Chicken Afritada Recipe

Filipino Style Recipe: chicken afritada recipe is basic Filipino tomato-based stew consisting of chicken in tomato sauce with potato, carrots and bell pepper.

Estimated time of preparation and cooking: 40-50 minutes
Good for 4-6 persons

Ingredients:
3/4 kilo chicken, cut into serving pieces
250 grams tomato sauce
1 large potato, quartered
1 large carrot, sliced
1 large bell pepper, sliced
1 cup green peas
4 cloves garlic, minced
1 medium onion, diced
4 pieces hotdogs, sliced
1-1/4 cups chicken stock
2 pieces bay leaves(laurel)
4 tablespoons cooking oil
1 teaspoon sugar
Salt and pepper to taste
1/4 cup soy sauce
1/2 lemon or calamansi juice

Procedures:
Part 1
1. In a bowl, marinate the chicken in soy sauce and lemon juice for 30 minutes.
Part 2
1. In a saucepan, heat cooking oil and pan-fry the chicken until the color turns light brown. Set aside
2. Saute garlic and onions. Add the sliced hotdogs and chicken then cook for a minute.
3. Pour-in tomato sauce and chicken stock then add bay leaves. Simmer for 20 minutes.
4. Add the potato and carrots then simmer for 7 minutes or until the vegetables are tender.
5. Add bell pepper and green peas. Adjust seasoning with salt, sugar and ground black pepper.
6. Simmer for another 3 minutes then remove from heat.
7. Serve with steamed rice. Enjoy!

Chicken a la King

Filipino Style Recipe: chicken ala king is a recipe consisting of diced chicken in a cream sauce. Often with mushrooms and vegetables. This is usually served over toasted bread, pasta or steamed rice.

Estimated time of preparation and cooking: 30 minutes
Good for 4 persons

Ingredients:
3 cups pre-boiled chicken fillet, cut into cubes
1 carrot, cut into cubes
1/3 cup sweet peas
1 cup button mushrooms, sliced
2 cups evaporated milk
1/4 cup all-purpose flour
1 1/2 cups chicken broth
1 onion, chopped
3 tablespoons butter or margarine
salt and pepper to taste
1/2 cup green bell pepper, diced(optional)

Procedures:
1. In a saucepan, melt butter the saute onion, mushrooms and bell pepper for 5 minutes.
2. Add flour, milk and chicken both then stir constantly until smooth.
3. Add sweet peas and carrots then stir cook for 3 minutes.
4. Add chicken, salt and pepper then continue cooking until thick and begins to bubble.
5. Transfer to serving bowl then serving with steamed rice. Serve hot!

Tips:
1. If you’d like a thicker sauce: dissolve 2 tablespoons cornstarch in 1/4 cup water, add to sauce a little at a time, until desired thickness is reached.

Chicken Macaroni Recipe

Filipino Style Recipe: chicken macaroni recipe is usually made with shredded chicken meat, macaroni noodles, mayonnaise, salt and pepper. Add with carrots, pineapple tidbits, pickles, hard-boiled eggs and cheese make the recipe more delicious. This is usually served as appetizer.

Ingredients
200 grams macaroni noodles
2 medium-sized carrots
1 big chicken breast
500 ml mayonnaise
1 big white onion, finely chopped
1/2 cup sweet pickle
1 cup cheddar cheese, diced
3 hard-boiled eggs, diced(optional)
1 can(836 grams) pineapple tidbits(optional)
1/2 cup raisins(optional)
salt and pepper to taste

Procedures:
Part 1
1. Cook macaroni noodles according to package cooking instructions.
Part 2
1. In a pot, boil carrots in water for 15 minutes or until cooked.
2. Drain carrots and let cool. Peal skin then dice.
Part 3
1. Boil chicken breast in water with salt. Drain chicken breast, then shred in 1 inch lengths
Part 4
1. Drain pineapple tidbits.
Part 5
1. Combine all ingredients while adding salt and pepper to taste.
2. Refrigerate. Serve with lettuce.

Chili con Carne

Filipino Style Recipe: chili con carne is a spanish dish basically made from chopped or ground beef with dried chili peppers, garlic, onions and cumin. It has a strong flavor and spicy taste which is ideal as dipping sauce or serve with rice.

Ingredients
500 grams ground beef
1 large onion, chopped
4 cloves garlic, chopped
1 tablespoon olive oil
2 teaspoons cayenne or chili powder
1 medium-sized red bell pepper, chopped
2 tablespoons tomato paste
2 large-sized tomatoes, chopped
1 small can(300 grams) cooked red kidney beans, drained(optional)
1-2 teaspoons dried or fresh oregano(optional)
1 teaspoon cumin
1 cup beef stock or water
Salt and pepper to taste

Procedures
1. In a saucepan, heat the olive oil and add the ground beef. Cook over a medium heat until color turns to brown.
2. Saute the onion, garlic and chilli. After sauteing, mix with ground beef and simmer for 2 minutes.
3. Add beef stock, tomato paste and tomatoes then simmer for 20 minutes. Add more water if necessary.
4. Add the beans, oregano, cumin and bell pepper then adjust seasoning according taste.
5. Serve with corn chips.

Paksiw na Pata Recipe

Filipino Style Recipe: paksiw na pata recipe is a Filipino dish basically pork leg cooked in vinegar, soy sauce and dried banana blossom. This recipe has a sweet and sour taste sauce and the meat should almost separates from the bone. The banana blossom makes the recipe well blended that gives an extraordinary taste. This is another mouth-watering main dish that is truly enjoyed by most Filipinos.

Ingredients:
1 pork leg(pata), cut into serving pieces
1/2 cup soy sauce
1/4 cup vinegar
1/2 cup brown sugar
1/2 cup dried banana blossom(bulaklak ng saging), soaked in water
2 bay leaves(laurel)
3 cloves garlic, chopped
1 small onion, sliced
1 teaspoon peppercorn
2 cups water
salt to taste

Procedures:
Part 1
1. In a pot, place pork leg with water(just enough to cover the meat) then bring to a boil. Strain the meat and discard the water.
Part 2
1. In a same pot, Put back the pork leg and add enough water to cover the meat. Bring to boil.
2. Add soy sauce, peppercorn, onion and garlic.
3. Simmer over low heat for 1 to 1 1/2 hours or until pata is tender and sauce is thickens. Add water if necessary.(Cook in pressure cooker takes 30 minutes).
4. Add vinegar and simmer for another 10 minutes.
5. Add the banana blossom and simmer for another 5 minutes.
6. Add brown sugar and salt to taste. Simmer for another 2 minutes.
7. Remove from heat. Serve and enjoy!

Beef Mechado Recipe

Filipino Style Recipe: beef mechado is another tomato based dish consists of a beef, potatoes, and tomato sauce. This dish is usually seasoned with onion, soy sauce, bay leaves and vinegar. Beef mechado is almost similar to several other beef dishes such as kalderata, adobo and kare-kare.

Estimated time of cooking: 70-80 minutes
Good for 4-6 persons

Ingredients:
1 kilo beef with fat, cut into cubes
2 1/2 cups tomato sauce
2 onions, quartered
3 bay leaves(laurel)
3 medium potatoes, quartered
1 red bell pepper, sliced
1 cup soy sauce
3 cups beef stock or beef cubes dissolved in water
salt and pepper to taste
cooking oil for frying
2 carrots, cut into cubes(optional)
1/4 cup vinegar(optional)

Procedures:
Part 1
1. In a frying pan, heat oil then fry potatoes and carrots until light brown. Drain and set aside.

Part 2
1. In a casserole, combine the beef, onions, tomato sauce, soy sauce, bay leaves and beef stock.
2. Boil for at least 1 hour or until beef is tender, Add water as needed.
3. Add vinegar and simmer for 2-3 minutes. Do not stir.
4. Add bell pepper, potatoes and carrots then cook for 3 minutes or until tender.
5. Adjust seasoning with salt and pepper according to taste. Add sugar if you prefer.
6. Remove from heat and transfer to serving plate then serve with steamed rice.

Pininyahang Manok Recipe

Filipino Style Recipe: Pininyahang Manok(Pineapple Chicken) is a chicken dish that commonly served by Filipinos. Basically the chicken marinate in pineapple juice then cook with pineapple chunks, fresh vegetables, and spices. Some added evaporated milk or coconut milk to make the sauce creamy. The tender of chicken and the sweet and sour taste of pineapple make this dish irresistible. This is truly a mouth-watering dish and my family’s favorite.

Estimated time of cooking: 20-30 minutes
Good for 4-6 persons

Ingredients:
1 kilo chicken, cut into serving pieces
2 red and green bell pepper, cut into cubes
1 cup pineapple chunks
1/2 cup pineapple juice
1 medium onion, chopped
3 cloves garlic, chopped
1 thumb-sized ginger, minced
3 tablespoons sugar
3 tablespoons soy sauce
1 teaspoon fish sauce or salt
1 teaspoon ground pepper
3 tablespoons cooking oil or butter

1 medium carrots, cut into cubes(optional)
2 medium potatoes, cut into cubes(optional)

Procedures:
Part 1
1. Sprinkle chicken meat with salt and pepper then marinate in pineapple juice for at least 30 minutes. Reserve marinade.

Part 2
1. In a pan, heat cooking oil and fry carrots and potatoes until light brown. Drain and set aside.

Part 3
1. In the same pan, reduce oil then saute onion, garlic and ginger until fragrant.
2. Add chicken meat then continue sauteing until golden brown.
3. Add soy sauce and marinade then simmer for 15 minutes or until chicken is almost tender. Add little water if necessary.
4. Add pineapple chunks, carrots, potatoes and bell pepper then simmer for 3 minutes.
5. Season with sugar and salt according to taste then simmer until vegetables are tender.
6. Remove from the heat then transfer to serving bowl. Serve with steamed rice.

Tips:
1. You can also add 1/2 cup evaporated milk if you prefer.

Pork Asado Recipe

Filipino Style Recipe: Pork Asado or Asadong Baboy is a red-colored sweetmeats with sweet sauce. You can’t go wrong in preparing this recipe since the procedure is simple, all you have to do is marinade the meat in a mixture of  seasonings and boil it until tender.

Good for 4-6 persons.

Ingredients
1 kilo pork(belly, loin, shoulder) or any part with thin layer of fat
1/2 cup soy sauce
2 pieces star anise
2 bay leaf
1 tablespoons peppercorns
4 tablespoons sugar
1 head garlic, minced
1 onion, chopped
1-2 cups of water or 4 pineapple juice

Procedures:
1. In a large bowl, combine all the ingredients then mix well.
2. Prick the pork meat with a fork in several places and marinade for an hour.
3. Heat a pan in low heat, put the marinated pork along with the marinate.
4. Pour water then bring to boil.
5. Add brown sugar and mix well.
6. Simmer for about 40 minutes until both sides of the meat are tender. Adjust seasoning according to taste.
7. Remove the meat from heat and cool to room temperature. Cut into 1/4 inch slices.
8. Arrange on a serving plate and top with the thick sauce.
9. Serve and enjoy!

Spicy Buffalo Wings Recipe

Filipino Style Recipe: Spicy Buffalo Wings are considered as an American dish. It is traditionally fried unbreaded and then coated in sauce. The classic buffalo style chicken wings is composed of vinegar-based cayenne pepper hot sauce and butter.

INGREDIENTS:
For Breading Mix
1 kilo chicken wings, tips removed
1 cup Flour
1 tablespoon Paprika
1 tablespoon Cayenne Pepper
1 tablespoon Salt
1 tablespoon Ground Pepper
1 tablespoon Thyme(optional)

For Buffalo Sauce
3/4 cup Hot Sauce
1/4 cup Brown Sugar
1/2 cup Butter or margarine
1 tsp Ground Pepper
2 tsp Garlic Powder
1 tsp Cayenne Pepper(optional)
2 tbsp Honey(optional)

For Cheese Dip(optional)
1/2 cup Mayonnaise
1 tablespoon Garlic Powder
2 tablespoon Cheese Spread
2 tablespoon Parmesan Cheese
1/2 teaspoon ground black pepper

Procedures:
Part 1
1. In a small bowl, combine all the ingredients for breading mix.
2. Coated the wings with the breading mix evenly.
3. In a deep pan, heat enough oil to cover the wings entirely.
4. Fry wings for about 8-10 minutes in medium heat or until color turns to golder brown.
5. Drain and set aside.
Part 2
1. In a small pan, heat butter in a low heat until melted.
2. Add all the remaining ingredients for buffalo sauce, stir well to keep it from curdling. Cook for 2-3 minutes.
3. Place the fried chicken wings in a large bowl, add the buffalo sauce and mix until all the wings coated evenly.
4. Serve with celery sticks.

For Cheese Dip:
1. In a small bowl, combine all the ingredients for cheese dip.

Kare-kare Recipe

Kare-kare is a popular Filipino recipe especially in the Pampanga region and any Filipino fiesta. This dish is made from peanut sauce with a variety of vegetables, oxtail and tripe. Occasionally beef meat and innards. Some use goat meat and chicken as alternative meat. It is often eaten with shrimp paste.

Good for 5-7 persons.

Ingredients:
1/2 kilo oxtail, cut in chucks
1/2 kilo tripe or beef sirloin, cut in chucks
4 pieces eggplant, cut in small pieces
1 bundle bok choy(pechay), cut into 2 pieces
1 bunch of string beans(sitaw), cut in 2-inch long
1 banana heart(puso ng saging), sliced diagonally (optional)
1 cup peanut butter
1 cup ground peanuts(optional)
1/2 cup toasted ground rice or rice flour
2 heads garlic, minced or chopped
2 pieces onions,chopped
3 tablespoon cooking oil
8 cups of water
1/2 cup annatto seeds(atsuete)
salt and pepper to taste
1/2 cup shrimp paste(bagoong alamang)

Procedures:
Part 1
1. In a large pot, Boil oxtail, tripe and onions in water for about 1-2 hours until meat is tender. Lesser time if using a pressure cooker.
2. Remove the scums as it rises. Add more water if needed.
Part 2
3. In a bowl, mix peanut butter, ground peanuts, toasted ground rice and annatto seeds with 1/2 cup of water and pour it in the pot, discards seeds.
4. Stir to blend well. Cook for another 5-10 minutes until the sauce is thick.
Part 3
5. In a separate pan, heat oil and saute the garlic, add the vegetables and continue cooking for another 5 minutes. Do not over cook the vegetables.
6. Add the cooked vegetables to a large pot. Add salt and pepper according to taste.
7. Serve hot with shrimp paste.
