Ingredients:
2 cups chicken, cooked and cut into cubed
1 cup sliced mushrooms
3 tablespoons butter
3 tablespoons corn flour
1-1/2 cups chicken stock
1 egg yolk, beaten
2 tablespoons light cream
salt and pepper to taste

Procedures:
Step 1
1. In a medium saucepan, heat butter and saute sliced mushrooms until browned.
2. Pour in flour mixture, cubed chicken and chicken stock. Stir and simmer for 8 minutes.
3. Adjust seasoning according to taste with salt and pepper.

Step 2
1. In a bowl, whisk the egg yolk, cream and add 1/3 cup of chicken stock, mix well.
2. Pour in the saucepan, stir until hot and bubbly.
3. Remove from heat and transfer to serving plate, sprinkle with dried oregano if desired.
4. Serve hot with rice or bread.

Fish Escabeche Recipe

Filipino Style Recipe: fish escabeche recipe(escabecheng isda) is popular dish among Filipinos. Normally the fish comes fried and the sauce is a blend of sautéed garlic, onions, ginger, vinegar, brown sugar, bell peppers, carrots and cornstarch which thickens the sauce.

Ingredients:
1 kilo fish(lapu-lapu, tilapia), washed and cleaned
1 each red and green bell pepper, sliced thinly
1 carrot, sliced thinly
1 large onion, sliced
4 cloves garlic, crushed
1 thumb-sized ginger, sliced thinly
1 cup vinegar
3 tablespoons brown sugar
1 teaspoons salt
1 tablespoons cornstarch(dissolved in 1/2 cup water)
1 cup cooking oil
2 tomatoes, sliced(optional)
1 tablespoons soy sauce.(optional)

Procedures:
Part 1
1. Season fish with salt.
2. In a frying pan, heat oil and fry fish until golden brown each side.
3. Transfer the fish to serving plate and set aside.

Part 2
1. In the same pan, remove used oil then heat 1 tablespoon of vegetable oil.
2. Saute the garlic, ginger, onion then add the tomatoes, bell peppers and carrots.

Part 3
1. Pour vinegar, brown sugar and dissolved cornstarch.
2. Season with salt and pepper. Cook until liquid thickens.
3. Pour the sauce and vegetables over the fish. Serve hot with rice.

Filipino Style Recipe: bicol express recipe is a popular Filipino dish especially in Bicol Region. Normally the pork cooked with coconut milk, shrimp paste, green chili and red chili.

Ingredients:
1 kilo pork(1/4 fat), cut lengthwise
1/2 cup of long green peppers(siling pangsigang) or baguio beans, cut diagonally
3 cups coconut milk
1/2 cup shrimp paste (bagoong alamang)
4 cloves garlic; chopped
1 small onion; chopped
3 pieces red chili(siling labuyo)
2 tablespoons vegetable oil
Salt to taste

Procedures:
Part 1
1. In a bowl with water and salt, soak green peppers for 30 minutes then rinse and drain.

Part 2
1. In a pan, heat vegetable oil then saute garlic and onion.
2. Add sliced pork, continue sauteing until colors turn to brown.
3. Add the shrimp paste then mix for another minute.
4. Pour coconut milk then simmer until reduced.
5. Add the green peppers and red chili.
6. Adjust seasoning with salt according to taste.
7. Serve with steamed rice. Enjoy!

Glazed Carrots Recipe

Filipino Style Recipe: glazed carrots recipe is a quick and healthy meal. It is mainly made up of carrots boiled in salted water then cooked in butter and sugar. If using, you may add maple syrup and cinnamon.

Ingredients:
500 grams carrots, peeled and slice into 1/4 inch disks or diagonally.
3 tablespoons butter

Procedures:
Part 1
1. In a sauce pan, pour water with salt and bring to boil. Add carrots, cover and then cook for 5-8 minutes or until crisp-tender. Drain well.

Part 2
1. In a sauce pan, melt butter over medium heat then add the carrots.
2. Add the maple syrup then sprinkle with cinnamon, sugar and white pepper. Stir well.
3. Cook until the juices are reduced to a glaze.
4. Remove from heat. Serve hot!

Notes:
1. You may use baby carrots instead.

1 small bay leaf (optional)

Procedures:
Part 1
1. In a bowl, combine fish, garlic, soy sauce, vinegar, salt and pepper.
2. Marinate for an hour in the refrigerator. Drain fish and reserve the marinade.

Part 2
1. In a frying pan, heat oil and fry the fish until golden brown on both sides. Drain and set aside.

Part 3
1. In a sauce pan, heat oil and saute the garlic, onion and ginger.
2. Pour marinade then bring to boil.
3. Add fried fish and bay leaf then simmer for 8 to 10 minutes.
4. Adjust the taste according to taste.
5. Remove from heat and transfer to a serving plate. Serve with steamed rice.

Pork Humba Recipe

1/2 cup dried banana blossoms(puso ng saging)
salt to taste

Procedures:
1. In a big pot, combine pork belly, water, soy sauce and garlic.
2. Simmer and bring to boil over low heat until pork belly is tender.
3. Add vinegar and simmer for another 3 minutes.
4. Add the bay leaf, banana blossoms, brown sugar, salt and simmer for another 5 minutes.
5. Adjust seasoning according to taste. Remove from heat and Serve. Enjoy!

Notes:
1. You may also add potatoes, hard-boiled eggs or salted black beans.

Banana Cue

Ingredients:
8 pieces Asian plantains(saging na saba)
2 cups brown sugar
1 cup vegetable oil

Procedures:
1. In a pot, heat oil until boiling.
2. Gently add the bananas and fry for 3-5 minutes.
3. Add brown sugar and cook for another 5 minutes or until the sugar has melted and caramelize.
4. Remove the bananas one by one and let the oil drip.
5. Skew each banana on bamboo sticks, 2-3 bananas per stick.

Notes:
1. You may also add cinnamon powder when they are done.

Ingredients:
1 kilo sweet potatoes, peeled and sliced about 1/2 inch thick
2 cups brown sugar
1 cup vegetable oil

Procedures:
1. In a pot, heat oil until boiling.
2. Add brown sugar and cook until the sugar has melted.
3. Add the sliced sweet potatoes and fry for 5-8 minutes.
4. Remove the sweet potato and let it cool for a few minutes. Done!

Notes:
1. You may use barbeque sticks for a better presentation.

Ginisang Togue

Filipino style recipe: ginisang togue or sauteed sprouted mung beans recipe is a healthy yet affordable dish. Normally the sprouted mung beans sauteed with fried pork, tofu shrimp, green beans and carrots.

Ingredients:
1/2 kilo sprouted mung beans(toge)
1/2 cup fried tofu(tokwa), diced
1/4 kilo pork, cut into small pieces
1 small-sized bell pepper, cut into strips
1 small-sized carrot, cut into strips
1/2 head garlic, chopped
1 medium-sized onion, chopped
1 medium-sized tomato, chopped
fish sauce(patis) or salt and pepper to taste
vegetable oil

Procedures:
1. In a frying pan, heat oil and fry pork until golden brown. Set aside.
2. Saute garlic, onions and tomatoes.
3. Add fried tofu and pork then a little water and pork broth cubes. Cook for 1 minute.
5. Adjust seasoning with salt and pepper.
6. Add sprouted mung beans, carrots and bell pepper and cook for 5 minutes or until vegetables are half-cooked.
7. Remove from heat. Serve with steamed rice.

Notes:
1. You may also add shrimp, green beans and sayote.

Nilagang Baboy

Filipino style recipe: nilagang baboy or pork stew recipe is another simple pork dish. Normally the pork boiled until tender then add onion, peppercorn, salt, potatoes, cardava banana, cabbage and green beans.

Good for 3-4 servings

Ingredients:
500 grams pork(choices of belly, ribs or any bony parts of pork), cut into serving pieces
7 cups water(depends on your preference)
1 onion, sliced
1/4 teaspoon peppercorn
1 piece pork bouillon cube(optional)
2 potatoes, quartered
1 bundle bok choy(Pechay) or cabbage leaves(repolyo), cut into serving pieces
3 pieces cardava banana(saging na saba), cut into 3-4 pieces(optional)
1 bundle green beans(optional)
fish sauce or salt to taste

Procedures:
Part 1
1. In a large casserole, place meat and add water. Set over medium heat and bring to a boil and simmer until meat is tender.
2. Remove the scum as it rises.

Part 2
3. Add onion, peppercorn, pork broth cubes and sprinkle some salt.
4. Add banana and potatoes and continue cooking until potatoes are cooked.
5. Add the green beans. Simmer for 3-5 minutes.
6. Adjust seasoning according to taste.
7. Add pechay or cabbage leaves. Then remove from heat and leave for about 3 minutes. Do not overcook the green vegetables.
8. Serve hot with steamed rice. Enjoy

1. You may also add 1-2 Japanese corn, cut into 3-4 pieces.
