Ingredients:
1 medium-sized Broccoli, cut into serving pieces
115 grams Shiitake Mushroom, sliced
3 cloves garlic, minced
3 tablespoons oyster sauce
1/4 cup chicken stock or chicken bouillon dissolved in hot water
a dash of dried chili flakes
2 tablespoons vegetable oil
salt and pepper to taste

Procedures:
1. In a pan, heat oil then saute garlic and shiitake mushrooms until light brown.
2. Add broccoli, chili flakes, and chicken stock then simmer for 2 minutes.
3. Add oyster sauce then adjust seasoning according to taste.
4. Simmer for another minute then transfer to serving plate. Serve immediately.

Seafood Pansit Bihon Guisado

Filipino Style Recipe: Seafood pansit bihon guisado is another variety of popular Filipino dish consists of cornstarch noodles(bihon). The bihon is usually soak and cook together with squid, shrimp, mussels and vegetables in broth and soy sauce. This is commonly serve in any occasions or in mid-afternoon snacks.

Ingredients:
500 grams cornstarch noodles(bihon), I used HOBE Special Bihon
12-15 pieces shrimp, peeled and deveined
12 pieces squid, cleaned and cut into rings
12-15 pieces mussels, boiled and removed from shells
100 grams fish balls, quartered(optional)
1/4 kilo snow peas(sitsaro)
2 cups cabbage, sliced into strips
1 carrot, julienned
1 red bell pepper, sliced into strips
6 cloves garlic, minced
1 onion, chopped
4 cups shrimp broth(shrimp heads mashed then boiled in water with salt)
4 tablespoons soy sauce
fish sauce, salt and pepper to taste
200 grams calamansi

Procedures:
Part 1
1. In a big bowl with water, soak noodles for 10 minutes or until soft. Drain and set aside.

Part 2
1. In a large wok, heat oil then stir fry fish balls until color turns to light brown. Remove and set aside.
2. In a same wok, saute garlic and onions then add shrimp, mussels and squid. Saute until shrimp color turns to pink. Remove and set aside.
3. In a same work, pour broth, soy sauce, salt and pepper then simmer for 3 minutes.
4. Add vegetables then simmer for 5 minutes or until half cooked. Remove and set aside except for the liquid.
5. Add soaked noodles then toss until the liquid absorb.(Make sure the liquid is enough for the noodles to cook and absorb).
6. Put back all the ingredients then cooked 2 minutes. Mix well.
7. Adjust seasoning according to taste then remove from heat. Serve hot with calamansi.

Seafood Salpicao

Filipino Style Recipe: Seafood Salpicao is a simple and quick seafood. Usually the seafood like shrimps, squid, mussels, fish fillet, vegetables and herbs cooked together in oyster sauce, and other seasonings.

Ingredients:
1/4 kilo shrimp, cleaned
1/4 squid, cut into rings
1/2 mussels, steamed and removed from shells(optional)
1 onion, chopped
6 cloves garlic, minced
1 thumb-sized ginger, chopped
3 stalks onion leeks, sliced diagonally
2 tablespoons coriander, chopped
1 bell pepper, sliced
80 grams pieces snow peas, trimmed
100 grams young corn, halves
100 grams shiitake mushrooms, sliced
4 tablespoons oyster sauce
1/2 cup water
3 tablespoons vegetable oil
salt and pepper to taste

Procedures:
1. In a wok, heat oil then saute ginger, garlic and onion.
2. Add young corn, mushroom then stir fry for 3 minutes.
3. Pour water and bring to boil then add seafood and simmer for 3 minutes.
4. Add oyster sauce, salt and pepper according to taste.
5. Add snow peas, onion leeks, coriander and bell pepper then cook for another 3 minutes.
6. Transfer to serving plate then garnish with remaining coriander.

Yema Cake

Filipino Style Recipe: Yema cake is a creamy and delicious custard cake originate in southern part of Luzon. This dessert is made from 2 layer chiffon cake coated with yema frosting. The custard is almost similar to brazo de mercedez and dulce de leche that consists of egg yolks, condensed milk, evaporated milk and vanilla extract.

Ingredients:
Chiffon Cake:
Flour Mixture:
1 1/4 cups cake flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1/4 cup white sugar

Egg Yolks Mixture:
4 egg yolks from large-sized eggs
1/3 cup whole milk
1/2 teaspoon vanilla extract
1/2 teaspoon lemon extract
1/4 cup vegetable oil

Egg White Mixture:
4 egg whites
1/4 cup white sugar
1/4 teaspoon cream of tartar

Yema Frosting:
6 egg yolks
1 can condensed milk
1 big can evaporated milk
1 teaspoon vanilla extract

Procedures:
Part 1
1. Preheat oven to 350 degrees Fahrenheit.
2. In a mixing bowl, mix flour mixture until well blended then sift.
3. In a separate bowl, combine egg yolks mixture then whisk slowly until smooth.
4. Combine flour and egg yolks mixture while continue mixing until smooth and well blended.

Part 2
1. In another bowl, beat egg whites and cream of tartar until frothy.
2. Gradually add white sugar while continue mixing until stiff peaks are formed.
3. Gently add egg white mixture into flour and egg yolks mixture then whisk until well blended.
4. Add vegetable oil then fold.

Part 3
1. In a cake pan lined bottom with parchment paper then pour batter mixture then bake for 40-45 minutes.
2. Remove from the oven then let it cool. Remove cake from the pan then refrigerate before frosting.

Part 4
1. In a sauce pan, combine yema frosting mixture then cook while continuously stirring over low heat until becomes thick.

Part 5
1. Slice chiffon cake horizontally into two equal parts.
2. In a cake board, place the top slice upside down then spread a thin layer of yema frosting at the top.
3. Place the other slice on top, bottom side up then spread and cover the whole cake with yema frosting.
4. Sprinkle with grated cheese on top then refrigerate before serving.

Chicken Mechado

Filipino Style Recipe: Chicken mechado is another chicken stew that consists of a chicken meat cooked in tomato sauce together with potatoes, carrots and bell peppers then seasoned with soy sauce, bay leaves and vinegar. This dish is similar to other tomato-based dishes such as kalderata, menudo and afritada.

Ingredients:
750 grams chicken, cut into serving pieces
150 grams tomato sauce
1 onion, chopped
6 cloves garlic, minced
3 bay leaves(laurel)
2 large potatoes, quartered
1 bell pepper, sliced
4 cups chicken stock or chicken bouillon dissolved in water
4 tablespoons soy sauce
2 tablespoons fish sauce
salt and pepper to taste
3 tablespoons vegetable oil

1 carrot, cut into cubes(optional)
1/4 cup green peas(optional)
2 tablespoons vinegar(optional)

Procedures:
Part 1
1. In a pan, heat oil then fry potatoes and carrots until golden brown. Drain and set aside.

Part 2
1. In a pot, heat oil and saute garlic and onions.
2. Add chicken and fish sauce then continue sauteing until color turns to brown.
3. Pour tomato sauce, soy sauce, bay leaves and chicken stock then simmer until tender. Add water if necessary.
4. Add vinegar and boil again for 2-3 minutes. Do not stir.
5. Add carrots, potatoes and bell pepper then simmer for 3 minutes.
6. Adjust seasoning with salt and pepper according to taste.
7. Transfer to serving plate and serve with steamed rice.

Fish Fingers

Filipino Style Recipe: Fish fingers is another popular finger food or snack that consists of fish fillets coated into flour, egg and breadcrumbs then deep fry until golden brown. This is usually serve together with dipping sauce and beer.

Ingredients:
750 grams fish fillets(I used cream dory), cut into serving pieces
1/2 cup flour
2 raw eggs, beaten
1 cup breadcrumbs(optional)
salt and pepper to taste
cooking oil for frying

Procedures:
Part 1
1. In a bowl, combine flour, salt and pepper then mix well. Set aside.
2. Prepare beaten eggs into a separate bowls.
3. Dredge fish fillet into flour mixture then shake off to remove excess flour.
4. Dip in beaten eggs and dredge into flour mixture or breadcrumbs to coat all sides.
5. Repeat the steps for remaining fish fillets. Set aside.

Part 2
1. In a pan, heat enough oil then deep fry each fish fillets for 3-5 minutes or until golden brown.
Drain on paper towel and set aside.
2. Transfer fish fillets into serving plate then serve with garlic-mayo dip.

Adobong Puti

Filipino Style Recipe: Adobong puti or white adobo is another variety of Filipino adobo. The traditional adobo is made of pork or chicken meat cooked in a blend of soy sauce and vinegar together with spices. This version of adobo does not contain soy sauce instead we used salt or other seasoning to adjust the taste. Fry the meat until light brown then cook together with the sauce until tender.

500 grams pork belly or liempo, cut into serving pieces
1/4 cup vinegar
1/2 cup water
10 cloves garlic, pounded
12 pieces peppercorns
3 pieces bay leaves
salt to taste
3 tablespoons cooking oil

Procedures:
Part 1
1. In a pot, arrange pork then add garlic, bay leaves, peppercorns, salt, vinegar and water.
2. Cover and simmer over medium heat for 20 minutes or until pork is tender. Add more water if necessary.
3. Remove the pork from the sauce and set aside.

Part 2
1. In a pan, heat oil then fry pork until light brown.
2. Put back the meat to the sauce then simmer until reduced in half.
3. Adjust seasoning according to taste then simmer for 2 minutes.
4. Remove from heat then transfer to serving bowl. Serve immediately with steamed rice.

Mango Salsa

Filipino Style Recipe: Mango Salsa is a delicious and colorful salsa made with mangoes, tomatoes, onion, cilantro, lime juice and spring onion. This is usually serve as side dish for with fried or grilled food.

2 mangoes, peeled and diced
2 tomatoes, diced
1 onion, diced
2 tablespoons lime or lemon juice
2 tablespoons cilantro, chopped
2 tablespoons spring onion, chopped

1. In a large bowl, combine mango, tomatoes, onion, cilantro and spring onion then toss together.
2. Sprinkle with remaining spring onion then serve with sauteed shrimp paste.

Crab Fried Rice

Filipino Style Recipe: Crab fried rice is another easy and simple delicious fried rice dish. It is mainly made up of fried rice and crab meat mixed together until cooked. This dish is usually served during breakfast together with your favorite dish and soup.

Ingredients:
5 cups cooked rice, leftover
3 big-sized crabs, cleaned
6 cloves garlic, chopped
1 thumb-sized ginger, grated
2 tablespoons vegetable oil
1/4 cup water
salt to taste
2 tablespoons chopped spring onion(half for garnishing)

Procedures:
Part 1
1. In a pot, boil crabs in salted water over low heat for 10 minutes or until cook.
2. Drain and let it cool. Scoop out all crab meat from shells. Set aside

Part 2
1. In the pan, heat oil and saute ginger, garlic and spring onion.
2. Add crab meat then stir cook for a minute over low heat.
3. Add cooked rice then seasoned with salt and ground pepper according to taste.
4. Keep stirring for 5 minutes then transfer to serving plate and garnish with spring onion.

Caramelized Beef with Spinach

Filipino Style Recipe: Caramelized Beef with Spinach is simple yet delicious and mouth-watering beef dish. The beef marinated then cooked and simmered together until caramelized and thicken. This is usually served together with steamed spinach.

1/2 kilo beef, cut into serving pieces
120 grams pineapple(chunks or tidbits), reserve juice
3 tablespoons soy sauce
3 tablespoons oyster sauce
1 tablespoons brown sugar
1 teaspoon sesame oil
1/2 teaspoon garlic powder
1/2 teaspoon ginger powder
1/2 teaspoon cayenne powder(optional)
salt and ground pepper to taste
a bunch of spinach, steamed

Procedures:
Part 1
1. In a bowl, combine, soy sauce, oyster sauce, pineapple juice, brown sugar, sesame oil, garlic powder, ginger powder, cayenne pepper and ground pepper then mix well.
2. Add beef then marinate for 2 hours or overnight inside the fridge. Drain and reserve the marinade.

Part 2
1. In pan, pour marinade then simmer over medium heat until reduce in half.
2. Add beef then stir cook for 5 minutes or until caramelize and thicken.
3. Adjust seasoning according to taste. Add pineapple then cook for another minute.
4. Transfer to serving plate together with steamed spinach. Serve immediately.
