Baked Stuffed Squid

Ingredients:
3-4 pieces medium-sized squid, cleaned
2-3 cups cooked rice
2 tablespoons chopped parsley
300 grams beef sirloin, slice thinly into small pieces
1 white onion, chopped
1 green bell pepper, cut into small cubes
1/2 cup tomato puree
2 tablespoons lemon juice
2 tablespoons vegetable oil
salt and pepper to taste

Marinade:
4 tablespoons soy sauce
2 tablespoons oyster sauce
3/4 teaspoon cumin
1/2 teaspoon Spanish paprika
1/2 teaspoon garlic powder
1/2 teaspoon ginger powder
1/2 teaspoon ground pepper

Procedures:
Part 1
1. In a bowl, marinate beef for 30 minutes. Set aside.

Part 2
1.In a pan, heat oil then stir cook beef over high heat for 3 minutes.
2. Add cooked rice and parsley then mix until well blended.
3. Season with salt and pepper according to taste. Let it cool.

Part 3
1. In a separate pan, heat oil then saute onion, bell pepper and tomato puree for 3 minutes. Set aside.

Part 4
1. Stuff squid with rice mixture then insert the head. Close opening with toothpick.
2. In a baking pan, place squid in a single layer then pour over the sauteed tomato puree. Cover with aluminum foil.

Part 5
1. Bake in a preheated oven over 350 degrees Fahrenheit for 20 minutes.
2. Remove foil then bake uncovered for another 30 minutes or until tender.
3. Transfer into serving plate then cut into rings.

Smoked Salmon Nigiri

Filipino Style Recipe: Smoked Salmon Nigiri is one of the most common type of sushi. Nigiri is consist of a piece of raw salmon layered on top of a small roll of rice.

Ingredients:
1 smoked salmon fillet, slice into serving pieces
Wasabi (spicy Japanese paste)

Rice:
Sushi Rice
sugar and salt
rice vinegar(optional)

Procedures:
Part 1
1. Cook sushi rice with a little salt added.
2. Dissolve sugar into a rice vinegar.
3. When the rice has cooked, add the dissolved sugar and mix thoroughly. The rice will now become even more sticky and clumpy.
4. Let it cool and set aside.

Part 2
1. Moisten your hands with water, scoop 2 tablespoons of rice then roll and squeeze until it firm shape.
2. Grease one side of fish slice with small amount of wasabi.
3. Place on the rice with wasabi side on the rice.
4. Serve with dipping sauce.

California Maki

Filipino Style Recipe: California Maki is the most common type of sushi. Sushi is generally made with either nori(seaweed sheets), rice and can be filled with any desire ingredients inside the roll.

Ingredients:
1 Nori sheet(Dried Seaweed Sheet)
6 crab sticks
1 large mango, sliced
1 small cucumber, sliced
Masago (Capelin roe)
Mayonnaise

Rice:
Sushi Rice
sugar and salt
rice vinegar(optional)

Sauce:
Soy Sauce
Wasabi

Utensils:
Bamboo rolling Mat
Sharp knife

Procedures:
Part 1
1. Cook sushi rice with a little salt added.
2. Dissolve sugar into a rice vinegar.
3. When the rice has cooked, add the dissolved sugar and mix thoroughly. The rice will now become even more sticky and clumpy.
4. Let it cool and set aside.

Part 2
1. Wrap bamboo rolling mat with plastic wrap, this is to prevent rice from sticking to the mat.
2. Place 1 sheet of nori into the bamboo rolling mat.
3. Cover the nori of rice about 5/6 of the way up, just enough to cover the nori.
4. Sprinkle with Masago evenly over the top of rice then flip facing down.
5. Add a row of fruit and meat on a small portion on one side of the sheet.
6. Add a little mayonnaise over the fillings to hold meat together.
7. Then roll the nori sheet. Add enough pressure on the bamboo mat to make sure sushi is firm. Don’t include the bamboo mat when you roll the nori sheet.

Part 3
1. Place the roll on a cutting board. Then slice 1-inch interval using a wet sharp knife.
2. Transfer into serving plate then serve with mayonnaise or dipping sauce.

Baked Cheesy Chicken Rice Mixed

2/3 cup broccoli florets, steamed
2/3 cup cauliflower, steamed

76 grams baby corn, cut into serving pieces and steamed
6 cloves garlic, chopped
2 tablespoons margarine
2 tablespoons Parmesan cheese
Mozarella or QuickMelt cheese for toppings
2 tablespoons vegetable oil
salt and ground pepper to taste

Marinade:
1/2 cup soy sauce
1 1/2 tablespoons brown sugar
1 teaspoon peppercorn

Procedures:
Part 1
1. In a bowl, combine chicken, soy sauce, sugar, peppercorns then marinate for 30 minutes. Set aside.

Part 2
1. In a pan, heat oil then fry marinated chicken over low heat for 3 minutes or until light brown. Remove from the pan and set aside.

Part 3
1. In a pan, melt margarine then saute garlic until light brown.
2. Add cooked rice then toss until well coated.
3. Add chicken, veggies and Parmesan cheese then toss. Cook for 3-5 minutes.
4. Seasoned with salt and pepper according to taste.

Part 3
1. In a baking pan, lined with aluminum foil.Transfer the rice mixtures then spread evenly.
2. Top with grated Mozarella cheese then bake in a preheated oven at 300 degrees Fahrenheit for 15 minutes or until cheese is melted.
3. Transfer to serving plate then serve immediately.

Easy Fried Rice

Filipino Style Recipe: Easy fried rice is a simple way to cook left-over rice. This dish is commonly served during breakfast together with other dish. Fried rice is made up of leftover rice stir fried with shrimps, scrambled eggs, sausages, peas, carrots and other vegetables.

4 cloves garlic, minced
3 stalks green onions, chopped

2. Add garlic, green onion and carrots then saute for another minute.
3. Add shrimps and sweet peas then stir cook for another minute.
4. Add cooked rice and soy sauce then mix until rice is well coated.
5. Pour beaten egg then continue stirring until the egg is cooked.
6. Season with salt and pepper according to taste.
7. Transfer to serving plate and garnish with chopped spring onions.

Adobo Fried Rice

5 cups left-over rice, leftover

Suman sa Ibos

Filipino Style Recipe: Suman sa ibos is a popular Filipino delicacy made from glutinous rice, coconut milk and salt then wrap in buri leaves. Cook in a boiling water until done then serve with latik sauce.

Ingredients:
3 cups glutinous rice (malagkit)
2 cups coconut milk
1 tablespoon salt
young coconut or buri leaves for wrapping

Procedures:
Part 1
1. In a large bowl, place glutinous rice, coconut milk and salt then leave it for at least 20 minutes or until the rice absorb the coconut milk. Set aside.

Part2 (To make a buri wrapper)
1. Fold the end of buri leaf by half inch then fold the bottom edge into a triangle.
2. Swirl the buri leaf in an overlapping manner to make a tube then lock to prevent from swirling back.
3. Scoop the mixture into mold then seal then end with toothpick and tie with buri strips. Set aside.

Part 3
1. In a big pot, arrange the pieces then pour enough water to cover the wrapped rice mixture.
2. Bring to boil in a low heat for at least 1 1/2 hours or until done.
3. Remove from the pot then let it cool.
4. Unwrap then transfer to serving plate. Serve with latik.

Pandan Suman

Filipino Style Recipe: Pandan Suman is another variety of Filipino delicacy from glutinous rice wrapped in banana leaves together with sugar, salt, coconut cream and pandan extract. This delicacy is cook in a boiling water for 2 hours then serve with your favorite dip.

Ingredients:
4 cups glutinous rice(malagkit)
2 cups white sugar
a dash of salt
1 teaspoon Pandan extract
2 tablespoon coconut cream
banana leaves, cleaned and cut into bigger sized
cotton strings or any food-safe string

Procedures:
Part 1
1. In a bowl, place glutinous rice and water then soak for at least 3 hours.
2. Singe the banana leaves into flames for a few seconds but do not burn. Let it cool then wipe with clean cloth.

Part 2
1. Wash and rinse the glutinous rice then drain excess water.
2. In a mixing bowl, combine glutinous rice, sugar, salt, pandan flavoring and coconut cream then mix until well combined.
3. Arrange 2 pieces banana leaf on a flat surface then scoop 3-4 tablespoons of rice mixture, fold the leaf to wrap the rice mixture.
4. Grab 2 pieces of wrapped rice mixture then tie with folded sides together using cotton string.

Part 3
1. In a big pot, arrange the pieces then pour enough water to cover the wrapped rice mixture.
2. Bring to boil in a low heat for at least 2 hours or until done.
3. Unwrap then transfer to serving plate. Serve with your favorite dip.

Bacon Fried Rice

Ingredients:
3 cups cooked rice, leftover
150 grams cured bacon
5 cloves garlic, minced
1 white onion, chopped
2 tablespoons spring onions
2 tablespoons green peas
1 tablespoons vegetable oil
2 pieces raw eggs, beaten
salt and pepper to taste

Procedures:
Part 1
1. In the pan, heat oil then fry bacon over medium heat until crisp.
2. Drain on paper towel then cut into small pieces. Set aside.
3. Reduce and reserve the excess oil. Leave at least 2 tablespoons oil in the pan.

Part 2
1. In a same pan, saute garlic, onion and green peas for 2 minutes.
2. Add cooked rice and 2 tablespoons reserved oil then stir cook for 3 minutes. Add eggs then set for a minute.
3. Add 1 tablespoon spring onions then stir, scramble and break them into small pieces.
4. Add bacon then season with salt and pepper according to taste.
5. Transfer to serving plate then serve with other dish. Enjoy!

Crab Fried Rice

Procedures:
Part 1
1. In a pot, boil crabs in salted water over low heat for 10 minutes or until cook.
2. Drain and let it cool. Scoop out all crab meat from shells. Set aside

Part 2
1. In the pan, heat oil and saute ginger, garlic and spring onion.
2. Add crab meat then stir cook for a minute over low heat.
3. Add cooked rice then seasoned with salt and ground pepper according to taste.
4. Keep stirring for 5 minutes then transfer to serving plate and garnish with spring onion.
