Sarciadong Bangus

Filipino Style Recipe: Sarciadong bangus is another simple and easy Filipino dish. This dish is a way to re-cooked left over fish. It is usually consist of fried bangus (or Leftover) then cooked in a combination of tomatoes and beaten eggs.

Ingredients:
1 medium-sized bangus (milk fish), cleaned and cut into serving pieces
2 pieces eggs, beaten
4 medium-sized tomatoes, diced
1 medium-sized onions, diced
3 cloves garlic, minced
1/2 cup water
fish sauce and ground pepper to taste
cooking oil
2 tablespoons chopped spring onion(optional)

Procedures:
Part 1 (Skip if leftover fish is available)
1. Season bangus with salt. Set aside.
2. In a pan, heat cooking oil and fry fish until brown. Drain and set aside.

Part 2
1. In same pan, reduce the oil then saute onion, garlic and tomatoes until soft.
2. Add water, spring onion, fish sauce and ground pepper. Bring to boil.
3. Add beaten eggs, once the eggs curdles start stirring the mixture.
4. Add fried bangus and simmer for a minute.
5. Transfer to serving plate then sprinkle with remaining spring onion. Serve with rice. Enjoy!

Sauteed Kangkong in Oyster Sauce

Filipino Style Recipe: Sauteed kangkong in oyster sauce is a simple and affordable dish made of water spinach sauteed and cooked together with smoked fish and oyster sauce.

Ingredients:
2 bunch of Kangkong (water spinach), cut into 2inch
3 pieces fried/left-over tinapa (smoked fish), flakes and discard bones
5 cloves garlic, minced
1 onion, chopped
3 tablespoons oyster sauce
1/2 teaspoon cornstarch, dissolved in 1/2 cup broth
1 teaspoon sesame oil
2 tablespoons vegetable oil
a dash of dried chili flakes
fish sauce and ground pepper to taste
sesame seeds, toasted (optional)

Procedures:
Part 1
1. In a bowl, combine oyster sauce, sesame oil, cornstarch and broth then mix until well blended.

Part 2
1. In a pan, heat oil then saute garlic and onion
2. Add tinapa flakes then continue sauteing for a minute.
3. Add kangkong stalks then stir cook for another minute.
4. Pour oyster sauce mixture and chili flakes then bring to boil. Adjust seasoning according to taste.
5. Add kangkong leaves then simmer for a minute.
6. Transfer to serving plate then sprinkle with toasted sesame seeds. Serve immediately.

Skipjack Tuna in Coconut Milk

Filipino Style Recipe: Skipjack Tuna in Coconut Milk is another simple and easy Filipino dish. It is usually consist of skipjack tuna (tulingan) cooked in a combination of coconut milk, vinegar and some spices.

Good for 4 servings

Ingredients:
500 grams skipjack tuna (tulingan), sliced into serving pieces
3 cloves garlic, minced
1 piece onion, sliced
1 thumb-sized ginger, diced
2 pieces green chili(siling haba)
1 cup coconut cream (1st extract)
1 cup coconut milk (2nd extract)
2 pieces eggplants, sliced
1/2 cup of vinegar
2 tablespoons vegetable oil
fish sauce and ground pepper to taste

Procedures:
1. In a saucepan, heat oil the saute garlic, onion and ginger.
2. Arrange fish and eggplants then add fish sauce, vinegar, ground pepper and coconut milk.
3. Cover and simmer for 15 minutes or until almost tender.
4. Add coconut cream and simmer for another 10 minutes or until creamy and oily.
5. Add green chili and cook for another minute.
6. Serve and Enjoy!

Fish Burger Patties

Filipino Style Recipe: Fish burger patty is consist of fish flakes mixed together with eggs, minced onions, breadcrumbs, Worcestershire sauce, parsley, salt and pepper. Flattened the mixture into a disc-like shape then fried or grilled until tender.

Estimated time of preparation and cooking: 30-40 minutes(plus refrigerating time)

Ingredients:
500 grams fish fillet (tuna, milkfish, etc)
1 onion, minced
1 egg, beaten
2 tablespoons water
1/4 cup bread crumbs
4 cloves garlic, minced
1/2 teaspoon Worcestershire sauce
3 tablespoons fresh parsley, chopped
1/2 teaspoon salt
1/4 teaspoon pepper

Procedures:
Part 1
1. In a pan, arrange fish then cover with water. Bring to boil and simmer until fish is tender. Drain and pat dry.
2. In a large bowl, place fish then mash with a fork into flakes.

Part 2
1. In a bowl, combine all the ingredients then mix thoroughly.
2. Divide the mixture into serving pieces. Roll the mixture into balls and flatten into 1/2 inch on an even surface.
3. In a tray with grease-proof paper, arrange patties then cover with plastic. Place in the fridge for at least 30 minutes.

Part 3
1. Fry or grill patties for 3-4 minutes each side or until color turn to brown.
2. Serve with mushroom gravy or with buns together with sliced tomato, lettuce, cucumber and onion rings.

Asian Style Steamed Cream Dory

Filipino Style Recipe: Asian Style Steamed Cream Dory is another simple and quick fish dish that consists of cream dory cooked in Asian sauce made of light soy sauce, oyster sauce, water, sugar, ginger and sesame oil.

Ingredients:
500 grams cream dory, sliced
1 thumb-sized ginger, sliced
salt and pepper to taste
2 stalks onion leeks, sliced diagonally
2 pieces chili pepper, sliced

Sauce:
3 tablespoons light soy sauce
1 tablespoon oyster sauce
2 cups water
2 tablespoons brown sugar
1 teaspoon grated ginger
1 tablespoon sesame oil

Procedures:
Part 1
1. Rub the fish with salt and pepper.
2. In a steamer, line with parchment paper so the fish won’t stick to the bottom.
3. Arrange fish then top with ginger then steam for 10 minutes or until cooked.

Part 2
1. In a sauce pan, combine the sauce ingredients then bring to boil.
2. Add onion leeks and chili pepper. Turn off the heat.

Part 3
1. In a serving plate, arrange fish then pour the sauce on top then garnish with remaining onion leeks. Serve with steamed rice.

Cream Dory Pochero

Filipino Style Recipe: Cream Dory Pochero is another variety of tomato-based dish. The fish cooked in tomato sauce together with bananas and other vegetables. A simple yet delicious Filipino dish.

750 grams cream dory fillets, cleaned
3 pieces banana(saba), sliced halves
200 grams tomato sauce
4 garlic gloves, chopped

1 cups water
100 grams green beans, trimmed and sliced
1 small chinese cabbage or bok choy(pechay), cut into serving pieces
2 tablespoons vegetable oil
fish sauce or salt to taste

Procedures:
Part 1
1. In a large plate, pat dry fish, cut into serving pieces, and set aside.
2. In a pan, heat oil then fry banana until golden brown. Drain and set aside.

Part 2
1. In a pot, heat oil and saute garlic and onion.
2. Add tomato sauce, water, and peppercorns. Cover and bring to boil.
3. Add fried bananas, and fish then cook for 3 minutes.
4. Add vegetables then simmer for another 3 minutes or until vegetables are cooked.
5. Adjust seasoning according to taste then transfer to serving plate, serve with steamed rice.

Fish Fingers

Filipino Style Recipe: Fish fingers is another popular finger food or snack that consists of fish fillets coated into flour, egg and breadcrumbs then deep fry until golden brown. This is usually serve together with dipping sauce and beer.

Ingredients:
750 grams fish fillets(I used cream dory), cut into serving pieces
1/2 cup flour
2 raw eggs, beaten
1 cup breadcrumbs(optional)
salt and pepper to taste
cooking oil for frying

Procedures:
Part 1
1. In a bowl, combine flour, salt and pepper then mix well. Set aside.
2. Prepare beaten eggs into a separate bowls.
3. Dredge fish fillet into flour mixture then shake off to remove excess flour.
4. Dip in beaten eggs and dredge into flour mixture or breadcrumbs to coat all sides.
5. Repeat the steps for remaining fish fillets. Set aside.

Part 2
1. In a pan, heat enough oil then deep fry each fish fillets for 3-5 minutes or until golden brown.
Drain on paper towel and set aside.
2. Transfer fish fillets into serving plate then serve with garlic-mayo dip.

Fish n Chips

Filipino Style Recipe: Fish n Chips is a popular finger food or snack that consists of fried fish fillets and chips/fries. The fish fillet coated with batter, deep fry until golden brown. This is commonly serve as finger food together with dipping sauce and beer.

2 pieces potatoes, cleaned and sliced
1/2 cup flour

1. In a bowl, combine flour, salt and pepper then mix well. Set aside.
2. Prepare beaten eggs into a separate bowls.

Kinilaw na Dilis

Filipino Style Recipe: kinilaw na dilis is another variety of raw fish salad made of fresh anchovies fillet mixed with vinegar, chili, onion, ginger, calamansi juice, salt and pepper. This dish is another Filipino delicacy and usually served as appetizer or pulutan. Make sure it is fresh because the taste of kinilaw is depends on the freshness of the fish.

Ingredients:
1/2 kilo anchovies(dilis)
6 tablespoons calamansi or lime juice
1 large white onion, chopped
3 tablespoons minced ginger
1 red bell pepper, slice thinly
3 pieces red or green chili(siling labuyo), chopped(optional)
spring onion for garnishing(optional)
1/4 tablespoon sugar(optional)
1/2 cup vinegar for washing
salt and pepper to taste

Procedures:
Part 1
1. Remove the heads of the fish then split the body into two and discard the bones and innards.
2. Repeat the procedure for the remaining fish then rinse and drain.

Part 2
1. In a bowl, combine fish fillet and vinegar then mix. Let stand for 5 minutes then drain vinegar.
2. Add the remaining ingredients then mix well.
3. Cover and refrigerate for 30 minutes. Serve chilled.

Cream Dory in Sweet Soy Sauce

Filipino Style Recipe: Cream dory in sweet soy sauce is another simple and quick fish dish that consists of cream dory cooked in sweet soy sauce made of soy sauce, oyster sauce, cornstarch and sugar. This can be serve together with steamed rice.

1/2 kilo cream dory, cut into cubes
1/4 cup soy sauce
3 tablespoons oyster sauce
3 cloves garlic, minced

1/2 cup water
2 tablespoons brown sugar
1/2 teaspoon cornstarch(dissolved in 1/4 cup water)
1/4 teaspoon dried chili flakes
1/4 teaspoon ginger powder
salt and pepper to taste
chopped spring onions for garnishing

Procedures:
Part 1
1. In a pan, arrange fish and ginger then pour enough water. Bring to boil for 5 minutes. Drain and set aside.

Part 2
1. In a sauce pan, heat oil then saute garlic and onion.
2. Pour soy sauce, oyster sauce, water and sugar then bring to boil.
3. Add fish then simmer for 5 minutes.
4. Add dissolved cornstarch then bring to boil while keep stirring.
5. Add ginger powder, chili flakes then adjust seasoning with salt and pepper.
6. Transfer to serving plate then sprinkle with spring onions. Serve hot!
