Ingredients:
3/4 kilo chicken fillets, cut into cubes
toasted sesame seeds for garnishing
cooking oil for frying

Coating:
1 raw egg, beaten
1/4 teaspoon salt
1/4 teaspoon ground pepper
5 tablespoons cornstarch

Sauce:
1 tablespoons sesame oil
3 garlic cloves, minced
1 teaspoon grated ginger
3 tablespoons honey
2 tablespoons sugar
1 tablespoon vinegar
salt and pepper to taste
2 teaspoons cornstarch(dissolved in 3/4 cup water)
2 tablespoons ketchup(optional)
1/4 teaspoon dried chili flakes(optional)

Procedures:
Part 1
1. In a bowl, combine the chicken and coating ingredients then stir to coat the chicken evenly. Let sit for 15 minutes.
2. In a frying pan, heat cooking oil and deep fry chicken for about 7 minutes or until color turns to golden brown. Drain and set aside.

Part 2
1. In a sauce pan, heat sesame oil then saute ginger and garlic.
2. Add the rest of sauce ingredients then simmer while keep stirring until slightly thickens. Turn off heat.
3. Add chicken pieces then toss to coat. Transfer to serving plate then sprinkle with sesame seeds.

Chicken Curry Noodle Soup

Filipino Style Recipe: chicken curry noodle soup is a popular Asian noodle soup. This dish is consists of chicken pieces cooked in curry powder, chicken stock and coconut milk then serve with noodles. I also add potatoes and tokwa as extender. The soup has flavorful and spicy taste which is good to serve during rainy season and cold weather.

Ingredients:
200 grams egg noodles
500 grams chicken, cut into serving pieces
1.2 liters chicken stock
400 ml coconut milk
3 potatoes, cut into cubes
350 grams tokwa, cut into cubes
2 onions, chopped
6 gloves garlic, minced
3 tablespoons vegetable oil
3 tablespoons curry powder(dissolved in 1 cup chicken stock)
2 tablespoons calamansi or lime juice
fish sauce and ground pepper to taste
1 teaspoon rosemary(optional)
1 chicken bouillon(optional)

Procedures:
Part 1
1. In a large pot, prepare noodles based on cooking instructions. Drain and set aside.
2. In a pan, heat oil then fry potatoes and tokwa. Drain and set aside.

Part 2
1. In a same pan, reduce oil then saute garlic, onion and rosemary.
2. Add chicken then stir cook until light brown. Season with fish sauce and ground pepper.
3. Add dissolved curry powder, chicken stock, coconut milk and chicken bouillon then simmer until chicken is tender.
4. Add fried potatoes, tofu and calamansi juice then adjust seasoning according to taste. Simmer for a couple minutes.

Part 3
1. In a large bowl, Add cooked noodles then pour chicken curry soup. Serve hot.

Mixed Fruit Shake

2. Add ice and blend until smooth, add more sugar if needed.
3. Pour into glasses then served cold.

Braised Beef and Tendon

Usually the beef and tendon cooked in beef stock, soy sauce, oyster sauce, sugar and star anise until tender. Some add dissolved cornstarch to thickens the sauce and commonly serve with noodles or as main dish.

Ingredients:
500 grams beef brisket
500 grams beef tendons
1 thumb-sized ginger, grated
6 cloves garlic, minced
2 small onions, chopped
7 cups beef stock
1/4 cup soy sauce
2 tablespoons oyster sauce
2 tablespoons brown sugar
2 pieces star anise
a bunch of bok choy, trimmed
3 stalks spring onions, chopped
3 tablespoons olive oil
fish sauce and pepper to taste
1/4 cup cooking wine(optional)

Procedures:
Part 1
1. In a big pot, boil water then blanch beef and tendon for 10 minutes. Drain and let it cool.
2. Cut beef and tendon to small cubes. Set aside.

Part 2
1. In a large wok, heat oil then stir fry beef and tendon until brown.
2. Pour cooking wine then toss and let it evaporate.
3. Remove everything from the wok and set aside.

Part 3
1. In a same wok, heat oil then saute ginger, garlic and onion.
2. Pour beef stock, soy sauce, oyster sauce, star anise and sugar then stir and bring to boil.
3. Add tendon then cover and simmer in a low heat for an hour.
4. Add beef then simmer for another hour or until tendon and beef are tender. Add more water if necessary.
5. Adjust seasoning according to taste then add bok choy, spring onions then simmer for 3 minutes.
6. Turn off the heat then transfer to serving bowl. Enjoy!

Notes:
1. You may add 3 teaspoons of cornstarch dissolved in 1/4 cup water to thicken the sauce.

Buttered Garlic Chicken

Filipino Style Recipe: buttered garlic chicken is another delicious chicken dish. Chicken is marinated in olive oil and garlic fried and baked in chicken stock and butter until tender.

500 grams chicken, cut into serving pieces
1/2 cup olive oil
2 heads of garlic, chopped
1/4 cup unsalted butter
1/4 cup chicken stock

Procedures:
Part 1
1. Pat dry chicken then season with salt and pepper.
2. In a container, combine olive oil, garlic and chicken.
3. Marinate for an hour or overnight inside the fridge. Reserve olive oil.

Part 2
1. In a frying pan, heat olive oil from marinade then fry garlic until light brown. Remove and set aside.
2. In a same frying pan, fry marinated chicken until golden brown. Drain.

Part 3
1. In a baking pan, arrange fried chicken then add butter, chicken stock and a teaspoon of olive oil.
2. Cover with aluminum foil then bake in a preheat oven over 350 degrees Fahrenheit for 20 minutes.
3. Remove cover then baste chicken and bake again for another 10 minutes.
4. Transfer to serving plate together with toasted garlic. Serve.

Sauteed Pork and Green Beans

Filipino Style Recipe: Sauteed pork and green beans is an easy and affordable dish. It is consist of pork and green beans(baguio beans) sauteed and cooked until tender.

Ingredients:
1 bunch green beans(baguio beans), discard ends then cut into small pieces
1/4 kilo pork, cut into small pieces
5 cloves garlic, minced

2. Add pork and fish sauce then stir cook until light brown and tender.
3. Add green beans then stir cook for a minute.
4. Pour water then season with fish sauce and pepper then simmer for 3-5 minutes.
5. Transfer to serving bowl then serve with steamed rice. Enjoy!

Stuffed Pechay

Ingredients:
10 large pechay leaves, cut off the white stalks
300 grams ground pork, chicken or beef
1 1/2 cup coconut cream
4 cloves garlic, minced

2 green chili(siling haba)
1 teaspoon turmeric powder
fish sauce or salt and pepper to taste

Part 1
1. In a flat surface, place pechay leaf then add a tablespoonful of ground meat at the center.
2. Roll and secure the filling, repeat the procedure for remaining pieces.

Part 2
1. In a pan, heat oil then saute garlic, onion, tomatoes and chili flakes.
2. Arrange stuffed pechay in a single layer then pour coconut cream.
3. Add green chili then season with turmeric powder, salt and pepper.
4. Simmer for 20 minutes or until the sauce is curdle and reduce.
5. Transfer to serving plate then top with toasted garlic. Serve with steamed rice.

Sinigang na Liempo

Filipino Style Recipe: Sinigang na liempo is another variety of tamarind soup dish that consists of pork liempo cooked in tamarind soup together with other vegetables. This dish has a sour taste that is usually serve as main dish specially during rainy season.

Ingredients:
1 kilo pork liempo, cut into serving pieces
10 tamarind(sampalok) or 1 pack sampaloc mix
1 big-sized onion, chopped
5 medium-sized tomatoes, quartered
3 medium-sized taro(gabi), peeled and cut into cubes
1 radish, sliced
1 bundle of string beans(sitaw), cut into 2 inches long
1 bundle of river spinach(kangkong leaves)
3 pieces green pepper(siling haba)
salt and fish Sauce(patis)
1 liter water

Procedures:
Part 1
1.Boil tamarind, pound and strain the juice. Set aside.

Part 2
1. In a casserole, place pork then pour water and bring to boil until tender.
2. Add onion, tomatoes, and tamarind juice then bring to boil.
3. Add gabi then simmer until tender.
4. Add radish, okra, green pepper, and string beans then simmer for another 5 minutes.
6. Adjust seasoning with fish sauce then add kangkong.
7. Turn off the heat then let it sit for 1-2 minutes or until kangkong is cooked.
8. Transfer to serving bowl then serve hot with steamed rice.

Baked Macaroni

Filipino Style Recipe: Baked macaroni is one of the popular pasta dish that is commonly serve in any occasions. This dish is consists of macaroni pasta mixed together with meat sauce then topped with creamy white cheese. Baked until the topped cheese starts to light brown.

Ingredients:
500 grams macaroni pasta

Meat Sauce:
500 grams ground beef
1 pack(150 grams) tomato paste
3 large-sized tomatoes, diced
2 red bell peppers, diced
4 tablespoons butter
2 tablespoons olive oil
5 cloves garlic, minced
1 large onion, minced
1 cup beef broth
1 teaspoon Spanish paprika
sugar, salt and pepper to taste

White Toppings:
5 tablespoons butter
3 tablespoons flour
1 big can(380 grams) evaporated milk
80 grams Cheddar Cheese
40 grams Parmesan Cheese
salt and pepper to taste

Procedures:
Part 1
1. In a large pot, prepare pasta based on cooking instructions. Drain and set aside.

Part 2
1. In a pan, heat olive oil then add butter, ground beef and cook until starts to brown. Set aside.
2. In a same pan, saute garlic, onions, tomatoes and bell peppers until soft.
3. Add ground beef, beef broth, tomato paste and paprika then stir and simmer for 15 minutes or until meat is tender.
4. Season with sugar, salt and pepper to taste then cook for a minute.
5. Add cooked pasta then toss until well combined. Set aside.

Part 3
1. In a separate pan, melt butter then add flour and stir until well blended.
2. Pour milk then bring to boil. Season with salt and pepper then stir until starts to thickens.
3. Add cheddar and Parmesan cheese then stir until melted and well blended. Set aside.

Part 4
1. In a baking pan, add macaroni mixture then spread evenly.
2. Pour cheese mixture on top then spread evenly and make sure to secure the edges.
3. Bake in a preheated oven over 350 degrees Fahrenheit for 15 minutes or until the top is light brown.
4. Remove from oven then let it cool for a while before serving. Enjoy!
