Pork Adobo in Salt

Filipino Style Recipe: pork adobo in salt or adobong baboy sa asin is a popular dish in Bicol Region. Normally the pork boiled with vinegar, garlic, laurel and salt until all the liquid is absorbed. Sometimes they called it white adobo or adobong puti.

Estimated time preparation and cooking: 30-40 minutes
Good for 3-4 persons

Ingredients:
1/2 kilo pork, cut into serving pieces
2 cups water
1 garlic head, crushed
2 pieces bay leaves
1/2 cup vinegar
1 teaspoon salt

1 teaspoon peppercorns(optional)
1 small-sized white onion, sliced(optional)
a pinch of chili flakes(optional)

Procedures:
1. In a pan, arrange pork and add water. Bring to boil until the meat is tender. Add water if needed.
2. Pour vinegar, garlic, bay leaves, pork broth cubes and salt.
3. Continue cooking until all the liquid is absorbed.
4. Adjust seasoning according to taste.
5. Cook until the garlic turns to brown and the pork is start to render oil.
6. Remove from heat and transfer to serving plate then serve!

Pork Tonkatsu

Filipino Style Recipe: Pork Tonkatsu is a Japanese deep fried pork. Normally the pork comes breaded and deep-fried. It is usually served with shredded cabbage and tonkatsu sauce.

Estimated time of cooking: 30 minutes
Good for 10 servings

Ingredients:
10 slices boneless pork chops, about 1/2-inch thick
1-1/2 cup all purpose flour
1-1/2 cup bread crumbs
2 eggs, beaten
1 tablespoon oil
cooking oil for frying
Tonkatsu sauce or barbecue sauce
salt & pepper to taste
1/2 head cabbage, thinly shredded and soaked in cold water(optional)

Procedures:
Part 1
1. In a bowl, add beaten eggs and 1 tablespoon oil. whisk well.

Part 2
1. Get rid of the extra fat of the pork chops to keep the meat from curling when fried.
2. Pound the meat with a meat pounder or crisscross the meat using the back of knife.
3. Sprinkle the meat with salt and pepper on both sides.

Part3
1. Dredge the meat in flour and shake off to remove excess flour.
2. Dip in egg mixture and press into bread crumbs to coat both sides.

Part 4
1. In a frying pan, heat oil over a medium heat.
2. Deep fry both sides of breaded pork chops, cook for about 4-5 minutes or until colors turn to golden brown and tender.
3. Drain on paper towels and cut each tonkatsu into bite-size strips.

Part 5
1. Transfer the tonkatsu into serving plate with shredded cabbage.
2. Serve hot with java rice and tonkatsu sauce. Enjoy!

Spicy Glazed Pork Spareribs

Ingredients:
750 grams pork spareribs, cut in serving pieces
1 thumb-sized ginger, peeled and sliced
2 tablespoons oil
1 cup boiling water
2 tablespoons red and green bell pepper, finely chopped(optional)
1 tablespoon black beans(optional)
spring onions for garnishing(optional)

Sauce:
2 tablespoons soy sauce
2 tablespoons vinegar
2 tablespoons sugar
1 tablespoon chili paste
2 teaspoons sesame oil

Procedures:
Part 1
1. In a bowl, combine sauce ingredients and set aside.

Part 2
1. In a pan, heat oil and saute ginger. Add spareribs and toss until water evaporates.
2. Add boiling water, cover and simmer for 40 minutes or until spareribs are tender.
3. Add water if needed. There should be a little liquid left.
4. Add black beans and red and green bell peppers.
5. Pour sauce mixture and stir until the sauce is thickened and the meat is glazed.
6. Adjust seasoning with salt and pepper according to taste.
7. Remove from heat and serve!

Ginataang Sigarilyas

Filipino Style Recipe: ginataang sigarilyas or winged beans in coconut milk recipe  is another  simple yet tasty and nutritious vegetable dish, basically it’s a winged beans simmered in coconut milk. Add with pork or shrimp make the recipe more delicious. This is another mouth-watering vegetable dish that is truly enjoyed by most Filipinos.

Estimated time of cooking: 15-20 minutes
Good for 3-4 persons

Ingredients:
300 grams pork belly, cut into small cubes or strips
4 cloves garlic, crushed
1 medium onion, sliced thinly
1 bunch winged beans(sigarilyas), sliced diagonally and ends discarded
1/2 cup coconut cream
1/2 cup of water
salt and pepper to taste
1/4 cup dried shrimp(optional)

Procedures:
Part 1
1. In a pan, heat oil and fry pork until color turns to light brown.
2. In a same pan, saute onion and garlic. Season with fish sauce then mix well.
3. Add dried shrimp and cook for a minute.
4. Pour in coconut cream and bring to a boil.
5. Add winged beans and cook until vegetables are tender but not overcooked.
6. Add water if necessary. Adjust seasoning according to taste. Remove from heat.
7. Serve and enjoy.

Notes:
1. You may also add long beans(sitaw) and red chili if desired.

Spicy Green Beans and Pork

Filipino Style Recipe: I first tried this dish when we went to Beijing for a vacation. It was winter then, so the spicyness of this dish is perfect for an additional heat. I tried it when I got back home and they loved it. You can adjust the chili garlic sauce depending on how spicy you want it to be. If you are not a fan of green beans, you can replace it with asparagus.

Estimated time preparation and cooking: 35 minutes
Good for 4 persons

Ingredients:
2 cups vegetable oil for frying
500 grams fresh green beans, trimmed and dried well

Pork Sauce:
1 tablespoon vegetable oil
3 cloves garlic, minced
2 teaspoons ginger, minced
2 green onions, minced
250 grams ground pork
2 tablespoons Asian chili garlic sauce
1/4 cup chicken broth
2 teaspoons soy sauce
2 teaspoons cornstarch
2 tablespoons cold water

Procedures:
Step 1
1. In a large work, heat 2 cups of vegetable oil. Carefully add the beans and fry then stirring occasionally for 3 to 5 minutes  or until the beans are blistered.
2. Dip the beans out with a strainer and quickly rinse them in cold water.

Step 2
1. Leave 1 tablespoon of vegetable oil and remove some of the oil from the wok. Heat in a medium heat.
2. Saute garlic, ginger, and green onion then add ground pork. Cook and stir the color of pork turn to brown.
3. Add chili garlic sauce, chicken broth, soy sauce and bring to a boil.

Step 3
1. Mix the cornstarch with the water in a small bowl then pour and stir into the pork mixture
2. Simmer for another 1 to 2 minutes or until the sauce thickens. Adjust seasoning according to taste.
3. Gently stir the green beans into the pork sauce then heat through.
4. Remove from heat, transfer the spicy green beans and pork to serving plate. Serve with steamed rice.

Bicol Express Recipe

3 pieces red chili(siling labuyo)

Salt to taste

Procedures:
Part 1
1. In a bowl with water and salt, soak green peppers for 30 minutes then rinse and drain.

Part 2
1. In a pan, heat vegetable oil then saute garlic and onion.
2. Add sliced pork, continue sauteing until colors turn to brown.
3. Add the shrimp paste then mix for another minute.
4. Pour coconut milk then simmer until reduced.
5. Add the green peppers and red chili.
6. Adjust seasoning with salt according to taste.
7. Serve with steamed rice. Enjoy!

Pork Humba Recipe

3. Add vinegar and simmer for another 3 minutes.
4. Add the bay leaf, banana blossoms, brown sugar, salt and simmer for another 5 minutes.
5. Adjust seasoning according to taste. Remove from heat and Serve. Enjoy!

Notes:
1. You may also add potatoes, hard-boiled eggs or salted black beans.

Sweet and Sour Meatballs

Ingredients:

Meatballs:
500 grams ground pork or ground beef
1 tablespoon cornstarch or 1/2 cup bread crumbs
1 raw egg
1/2 small onion, finely chopped
1 teaspoon salt
1/2 teaspoon ground black pepper
1 teaspoon soy sauce(optional)
1/2 teaspoon worcestershire sauce(optional)
1 small carrot, finely chopped(optional)
2 tablespoons cilantro, finely chopped(optional)

Sauce:
1/2 small onion, diced
1 teaspoon garlic, chopped
1/2 cup water
1/2 cup brown sugar
6 tablespoons vinegar
1/4 cup tomato sauce
2 tablespoons vegetable oil
1 tablespoon cornstarch(dissolved in 1 tablespoon water)
1 small carrot, sliced thinly
1 cup green and red bell pepper, sliced 1/4 inch thick
1 cup pineapple chunks, juice drained(optional)

Procedures:

Part 1(Skip this procedure if you are using premade meatballs from the market)
1. In a bowl, combine all the meatballs ingredients and mix thoroughly.
2. Scoop and form the mixture into 1 tablespoons ball shaped.
3. In a frying pan, heat oil and deep fry until golden brown. Drain and set aside.

Part 2
1. In a sauce pan, heat vegetable oil over medium heat and saute garlic and onions.
2. Add carrots and bell pepper then stir fry for 2 minutes.
3. Add pineapple chunks and stir fry for 1 minute.
4. Add tomato sauce, vinegar, water, brown sugar and a dash of salt. Mix well and let it boil.
5. Add cornstarch mixture and cook until desired thickness is reached.
6. Add fried meatballs and simmer for 2 minutes.
7. Adjust seasoning according to taste.
8. Serve with steamed rice.

Nilagang Baboy

7 cups water(depends on your preference)

1 bundle bok choy(Pechay) or cabbage leaves(repolyo), cut into serving pieces
3 pieces cardava banana(saging na saba), cut into 3-4 pieces(optional)
1 bundle green beans(optional)
fish sauce or salt to taste

Procedures:
Part 1
1. In a large casserole, place meat and add water. Set over medium heat and bring to a boil and simmer until meat is tender.
2. Remove the scum as it rises.

Part 2
3. Add onion, peppercorn, pork broth cubes and sprinkle some salt.
4. Add banana and potatoes and continue cooking until potatoes are cooked.
5. Add the green beans. Simmer for 3-5 minutes.
6. Adjust seasoning according to taste.
7. Add pechay or cabbage leaves. Then remove from heat and leave for about 3 minutes. Do not overcook the green vegetables.
8. Serve hot with steamed rice. Enjoy

Notes:
1. You may also add 1-2 Japanese corn, cut into 3-4 pieces.

Spaghetti Meatballs Recipe

Filipino style spaghetti meatballs recipe is another simple pasta dish. It is usually consist of pasta cooked and sauteed in a combination of meatballs, tomato, tomato paste and spices.

Estimated time of preparation and cooking: 30-40 minutes
Good for 6 servings

Ingredients:
500 grams spaghetti(any prefer pasta)

Sauce:
2 tablespoons olive oil
1/2 yellow onion, chopped
3 cloves garlic, chopped
2 cans of 28oz. diced tomatoes
3 Tablespoons tomato paste
1/4 cup parmesan cheese, grated
1 tablespoon sugar
salt and pepper to taste
1 cup carrots, finely chopped(optional)
1 cup brown button mushrooms, chopped(optional)
1/4 cup parsley, finely chopped(optional)
1/4 cup basil, finely chopped(optional)
1/4 cup red wine(optional)

Meatballs:
1/2 kilo ground beef with fat
1/2 kilo ground pork
2 raw eggs
3/4 cup bread crumbs
1/4 cup parmesan cheese, grated
2 teaspoons salt
2 teaspoons ground black pepper
1 tablespoon olive oil
2 tablespoons basil, finely chopped(optional)
2 tablespoons parsley, finely chopped(optional)

Procedures:

Part 1
1. In a large pot, prepare the pasta based on cooking instructions. Set aside

Part 2
1. In a large bowl, combine ground beef, ground pork,  eggs, breadcrumbs, parmesan cheese, salt, pepper, basil and parsley. Mixed well.
2. Scoop about 2 tablespoons of the mixture and roll and compress to form 1-inch round meat balls. Continue this step until the mixture is consumed.
3. In a frying pan, heat olive oil and fry meatballs for about 5-10 minutes depending on the size or until color turns to golden brown. Drain and set aside.

Part 3
1. In a sauce pan, heat olive oil on medium heat. Saute onions and garlic.
2. Add carrots and mushrooms and continue sauteing for 2 minutes.
3. Add diced tomatoes, tomato paste, basil and parsley. Stir to blend. Simmer for about 15 minutes
4. Reduce heat and simmer for about 15 minutes. Stirring occasionally.
5. Add red wine, parmesan cheese, adjust seasoning with salt, pepper and sugar according to taste.
6. Add meatballs and gently stir. Simmer for another 5 minutes. Stirring occasionally.

Part 4
1. Prepare pasta on pasta tray, add sauce and meatballs, sprinkle with grated Parmesan cheese. Serve with garlic bread.

Tips:
1. You may use premade meatballs from the market.
