Ingredients:
Lumpia Sariwa Filling
1/2 cup ground pork
1/4 cup shrimp, chopped
1/4 cup cooked ham, chopped(optional)
2 cups carrots, shredded
2 cups cabbage, shredded
2 cups water chestnuts(sayote) or turnips(singkamas), shredded
1 cup baguio beans, shredded(optional)
1 tablespoon onion, minced
4 cloves garlic, minced
1 cup ground peanuts
Lettuce leaves
Lumpia wrapper
butter or cooking oil
Salt to taste

Lumpia Sariwa Sauce:
1/2 cup sugar
1 tablespoon cornstarch
1 cup chicken broth or water
2 tablespoons soy sauce
2 cloves garlic; minced

Procedures:
Cook the Filling:
1. In a saucepan, heat butter and saute garlic and onion.
2. Add ground pork, ham and shrimp. Simmer until it changes color.
3. Season with soy sauce and sugar.
4. Add vegetables and continue cooking until it is half-done.
5. Adjust seasoning with salt according to taste. Set aside.

How to make the Lumpia Sariwa Sauce:
1. In a saucepan, pour chicken broth and bring to boil.
2. Add sugar and soy sauce then mix well.
3. Dilute the cornstarch in water and pour in the saucepan.
2. Boil in a very low fire, stirring occasionally until the sauce thickens.
3. Add the garlic. Set aside.

To Wrap the Filling:
1. On top of the lumpia wrapper, place a leaf of lettuce and 3 tablespoons of the mixture.
2. You may roll up folding one end and leaving other open or just roll up and place in the platter.
3. Garnish with sauce and minced peanuts.

Buttered Shrimp with Garlic

Filipino Style Recipe: buttered shrimp with garlic recipe is a tasty Filipino dish, basically shrimp sauteed in butter with lots of garlic and the lemon soda gives the dish the sweet taste flavor. This is another mouth-watering dish that is truly enjoyed by most Filipinos.

Ingredients:
3/4 kilo shrimp
1/2 cup butter
12 medium cloves garlic, minced
1 can lemon soda
2 teaspoons salt
1/2 teaspoon ground pepper
2 tablespoons chopped parsley, for garnish(optional)

Procedures
Part 1
1. In a bowl, marinade the shrimp in lemon soda for about 20 minutes.
Part 2
2. In a saucepan, melt the butter in a low heat.
3. Saute the garlic until the color turns light brown.
4. Add shrimp including the marinade sauce, cook until the liquid completely absorb.
5. Adjust seasoning with salt and ground pepper
6. Remove from heat and arrange the buttered shrimp on a serving platter.
7. Garnish with parsley, serve and enjoy!

Halaan Soup Recipe

Filipino Style Recipe: Halaan recipe or clams is another seafood dish that usually served by Filipinos. Another simple recipe but very healthy. Used to eat the clams using your hands and scoop the meat out of the shell using your mouth. Here’s the recipe for halaan(clams) soup.

Good for 3-5 persons.

Ingredients:
1/2 kilo fresh clams(halaan)
1 bundle chili leaves
3 cloves garlic, crushed
1 thumb-sized ginger, thinly sliced
1 onion, sliced
1 tomato, sliced
2 cups water or soup from rice cooking(sabaw-sinaing)
3 tablespoon fish sauce(patis) or salt
1 teaspoon ground pepper
butter or cooking oil

1 small green papaya, sliced diagonally(optional)

Procedures:
Part 1
1. Wash the clams thoroughly and drain. Place the clams in a container with water and salt. Cover and let it sit for several hours or overnight. This will allow the clams to expel sand.
Part 2
2. In a large saucepan, heat butter and saute ginger, garlic and onion until translucent.
3. Add tomatoes, saute for 3 minutes.
4. Add fish sauce and the clams. saute for another 2 minutes.
5. Pour in water. Cover and let boil.
6. Add green papaya, simmer for about 5 minutes or until papaya is tender but not overcooked.
7. Adjust seasoning with salt and ground pepper.
8. Continue cooking over a high heat until clams open.
9. Add chili leaves then turn off the heat.
10. Serve and enjoy!

Pininyahang Manok Recipe

Filipino Style Recipe: Pininyahang Manok(Pineapple Chicken) is a chicken dish that commonly served by Filipinos. Basically the chicken marinate in pineapple juice then cook with pineapple chunks, fresh vegetables, and spices. Some added evaporated milk or coconut milk to make the sauce creamy. The tender of chicken and the sweet and sour taste of pineapple make this dish irresistible. This is truly a mouth-watering dish and my family’s favorite.

Estimated time of preparation: 15 minutes(plus marinating time)
Estimated time of cooking: 20-30 minutes
Good for 4-6 persons

Ingredients:
1 kilo chicken, cut into serving pieces
2 red and green bell pepper, cut into cubes
1 cup pineapple chunks
1/2 cup pineapple juice
1 medium onion, chopped
3 cloves garlic, chopped
1 thumb-sized ginger, minced
3 tablespoons sugar
3 tablespoons soy sauce
1 teaspoon fish sauce or salt
1 teaspoon ground pepper
3 tablespoons cooking oil or butter

1 medium carrots, cut into cubes(optional)
2 medium potatoes, cut into cubes(optional)

Procedures:
Part 1
1. Sprinkle chicken meat with salt and pepper then marinate in pineapple juice for at least 30 minutes. Reserve marinade.

Part 2
1. In a pan, heat cooking oil and fry carrots and potatoes until light brown. Drain and set aside.

Part 3
1. In the same pan, reduce oil then saute onion, garlic and ginger until fragrant.
2. Add chicken meat then continue sauteing until golden brown.
3. Add soy sauce and marinade then simmer for 15 minutes or until chicken is almost tender. Add little water if necessary.
4. Add pineapple chunks, carrots, potatoes and bell pepper then simmer for 3 minutes.
5. Season with sugar and salt according to taste then simmer until vegetables are tender.
6. Remove from the heat then transfer to serving bowl. Serve with steamed rice.

Tips:
1. You can also add 1/2 cup evaporated milk if you prefer.

Chicken Salad Recipe

Ingredients
1 chicken breast, 2 chicken legs
1 hard-boiled egg, sliced
3 potatoes, cubed
1 cup lettuce or cabbage, torn into bite size pieces
1 carrot, cubed
2 fresh tomatoes, sliced or chopped
1/2 cup sweet pickles,chopped
1 onion or 1 stem celery, chopped
1-1/2 cup of mayonnaise or any salad dressing
salt and pepper

1 cucumber, peeled and chopped, optional
1 cup diced cheddar cheese, optional
1/2 cup raisins, optional

Procedures:
1. In a pot, boiled chicken in water with 1 tablespoon salt and cook until tender. Remove the chicken and allow to cool before shredding the meat into a large bowl.
2. Boiled potatoes and carrot until cook, drain and allow to cool. Remove the skin and cut into cubed.
3. Combine all the ingredients, add salt and pepper according to taste.
4. Add salad dressing.
5. Refrigerate at least 30 minutes then serve.

Spicy Buffalo Wings Recipe

Filipino Style Recipe: Spicy Buffalo Wings are considered as an American dish. It is traditionally fried unbreaded and then coated in sauce. The classic buffalo style chicken wings is composed of vinegar-based cayenne pepper hot sauce and butter.

INGREDIENTS:
For Breading Mix
1 kilo chicken wings, tips removed
1 cup Flour
1 tablespoon Paprika
1 tablespoon Cayenne Pepper
1 tablespoon Salt
1 tablespoon Ground Pepper
1 tablespoon Thyme(optional)

For Buffalo Sauce
3/4 cup Hot Sauce
1/4 cup Brown Sugar
1/2 cup Butter or margarine
1 tsp Ground Pepper
2 tsp Garlic Powder
1 tsp Cayenne Pepper(optional)
2 tbsp Honey(optional)

For Cheese Dip(optional)
1/2 cup Mayonnaise
1 tablespoon Garlic Powder
2 tablespoon Cheese Spread
2 tablespoon Parmesan Cheese
1/2 teaspoon ground black pepper

Procedures:
Part 1
1. In a small bowl, combine all the ingredients for breading mix.
2. Coated the wings with the breading mix evenly.
3. In a deep pan, heat enough oil to cover the wings entirely.
4. Fry wings for about 8-10 minutes in medium heat or until color turns to golder brown.
5. Drain and set aside.
Part 2
1. In a small pan, heat butter in a low heat until melted.
2. Add all the remaining ingredients for buffalo sauce, stir well to keep it from curdling. Cook for 2-3 minutes.
3. Place the fried chicken wings in a large bowl, add the buffalo sauce and mix until all the wings coated evenly.
4. Serve with celery sticks.

For Cheese Dip:
1. In a small bowl, combine all the ingredients for cheese dip.

Paksiw na Bangus

Ingredients:
1 kilo milk fish(bangus),cleaned but not scaled cut in about 4-5 slices
1 bitter melon(ampalaya),sliced
1 eggplant(talong),sliced
2 cloves garlic, crushed
1 small onion, sliced
1 thumb-sized ginger(luya), sliced and crushed
3 pieces long green pepper(siling haba)
1/2 cup vinegar
1 cup water
1 teaspoon peppercorn(pamintang buo)
2 teaspoon salt or fish sauce(patis)
1 teaspoon cooking oil

Procedures:
Part 1
1. Remove the gills and innards of milk fish but do not the scales. Using a scissor or knife cut the fins and tails. Wash fish thoroughly drain and slice diagonally.

Part 2
2. In a casserole place the garlic, onion and ginger.
3. Arrange sliced milk fish, add water, vinegar, salt, peppercorn and cooking oil.
4. Cover and simmer for 10 minutes.
5. Put the vegetables and long green pepper. Cover and simmer in a medium heat for another 5 minutes.
6. Remove from heat and Serve. Enjoy!

Tinolang Manok

Filipino Style Recipe: Tinolang Manok(Chicken Tinola) or Filipino chicken ginger soup is one of the common dish in the Philippines. A simple Filipino recipe that is relatively easy to cook. Here is the basic and easy to follow recipe. Happy cooking!

Good for 4-6 persons.

Ingredients :
1 kilo chicken, cut into serving pieces
2 pieces chayote squash(sayote) or green papaya, cut into small pieces
1 cup chili leaves or malunggay leaves
1 thumb-sized ginger, cut into strips
4 cloves garlic, crushed
1 onion, chopped
2 tablespoon fish sauce(patis)
1 litre of water or rice washing
4 tablespoon vegetable oil
salt to taste

Procedures :
1. In a sauce pan, heat oil over medium heat then saute ginger, garlic and onion.
2. Add chicken, fish sauce, ground pepper and continue sauteing until the color chicken turn to light brown.
3. Pour water then simmer for 10 minutes or until chicken is tender.
4. Add in chayote then continue simmering for another 5 minutes.
5. Adjust seasoning according to taste then add chili leaves then turn off the heat.
6. Let stand for a few minutes to cook the leaves then transfer to a serving dish and serve. Enjoy!

Beef Broccoli

Filipino Style Recipe: beef broccoli is another easy and popular beef dish. Normally the beef cut into strips then marinated and stir cooked with broccoli in a blend of oyster sauce, soy sauce, salt and pepper. Usually served as main dish with steamed rice.

Good for 3-5 person

INGREDIENTS:
1 kilo sirloin or flank beef, sliced thinly into strips
1 medium size broccoli, cut into serving pieces
1 medium sized onion, chopped
4 cloves garlic, minced
1 small ginger, chopped
1/4 cup soy sauce
1/2 cup oyster sauce
1 tablespoon lemon or calamansi juice
1/4 cup cornstarch
1 teaspoon ground pepper
3 tablespoon cooking oil
1 tablespoon cornstarch(dissolved in 1 cup water)
sugar and salt to taste

3 tablespoon sesame oil(optional)
100 grams golden mushrooms, cut in half(optional)
1 carrot, sliced thinly into strips(optional)

PROCEDURES:
Part 1
1. In a bowl, combine beef, soy sauce, lemon juice, cornstarch, salt, ground pepper, sesame oil and marinate for 15 minutes.

Part 2
2. Cook broccoli in a boiling water for 1 minutes or until tender. Drain and rinse with cold water.

Part 3
1. In a sauce pan, heat cooking oil and stir fry beef until color change to brown and start to sizzle. Set aside.
2. In the same pan, saute garlic, onion and ginger.
3. Add in beef and pour dissolved cornstarch, sugar and oyster sauce. Stir cook for another 5 minutes or until sauce thickens.
4. Adjust seasoning according to taste then add in broccoli and mix well.
5. Remove from heat then served with steamed rice.

Notes:
1. To slice beef very thin, freeze it and slice before it is completely thawed.
2. You may also add 1 carrot sliced thinly into strips and 100 grams golden mushrooms cooked together with broccoli.

Nilagang Baka(Beef Stew)

Filipino Style Recipe: nilagang baka or beef stew is an easy yet delicous Filipino soup dish. Beef stew is so simple to prepare but time consuming. The beef simmered for an hour until tender then cooked with corn cobs, potatoes, bananas and veggies. This is so popular and can be served anytime or the best during rainy season.

Estimated time of preparation: 10 minutes
Estimated time of cooking: 70 – 90 minutes

Ingredients :
1 kilo of beef meat (brisket, shank,short ribs), cut into serving pieces
3 medium-sized potatoes, cut into quarter
5 pieces cardava banana(saging na saba)
3 Japanese corn cobs, cut into 3-4 pieces
1 small bundle green beans(baguio beans), trimmed
1 bundle bok choy (Pechay) , cut the 2 pieces
1 onion, chopped
1 tablespoon peppercorn
fish sauce(patis) or salt to taste
1 liter of water
1/2 small cabbage, cut into quarter(optional)

Procedures:
1. In a large casserole, place the meat and add water. Set over medium heat and bring to a boil and simmer for about 1 hour or until meat is tender. Remove the scum as it rises. Add more water if necessary. Pressure cooker only takes 30 minutes.
2. Add corn and onion. Season with fish sauce and sprinkle some salt. Simmer for another 10 minutes or until the corn is tender.
3. Put potatoes and continue cooking until potatoes are cooked.
4. Then add cardava banana and all the vegetables. Do not cover and simmer for about 5 minutes or until vegetables are done. Do not overcooked the vegetables.
5. Adjust seasoning with fish sauce and salt according to taste.
6. Serve hot with fish sauce and birds eye chili(siling labuyo) for condiments.

Notes:
1. You may also add anise or cinnamon powder for seasoning.
2. You can also try chicken (chicken stew) or pork (pork stew) for variety.
