Ingredients:
500 grams skipjack tuna (tulingan), sliced into serving pieces
3 cloves garlic, minced
1 piece onion, sliced
1 thumb-sized ginger, diced
2 pieces green chili(siling haba)
1 cup coconut cream (1st extract)
1 cup coconut milk (2nd extract)
2 pieces eggplants, sliced
1/2 cup of vinegar
2 tablespoons vegetable oil
fish sauce and ground pepper to taste

Procedures:
1. In a saucepan, heat oil the saute garlic, onion and ginger.
2. Arrange fish and eggplants then add fish sauce, vinegar, ground pepper and coconut milk.
3. Cover and simmer for 15 minutes or until almost tender.
4. Add coconut cream and simmer for another 10 minutes or until creamy and oily.
5. Add green chili and cook for another minute.
6. Serve and Enjoy!

Easy Fried Rice

Filipino Style Recipe: Easy fried rice is a simple way to cook left-over rice. This dish is commonly served during breakfast together with other dish. Fried rice is made up of leftover rice stir fried with shrimps, scrambled eggs, sausages, peas, carrots and other vegetables.

Good for 6-7 servings

Ingredients:
6 cups cooked rice(preferably leftover)
1 cup Chinese sausages, sliced
200 grams prawns, peeled and deveined
1/2 cup sweet peas
1/2 cup carrot, diced
2 raw eggs, beaten
2 teaspoons soy sauce
4 cloves garlic, minced
3 stalks green onions, chopped
salt and pepper to taste
3 tablespoons sesame oil

Procedures:
Part 1
1. In the pan, heat oil then stir fry sausages for a minute.
2. Add garlic, green onion and carrots then saute for another minute.
3. Add shrimps and sweet peas then stir cook for another minute.
4. Add cooked rice and soy sauce then mix until rice is well coated.
5. Pour beaten egg then continue stirring until the egg is cooked.
6. Season with salt and pepper according to taste.
7. Transfer to serving plate and garnish with chopped spring onions.

Halabos na Hipon

Filipino Style Recipe: Halabos na Hipon (Buttered Garlic Shrimp) is a quick and simple shrimp dish cooked in butter, soda and garlic until cooked. This can be served together with steamed rice or pulutan(appetizer).

Ingredients:
500 grams shrimp, cleaned and trimmed out the antenna and sharp pointed.
2 cups soda (sprite or 7-up)
3 cloves garlic, minced
1/2 teaspoon butter
salt and pepper to taste
chopped spring onion for garnishing

Procedures:
Part 1
1. In a large bowl, marinate shrimp in soda for 20 minutes.

Part 2
1. In a pan, melt butter then saute garlic until light brown.
2. Add shrimp then saute until color turns to orange.
3. Season with salt and pepper then simmer for a minute. (If the sauce is too much, remove the shrimp then simmer until the sauce evaporates).
4. Transfer to serving plate then sprinkle with spring onion. Serve immediately.

Spicy Squid

Filipino Style Recipe: Spicy Squid or pusit is an simple seafood dish consists of squid cook in tomato sauce, hot sauce and chili flakes until tender together with vegetables. Avoid to overcook the squid because it will become rubbery texture and tough.

1/2 kilo fresh squid, cleaned and cut into serving pieces
1 carrots, sliced thinly
100 grams green beans, trimmed and sliced diagonally

2 teaspoons hot sauce
2 tablespoons oyster sauce
6 cloves garlic, minced
1 onion, chopped
1 thumb-sized ginger, chopped thinly
2 pieces green chili, sliced diagonally
1/2 teaspoon sesame seeds
2 teaspoons sesame oil
salt and pepper to taste

Procedures:
1. In a pan, heat sesame oil then saute garlic, onion and ginger.
2. Add carrots and green beans then stir fry for 2 minutes.
3. Add squid, oyster sauce, tomato sauce, chili flakes, and hot sauce then continue to stir fry for a few minutes.
4. Season with salt and pepper according to taste. Add green chili and sesame seeds.
5. Transfer to serving plate then serve with steamed rice.

Seafood Pansit Bihon Guisado

Filipino Style Recipe: Seafood pansit bihon guisado is another variety of popular Filipino dish consists of cornstarch noodles(bihon). 500 grams cornstarch noodles(bihon), I used HOBE Special Bihon
12-15 pieces shrimp, peeled and deveined
12 pieces squid, cleaned and cut into rings
12-15 pieces mussels, boiled and removed from shells
100 grams fish balls, quartered(optional)
1/4 kilo snow peas(sitsaro)
2 cups cabbage, sliced into strips
1 carrot, julienned
1 red bell pepper, sliced into strips
6 cloves garlic, minced
1 onion, chopped
4 cups shrimp broth(shrimp heads mashed then boiled in water with salt)
4 tablespoons soy sauce
fish sauce, salt and pepper to taste
200 grams calamansi

Procedures:
Part 1
1. In a big bowl with water, soak noodles for 10 minutes or until soft. Drain and set aside.

Part 2
1. In a large wok, heat oil then stir fry fish balls until color turns to light brown. Remove and set aside.
2. In a same wok, saute garlic and onions then add shrimp, mussels and squid. Saute until shrimp color turns to pink. Remove and set aside.
3. In a same work, pour broth, soy sauce, salt and pepper then simmer for 3 minutes.
4. Add vegetables then simmer for 5 minutes or until half cooked. Remove and set aside except for the liquid.
5. Add soaked noodles then toss until the liquid absorb.(Make sure the liquid is enough for the noodles to cook and absorb).
6. Put back all the ingredients then cooked 2 minutes. Mix well.
7. Adjust seasoning according to taste then remove from heat. Serve hot with calamansi.

Seafood Salpicao

2 tablespoons coriander, chopped

80 grams pieces snow peas, trimmed
100 grams young corn, halves
100 grams shiitake mushrooms, sliced
4 tablespoons oyster sauce
1/2 cup water
3 tablespoons vegetable oil
salt and pepper to taste

Procedures:
1. In a wok, heat oil then saute ginger, garlic and onion.
2. Add young corn, mushroom then stir fry for 3 minutes.
3. Pour water and bring to boil then add seafood and simmer for 3 minutes.
4. Add oyster sauce, salt and pepper according to taste.
5. Add snow peas, onion leeks, coriander and bell pepper then cook for another 3 minutes.
6. Transfer to serving plate then garnish with remaining coriander.

Seafood Angel Hair Carbonara

500 grams angel hair pasta or any
800 grams clams
400 grams squid, cut into rings

1 big can evaporated milk
2 x 250 ml all purpose cream
1/2 cup Parmesan cheese, grated
salt and pepper to taste
parsley for garnishing(optional)

Procedures:
Part 1
1. In a large pot, prepare pasta based on cooking instructions. Drain and set aside.

Part 2
1. In a pan, heat oil then saute garlic, onion and mushroom then saute for 2-3 minutes.
2. Add squid and stir cook for a minute. Remove and set aside.
3. In a same pan, add clams then cover and simmer until shells open. Remove and set aside.

Part 3
1. In a same pan, add the evaporated milk and all purpose cream then bring to boil while keep stirring.
2. Add the grated cheese then keep stirring for about 3-5 minutes or until beginning to thicken.
3. Put back the clams then adjust seasoning with salt and pepper. Turn off the heat then add squid.
4. In a serving plate, arrange pasta then add the sauce on top. Sprinkle with grated cheese and garnish with parsley. Serve!

Seafood Fusilli in Creamy White Sauce

6. Turn off the heat, add pasta then toss well.
7. Transfer to serving plate, top with grated cheese and garnish with basil. Serve!

Garlic Squid

Filipino Style Recipe: garlic squid or pusit is an easy and simple dish that doesn’t require much ingredients. The squid cook in garlic and oyster sauce until tender. Avoid to overcook the squid because it will become rubbery texture and tough.

Ingredients:
1 kilo medium-sized fresh squid
1 head garlic, minced and pound
1 teaspoon white ground pepper
1/4 cup light soy sauce
3 tablespoons oyster sauce
3 tablespoons canola oil

Procedures:
Part 1
1. To clean the squid, pull the head and remove the plastic-like cartilage.
2. Then push the head in, popping out the hard “beak” and discard it.
3. Wash the squid very well under running water.
4. Cut the squid into squares then score with diagonal criss-cross scoring.(This will make the squid more tender and less chewy)

Part 2.
1. In a bowl, combine squid, garlic, soy sauce, oyster sauce and ground pepper.
2. In a pan, heat oil then stir cook squid mixture for 2 minutes.(Don’t overcooked, squid will become tough).
3. Transfer to serving bowl then garnish with lettuce. Enjoy!

1/4 cup water
1 green chili(siling haba), sliced
salt and pepper to taste

Procedures:
Part 1
1. In a pan, heat oil then saute garlic, onion and peppercorns.
2. Add oysters and vinegar then cook until almost dry and brownish.
3. Remove from the pan and set aside.

Part 2
1. In a same pan, add soy sauce and water then bring to boil.
2. Add green chili and simmer until liquid is reduced.
3. Put back the oysters then adjust seasoning according to taste.
4. Simmer for a minute then turn off the heat. Serve with steamed rice.
