Green Mango Shake

2 green mangoes, peeled and cut into cubes
1/2 cup powdered milk(optional)
2 tablespoons sugar or other sweetener to taste
1 cup ice cubes

Procedures:
1. In a blender, process green mango, milk, and sugar until blended.
2. Add ice and blend until smooth, add more sugar if needed.
3. Pour into glasses then served cold.

Fruit Cocktail Sa Malamig

Filipino Style Recipe: fruit cocktail “sa malamig” or fruit salad drink is another refreshing beverage and usually serve during afternoon or summer season. This drink is inspired to fruit salad dessert and commonly sold along the street. It is consists of condensed milk, fruit cocktail and other fruits then stir with lots of ice cubes.

Ingredients:
1 can(800grams) fruit cocktail, reserve the juice
1 can(150ml) condensed milk
2 cups red gelatin, diced
ice cubes
2 cups tapioca pearls, (optional)
8-10 pieces strawberry, diced(optional)
1 small melon, shred meat(optional)

Procedures:
1. In a pitcher, combine all the ingredients.
2. Stir in lots of ice then let stand for a while until some ice is melted.
3. Don’t put too much water or it will dilute the taste of the drink.
4. Pour in tall glasses then serve chilled.

Fruit Cake

Filipino Style Recipe: Fruit cake is a sweet cake that is usually serve during Holiday season. This is cake is made of butter, sugar, salt, eggs, flour and baking powder mixed with candied fruits and chopped nuts soaked in liquors like brandy or rum then baked until golden brown.

Estimated time of preparation: 15-20 minutes(plus soaking time)
Estimated time of cooking: 50 minutes

Ingredients:
1/2 cup raisins
1/2 cup red and green maraschino cherries, drained
1/2 cup walnuts, chopped
1/2 cup candied pineapple chunks
1/2 cup brandy or rum
2 cups sugar(plus 1 cup sugar for caramel syrup)
2 cups flour
2 teaspoons baking powder
250 grams butter, melted
6 eggs
1/2 cup water
1 teaspoon salt
2 teaspoons vanilla essence(optional)

Procedures:
Part 1(Soaking Fruits)
1. In a stainless steel bowl, pour brandy then soak fruits.
2. Cover and let stand overnight at room temperature. Set aside.

Part 2(Caramel Syrup)
1. In a heated pan, pour 1/2 cup water then dissolved 1 cup sugar until caramelized. Let it cool and set aside

Part 3(Batter Mixture)
1. In a large bowl, combine flour, baking powder, sugar and salt. Mix well.
2. Add butter, sugar and eggs, vanilla essence then mix well.
3. Add caramel syrup and half of soaked fruits then mix well.

Part 4(Baking)
1. In a loaf pan, grease with melted butter then dust with flour.
2. Pour mixture then bake over 300 degrees Fahrenheit for about 20 minutes then remove from the oven.
3. Sprinkle the remaining soaked fruits on top then put back in the oven.
4. Bake for another 40 minutes or until golden brown.
(Fruit cake is done when a toothpick inserted in the center comes out clean.)
5. Remove from the oven then brush top with remaining brandy from soaked fruits.
6. Let it cool then refrigerate before slicing. Enjoy!

Crema de Fruta

Filipino Style Recipe: Crema de Fruta is another popular Filipino dessert. It is usually consist of sponge cake topped in succeeding layers of custard cream, fruits and gelatin. This dessert is usually served during Holidays.

Ingredients:
sponge cake
1 can slices of peaches, well drained
1 can slices of pineapple, well drained
1 small bottle cherries, well drained

Cake Syrup:
1/4 cup sugar
1/4 cup water

Custard Cream:
1 cup sugar
1/2 cup flour
3 cups evaporated milk
4 egg yolks
1/4 cup butter
1 teaspoon vanilla extract

Gelatin:
1 tablespoon unflavored gelatin
2 cups pineapple juice
2 cups water
1/4 cup sugar

Procedures:
Part 1
1. In a rectangular container, arrange sponge cake.

Part 2: Cake Syrup:
1. In a saucepan, pour water and add sugar, cook until sugar has dissolved. Pour over the sponge cake.

Part 3: Custard Cream:
1. In a saucepan, combine flour, milk, water and sugar then cook in a medium heat. Stir constantly until thickens.
2. Add egg yolks, butter and vanilla extract, cook for another 2-3 minutes or until well blended. Stir well.
3. Pour over the cake syrup and let it cool. Set aside.

Part 4: Gelatin:
1. In a saucepan, boil water and add unflavored gelatin, pineapple juice and sugar.
2. Simmer until gelatin is dissolved.
3. Arrange fruits over custard and pour the gelatin syrup on top.
4. Refrigerate over night or until gelatin is firm. Serve chilled.

Notes:
1. You may also also fruit cocktail as alternative fruits.
2. Sponge cake is available in grocery and bakery stores. But if you prefer to do it by yourself, here’s the recipe on how to make the sponge cake.

Sponge Cake:
Ingredients:
1 cup flour
1 teaspoon baking powder
2 large egg yolks
1 cup sugar
1 cup milk
2 tablespoons butter
1/2 teaspoon vanilla extract

Procedures:
1. In a bowl, sift flour and baking powder together. Set aside.
2. In another bowl, put egg yolks and sugar. Stir until light and fluffy.
3. Add sifted flour and baking powder into egg mixture. Stir until well blended.
4. In a saucepan, combine milk, butter and vanilla extract. Cook until well blended.
5. Pour milk mixture into egg mixture. Stir until well blended.
6. Pour the mixture into baking pan and bake in 350 degrees Fahrenheit for about 25 minutes or until done. Let it cool.

Fiesta Float Graham

Filipino Style Recipe: Fiesta Float Graham is another variety float graham. It is usually made with a layer of graham crackers, condensed milk, cream and different fruits. This dish is one of the easiest and favorite dessert of Filipinos specially during Holidays.

Ingredients:
1 can(850 grams) fruit cocktail(add more fruits if desired)
200 grams graham crackers
50 grams crushed graham crackers
1 big can condensed milk
1 big can all purpose cream

Procedures:
Part 1
1. In the strainer, drain the fruits thoroughly for at least 30 minutes.
2. In bowl, combine all purpose cream and condensed milk. Mix well.

Part 2
1. Prepare a rectangular container.
2. Dip the graham cracker into cold water and arrange a layer at the bottom.
3. Spread a layer of cream mixture.
4. Arrange fruits over cream.
5. Repeat layering using remaining ingredients up to the desired thickness.
6. Add a final layer of cream and fruits mixture then sprinkle with crushed graham crackers on top.
7. Store in refrigerator for 3 hours or overnight. Served cold.

Fruit Salad

Filipino Style Recipe: fruit salad is one of the easiest and popular appetizer or dessert of Filipinos in every occasion specially during Christmas and New Year. The typical fruit salad is consist of various fruits blend in condensed milk, heavy cream and cheese.

Ingredients:
2 cans (29oz) fruit cocktail
1 can (29 oz) pineapple tidbits
1 jar (12 oz) Nata de coco
1 small bottle kaong
1 can condensed milk
1 pack Nestle cream
1/2 cup cheddar cheese, cubed
2 pieces apples, cubed

Procedures:
1. In the strainer, drain the fruits thoroughly for at least 30 minutes.
2. In a bowl, transfer the fruits all together.
3. Add condensed milk, cream and cheese. Mix till well blended.
4. Cover and freeze or refrigerate for 3 hours. Served cold.

Notes:
1. You may also add other fruits like kiwi, lychees, peaches..etc.

Taro Coconut Milk with Tapioca Pearls

Filipino Style Recipe: taro coconut milk with tapioca pearls is a dessert. It is usually taro cooked to coconut milk until tender and then add sugar and salt to taste. Lastly, add tapioca pearls.

Ingredients:
500 grams taro, cut into 1/2 inch cubes
1 cup tapioca pearls
2 cans(400ml each) coconut milk
1/2 cup sugar
salt

Procedures:
Part 1
1. In a bowl with water, soak tapioca pearls for 3 hours.
2. In a pot, boil water on medium heat then add tapioca pearls. Cook for 10-20 minutes.
3. Stir constantly and make sure they don’t stick together. The pearls should turn clear when they’re cooked.
4. Drain tapioca pearls and transfer to a bowl of cold water.

Part 2
1. In a pot, bring coconut milk to boil.
2. Add sugar and salt to taste.
3. Add taro, cook for about 30 minutes or until becomes soft.
4. Lastly, drain and add tapioca pearls.
5. Serve hot or cold.

How to make Maki Sushi

Filipino Style Recipe: How to make Maki Sushi? Maki sushi is the most common type of sushi. Sushi is generally made with either nori(seaweed sheets), rice and can be filled with any desire ingredients inside the roll. Here’s the recipe on how to make maki.

Estimated time of preparation and cooking: 30-40 minutes

Ingredients:
Sushi Nori(Dried Seaweed Sheets)
Decide the filling you want, 1 meat + 1-2 vegetables/fruits.
*Any Meat(Raw fish,Smoked Salmon, Seafood Sticks, Cooked Prawns, Tuna, Crab, etc…)
*Vegetables/Fruits(Avocado, Mango, Peaches, Cucumber, Carrots, Beansprouts, etc…)
Mayonnaise or or cream cheese(optional)
sesame seeds or tobiko(flying fish eggs) (optional)

Rice:
Sushi Rice
sugar and salt
rice vinegar(optional)

Sauce:
Soy Sauce
Wasabi(optional)

Utensils:
Bamboo rolling Mat
Sharp knife

Procedures:
Part 1
1. Cook sushi rice with a little salt added.
2. Dissolve sugar into a rice vinegar.
3. When the rice has cooked, add the dissolved sugar and mix thoroughly. The rice will now become even more sticky and clumpy.
4. Let it cool and set aside.

Part 2
1. Place 1 sheet of nori into the bamboo rolling mat.
2. Cover the nori of rice about 5/6 of the way up, just enough to cover the nori.
3. Add a row of your desired vegetables/fruit and meat on a small portion on one side of the sheet.
4. Then sprinkle some sesame seeds over the fillings or a little mayonnaise to hold meat together.
5. Then roll the nori sheet. Add enough pressure on the bamboo mat to make sure sushi is firm. Don’t include the bamboo mat when you roll the nori sheet.
6. Place the roll on a cutting board. Then slice 1-inch interval using a wet sharp knife.
7. Serve with soy sauce. Enjoy!

Tips:
1. If no sushi rice is available you could use glutinous rice instead.

Banana Split

Banana split is an ice cream-based dessert that served in a long dish called boat. This is one of the best dessert and popular around the world.

Estimated Time of Preparation: 10 minutes. Good for 1-2 person

INGREDIENTS:
1 banana, sliced lengthwise
1 scoop each vanilla, chocolate and strawberry ice cream
marshmallow creme(optional)
whipped cream(optional)
strawberry syrup
chocolate syrup or hot fudge
cherry
nuts,chopped

PROCEDURES:
1. Place banana slices in a long skinny ice cream bowl.
2. Top with scoops of ice cream(vanilla, chocolate and strawberry).
3. Pour chocolate syrup on vanilla ice cream.
4. Pour strawberry syrup on strawberry ice cream.
5. Pour marshmallow creme on chocolate ice cream.
6. Top each with whipped cream.
7. Sprinkle with nuts
8. Top each with a cherry.

Notes:
1. Low-Fat Frozen Yogurt may use instead of whipped cream.
2. You may also use strawberry instead of cherry.
3. Caramel syrup is a good alternative for marshmallow creme.
4. Adding waffle stick like stick-O or sliced peaches makes your dessert much special.
3. Some added marshmallow, pineapple tidbits, pecans, choc bits and mini M&Ms bits as toppings.
