Basil Chicken

Ingredients:
500 grams chicken fillet, cut into serving pieces
12-15 basil leaves
1 red bell pepper, diced
3 cloves garlic, minced
1 onion, chopped
3 bird’s eye chili (labuyo), chopped
2 tablespoons soy sauce
3 tablespoons oyster sauce
1 tablespoons hoisin sauce
1/2 teaspoon brown sugar
fish sauce and ground pepper to taste

Procedures:
Part 1
1. In a bowl, combine soy sauce, oyster sauce, hoisin sauce, brown sugar and ground pepper. Mix and set aside.

Part 2
1. In a pan, heat oil then sauce garlic and onion.
2. Add chicken then continue sauteing until almost cooked.
3. Add bell pepper and stir cook until chicken is tender.
4. Pour then sauce then toss until well distributed.
5. Add chili then adjust seasoning according to taste.
6. Add basil then cook for half a minute.
7. Remove from heat then transfer to serving plate. Serve with steamed rice.

Chicken Corn Chili

Filipino Style Recipe: Chicken Corn Chili is another mouth-watering chicken dish consist of shredded chicken, corn, chili and cream. This can be served as filling in pita bread or with steamed rice.

Ingredients:
3/4 kilo chicken breast
1 cup corn kernel
3-4 pieces green chili, chopped
3 cups chicken stock
6 cloves garlic, minced
1 medium-sized onion, chopped
1/2 teaspoon cumin
1/4 cup chopped cilantro
130 ml all purpose cream
Parmesan cheese
3 tablespoons vegetable oil
fish sauce or salt and ground pepper to taste

Procedures:
1. In a pot, boil water with salt then add chicken and cook for 5 minutes or until tender.
2. Remove chicken and reserve the stock. Shred the chicken using fork. Set aside.

Part 2
1.In a wok, heat oil then sauce garlic and onion.
2. Add half of chopped chili, shredded chicken, cumin and ground pepper
3. Pour chicken stock, corn kernel, cilantro then simmer until reduced.
4. Pour cream, cheese, remaining chopped chili then simmer for a minute.
5. Adjust seasoning according to taste then continue cooking until almost thickened.
6. Remove from heat then serve with pita bread or steamed rice.

Chicken and Pork Red Curry

Ingredients:
1/2 kilo pork, cut into serving pieces
1/2 chicken, cut into serving pieces
3 potatoes, quartered
2 carrots, cut into cubes
2 bell peppers(red & green), slice into strips
1 cup all purpose cream
3 tablespoons red curry powder(dissolved in 1/2 cup hot water)
1 onion, chopped
3 cloves garlic, minced
1 1/2 cup water
2 tablespoons fish sauce (patis)
1/4 teaspoon chili flakes (optional)
3 tablespoons vegetable oil
salt and pepper to taste

Procedures:
Part 1
1. In a pan, fry potatoes and carrots until color turns to light brown. Drain and set aside.

Part 2
1. In the same pan, saute garlic and onion until soft.
2. Add chicken and pork then stir cook until color turns to light brown.
3. Add fish sauce, dissolved curry powder and water then simmer for 15 minutes or until meat is tender.
4. Add celery, bell peppers, fried potatoes and carrots then simmer for a minute.
5. Add cream, salt and ground pepper then simmer for another 3-5 minutes or until slightly thickens. Keep stirring.
6. Remove from heat and transfer to serving plate. Garnish with chopped celery leaves.
7. Serve hot with steamed rice.

Spicy Hoisin Chicken

Ingredients:
500 grams chicken fillet, cut into serving pieces
2 cups broccoli florets
1 carrot, sliced
110 grams shiitake mushrooms
3 cloves garlic, minced
1 onion, chopped
1 thumb-sized ginger, minced
1 tablespoon rice wine
1/2 teaspoon cornstarch
1/4 teaspoon dried chili flakes
salt and pepper to taste

Hoisin Mixture:
3 tablespoons hoisin sauce
1 teaspoon sesame oil
2 tablespoons soy sauce
1/2 teaspoon cornstarch
1/2 teaspoon ground pepper
1/2 teaspoon cayenne pepper
1/2 teaspoon spanish paprika
1 cup water

Procedures:
Part 1
1. In bowl, marinate chicken in rice wine and cornstarch for 10 minutes.
2. In a separate bowl, combine hoisin mixture then stir until well blended.

Part 2
1. In a pot, boil water with salt. Add carrots then pre-cooked for 3 minutes.
2. Add broccoli and boil for another minute. Drain and wash on running water to stop the cooking process. Set aside.

Part 3
1. In a wok, heat oil then saute garlic, onion and ginger.
2. Add mushroom then stir fry until brown.
3. Add chicken then continue to stir fry until light brown.
4. Pour the hoisin mixture and chili flakes then adjust seasoning according taste.
5. Add carrot and broccoli then simmer until begins to thicken.
6. Transfer to serving bowl then serve immediately with steamed rice.

Adobong Manok at Balunbalunan sa Gata

5. Add green and red chili. Adjust seasoning according to taste then simmer until thickens.
6. Transfer to serving plate then serve immediately together with steamed rice.

6 cloves garlic, chopped

Marinade:
1/2 cup soy sauce
1 1/2 tablespoons brown sugar
1 teaspoon peppercorn

Procedures:
Part 1
1. In a bowl, combine chicken, soy sauce, sugar, peppercorns then marinate for 30 minutes. Set aside.

Part 2
1. In a pan, heat oil then fry marinated chicken over low heat for 3 minutes or until light brown. Remove from the pan and set aside.

Part 3
1. In a pan, melt margarine then saute garlic until light brown.
2. Add cooked rice then toss until well coated.
3. Add chicken, veggies and Parmesan cheese then toss. Cook for 3-5 minutes.
4. Seasoned with salt and pepper according to taste.

Part 3
1. In a baking pan, lined with aluminum foil.Transfer the rice mixtures then spread evenly.
2. Top with grated Mozarella cheese then bake in a preheated oven at 300 degrees Fahrenheit for 15 minutes or until cheese is melted.
3. Transfer to serving plate then serve immediately.

Chicken Asparagus Penne

Filipino Style Recipe:When you think of healthy food, you would imagine it to be boring and tasteless. This chicken asparagus penne recipe is low calorie complete meal that is oh-so-yummy and very easy to prepare.

Ingredients:
250 grams whole wheat penne pasta
1 can button mushroom
1/4 kilo chicken breast, cubed
olive oil
Salt and pepper to taste
3 cloves garlic
1/4 cup water
1 bunch asparagus, cut into 1 inch pieces
1/4 cup parmesan cheese

Procedures:
Part 1
1. Cook pasta according to package instruction. Drain then drizzle with olive oil. Set aside.

2. Warm olive oil in a large pan over medium heat. Saute garlic until transluscent. Add the mushrooms and cook for 3 minutes. Add the chicken and saute until lightly browned. Season with salt and pepper.

3. Pour the water on the chicken, cover and let it boil.Adjust the seasoning as desired.

4. Remove the cover and add the asparagus and cook until just tender around 5 to 10 minutes.

5. Add the cooked pasta, drizzle with olive oil and remove from heat. Sprinkle with parmesan cheese, stir and serve.

Sweet Chicken Adobo

Part 1

2. Marinate chicken for at least 30 minutes.
3. Drain garlic and chicken then reserve the sauce. Set aside.

Part 2
1. In a sauce pan, heat oil and fry marinated chicken for 5 minutes or until golden brown.
2. Reduce oil to 1 tablespoon. Add garlic then fry until light brown.
3. Pour marinade and chicken broth then simmer for 20-30 minutes or until chicken is tender.
4. Add sugar then season with salt according to taste.
5. Remove from heat then transfer to serving bowl. Serve with steamed rice.

Chicken Ala Pobre

Ingredients:
500 grams chicken fillet, cut into serving pieces
3 tablespoons Soy Sauce or liquid seasoning
2 tablespoons Worcestershire Sauce
1 head garlic, peeled and chopped
1/2 teaspoon ground pepper

Procedures:
1. In a large bowl, combine chicken, soy sauce, Worcestershire sauce, and ground pepper then marinate for 15 minutes.
2. In a pan, heat oil then stir fry garlic until browned. Drain and set aside.
3. In a same pan, fry chicken for 4 minutes or until golden brown. Drain and set aside.
4. In a same pan, pour the marinade then bring to boil.
5. Put back the chicken then toss until the sauce is reduced.
6. Transfer to serving plate then top with toasted garlic.

Szechuan Chicken

Part 1
1. In a bowl, combine cornstarch and egg white then whisk well.
2. Coat chicken into cornstarch mixture. Set aside.
3. In a pan, heat oil then fry coated chicken until light brown. Drain and set aside.

Part 2
1. Clean out the pan, heat 1 tablespoons vegetable oil then saute ginger, garlic, onion and sesame seeds.
2. Add broccoli and bell peppers then stir fry for a minute.
3. Add sauce mixture then simmer until vegetables are slightly cook.
4. Adjust seasoning according to taste then return the chicken.
5. Stir cook for another minute then turn off the heat.
6. Transfer to serving plate then garnish with parsley.
