Ingredients:
1 kilo beef, cut into cubes
1/4 cup cornstarch(dissolve in 1/4 cup water)
5 gloves garlic, chopped
1 onion, chopped
1/4 cup soy sauce
1/4 cup sugar
1/2 tablespoon peppercorns, crushed
2 pieces star anise
2 pieces bay leaves
salt and pepper to taste

1 medium-sized carrots, cut into cubes(optional)
1 medium-sized red bell pepper, sliced(optional)
1 cup green beans, trimmed and sliced(optional)
spring onions for garnishing(optional)

Procedures:
1. In a large pot, arrange beef and add garlic, onion, soy sauce, sugar, peppercorns, star anise, bay leaves and water.
2. Cover and bring to boil for about 1-2 hours or until the beef is tender. Add water if necessary.
3. Add cornstarch mixture and adjust seasoning with salt and pepper.
4. Add carrots, green beans and bell pepper, simmer for 3 minutes or until sauce has thickened.
5. Remove from heat then garnish with spring onions. Serve with steamed rice.

Salmon Macaroni Salad Recipe

Filipino Style Recipe: salmon macaroni salad recipe is usually made with shredded salmon, macaroni noodles, mayonnaise, mustard, salt and pepper. This is usually served as appetizer.

250 grams macaroni noodles
2 cups salmon, canned or cooked
1 small onion, chopped
1/2 cup mayonnaise

Procedures:
Part 1
1. Cook macaroni noodles according to package cooking instructions.

Part 2
1.In a large bowl, add salmon and the rest of the ingredients.
2. Add macaroni and ground pepper. Mix well.
3. Adjust seasoning according to taste. Garnish with parsley.
4. Refrigerate then serve.

Ginataang Papaya

Filipino Style Recipe: ginataang papaya or papaya with coconut milk is normally the green papaya cooked with coconut milk and shredded dried salted fish.

Ingredients:
1 medium-sized papaya, cut into serving pieces
2 cups coconut milk
3 cloves garlic, minced

1 piece chili finger(siling labuyo), chopped(optional)
1 bunch malunggay leaves(optional)

Procedures:
1. In a pan, heat oil and saute garlic, onions and ginger.
2. Pour coconut milk and bring to boil.
3. Add papaya, fish sauce and pepper and simmer on low heat until half-cooked.
4. Add dried salted fish, chili finger and simmer until papaya is soft.
5. Adjust seasoning according to taste. Add malunggay leaves and simmer for 1 minute.
6. Remove from heat and serve with steamed rice.

Pork Adobo in Salt

Filipino Style Recipe: pork adobo in salt or adobong baboy sa asin is a popular dish in Bicol Region. Normally the pork boiled with vinegar, garlic, laurel and salt until all the liquid is absorbed. Sometimes they called it white adobo or adobong puti.

3. Continue cooking until all the liquid is absorbed.
4. Adjust seasoning according to taste.
5. Cook until the garlic turns to brown and the pork is start to render oil.
6. Remove from heat and transfer to serving plate then serve!

Chicken Adobo with Coconut Milk

Filipino Style Recipe: chicken adobo with coconut milk or adobong manok sa gata is a popular dish in Bicol Region. Normally the chicken sauteed and cooked with vinegar and coconut milk.

Ingredients:
1 kilo chicken, cut in serving pieces
3 cloves garlic, finely minced
1 onion, chopped
1 thumb-sized ginger, julienned
1 tablespoon peppercorns
2 bay leaves
1/4 cup white vinegar
2 cups coconut milk
1 tablespoon vegetable oil
salt to taste

1 chicken broth cubes(optional)
2 pieces chili finger(siling labuyo)(optional)
6 stalks lemon grass, pounded(optional)

Procedures:
Part 1
1. In a stock pot, add chicken and lemon grass. Bring to boil until chicken is tender.

Part 2
1. In a pan, heat oil and saute ginger, garlic and onion.
2. Add chicken pieces then pour vinegar. Simmer for 1 minute.
3. Add peppercorns and bay leaves.
4. Pour 1 cup of coconut milk, chili finger and chicken broth cubes.
5. Simmer until the coconut milk is half absorbed. Stir occasionally.
6. Pour another cup of coconut milk and bring to boil until thickens.
7. Adjust seasoning according to taste.
8. Serve hot with rice.

Notes:
1. You may also add chayote or green papaya if desired.

Ginisang Ampalaya

Filipino style recipe: ginisang ampalaya or sauteed bitter melon with egg is another healthy yet affordable dish. Normally the bitter melon sauteed with ground pork then cook with tomatoes and beaten egg.

Ingredients:
2 bitter melon(ampalaya), seeded and sliced thinly
2 medium-sized tomatoes, diced
2 pieces egg, beaten
1 medium onion, diced
3 cloves garlic, minced

salt and pepper to taste
1 cup ground pork (optional)

Procedures:
1. In a pan, heat oil and saute garlic, onion and tomatoes.
2. Add ground pork and cook until brown.
2. Add water and bring to boil.
3. Add bitter melon, cover and simmer for 3 minutes.
4. Add beaten eggs and season with salt.
5. Continue cooking until eggs are firm.
6. Remove from heat and serve hot!

Tips:
If you want to lessen the bitter taste of ampalaya here the procedures:
1. Rub the sliced ampalaya with salt and leave for 10 minutes
2. Then squeeze the ampalaya until the water comes out.

Calamares

Filipino Style Recipe: calamares or calamari is comprises a squid as main ingredient. Normally the squid rings mix with batter then deep fried for less than two minutes to prevent toughness. It is usually served plain with mayonnaise.

1. In a bowl, combine flour, paprika, salt and pepper. Mix well.
2. Add squid and dip in beaten egg then coated onto breadcrumbs.

Part 2
1. In a frying pan, heat oil and fry the squid for 1 minute or until golden brown. Do not overcooked.
2. Remove squids and drain on paper towels.
3. Serve with dip.

Chicken Sopas

3 cups uncooked macaroni(elbow or shell)
2 pieces chicken breast
2 cups evaporated milk

salt and pepper to taste
1 tablespoon vegetable oil
1 small cabbage, roughly shredded(optional)
1 piece chicken cubes(optional)

Procedures:
Part 1
1. In a pot, pour water and boil chicken, chicken cubes, onion, salt and pepper until chicken is tender.
2. Remove the chicken and save the broth.
2. Shred the chicken into small pieces using your fingers. Set aside.

Part 2
1. In a sauce pan, heat vegetable oil and saute garlic and onion.
2. Add the sliced hot dogs and the shredded chicken meat and saute for about a minute. Stir constantly.
3. Pour the chicken broth and bring to boil. Add water if needed.
4. Add carrots and macaroni pasta. Simmer until the macaroni is almost done.
5. Add milk and cabbage and continue stirring until simmering.
6. Adjust seasoning according to taste.
7. Remove from heat and transfer to serving bowl. Serve hot!

Pasta in Shrimp and Lemon Sauce

1/4 cup spring onions, chopped(optional)

Procedures:
Part 1
1. In a large pot, prepare the pasta based on cooking instructions. Drain and set aside

Part 2
1. In a sauce pan, pour the chicken stock, cream and lemon juice and simmer in a low heat for 5 minutes.
2. Add shrimp, salt and pepper. Stir and cook for about 3-5 minutes or until the shrimp is done. Add water if needed.
3. Add parsley and green onions and cook for another minute.
4. Adjust seasoning according to taste.

Part 3
1. In a serving bowl, put the pasta and pour the sauce.
2. Add lemon zest and Parmesan cheese. Mix well and serve.

Okoy(Crispy Shrimp Fritters)

250 grams baby shrimps, cleaned

1 cup bean sprouts(toge) (optional)
1 sweet potatoes(kamote) or turnip(singkamas), peeled and cut into strips(optional)

Spicy Garlic Vinegar
1 cup white vinegar
1 tablespoon garlic, minced
1 teaspoon salt
1 teaspoon sugar
1 piece chili(siling labuyo), chopped

Procedures:
Part 1
1. In a bowl, combine flour, salt, pepper, egg and water to make a smooth batter. Stir to mix well.
2. Add the baby shrimps, onion, bean sprouts and sweet potatoes. Mix until shrimps and vegetables are well coated.

Part 2
1. In a frying pan, heat cooking oil and pour about 1/4 cup of the mixture.
2. Deep fry each sides for about 1-2 minutes or until crisp and brown. Drain on paper towels.
3. Repeat until the entire mixture is consumed.
4. Serve hot with spicy garlic vinegar. Enjoy

1. In a bowl, mix all the ingredients for spicy garlic vinegar.
