve as snack, appetizer or side dish.

Estimated time of cooking: 30 minutes(plus cooling time)
Good for 4-6 servings

Ingredients:
3 large-sized sweet potatoes(kamote), peeled and cut into slices
1/2 cup cornstarch
4 tablespoons olive oil
1 teaspoon salt
3/4 teaspoon cayenne powder

Procedures:
1. In a large bowl, combine potatoes and cornstarch then stir to coat evenly. Strain to remove excess cornstarch.
2. In a separate bowl, combine potatoes, olive oil, cayenne and salt then toss to coat evenly.
3. Arrange in grease baking sheet then bake in a preheated oven over 400 degrees Fahrenheit for 30 minutes. (15 minutes each side or until browned).
4. Turn off the heat then let it cool inside the oven for another 15 minutes. Serve with dipping sauce.

Pininyahang Pork Giniling

Filipino Style Recipe: pininyahang pork giniling or ground pork with pineapple is simple yet delicious dish. Ground pork sauteed and simmered in pineapple syrup together with pineapple tidbits and other vegetables. This is almost similar to ground pork menudo and ground pork adobo.

Estimated time of preparation and cooking: 50 minutes.
Good for 3-5 persons

Ingredients:
450 grams ground pork(giniling)
1 can(227 grams) pineapple tidbits, reserve syrup
3 teaspoons soy sauce
3 cloves garlic, minced
1 onion, sliced
1 potato, peeled and diced
1 carrot, peeled and diced
1/4 cup water
sugar, salt and pepper to taste

2 teaspoons raisins(optional)
2 bay leaves(optional)
1/4 cup sweet peas(optional)

Procedures:
1. In a pan, heat oil and saute garlic and onion.
2. Add ground pork and soy sauce then simmer for 5 minutes.
3. Add potatoes, carrots, raisins, sweet peas, bay leaves, water and pineapple syrup.
4. Season with sugar, salt and pepper then simmer for 8 minutes or until tender.
5. Add pineapple tidbits then cook for 3 minutes. Remove from heat and serve hot.

Pinais na Bangus

Filipino Style Recipe: Pinais na bangus is another simple and easy native dish. The fish is usually stuffed with tomatoes, onions, ginger and wrapped in banana leaves. Then cooked together with kamias or tamarind together with other vegetables.

Estimated time of preparation: 15-20 minutes
Estimated time of cooking: 40-50 minutes
Good for 2-3 persons

Ingredients:
1 large-sized milkfish(bangus)
2 onions, chopped finely
4 tomatoes, chopped finely
1 thumb-sized ginger, chopped finely
2 cups kamias/green tamarind/calamansi juice
a bunch of mustard greens(mustasa)
salt and pepper to taste
banana leaves for wrapping

Procedures:
Part 1
1. Remove the scales of fish. Using a sharp knife, slice the back of the fish then remove innards.
2. Clean and rub the skin with salt.
3. In a bowl, combine tomatoes, onions, ginger, salt and pepper. Mix well.
4. Stuff the mixture inside the fish then wrap in banana leaves.

Part 2
1. In a large pot, arrange wrapped fish and remaining tomatoes and onions.
2. Add kamias, mustard greens and season with salt then pour enough water to cover.
3. Cover with lid and simmer over low fire for 40 minutes or until the sauce is reduce.
4. Transfer to serving plate then remove the banana leaves. Serve

Pork and Egg Menudo

Filipino Style Recipe: pork and egg menudo is another simple yet delicious tomato-based pork dish. The pork marinated and cooked in tomato sauce together with sweet peas, bell pepper and hard-boiled eggs.

Estimated time of preparation: 10-12 minutes(plus marinating time)
Estimated time of cooking: 30-40 minutes
Good for 3-4 persons

Ingredients:
3/4 kilo pork, cut into cubes
10 pieces quail eggs
5 cloves garlic, minced
1 onion, chopped
1 green or red bell pepper, diced
1/4 cup sweet peas
2 cups tomato sauce
1/2 piece lemon or 4 pieces calamansi
4 tablespoons soy sauce
3 tablespoons cooking oil
1 cup water
brown sugar, salt and pepper to taste

Procedures:
Part 1
1. In a large bowl, marinate pork in calamansi juice and soy sauce for an hour. Set aside.
2. In a pot, boil water then cook quail eggs for 15 minutes. Drain and let it cool then remove shells and set aside.

Part 2
1. In a large pot, heat cooking oil then saute garlic and onion.
2. Add marinated pork and water, simmer for 15 minutes.
3. Add tomato sauce then simmer for 10 minutes until pork is tender.
4. Add sweet peas, bell pepper, and hard-boiled quail eggs then simmer for another 5 minutes. Stir occasionally.
5. Season with brown sugar, salt and pepper according to taste.
6. Remove from heat, Serve hot!

Garlic Squid

Filipino Style Recipe: garlic squid or pusit is an easy and simple dish that doesn’t require much ingredients. The squid cook in garlic and oyster sauce until tender. Avoid to overcook the squid because it will become rubbery texture and tough.

Estimated time of cooking: 3-5 minutes
Good for 3-4 persons

Ingredients:
1 kilo medium-sized fresh squid
1 head garlic, minced and pound
1 teaspoon white ground pepper
1/4 cup light soy sauce
3 tablespoons oyster sauce
3 tablespoons canola oil

Procedures:
Part 1
1. To clean the squid, pull the head and remove the plastic-like cartilage.
2. Then push the head in, popping out the hard “beak” and discard it.
3. Wash the squid very well under running water.
4. Cut the squid into squares then score with diagonal criss-cross scoring.(This will make the squid more tender and less chewy)

Part 2.
1. In a bowl, combine squid, garlic, soy sauce, oyster sauce and ground pepper.
2. In a pan, heat oil then stir cook squid mixture for 2 minutes.(Don’t overcooked, squid will become tough).
3. Transfer to serving bowl then garnish with lettuce. Enjoy!
