Sapin Sapin

Filipino Style Recipe: Sapin sapin is another popular Filipino delicacy and pasalubong that is commonly sold along the streets which is similar to other sticky rice cake. This delicacy is composed of several layers “sapin” with different colours and usually serve as dessert or snack in any special occasions.

Ingredients:
3 cups glutinous rice flour
1 cups white sugar
6 cups coconut milk
1 big can condensed milk
1/2 teaspoon purple or ube food coloring
1/2 teaspoon yellow food coloring
1/2 cup purple yam, mashed(optional)
1/2 cup jackfruit strips(optional)
toasted coconut or latik for toppings(optional)

Procedures:
Part 1
1. In a large bowl, combine glutinous rice flour, coconut milk, condensed milk and sugar then mix until well blended.
2. Divide the mixture into 3 equal parts then place in a separate bowls.

Part 2
1. In a first mixture, add purple yam and purple food coloring then mix well.
2. In a second mixture, add jackfruit and yellow food coloring then mix well.
3. The third mixture will remain white color.

Part 3.
1. In a pan, brush with oil or place plastic wrap then pour purple mixture and steam for 15 minutes.
2. Add yellow mixture then steam for another 15 minutes.
3. Add white mixture then steam for another 15 minutes or until fully cooked.
4. Remove from the steamer and let it cool before slicing into serving pieces.
5. Transfer to serving plate then top with toasted coconut or latik.

Longganisa Rice Omelet

Filipino Style Recipe: longganisa rice omelet or omelette is another easy yet delicious breakfast recipe. This is another variety of omelet dish that consists of beaten eggs, and leftover longganisa(Filipino sausage) mixed and cooked with carrots and rice. This is a complete meal that usually serve during breakfast.

Estimated time of preparation and cooking: 10-15 minutes
Good for 2 servings

Ingredients:
4 eggs, beaten
2-3 pieces longganisa(fried/leftover)
2 cups rice(leftover)
1 small carrot
1 onion, chopped
2 tablespoons butter or margarine
2-3 tablespoons soy sauce or liquid seasoning
1 tablespoon cooking oil
salt and pepper to taste
1 tablespoon chopped spring onions(optional)

Procedures:
Part 1
1. In a separate bowl, beat the eggs and spring onions together until frothy. Set aside.
2. Chop carrots and longganisa into small pieces. Set aside.

Part 2
1. In a pan, heat oil then saute onions until soft.
2. Add carrots and longganisa then stir cook for 3 minutes.
3. Add rice, soy sauce, salt and pepper then continue stirring for another 2 minutes.
4. Remove from the pan and set aside.

Part 3
1. In a same pan, melt butter in a low heat then pour egg mixture.
2. Cook until slightly set then top rice mixture.
3. Continue cooking until bottom is fully set then gently fold omelet over.
4. Drain and paper towel then transfer into serving plate then serve.

Longganisa Hamonado

Filipino Style Recipe: Longganisa hamonado is another variety of popular Filipino sausage which has a sweeter taste compare to other longganisa. Usually this dish is consists of ground pork, Prague powder, sugar, paprika and salt then stuffed into hog casings. This dish is commonly fried until golden brown.

Ingredients:
1 kilo ground pork(30% fat)
1/2 cup sugar
1 tablespoon fine salt
1/2 teaspoon Prague powder
1 tablespoon paprika
hog casings(optional)

Procedures:
Part 1
1. In a large bowl, combine sugar, Prague powder, paprika and salt then mix well.
2. Add ground pork then mix well until well blended using hand.
3. Stuff the hog casings with filling then knot into serving pieces using cotton string.
4. Dry under the sun for 1-2 hours then place in a fridge overnight.

Part 2
1. In a frying pan, heat a little oil then fry longganisa until cook and golden brown. Drain and serve.

Sauteed Chinese Pechay(Bok Choy)

Filipino Style Recipe: Sauteed Chinese pechay(bok choy) is another healthy yet affordable dish. Normally the pork sauteed until tender then cooked and simmered with bok choy then season with fish sauce and pepper.

Estimated time of preparation and cooking: 20-30 minutes
Good for 2-4 persons

Ingredients:
2 bunches bok choy(chinese pechay), cut out the base
250 grams pork, cut into small pieces
4 cloves garlic, minced
1 onion, chopped
2 tomatoes, chopped(optional)
1 cup water or beef/pork broth
2 tablespoons vegetable oil
fish sauce or salt and pepper to taste

Procedures:
Part 1
1. In a pan, heat oil then add pork and fish sauce. Stir cook until light brown then set aside.
2. In a same pan, saute garlic, onion and tomatoes until soft.
3. Put back pork then pour water and bring to boil then season with fish sauce and pepper.
4. Add bok choy then cook for 2-3 minutes or until half-done.
5. Remove from heat then serve with steamed rice. Enjoy.

Sauteed String Beans and Chicken

Filipino Style Recipe: Sauteed string beans and chicken is another simple and quick recipe. It is consist of string beans and chicken braised in soy sauce, oyster sauce and spices. This is almost similar to adobong sitaw without using vinegar. Ideally, sauce should be naturally thick and oily but this is very delicious.

Good for 2-3 persons

Ingredients:
1 bunch string beans(sitaw), cut into 2-inch lengths and ends discarded
1/4 kilo chicken breast, cut into small pieces
5 cloves garlic, minced
1 onion, chopped
2 tablespoons soy sauce
1 tablespoon oyster sauce
1/4 cup water
salt and pepper to taste

Procedures:
1. In a pan, heat oil then saute garlic and onion until translucent.
2. Add chicken and salt then stir cook until light brown and tender.
3. Pour water, soy sauce, oyster sauce and pepper then simmer for 5 minutes.
4. Add string beans, stir and simmer for another 3 minutes or until string beans in tender.
5. Adjust seasoning then remove from heat. Serve hot with steamed rice. Enjoy!

Afritadang Bangus

Filipino Style Recipe: Afritadang bangus or milkfish is another variety of popular Filipino tomato-based stew. Afritada is commonly consist of chicken but we will use milkfish(bangus) for this recipe. The fish comes fried then cooked in tomato sauce together with potatoes, carrots and bell pepper. This dish is usually serve as main dish together with steamed rice.

Good for 4-6 persons

Ingredients:
1 big sized milkfish(bangus), slice diagonally into 1 inch thick
1 green bell pepper, slice into strips
1 large potato, sliced
3 cloves garlic, minced
1 onion, chopped
1 pack(115 grams) tomato sauce
1 cup water
salt and pepper to taste
1 carrots, sliced(optional)

Procedures:
Part 1
1. In a frying pan, heat oil then fry potatoes and carrots until light brown. Drain and set aside.
2. Sprinkle milkfish with salt then fry until golden brown. Drain and set aside.

Part 2
1. In a pan, heat oil then saute ginger, garlic and onion.
2. Add bell pepper then continue sauteing for 2 minutes.
3. Pour tomato sauce and water then bring to boil. Season with salt and pepper.
4. Add potatoes, carrots and fried fish then simmer for 2 minutes.
5. Remove from heat then transfer to serving plate. Serve with steamed rice.

Chicken Asparagus

Filipino Style Recipe: chicken asparagus is another healthy and delicious chicken dish. Normally the chicken marinated and cooked in marinade, oyster sauce and broth together with asparagus until tender.

Ingredients:
500 grams chicken fillet, cut into serving pieces
1 bunch medium-sized fresh asparagus
1 tablespoon oyster sauce
3 cloves garlic, minced
1 onion, chopped
1/4 cup chicken broth
3 tablespoons cooking oil
salt and pepper to taste

Marinade:
1/4 cup soy sauce
1/4 cup oyster sauce
2 tablespoons brown sugar
1 teaspoon sesame oil

Procedures:
Part 1
1. In a bowl, combine chicken and marinade then stir together. Set aside for 30 minutes.
2. Cut asparagus into 2-3 inches then separate the asparagus spears. Set aside.

Part 2
1. In a pan, heat oil then saute garlic and onion.
2. Add marinated chicken and stir cook until light brown.
3. Add chicken broth then simmer for 10 minutes or until chicken is tender.
4. Add oyster sauce then season with salt and pepper according to taste.
5. Add asparagus stalk and simmer for a minute.
6. Add asparagus spears and simmer for another minute.
7. Remove from heat then transfer to serving plate. Serve immediately.

Spaghetti Aglio Olio

Filipino Style Recipe: Spaghetti aglio olio or spaghetti pasta with garlic and oil is a traditional Italian dish. This dish is made of sauteed garlic in olive oil then toss in spaghetti pasta. Sometimes we add chili flakes, clams and basil to contribute an extra-ordinary taste. Aglio olio is usually serve as meryenda(mid-afternoon snack) or in any special occasion.

Ingredients:
400 grams spaghetti pasta
1/4 cup olive oil
8 cloves garlic, peeled and chopped
750 grams clams or shrimps(peeled and deveined)
1/4 teaspoon dried chili flakes(optional)
1/4 cup white wine
10 leaves basil, chopped
salt and pepper to taste
grated Parmesan cheese

Procedures:
Part 1
1. In a large pot, prepare pasta based on cooking instructions. Drain and set aside.

Part 2
1. In a pan, heat 1 tablespoon olive oil then saute garlic, chili flakes until light brown.
2. Add clams and cover and cook until shells open then season with salt and pepper.
3. Add white wine and simmer for 2-3 minutes or until sauce reduce in half.
4. Add remaining olive oil, pasta and basil then toss until coat evenly.
5. Transfer to serving plate, top with grated cheese and garnish with basil leaves. Serve.

Longsilog

Filipino Style Recipe: Longsilog is another popular breakfast dish by most Filipinos which is a combination of Long=Longanisa(sausage), Si=sinangag(fried rice) and log = itlog(fried egg). Longanisa is a flavoured sausage that is commonly made of ground pork meat and spices.

Ingredients:
4 pieces longanisa(sausage)
2 cups leftover rice
2 raw eggs
4 gloves garlic, minced
salt to taste

Procedures:
Part 1
1. In a pan, heat oil then fry sunny-side up egg until set. Drain and set aside.
2. In a same pan, fry garlic until light brown.
3. Add rice then season with salt. Keep stirring for 3 minutes or until well blended. Set aside.

Part 2
1. In a pan, heat oil then cook longanisa until brown. Drain and set aside.
2. Arrange longanisa in a serving plate with fried egg and fried rice. Enjoy!

Stir Fry Beef and Vegetables

Filipino Style Recipe: Stir fry beef and vegetables is another simple yet delicious beef dish. The beef strips marinated then cooked and simmered together with vegetables until tender.

Ingredients:
500 grams beef sirloin, sliced thinly into strips
100 grams snow peas, trimmed
100 grams green beans, trimmed and slice diagonally
1 carrot, sliced
1 red bell pepper, diced
3 cloves garlic, minced
1 white onion, diced
1 tablespoon oyster sauce
salt and pepper to taste
5 tablespoons cooking oil

Marinade:
1/4 cup soy sauce
1/4 cup oyster sauce
2 tablespoons brown sugar
1 teaspoon sesame oil

Procedures:
Part 1
1. In a bowl, combine beef and marinade then stir together.
2. Set aside for 30 minutes then drain and discard marinade.

Part 2
1. In a sauce pan, heat cooking oil and saute garlic and onion.
2. Add vegetables, oyster sauce, salt and pepper then stir cook for 4 minutes.
3. Transfer into bowl and set aside.

Part 3
1. In a same pan, heat oil then stir fry beef for 3 minutes.
2. Add cooked vegetables then toss and cook for another minute.
3. Transfer to serving plate then serve immediately with steamed rice.
