Chicken Bicol Express

Filipino Style Recipe: Chicken Bicol express is another variety of popular Bicol express which has a creamy and spicy flavor. Like the usual Bicol express made of pork meat, chicken is saute until brown then cook in coconut milk and shrimp paste together with green chili and red chili.

Estimated time preparation and cooking: 30-40 minutes
Good for 3-4 persons

Ingredients:
3/4 kilo chicken fillet, cut into serving pieces
1/2 cup long green peppers(siling pangsigang) or baguio beans, cut diagonally
3 cups coconut milk
1 tablespoon sauteed shrimp paste(bagoong alamang)
3 cloves garlic; minced
1 small onion; chopped
3 pieces red chili(siling labuyo)
2 tablespoons vegetable oil
Fish sauce or salt to taste

Procedures:
Part 1
1. In a bowl with water and salt, soak green peppers for 30 minutes then rinse and drain.

Part 2
1. In a pan, heat vegetable oil then saute garlic and onion.
2. Add chicken then continue sauteing until colors turn to brown.
3. Add the shrimp paste and ground pepper then stir for another minute.
4. Pour coconut milk then bring to a boil until reduced.
5. Add the green peppers and red chili then season with salt according to taste.
6. Remove from heat then serve with steamed rice. Enjoy!

Baked Breaded Fish Fillet

Filipino Style Recipe: Baked breaded fish fillet is another easy and simple fish dish. The fish fillet is usually marinated then dredge in flour, eggs and breadcrumbs. Bake until golden brown then serve with dipping sauce.

Estimated time of preparation: 10 minutes(plus marinating time)
Estimated time of baking: 25-30 minutes
Good for 3-4 persons

Ingredients:
1 kilo boneless fish fillet(tilapia, milkfish, salmon, snapper)
1 1/2 cup all purpose flour
1 1/2 cup bread crumbs
2 eggs, beaten
1 tablespoon sesame oil

Marinade:
3 cloves garlic, minced
4 tablespoons calamansi or lime juice
salt and pepper to taste
cooking oil for frying

Procedures:
Part 1
1. Marinate fish in calamansi juice, paprika, salt and pepper for 10 minutes.
2. In a bowl, add beaten eggs and sesame oil. whisk well and set aside.
3. Dredge the fish in flour and shake off to remove excess flour.
4. Dip fish in egg mixture and press into bread crumbs to coat both sides.

Part 2
1. Preheat oven to 375 degrees Fahrenheit.
2. Arrange breaded fish fillet in a baking pan then drizzle with olive oil.
3. Bake for 25-30 minutes or until golden brown.
4. Remove from the oven then transfer into serving plate with sour cream.

Button Mushroom Adobo sa Gata

Filipino Style Recipe: button mushroom adobo sa gata or adobong kabute sa gata is another variety adobo dish. This dish is healthier because we will use mushrooms instead of meat. We will also include coconut cream to produce creamy and tasty flavor. The procedure is easy and simple, saute button mushrooms in vinegar and coconut cream then cook until thicken.

Estimated time of preparation and cooking : 10 minutes
Good for 2 persons

Ingredients:
400 grams button mushrooms, whole
1 cup coconut cream
4 tablespoons vinegar
1 tablespoon olive oil
3 gloves garlic, minced
salt and pepper to taste
parsley or spring onions for garnishing(optional)

Procedures:
1. In a pan, heat oil and saute garlic and mushrooms until lightly browned.
2. Season with salt and pepper.
3. Pour vinegar and simmer for 1 minutes.
4. Add coconut cream and simmer until thicken. Stir constantly.
5. Transfer to serving plate and garnish with chopped parsley. Serve immediately.

Stir Fried Beef and Togue

Filipino Style Recipe: stir fried beef and togue is another simple yet delicious dish. This dish is commonly serve in Chinese restaurants. The beef strips marinated in a blend of soy sauce, oyster sauce, garlic,  sugar, salt and pepper then cook and simmer together with sprouted mung beans until the meat is tender. This is one of my favorite dish and my family really loves it.

Estimated time of preparation: 10 minutes(plus marinating time)
Estimated time of cooking: 40-50 minutes
Good for 3-4 persons

Ingredients:
300 grams beef sirloin, sliced thinly into strips
2 cups togue(sprouted mung beans)
3 cloves garlic, minced
1 onion, chopped
1 red bell pepper, diced
1/4 teaspoon chili flakes(optional)
4 tablespoons cooking oil

Marinade:
1/4 cup soy sauce
1/4 cup oyster sauce
1/4 cup water or soda
4 tablespoons brown sugar
salt and pepper to taste

Procedures:
Part 1
1. Marinate beef in garlic, soy sauce, oyster sauce, sugar, salt and pepper for 2 hours or overnight inside the fridge.

Part 2
1. In a pan, heat oil then saute garlic, onion and bell pepper.
2. Add marinated beef, marinade, water then simmer in a low heat for 30 minutes or until tender. Add more water if necessary.
3. Season with sugar, salt and pepper according to taste.
4. Add sprouted mung beans, chili flakes then stir cook for 3 minutes.
5. Transfer to serving plate then serve hot with steamed rice.

Ginisang Sigarilyas

Filipino Style Recipe: ginisang sigarilyas or sauteed winged beans is another healthy yet affordable dish. The procedure is very easy and simple, normally the chicken or pork sauteed until brown then cook and simmer with winged beans until tender. Season with bagoong na isda or fish sauce according taste then serve with rice.

Estimated time of preparation and cooking: 20-25 minutes
Good for 2-3 persons

Ingredients:
1 bunch winged beans(sigarilyas), sliced
300 grams chicken fillet or pork
3 cloves garlic, minced
1 onion, chopped
2 tablespoons fermented fish sauce(bagoong na isda)
1 cup water or chicken/pork stock
2 tablespoons vegetable oil
salt and pepper to taste

Procedures:
1. In a pan, heat oil and saute garlic and onion.
2. Add chicken fillet and stir cook until brown then season with bagoong and pepper.
3. Pour water and bring to boil then add sigarilyas.
4. Cook for 3-5 minutes or until cook then adjust seasoning according to taste.
5. Remove from heat then serve with steamed rice. Enjoy.

Ginisang Upo with Sardines

Filipino Style Recipe: Ginisang upo with sardines is another easy and simple vegetable dish. The white squash or upo is cook together with sardines until done. I always prepare this dish if I want a healthy dish in a tight budget.

Estimated time of preparation: 20 minutes
Estimated time of cooking: 15-20 minutes

Good for 3-4 servings

Ingredients:
1 medium-sized White Squash(Upo), peeled, discard seeds and sliced
1 large can sardines in tomato sauce
5 cloves garlic, crushed
1 medium-sized onion, diced
1/4 cup water
2 tablespoon cooking oil
fish sauce or salt and pepper to taste

2 medium-sized tomatoes, diced(optional)

Procedures:
1. In a pan, heat oil over medium heat then saute garlic and onions.
2. Add white squash then cover and simmer for another 5 minutes.
3. Add sardines and water then simmer for 3 minutes or until the white squash is cook.
4. Adjust seasoning with fish sauce and pepper.
5. Transfer to serving plate then serve hot with steamed rice.

Ginataang Pusit

Filipino Style Recipe: Ginataang pusit or squid in coconut cream is another easy and simple squid dish. The squid cook in coconut cream and other spices until tender. Avoid to overcook the squid because it will become rubbery texture and tough.

Estimated time of preparation: 8 minutes
Estimated time of cooking: 5-8 minutes
Good for 3-4 persons

Ingredients:
1 kilo fresh squid
2 cups coconut cream
4 cloves garlic, minced
1 onion, chopped
1 small piece ginger, sliced
3 long green peppers(siling haba), chopped(optional)
2 pieces bay leaves(laurel)
4 tablespoons calamansi or lime juice
2 tablespoons cooking oil
salt and pepper to taste

Procedures:
Part 1
1. To clean the squid, pull the head and remove the plastic-like cartilage.
2. Then push the head in, popping out the hard “beak” and discard it.
3. Rub off the outer skin leaving the white meat then wash the squid very well under running water.
4. Cut into rings then set aside.

Part 2
1. In a pan, heat cooking oil then saute the ginger, onions and garlic.
2. Add the squids and calamansi juice then stir cook for a few seconds.
3. Pour coconut cream, bay leaves, green chili then bring to boil. Add a little water if necessary.
4. Season with salt and ground pepper then simmer uncovered for a minute(Don’t overcooked, squid will become tough).
5. Remove from heat then serve hot immediately.

Crispy Fried Fishkatsu

Filipino Style Recipe: crispy fried fishkatsu is another low-carbohydrate fish dish. This dish is similar to Japabese pork tonkatsu. Fish fillet is usually marinated then dredge in flour, eggs and breadcrumbs. Dip fry the fish until golden brown then serve with dipping sauce.

Ingredients:

4. Transfer the fishkatsu into serving plate with sour cream or katsu sauce and shredded cabbage on the side. Enjoy!

Salisbury Onion Burger Patties

Filipino Style Recipe: Salisbury onion burger patties recipe is a popular dish in United States and similar to burger steak. It is consists of beef patties serve with gravy or brown sauce and best to serve with mas potatoes and steamed veggies.

Estimated time of preparation and cooking: 30-40 minutes
Good for 8 burger patties

Ingredients:
Burger Patties
1/2 kilo ground beef
1/2 egg, beaten
4 cloves garlic, minced
1/4 cup breadcrumbs
1/4 teaspoon salt
1/2 teaspoon ground pepper

Gravy Sauce
1 large white onion, slice into rings
3 cups beef stock
2 tablespoons flour
3 tablespoons soy sauce
1 1/2 tablespoon butter
1 tablespoon brown sugar
1/2 teaspoon ground pepper

Procedures:
Part 1
1. In a bowl, combine ground beef, egg, garlic, breadcrumbs, salt and pepper. Mix thoroughly.
2. Divide the mixture into serving pieces. Roll the mixture into balls and flatten on an even surface.
3. grill or fry patties until color turns to light brown. Drain on paper towels and set aside.

Part 2
1. In another pan, heat oil then melt butter.
2. Add onion and saute until soft. Remove from the pan and set aside.

Part 3
1. In a same pan, pour soy sauce and beef stock then bring to boil.
2. Add flour then stir constantly until the sauce becomes thick.
3. Add butter, sugar and ground pepper then stir until well blended.
4. Add patties and onion then simmer for another minute.
5. Transfer to serving plate then serve with mash potatoes and steamed veggies.

Fish Fillet Ala Pobre with Tomato-Mango Salsa

Filipino Style Recipe: Fish fillet ala pobre with tomato-mango salsa is an easy and simple dish made of fried fish fillet topped with fried garlic and tomato-mango mixture. I got this idea from one of the morning show when a popular catering Chef executed on how to make this dish.

Estimated time of preparation and cooking: 20-30 minutes
Good for 4 servings

Ingredients:
4 pieces fish fillet (tilapia, salmon, snapper)
1 head garlic, grind
1/4 cup butter
2 tablespoons soy sauce or Worcestershire sauce
salt and pepper to taste
canola oil for frying

Tomato-Mango Salsa:
4 pieces tomatoes(kamatis), cut into small pieces
1 medium-sized green mango(mangga), cut into small pieces
1 onion, cut into small pieces
1/4 cup soy sauce or Worcestershire sauce
1/2 teaspoon ground pepper

1 tablespoon tomato sauce(optional)
1 green bell pepper, cut into small pieces(optional)
1 tablespoon chopped parsley(optional)

Procedures:
Part1
1. Season fish fillet with salt and pepper then fry until light brown.
2. Drain on paper towel then transfer to serving plate.

Part 2
1. In a bowl, combine tomato-mango salsa ingredients then stir well. Set aside.

Part 3
1. In a same pan, reduce oil then saute garlic until light brown.
2. Add butter and soy sauce then stir until butter is melted.
3. Pour the sauce over fish fillet then serve with tomato-mango salsa.
