Filipino Style Recipe: Fish fillet curry is another variety of mouth-watering curry dish. This is similar to other curry dish. Normally the fish marinade then cooked in a blend of curry powder and coconut milk together with potatoes, carrots and bell peppers. Add half of red chili for more spicy taste. This dish is usually serve as main dish or during Lenten season.

Estimated time of preparation: 30 minutes
Estimated time of cooking: 15-20 minutes
Good for 2 servings

Ingredients:
1/2 kilo fish fillets(tuna, salmon, lapu-lapu, tanigue)
2 tablespoons curry powder
1 cup coconut milk
1 onion, chopped
3 cloves garlic, minced
1 thumb-sized ginger, minced
1 tablespoon fresh lime or calamansi juice
2 pieces potatoes, cut into cubes
1 pieces carrots, cut into cubes
2 pieces green and red bell peppers, cut into cubes
2 tablespoons olive oil
salt and pepper to taste

2 tablespoons cornstarch(optional)
1/2 red chili, sliced diagonally(optional)

Procedures:
Part 1
1. In a bowl, marinate fish with lime juice, pepper and salt for 30 minutes.
2. In a separate bowl, combine curry powder, coconut milk and cornstarch. Mix until dissolved.

Part 2
1. In a pan, heat oil then fry potatoes and carrots until light brown. Drain and set aside.

Part 3
1. In a pan, heat oil and saute ginger, garlic and onions.
2. Add the curry mixtures then stir and bring to boil.
3. Add fish then simmer in a low heat for 10 minutes or tender. (Do not stir but prevent fish from sticking.)
4. Add bell peppers, potatoes and carrots then season with salt and pepper according to taste. Simmer for another 2 minutes.
5. Transfer the fish into serving plate with sauce on top. Serve hot with steamed rice.

Sotanghon Salad Recipe

Filipino Style Recipe: sotanghon(glass noodles) recipe is another pasta dish. Normally the noodles cooked in hot water then top with any vegetables of choice. Pour the sauce with the blend of lime juice and fish sauce.

Good for 4-6 servings

 

Ingredients:
50 grams dried sotanghon(glass noodles)
1 boneless chicken breast fillet
1 carrot, shredded
10 pieces cherry tomatoes, halved
1/2 cup wansuy(coriander) leaves, chopped
3 tablespoons fresh lime or calamansi juice
2 tablespoons fish sauce(I prefer Thai fish sauce)
1 fresh red or green bell pepper, chopped
3 spring onions, thinly sliced
1 teaspoon brown sugar
2 tablespoons olive oil
salt and pepper to taste

Procedures:
Part 1
1. In a bowl, pour hot water and soak sotanghon noodles then cover for 2-3 minutes or until noodles begin to soften.
2. Drain and rinse in cold water. Set aside.

Part 2
1. In a frying pan, heat olive oil and saute chicken fillet until cooked.
2. Cut into small pieces and season with salt and pepper.

Part 3
1. In a bowl, mix together bell pepper, lime juice, fish sauce, brown sugar and spring onions. Set aside.

Part 4
1. Transfer sotanghon noodles in a large bowl with shredded carrots, cherry tomatoes and coriander leaves.
2. Top with chicken fillets, pour the sauce then mix thoroughly. Done
3. Serve and Enjoy!

Tips:
1. You may add also wood ear mushrooms, prawns, tofu or bean sprouts.

Chicken Pastel in a Cream Mushroom Sauce

Filipino Style Recipe: Chicken pastel in a cream mushroom sauce recipe is another easy yet delicious dish. Normally the chicken sauteed and cooked in a blend of cream of mushroom soup together with sausages. You may also add tomato sauce.

Estimated time of preparation and cooking: 30-40 minutes
Good for 4-5 servings

Ingredients:
1 kilo boneless chicken, cut into servings
1/2 can cream of mushroom soup(i prefer Campbell’s)
2 pieces onions, chopped
3 cloves garlic, chopped
1 cup grated cheese
1/2 cup butter
6 pieces hotdog or 1 chorizo sausage, cut sliced diagonally
200 grams tomato sauce(optional)

Procedures:
1. In a pot, heat butter and saute onions and garlic until translucent.
2. Add chicken, keep stirring. Cover and simmer in a low heat for 10 minutes or until chicken is tender.
3. Add hotdogs, tomato sauce, cream of mushroom soup and cheese. Simmer for 5 minutes.
4. Adjust seasoning with 1 tablespoon salt and pepper. You may add 1 cup of chicken broth if needed.
5. Transfer to serving plate with grated cheese on top. Serve and enjoy!

Tips:
1. You may add 2 potatoes and 1 carrot cut into diced.
2. You may also add 1 cup sliced mushroom and 2 pieces sliced hard-boiled egg.

Grill Fish Steak Recipe

Filipino Style Recipe: grill fish steak recipe is normally the fish fillets marinade then grill on high heat until done. Serve with any sauce you desired, I prefer tartar sauce.

Ingredients:
2 pieces (170 grams each) fish fillets(tuna, salmon, lapu-lapu, tanigue)
1 clove garlic, minced
6 tablespoons olive oil
1 teaspoon salt
1 teaspoon ground black pepper
1 tablespoon fresh lemon juice
1 tablespoon fresh parsley, chopped(optional)
1 teaspoon dried basil(optional)

Procedures:
Part 1
1. In a large bowl, combine olive oil, garlic, salt, ground pepper, lemon juice, basil and parsley.
2. Add fish fillets and marinade in refrigerator for 30 minutes, turning occasionally.

Part 2
1. Preheat the grill 4 inches from high heat then brush lightly with oil to prevent sticking.
2. Grill fillets for 5 minutes each side or until fillets is done.
3. Transfer the fillets to serving plate with tartar sauce.
4. Serve and enjoy!

Ingredients:
500 grams boneless chicken breasts, cut into cubes
1 tablespoon soy sauce
1 tablespoon sugar
1 tablespoon cornstarch
2tablespoons hoisin sauce
1/2 cup spicy peanuts, grind
2-3 tablespoons olive oil
1 red or green bell pepper, cut into cubes
1 cup mushrooms, sliced(optional)
toasted sesame seeds and spring onions for garnishing(optional)

Procedures:
Part 1
1. In a bowl, mix the cornstarch, sugar ,soy sauce and chicken.
2. Marinate in refrigerator for 30 minutes.

Part 2
1. In a frying pan, heat olive oil and stir fry chicken until chicken is done. Drain and set aside.
2. In a same pan, add 1 tablespoon olive oil and stir fry the mushrooms and bell pepper until slightly cooked.
3. Add chicken, spicy peanuts and hoisin sauce. Stir until heated through.
4. Adjust seasoning then transfer the chicken to serving plate with sauce on top.
5. Garnish with sesame seeds and spring onions if using. Enjoy!

Chicken with Mushroom Cream Sauce Recipe

Ingredients:
1 kilo chicken fillets, cut into serving pieces
200 grams mushrooms, sliced
1/4 cup chicken broth
1 onion, chopped
1 clove garlic, crushed
1 cup canola oil
1 cup flour
1/2 cup butter
1/2 cup sour cream
1/2 cup heavy cream
1 teaspoon salt
1/2 teaspoon ground pepper

Procedures:
Part 1
1. In a bowl, mix the flour, salt and ground pepper. Add chicken and stir to coat evenly.

Part 2
1. In a frying pan, heat canola oil and deep fry chicken until chicken is tender and color turns to golden brown.
2. Drain and set aside.

Part 3
1. In a frying pan, heat butter. Saute onions, garlic and mushrooms.
2. Continue sauteing until mushrooms are nice and browned, lower the heat and discard the garlic.
3. Add chicken broth, sour cream and heavy cream. Bring to boil, stir constantly.
4. Add salt and pepper to taste.
5. Simmer for 15 minutes or until the sauce is thick enough.
6. Transfer the chicken to serving plate with mushroom cream sauce on top.
7. Serve with boiled asparagus or steamed string beans.

Tips:
1. You may add sliced black olives.

Salmon with Tomatoes Recipe

Estimated time of preparation and cooking: 20-30 minutes

Ingredients:
1/2 kilo salmon fillets, cut into serving pieces
1 medium onion, chopped
2 cloves garlic, peeled and diced
2 large tomatoes, diced
3 tablespoons olive oil
1 lemon, juice
2 teaspoons freshly grated lemon zest
1 teaspoon pickled jalapeño peppers, chopped
1/3 cup white wine(I prefer chardonnay)
1/4 cup water
1 teaspoon sugar
Salt and pepper to taste
1 tablespoon fresh thyme leaves, chopped(optional)
2 tablespoons capers, drained(optional)

Procedures:
Part 1
1. In a bowl, marinate salmon fillets with lemon juice for 10-15 minutes. Drain and set aside.

Part 2
1. In a saucepan, heat olive oil on medium heat. Saute onion and garlic.
2. Add the tomatoes, lemon juice, lemon zest, sugar, thyme, capers and jalapeño peppers.
3. Simmer on high heat for 5 minutes, add a little water if necessary.
4. Adjust seasoning with salt and pepper.

Part 3
1. Add white wine and water. Bring to boil.
2. Place the salmon fillets, cover and cook for  another 5-10 minutes or until done on low heat.
3. Transfer salmon fillets to serving plate with the sauce.
4. Serve hot.

Seafood Pasta in Olive Oil

Filipino Style Recipe: seafood pasta in olive oil recipe is another simple and low-carbohydrate dish. It is usually consist of pasta cooked and sauteed in a combination of seafood and spices.

Estimated time of preparation and cooking: 15-20 minutes
Good for 4-6 persons

Ingredients:
1/4 cup extra virgin olive oil
1 head garlic, minced finely
seafood of choice(shrimp, squid, salmon, mussel, scallop, etc)
500 grams long pasta(I prefer whole wheat pasta)
1/2 cup parsley, chopped
1 teaspoon fish sauce
1 teaspoon ground black pepper
1/2 cup basil, chopped(optional)
3-4 pieces ripe tomatoes or 1 can of diced tomatoes, chopped(optional)
1/2 teaspoon red chili flakes(optional)
1/2 cup shredded Parmesan cheese(optional)

Procedures:
Part 1
1. In a large pot, prepare the pasta based on cooking instructions. Set aside
Part 2
1. In a pan, heat olive oil and saute garlic, tomatoes and chili flakes over low heat
2. Add seafood and cook for 3-5 minutes over medium heat.
3. When the seafood is cook, add pasta and toss together. Add more olive oil if necessary.
4. Add fish sauce and ground black pepper.
5. Add basil and parsley. Adjust seasoning according to taste.
6. When pasta is cooked perfectly, remove from heat.
7. Top with Parmesan cheese. Serve and enjoy!

Tips:
1. You may also add 1/2 cup black olives and mushrooms.

How to make Maki Sushi

Filipino Style Recipe: How to make Maki Sushi? Maki sushi is the most common type of sushi. Sushi is generally made with either nori(seaweed sheets), rice and can be filled with any desire ingredients inside the roll. Here’s the recipe on how to make maki.

Estimated time of preparation and cooking: 30-40 minutes

Ingredients:
Sushi Nori(Dried Seaweed Sheets)
Decide the filling you want, 1 meat + 1-2 vegetables/fruits.
*Any Meat(Raw fish,Smoked Salmon, Seafood Sticks, Cooked Prawns, Tuna, Crab, etc…)
*Vegetables/Fruits(Avocado, Mango, Peaches, Cucumber, Carrots, Beansprouts, etc…)
Mayonnaise or or cream cheese(optional)
sesame seeds or tobiko(flying fish eggs) (optional)

Rice:
Sushi Rice
sugar and salt
rice vinegar(optional)

Sauce:
Soy Sauce
Wasabi(optional)

Utensils:
Bamboo rolling Mat
Sharp knife

Procedures:
Part 1
1. Cook sushi rice with a little salt added.
2. Dissolve sugar into a rice vinegar.
3. When the rice has cooked, add the dissolved sugar and mix thoroughly. The rice will now become even more sticky and clumpy.
4. Let it cool and set aside.

Part 2
1. Place 1 sheet of nori into the bamboo rolling mat.
2. Cover the nori of rice about 5/6 of the way up, just enough to cover the nori.
3. Add a row of your desired vegetables/fruit and meat on a small portion on one side of the sheet.
4. Then sprinkle some sesame seeds over the fillings or a little mayonnaise to hold meat together.
5. Then roll the nori sheet. Add enough pressure on the bamboo mat to make sure sushi is firm. Don’t include the bamboo mat when you roll the nori sheet.
6. Place the roll on a cutting board. Then slice 1-inch interval using a wet sharp knife.
7. Serve with soy sauce. Enjoy!

Tips:
1. If no sushi rice is available you could use glutinous rice instead.

Orange Chicken

Ingredients:
4 boneless chicken breast, cut into serving pieces

Coating:
1 raw egg, beaten
1/4 teaspoon salt
1/4 teaspoon ground pepper
2 cups cornstarch
cooking oil

Sauce:
4 tablespoons orange juice
1 tablespoon grated orange zest
2 tablespoons soy sauce
1/4 cup vinegar
1 cup brown sugar
1 1/2 cup water
1/2 teaspoon grated fresh ginger
1/2 teaspoon garlic powder
2 teaspoons cornstarch(dissolve in 2 tablespoons water)
orange slices, cut into small pieces

Procedures:
Part 1
1. In a bowl, combine the chicken, egg, salt, ground pepper and then cornstarch. Stir to coat the chicken evenly. Let sit for 15 minutes.

Part 2
1. In a frying pan, heat cooking oil and deep fry chicken for about 7 minutes or until color turns to golden brown. Drain and set aside.

Part 3
1. In a sauce pan, put-in the water, soy sauce, vinegar, grated orange zest and orange juice. Bring to boil.
2. Add the garlic, ginger and sugar the simmer for 5 minutes.
3. Add cornstarch mixture and simmer for another minute.
4. Add the chicken pieces and orange slices then simmer for 1-2 minutes or until the chicken is tender and the sauce thickens.
5. Adjust seasoning according to taste then transfer to serving bowl. Serve.
