Crispy Oyster Mushroom

Ingredients:
150 grams oyster Mushroom, clean, rinse and pat dry
cooking oil for frying

Batter:
2/3 cup flour
1/2 cup cornstarch
1 cup ice cold water
1 tablespoon sesame oil
salt and white pepper to taste

Procedures:
1. In a bowl, combine batter ingredients and whisk well. Mixture should not too runny or thicken.
2. In a pan, heat enough oil for frying.
3. Dip oyster mushroom into batter then fry until medium brown. Drain on paper towel.
4. Transfer to serving bowl then serve with your favorite dip.

Sweet Chicken Adobo

Filipino Style Recipe: Sweet Chicken Adobo is another variety of popular Filipino Adobo. This dish has sweet sauce compare to the traditional chicken adobo. The chicken marinated in sweet soy sauce, vinegar and other spices. Fry the chicken until golden brown then cooked in marinade until tender. Season with sugar according to taste.

Ingredients:
500 grams chicken, cut into serving pieces
1/2 cup sweet soy sauce
1/3 cup vinegar
6 cloves garlic, crushed
1 teaspoon peppercorns
3 pieces bay leaves(laurel)
2 tablespoons sugar
salt to taste
1/4 cup cooking oil
1-2 cups chicken broth

Procedures:
Part 1
1. In a pot, combine chicken, garlic, bay leaves, peppercorns, sweet soy sauce and vinegar.
2. Marinate chicken for at least 30 minutes.
3. Drain garlic and chicken then reserve the sauce. Set aside.

Part 2
1. In a sauce pan, heat oil and fry marinated chicken for 5 minutes or until golden brown.
2. Reduce oil to 1 tablespoon. Add garlic then fry until light brown.
3. Pour marinade and chicken broth then simmer for 20-30 minutes or until chicken is tender.
4. Add sugar then season with salt according to taste.
5. Remove from heat then transfer to serving bowl. Serve with steamed rice.

Spicy Hotdog and Cheese

Filipino Style Recipe: Spicy Hotdog and Cheese is another simple yet delicious dish made of hotdog and cubed cheese cooked in spicy red sauce. This can be served as appetizer or pulutan together with ice cold beer.

Ingredients:
8 pieces hotdog, cut into 1 inch thick
100 grams cheddar cheese, cut into 1 inch cubes
100 grams tomato sauce
1 1/2 tablespoons hot sauce
1 white onion, chopped

Procedures:
1. In a pan, heat oil then saute hotdog until cook.
2. Add onion, cheese, tomato sauce and hot sauce then cook for 3-5 minutes.
3. Transfer to serving plate or sizzling plate. Serve immediately.

Crispy Orange Beef

Filipino Style Recipe: Crispy Orange Beef recipe is another mouth-watering beef dish. Normally the beef comes fried in a crispy batter then tossed in thick sauce made of orange juice, orange zest, sugar, vinegar, soy sauce and oyster sauce.

Ingredients:
500 grams beef sirloin, sliced thinly
2 teaspoons orange zest
orange slices, cut into small pieces
1 thumb-sized ginger, grated
3 cloves garlic, minced
250 grams broccoli florets, steamed or blanched (optional)
oil for frying

Cornstarch Mixture:
1/4 cup cornstarch
1/4 teaspoon ground pepper
1/4 teaspoon salt

Orange Juice Mixture:
3 tablespoons orange juice
3 tablespoons cup sugar
3 tablespoons vinegar
1 tablespoon soy sauce
1 tablespoon oyster sauce
1/4 teaspoon salt

Procedures:
Part 1
1. In a bowl, combine cornstarch, ground pepper and salt then mix well.
2. Pat dry the beef strips then dredge on cornstarch mixture.
3. Shake off excess cornstarch then refrigerate for 30 minutes.

Part 2
1. In a small bowl, combine orange juice mixture then mix well. Set aside.
2. In a pan, heat oil then fry beef until golden brown. Drain and set aside.

Part 3
1. In a same pan, remove excess oil except 1 tablespoon.
2. Saute garlic, ginger and orange zest for a minute.
3. Pour orange juice mixture and orange pieces then simmer until almost thickens.
4. Add fried beef then toss to coat evenly.
5. Transfer to serving plate then serve with steamed broccoli.

Shredded Fish Penne

Filipino Style Recipe: Shredded Fish Penne recipe is my invention during the holy week. It is a low calorie dish that is full of flavor. It is basically made of left over paksiw fish that is shredded and cooked in olive oil, tomatoes, and others.

Good for 3-4 servings
Estimated time of preparation and cooking: 40 minutes

Ingredients:
250 grams whole wheat penne pasta
2 pieces tulingan
1/4 cup vinegar
3 cloves garlic
3 tablespoon olive oil
4 pieces tomatoes
4 pieces anchovy fillet
2 tablepoon olives
fish sauce
salt and pepper
pinch of chili flakes

Procedures:
Part1
1. Cook fish in vinegar, salt, and pepper.
2. Once cooked, let it cool. Remove meat from head and bones, then shred.

Part 2
1. Cook pasta according to package instruction. Drain and mix olive oil. Set aside.
2. Over low heat. saute garlic until transluscent. Add the anchovies and olives then stir until flavor and aroma comes out around 2-3 minutes.
3. Turn heat to medium then add the tomatoes and saute until soft.
4. Pour the shredded fish and cook for around 5 minutes. Add the chili flakes.
4. Add the cooked pasta and season with fish sauce. Mix well until well combined.

Buffalo Shrimp

Filipino Style Recipe: Buffalo Shrimp is another variety of American buffalo dish. Instead of traditional chicken wings, we used shrimp as main ingredient. The shrimp fried unbreaded then tossed in spicy sauce made of hot sauce, hot spices and butter.

Ingredients:
500 grams large-sized shrimp, peeled and deveined, tail intact
1 cup flour
1 teaspoon ground pepper
1 egg, beaten
1 cup milk
oil for frying

Buffalo Sauce:
1/4 cup butter
1/8 teaspoon paprika
1/8 teaspoon cayenne
1/8 ground pepper
2 tablespoons hot sauce
1/8 teaspoon garlic powder
1 tablespoon ketchup (optional)

Procedures:
Part 1
1.In a pan over low heat, combine sauce ingredients then stir until well blended. Cover and keep warm.

Part 2
1. In a bowl, combine egg and milk then mix well.
2. In a separate bowl, combine flour and ground pepper then mix well.
3. Dip the shrimp into egg mixture then dredge into flour mixture. Shake off to remove excess flour.
4.Dip again the shrimp into egg mixture then dredge into flour mixture. Shake off to remove excess flour.
5. Repeat the steps for the remaining shrimp. Set aside.

Part 3
1. In a pan, heat oil then deep fry shrimp for 2 minutes or until light brown. Drain on paper towel.
2. Toss shrimp in buffalo sauce until coated evenly. Transfer to serving plate then serve.

Stir Cooked Bok Choy and Tofu

Filipino Style Recipe: Stir Cooked Bok Choy and Tofu is another simple yet healthy dish. It is consists of bok choy and tofu then we add a choice of vegetables as extender. We cooked together the tofu and vegetables in oyster sauce, oyster sauce, water and sesame oil. We recommend this recipe for vegetarian, health-conscious or those on diet.

Ingredients:
a bunch of bok choy, bottom part removed
300 grams firm tofu, cut into cubes
6 stalks asparagus, cut into serving pieces (optional)
1 medium-sized carrot, peeled and julienned (optional)
3 cloves garlic, minced
1 onion, chopped
salt and pepper to taste

Sauce Mixture:
1/4 cup water
1 tablespoon oyster sauce
1 tablespoon soy sauce
1 tablespoon sesame oil

Procedures:
Part 1
1. In a bowl, combine water, oyster sauce and soy sauce then mix well. Set aside.

Part 2
1. In a pan, heat oil then fry tofu until light brown, drain and set aside.

Part 3
1. In a same pan, reduce oil then sauce garlic and onion.
2. Add bok choy, asparagus, carrots and tofu then pour sauce mixture.
3. Simmer in a low heat for 3-5 minutes or until vegetables are tender.
4. Adjust seasoning according to taste then transfer to serving plate. Serve immediately.

Toasted Garlic Pandesal

Filipino Style Recipe: Toasted Garlic Pandesal is a simple side dish that can be serve together with pasta or with coffee. The pandesal cut into half then spread with garlic-butter mixture. Toast in a oven until crispy and golden.

Ingredients:
4 large-sized whole wheat pandesal, cut in half horizontally
1/2 cup unsalted butter, softened
6 cloves garlic, minced
fresh parsley, minced

Procedures:
Part 1
1. In a small bowl, combine butter, garlic and parsley then mix well.
2. Spread the mixture over the bread then arrange in a baking pan.

Part 2
1. In a preheated oven, bake the bread over 350 degrees Fahrenheit for 10-12 minutes or until crispy and golden.
2. Transfer into serving platter then serve immediately.

Stir Fry Tofu, Asparagus and Mushroom

Filipino Style Recipe: Stir Fry Tofu, Asparagus and Mushroom is another easy and simple to prepare yet a healthy dish. It is a meatless dish that consists of tofu, asparagus, and mushroom stir fry in cornstarch mixture until thickens. This kind of dish is ideal for those on diet and vegetarian.

Ingredients:
250 grams firm tofu, cut into cubes
10 pieces asparagus, cut into 1 inch
115 grams Shiitake mushroom, cut into serving pieces
1 cup cornstarch
4 cloves garlic, minced
1 onion, chopped
2 tablespoons sesame oil
salt and pepper to taste
vegetable oil for frying
toasted sesame oil (optional)

Cornstarch Sauce:
2 teaspoons cornstarch
1 teaspoon sesame oil
2 teaspoons oyster sauce
1 teaspoon soy sauce
1 teaspoon vinegar

Procedures:
Part 1
1. In a bowl, combine, cornstarch, sesame oil, oyster sauce, soy sauce and vinegar. Mix until well combined. Set aside.

Part 2
1. In a bowl, combine cornstarch, salt and ground pepper then mix well.
2. Dredge tofu into cornstarch mixture to coat all sides. Shake off to remove excess cornstarch.
3. In a pan, heat vegetable oil then fry tofu for 3-5 minutes or until light brown. Drain and set aside.

Part 3
1. In a pan, heat sesame oil then saute garlic and onion. Remove from the pan and set aside.
2. In a same pan, stir cook mushroom and asparagus for 3 minutes or until almost tender.
3. Put back fried tofu, garlic and onion then add cornstarch sauce. Adjust seasoning according to taste.
4. Stir cook until almost thickens. Transfer to serving plate then sprinkle with toasted sesame seeds. Serve.

Shrimp Pesto Pasta

Filipino Style Recipe: shrimp pesto pasta is another simple and healthy Italian pasta dish. This dish is consists of shrimp, pasta and pesto sauce that is made of processed basil, pine nuts, extra virgin olive oil, salt and pepper.

Estimated time of preparation and cooking: 30-40 minutes.
Good for 3-4 person

Ingredients:
200 grams Penne pasta or any pasta
250 grams shrimp, peeled and deveined
3 tomatoes, chopped
2 red bell pepper, diced
1 head garlic, minced
1 onion, minced
2 tablespoons olive oil

Pesto Sauce:
3/4 cups fresh basil leaves, chopped
3 tablespoons pine nuts or roasted pili nuts or walnuts
1/3 cup extra virgin olive oil
salt and pepper to taste

Procedures:
Part 1
1. In a large pot, prepare pasta based on cooking instructions. Drain and set aside.

Part 2
1. In a food processor or blender, process chopped basil, pine nuts, salt and pepper until blended.
2. Add extra-virgin olive oil then continue blending until combined. Add more olive oil if needed. Set aside.

Part 3.
1. In a pan, heat oil then add shrimp and cook until color turns to pink. Remove from the pan and set aside.
2. In a same pan, saute garlic, onion, and tomatoes until softened.
3. Add bell pepper and then pesto sauce. Adjust seasoning according to taste.
4. add pasta then toss to coat evenly, add shrimps.
5. Prepare shrimp and pasta on pasta tray then top with Parmesan cheese.
6. Garnish with remaining basil. Serve and enjoy.

Note:
1. You may also use ready made pesto sauce in supermarket.
