Adobong Kambing sa Gata

Filipino Style Recipe: Adobong kambing sa gata or goat meat adobo in coconut milk is another variety of Filipino adobo. Many people do not want the goat meat because of strong smell but boiling it together with ginger and onion helps to lessen the unwanted odor. When the meat is tender, sauteed until brown and cooked it in a blend of soy sauce, vinegar, salt, pepper and coconut milk.

Estimated time of cooking: 20 minutes
Good for 3-4 persons

Ingredients:
1/2 kilo goat meat, cut into serving pieces
1/4 cup soy sauce
1/4 cup vinegar
2 cups coconut cream
1 tablespoon garlic, minced
2 pieces bay leaves
1 cup water
3 tablespoons vegetable oil
1 teaspoon whole peppercorns
1 onion, quartered
1 thumb-sized ginger, chopped
sugar and salt to taste
2 pieces red and green bell peppers, sliced(optional)
1 1/2 tablespoons sauteed shrimp paste(I used Dizon Farm Shrimp Paste),(optional)
a dash of dried chili flakes(optional)

Procedures:
Part 1
1. In a pot, boil enough water to cover the meat then add ginger, onion and salt.
2. Add goat meat then simmer until the meat is tender. Add water if needed, drain and set aside.

Part 2
1. In a pan, heat oil then saute garlic until light brown.
2. Add bay leaf, peppercorn and shrimp paste then continue sauteing for a minute.
3. Add goat meat then stir cook until light brown then add bell peppers.
4. Add water and soy sauce then simmer for 10 minutes.
5. Add vinegar then simmer for 5 minutes or until start to render oil.
6. Add coconut cream and chili flakes then simmer until sauce is half absorbed. Stir occasionally.
7. Adjust seasoning according to taste then transfer to serving plate. Serve with steamed rice.

Atsarang Kangkong

Filipino Style Recipe: Atsara or atcharang kangkong(pickled water spinach) is another variety of popular Filipino pickle. The primary ingredients is kangkong stems(water spinach stems) then mixed with slices of carrots, bell pepper, ginger, onion, garlic and other vegetables. Raisins, pineapple or ground pepper maybe added to complete the mixture. Placed in airtight jars then refrigerate and serve as side dish for fried or grilled food.

Ingredients:
500 grams kangkong stems, cut into 2-3 inch then steamed
1 large carrots, sliced thinly
2 red bell peppers, sliced thinly
1/2 cup raisins
1 large white onion, julienned
2 tablespoons ginger, chopped
1 head garlic, peeled and sliced thinly
100 grams green beans, cut into 1 inch diagonally(optional)
5 pieces dried crab shells(optional)

Picking Solution:
2 cups cane vinegar
2 cups sugar
3 tablespoons salt
1 teaspoon ground black pepper

Procedures:
Part 1
1. In a saucepan, combine vinegar, ginger, onion, sugar, salt and pepper then bring to boil.
2. Add the remaining ingredients then mix well. Turn off the heat and let it cool.

Part 2
1. In a large bottle, place the combined vegetables then pour over the vinegar mixture.
2. Seal tight the bottle then refrigerate for at least overnight before serving. Enjoy:)

Banana Rebosao

Filipino Style Recipe: Banana rebosao or saging rebosado is a sweet delicacy made from crystallized banana. This dish is popular in southern part of Mindanao specially in Zamboanga and Basilan. Bananas comes fried then mix in sugar syrup until well coated and crystallize. This is similar to banana cue but different in cooking procedure.

Estimated time of preparation and cooking: 20 minutes

Ingredients:
1 kilo unripe bananas, peeled and cut into quarter vertically
1 cup brown sugar
1 cup water
oil for frying

Procedures:
1. In a frying pan, heat oil then deep fry bananas for 3-5 minutes or until golden brown. Drain and set aside.
2. In a sauce pan, boil water then add sugar then keep stirring until thick and sticky.
3. Add fried bananas then mix until well coated. Keep stirring until sugar are crystallize and almost dry.
4. Transfer to serving plate and let it cool before serving.

Classic Potato Salad

Filipino Style Recipe: Classic potato salad is one of the popular salad that usually serve in any occasions. It is consists of boiled potato chunks tossed in mayonnaise, bacon tidbits, parsley, spring onion, lemon juice, salt and pepper for salad dressing. This is usually serve as side dish together with your favorite pasta.

Estimated time of preparation: 20-30 minutes. Good for 3-4 persons

Ingredients:
1 kilo potatoes, peeled and cut into chunks
1/2 cup ham or smokey bacon tidbits
1/4 cup parsley, chopped
1/2 cup spring onion, chopped
3 tablespoons lemon or calamansi juice
1/2 cup mayonnaise
1 teaspoon sugar
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1/2 tablespoon mustard(optional)
3 hard-boiled eggs, peeled and chopped(optional)
1/2 cup celery, chopped(optional)

Procedures:
Part 1
1. In a large pot, boil water with salt then cook potatoes for 10-15 minutes or until tender.
2. Drain and Let it cool then place in a large bowl. Set aside.

Part 2
1. In a bowl, combine all the remaining ingredients and stir until well blended.
2. Pour over potatoes then toss gently to coat. Cover and refrigerate for 3 hours before serving.

Honey Sesame Chicken

Filipino Style Recipe: honey sesame chicken is another mouth-watering chicken dish that is commonly served in Chinese restaurants. The chicken comes fried in a crispy batter then tossed in a sweet honey-sesame sauce and served with sprinkled sesame seeds.

Estimated time of cooking: 20 minutes
Good for 4 servings

Ingredients:
3/4 kilo chicken fillets, cut into cubes
toasted sesame seeds for garnishing
cooking oil for frying

Coating:
1 raw egg, beaten
1/4 teaspoon salt
1/4 teaspoon ground pepper
5 tablespoons cornstarch

Sauce:
1 tablespoons sesame oil
3 garlic cloves, minced
1 teaspoon grated ginger
3 tablespoons honey
2 tablespoons sugar
1 tablespoon vinegar
salt and pepper to taste
2 teaspoons cornstarch(dissolved in 3/4 cup water)
2 tablespoons ketchup(optional)
1/4 teaspoon dried chili flakes(optional)

Procedures:
Part 1
1. In a bowl, combine the chicken and coating ingredients then stir to coat the chicken evenly. Let sit for 15 minutes.
2. In a frying pan, heat cooking oil and deep fry chicken for about 7 minutes or until color turns to golden brown. Drain and set aside.

Part 2
1. In a sauce pan, heat sesame oil then saute ginger and garlic.
2. Add the rest of sauce ingredients then simmer while keep stirring until slightly thickens. Turn off heat.
3. Add chicken pieces then toss to coat. Transfer to serving plate then sprinkle with sesame seeds.

Latik(Coconut Curds)

Filipino Style Recipe: Latik is a solid coconut curds made from coconut milk. The coconut milk cook until almost dry and curdle, this is usually serve together with suman, biko, maja blanca and other desserts.

Good for 1/4 cup latik

Ingredients:
2 cups coconut milk

Procedures:
1. In a sauce pan, cook coconut milk in a low heat while keep stirring until brown and curdle.
2. Remove from heat and drain then serve with suman or biko.

Salt and Pepper Crab

Filipino Style Recipe: Salt and pepper crab is another simple and easy seafood dish that is commonly served in Chinese restaurant. The crabs deep fried and stir cooked in scallion, butter, salt and pepper. This is usually served as appertizer or pulutan together with dipping sauce.

Estimated time of preparation and cooking: 20 minutes

Ingredients:
1 kilo fresh mud crabs, cleaned
5 tablespoons cornstarch
5 cloves garlic, minced
2 tablespoons chopped scallion
3 tablespoons olive oil
cooking oil for deep frying
salt and pepper to taste
2 tablespoons butter(optional)
1/8 teaspoon dried chili flakes(optional)

Procedures:
Part 1
1. Sprinkle cornstarch over crabs then deep fry for 5 minutes. Drain on paper towel.

Part 2
1. In a pan, heat olive oil and butter then saute garlic, scallion and chili flakes.
2. Add fried crabs then sprinkle with salt and pepper. Stir cook for a minute.
3. Remove from heat then transfer to serving plate and serve with spicy vinegar.

Chicken Curry Noodle Soup

Filipino Style Recipe: chicken curry noodle soup is a popular Asian noodle soup. This dish is consists of chicken pieces cooked in curry powder, chicken stock and coconut milk then serve with noodles. I also add potatoes and tokwa as extender. The soup has flavorful and spicy taste which is good to serve during rainy season and cold weather.

Estimated time of preparation: 15 minutes
Estimated time of cooking: 40-50 minutes
Good for 6-8 servings

Ingredients:
200 grams egg noodles
500 grams chicken, cut into serving pieces
1.2 liters chicken stock
400 ml coconut milk
3 potatoes, cut into cubes
350 grams tokwa, cut into cubes
2 onions, chopped
6 gloves garlic, minced
3 tablespoons vegetable oil
3 tablespoons curry powder(dissolved in 1 cup chicken stock)
2 tablespoons calamansi or lime juice
fish sauce and ground pepper to taste
1 teaspoon rosemary(optional)
1 chicken bouillon(optional)

Procedures:
Part 1
1. In a large pot, prepare noodles based on cooking instructions. Drain and set aside.
2. In a pan, heat oil then fry potatoes and tokwa. Drain and set aside.

Part 2
1. In a same pan, reduce oil then saute garlic, onion and rosemary.
2. Add chicken then stir cook until light brown. Season with fish sauce and ground pepper.
3. Add dissolved curry powder, chicken stock, coconut milk and chicken bouillon then simmer until chicken is tender.
4. Add fried potatoes, tofu and calamansi juice then adjust seasoning according to taste. Simmer for a couple minutes.

Part 3
1. In a large bowl, Add cooked noodles then pour chicken curry soup. Serve hot.

Creme Brulee

Filipino Style Recipe: Creme brulee also known as trinity cream or burnt cream is one of my favorite dessert. It is consists of heavy cream, egg yolks and sugar then topped with caramelized sugar. This is traditionally flavored with vanilla and sometimes can also be flavored with chocolate, cinnamon, coffee, lemon, orange or other fruits.

Estimated time of preparation: 15-20 minutes
Estimated time of baking: 40-50 minutes
Good for 6 ramekins

Ingredients:
6 egg yolks, beaten
2 1/2 cups heavy cream
1/2 cup granulated sugar
1/8 teaspoon salt
1 tablespoon vanilla extract

Procedures:
Part 1
1. In a sauce pan, combine heavy cream and sugar then simmer until sugar is dissolved. Let it cool.
2. In a bowl, combine beaten egg yolks, cream mixture, salt and vanilla then whisk until thick and well blended.
3. Fill up each ramekins with egg-cream mixture then arrange in a shallow pan.

Part 2
1. Fill the pan with hot water until halfway of ramekins then bake over 350 degrees Fahrenheit for 40-50 minutes or until custard is set.
2. Let it cool then cover each ramekins with aluminum foil and refrigerate until ready to serve.

Part 3
1. Sprinkle each ramekins with sugar then shake off the excess sugar.
2. Caramelize the sugar using kitchen torch or broiler until color turns to amber. Serve!

Mixed Fruit Shake

Filipino Style Recipe: mixed fruit shake is another healthy and refreshing beverage consists of different fruits blended together with fresh milk and ice cubes. This refreshing beverage is similar to other healthy shakes and best to serve during summer season.

Estimated time of preparation: 5-8 minutes
Good for 2 glasses

Ingredients:
2 cups mixed fruits, cut into cubes(I used watermelon, avocado, pineapple)
3 tablespoons sugar or any sweetener
1/4 cup fresh milk
1 cup ice cubes

Procedures:
1. In a blender, combine fruits, milk and sugar then process until blended.
2. Add ice and blend until smooth, add more sugar if needed.
3. Pour into glasses then served cold.
