Fish n Chips

Filipino Style Recipe: Fish n Chips is a popular finger food or snack that consists of fried fish fillets and chips/fries. The fish fillet coated with batter, deep fry until golden brown. This is commonly serve as finger food together with dipping sauce and beer.

Ingredients:
750 grams fish fillets(I used cream dory), cut into serving pieces
2 pieces potatoes, cleaned and sliced
1/2 cup flour
2 raw eggs, beaten
salt and pepper to taste
cooking oil for frying

Procedures:
Part 1
1. In a bowl, combine flour, salt and pepper then mix well. Set aside.
2. Prepare beaten eggs into a separate bowls.
3. Dredge fish fillet into flour mixture then shake off to remove excess flour.
4. Dip in beaten eggs and dredge again into flour mixture to coat all sides.
5. Repeat the steps for remaining fish fillets. Set aside.

Part 2
1. In a pan, heat enough oil then deep fry each fish fillets for 3-5 minutes or until golden brown. Drain on paper towel and set aside.
2. In a same frying pan, deep fry potatoes for 3 minutes then drain on paper towel and set aside.
3. Transfer fish fillets and fries into serving plate then serve with garlic-mayo dip.

Aligue Rice

Filipino Style Recipe: aligue rice is another easy and simple but mouth-watering fried rice dish. It is mainly made up of fried rice and crab fat mixed together until rice is well coated. Usually served during breakfast together with your favorite dish and soup.

Ingredients:
5 cups cooked rice, leftover
2 tablespoons aligue(crab fat)
6 cloves garlic, crushed
1 thumb-sized ginger, grated
2 tablespoons olive oil
2 tablespoons chopped spring onion(half for garnishing)

Procedures:
1. In the same pan, heat olive oil and saute ginger, garlic and spring onion.
2. Add aligue then stir cook for a minute over low heat.
3. Add cooked rice then seasoned with salt and ground pepper according to taste.
4. Keep stirring for 5 minutes or until until rice is well coated.
5. Transfer to serving plate and garnish with spring onion.

Stir Cooked Buttered Vegetables

Filipino Style Recipe: stir cooked buttered vegetables is another simple yet healthy dish and usually served as side dish. It is consists of different varieties of vegetables steamed then stir cooked with butter, salt and pepper.

Ingredients:
1 carrot, cut into strips
1 small-sized cabbage, cut into serving pieces
100 grams beansprouts
3 tablespoons unsalted butter or margarine
salt and ground pepper to taste

Procedures:
Part 1
1. In a pot, boil water with salt then add carrots and cabbage for 3 minutes.
2. Drain and plunge into cold water for another 3 minutes. Drain well and set aside.

Part 2
1. In a pan, melt butter then add bean sprouts, carrots and cabbage.
2. Seasoned with salt and pepper then stir cook a minute or until tender.
3. Transfer the steamed vegetables into serving bowl. Serve immediately.

Chicken Pandan

Filipino Style Recipe: Chicken pandan is a simple yet delicious chicken dish originated from Thailand. This dish is made of chicken pieces marinated then wrapped with pandan leaves. Deep fry until golden brown then serve with toyo-mansi sauce. This is usually serve together with steamed rice or can be serve as pulutan.

Good for 10-14 pieces

Ingredients:
400 grams chicken fillets, cut into pieces
10-14 pandan leaves
cooking oil for frying

Marinade:
3 tablespoons soy sauce
2 tablespoon calamansi juice
1/2 teaspoon turmeric powder
1/2 teaspoon cumin powder
1 tablespoon sugar
1 tablespoon sesame oil
salt and pepper to taste

Procedures:
Part 1
1. In a large bowl, combine marinade ingredients then mix until well blended.
2. Add chicken then marinate for 2-3 hours inside the fridge.
3. Drain chicken then wrap each pieces with pandan leaves.

Part 2
1. In a frying pan, heat enough oil then deep fry wrapped chicken until golden brown. Drain.
2. Transfer to serving plate then serve with dipping sauce and steamed rice.

Ham and Cheese Pizza Tortilla

Filipino Style Recipe: Ham and Cheese Pizza Tortilla is inspire to typical pizza made of oven-baked flat, round bread topped with tomato sauce, cheese and toppings.

Good for 4 pizza tortillas

Ingredients:
4 pieces tortilla(8-10 inch diameter)
1 1/2 cup pizza sauce or tomato sauce
150 grams mozzarella cheese or quick melt, grated
100 grams sweet ham, cooked and cut into cubes

Procedures:
Part 1
1. Place tortilla in a flat surface, ladle enough pizza sauce into the center and spread it out in a spiral motion. Leave about 1/2 inch of unsauce tortilla at the edges.
2. Sprinkle shredded cheese on top then add and arrange ham evenly.
3. Spread shredded cheese on top of the toppings. Repeat for remaining pieces.

Party 2
1. Pre-heat oven over 200 degrees Fahrenheit then bake tortillas for 8-10 minutes or until the tortillas are crisp and the cheese is melted.
2. Remove from the oven then transfer to round sheet. Cut into 4-6 serving slices then serve with hot sauce.

Sauteed Peas and Corned Beef

Filipino Style Recipe: Sauteed peas and corned beef is an easy, simple and affordable Filipino dish. It consists of corned beef and snow peas cooked and simmered in oyster sauce. Adding oyster sauce and dried chili flakes will improve the flavor and taste of the dish.

Ingredients:
180 grams snow peas, trimmed
1 small can corned beef
3 cloves garlic, minced
1 onion, chopped
1/8 teaspoon dried chili flakes
4 tablespoons oyster sauce

salt and pepper to taste

Procedures:
Part 1
1. In a saucepan, heat oil then saute garlic and onion until soft.
2. Add corned beef then continue sauteing until slightly toasted.
3. Add snow peas then pour water and simmer for a minutes.
4. Add oyster sauce and chili flakes then simmer for another 2 minutes.
5. Adjust seasoning according to taste then transfer to serving plate. Serve with steamed rice.

Spicy Chicken Paprika

1 kilo chicken, cleaned and cut into serving pieces

For Breading Mix:
1 cup flour
1 tablespoon paprika
1 tablespoon cayenne pepper
1 tablespoon salt

For Paprika Sauce:
1 teaspoon paprika pepper
1/2 cup hot sauce
1/4 cup brown sugar
2/3 cup butter or margarine
1 teaspoon ground pepper
2 teaspoon garlic powder

Dipping Sauce:
1 cup mayonnaise
6 cloves garlic, minced

Procedures:
Part 1
1. In a bowl, combine flour, paprika, cayenne and salt then mix well.
2. Place and toss chicken with the mixture until evenly coated.
3. Refrigerate for 2 hours or overnight.

Part 2
1. In a deep frying pan, heat enough oil to cover the chicken entirely.
2. Fry chicken for about 10-15 minutes in medium heat or until color turns to golden brown.
3. Drain and set aside.

Part 3
1. In a sauce pan, melt butter in a low heat then add butter, hot sauce, garlic powder, sugar and pepper. Stir well then turn off the heat.
2. In a large bowl, place the chicken then add sauce and mix until all the chicken coated evenly.
3. Serve immediately with dipping sauce and steamed rice.

Gyoza Dumplings

Filipino Style Recipe: Gyoza Dumplings is a popular Asian dumplings originated in Japan. This dish is usually made from ground meat, cabbage and other vegetables wrapped in dumpling wrappers. Steamed and cooked for a few minutes then served with dipping sauce. This is commonly served as side dish together with Ramen or any noodle soup.

Ingredients:
4 cups cabbage, chopped into small pieces
250 grams ground pork
2 tablespoons green onions, chopped
1 tablespoon soy sauce
1 teaspoon sesame oil
salt and ground white pepper to taste
ground white pepper

Dipping Sauce:
2/3 cup soy sauce
1/4 cup vinegar
1 tablespoon chopped green onions
1/2 teaspoon crushed red chili

Procedures:
Part 1
1. In a large bowl, combine cabbage and 1/2 teaspoon salt then let sit for 10 minutes.
2. Squeeze the cabbage firmly to discard excess water.
3. In a large bowl, combine cabbage, ground pork, green onions, soy sauce, sesame oil, salt and ground white pepper then mix evenly with your hand.

Part 2
1. Scoop a spoonful of mixture then place in the center of wrapper.
2. Moisten the entire edge of wrapper with water then fold in half.
3. Seal and crimp the edges then press against bottom into sheet pan.
4. Repeat the procedures to remaining mixture.

Part 3
1. In a pan, heat 1 teaspoon oil then arrange dumplings in it flat side facing down.
2. Cook the bottom for a few minutes until light browned.
3. Slowly pour hot water until half submerged. Cover and cook until the water has evaporated.
4. Transfer the gyoza into plate then serve with dipping sauce.

Sauteed Shrimp Paste

Filipino Style Recipe: Sauteed Shrimp Paste or Ginisang Bagoong Alamang is popular Filipino dip together with raw mango. Filipino shrimp paste is made from fermented krill(alamang) sauteed in ginger, garlic, onion and tomatoes. This is commonly served as side dish or paired with mango, turnip, steamed spinach, etc.

Ingredients:
2 cups raw shrimp paste(alamang)
1 cup pork meat with fat, cut into small pieces
5 cloves garlic
1 onion, chopped
3 tomatoes, chopped
1 thumb-sized ginger, julienned
3 pieces red chili(labuyo), chopped
2 Tablespoons vinegar
3 tablespoons brown sugar
1/3 cup water

Procedures:
Part 1 (Optional)
1. Wash shrimp paste into running water then drain well.(This will help to reduce the saltiness of shrimp paste).

Part 2
1. In a pan, stir cook pork fat until oil comes out then add pork meat and stir cook until golden brown.
2. Add ginger, garlic, onion, tomatoes then saute for 3 minutes.
3. Add shrimp paste, water, chili, vinegar and sugar then stir cook over low heat for 15 minutes.
4. Adjust seasoning according to taste. Remove from heat then serve as side dish or pair with raw mango.

Kinilaw na Dilis

Filipino Style Recipe: kinilaw na dilis is another variety of raw fish salad made of fresh anchovies fillet mixed with vinegar, chili, onion, ginger, calamansi juice, salt and pepper. This dish is another Filipino delicacy and usually served as appetizer or pulutan. Make sure it is fresh because the taste of kinilaw is depends on the freshness of the fish.

Ingredients:
1/2 kilo anchovies(dilis)
6 tablespoons calamansi or lime juice
1 large white onion, chopped
3 tablespoons minced ginger
1 red bell pepper, slice thinly
3 pieces red or green chili(siling labuyo), chopped(optional)
spring onion for garnishing(optional)
1/4 tablespoon sugar(optional)
1/2 cup vinegar for washing
salt and pepper to taste

Procedures:
Part 1
1. Remove the heads of the fish then split the body into two and discard the bones and innards.
2. Repeat the procedure for the remaining fish then rinse and drain.

Part 2
1. In a bowl, combine fish fillet and vinegar then mix. Let stand for 5 minutes then drain vinegar.
2. Add the remaining ingredients then mix well.
3. Cover and refrigerate for 30 minutes. Serve chilled.
