Chicken Adobo(Adobong Manok)

Filipino Style Recipe: Chicken adobo or adobong manok is the another popular yet easy Filipino dish. Adobo have lots of variations such as pork, chicken, combination of pork and chicken, other meats, vegetables and seafood. In this recipe, we will used chicken then marinated and cooked in a blend of soy sauce, vinegar, garlic, bay leaves, peppercorns, salt and sugar until chicken is tender and the sauce thickens.

Estimated time of preparation: 10 minutes(plus marinating time)
Estimated time of cooking: 30 minutes
Good for 3-4 persons

Ingredients:
500 grams chicken, cut into serving pieces
1/2 cup soy sauce
1/3 cup vinegar
3 gloves garlic, crushed
1 teaspoon peppercorns
3 pieces bay leaves(laurel)
1 tablespoon sugar
salt to taste
1/4 cup cooking oil
1 cup water

Procedures:
Part 1
1. In a pot, combine chicken, garlic, bay leaves, peppercorns and soy sauce. Marinate for at least 30 minutes or overnight.
2. Drain garlic and chicken then reserve the sauce. Set aside.

Part 2
1. In a sauce pan, heat oil and fry marinated chicken for 3 minutes or until golden brown.
2. Pour marinade and add water. Simmer for 20 minutes or until chicken is tender.
3. Pour vinegar and simmer for another 5 minutes then season with salt and sugar according to taste.
4. Remove from heat then transfer to serving bowl. Serve with steamed rice.

Chicken Barbecue(Inihaw na Manok)

Filipino Style Recipe: chicken barbecue or inihaw na manok is an easy and popular grilled chicken recipe. Normally the chicken marinade with seasonings then grilled in a hot charcoal until tender. This is almost similar to chicken inasal.

Estimated time of preparation: 5-10 minutes(plus marinating time)
Estimated time of cooking: 15-20 minutes each side of chicken
Good for 4-5 persons

Ingredients:
4-5 chicken legs with thigh attached

Marinade
2 tablespoons soy sauce
2 tablespoons calamansi or lime juice
6 gloves garlic, pounded
2 bay leaves(laurel)
1 tablespoons brown sugar
1 cup soda(7-up or sprite)
1 tablespoon salt
1 tablespoon ground pepper

Procedures:
Part 1
1. In a large bowl, combine soy sauce, calamansi juice, sugar, bay leaves, garlic, soda, salt and ground pepper.
2. Add chicken, cover and marinate chicken for at least 3 hours or overnight inside the fridge.

Part 2
1. Remove the chicken and then reserve the marinade.
1. Grill marinated chicken over hot charcoal for 15 to 20 minutes while basting each side with marinade mixture.
2. Transfer serving plate and serve with steamed rice and spicy vinegar.

Lechon Manok(Roast Chicken)

Filipino Style Recipe: lechon manok or roasted chicken is another easy chicken dish but not so fast way of cooking. Normally the chicken marinade with seasonings then stuffed with lemongrass. roast in a oven or grilled in a hot charcoal until golden brown and tender.

Estimated time of preparation: 5 minutes(plus marinating time)
Estimated time of cooking: 60 minutes
Good for 4-5 persons

Ingredients:
1 whole chicken
2 tablespoons soy sauce
1 teaspoon garlic powder
1/4 cup lime or calamansi juice
1 teaspoon salt
2 tablespoons ground pepper
5 stalks lemongrass(tanglad), crushed

Procedures:
1. In a big bowl, marinate chicken in soy sauce, garlic powder and lime juice for at least 4 hours or overnight.
2. Rub chicken including the cavity with salt and pepper then stuff with lemongrass.
3. Preheat oven to 400 degrees Fahrenheit then roast chicken for an hour or grill over hot charcoal until golden brown
while basting skin with butter occasionally.

Binagoongang Manok

Filipino Style Recipe: binagoongang manok or chicken sauteed in shrimp paste is similar to binagoongang baboy. Normally the chicken sauteed until light brown then cooked in shrimp paste and chili. This is usually serve together with fried eggplants. Some adds coconut milk for more flavor and creamy taste.

Estimated time of cooking: 20-25 minutes

Good for 3-4 persons

Ingredients:
1/2 kilo chicken, cut into seving pieces
2 tablespoons bagoong alamang (pre-sauteed salted shrimp paste)
1 large eggplant, cut into slices
3 cloves garlic, minced
1 onion, chopped
2 pieces tomatoes, chopped
5 pieces calamansi, juice
1/2 cup water
2 tablespoons brown sugar
1/2 teaspoon ground pepper
4 pieces bird’s eye chili(siling labuyo)
2 tablespoons vegetable oil

3 pieces green chili(siling haba)(optional)
1 teaspoon dried rosemary(optional)

Procedures:
Part 1
1. In a bowl, marinate chicken in calamansi juice and dried rosemary for 15 minutes.

Part 2
1. In the same pan, fry eggplants until color turn to brown. Put in the strainer and set aside.

Part 3
1. In the pan, heat oil and saute garlic, onion and tomatoes until soft.
2. Add chicken and continue sauteing until color turns to light brown.
3. Pour water and shrimp paste then simmer for 10 minutes or until tender. Add more water if necessary.
4. Add brown sugar, green chili and red chili then continue cooking for another 3-5 minutes in low fire.
5. Add fried eggplant then transfer to serving plate. Serve with steamed rice.

Notes:
1. You may also add coconut milk if you want a creamy taste for binagoongang manok.

Chicken Tapa

Filipino style recipe: chicken tapa or tapang manok is another variety of popular Filipino tapa. Normally we use beef but in this recipe we will use chicken. The chicken meat prepare in thin slices and marinated for an hour then fry until done. Often served with fried rice and egg, together with achara(picked papaya strips).

Estimated time of cooking: 15-20 minutes
Good for 3-4 persons

Ingredients:
500 grams chicken fillet, cut into serving pieces
1/4 cup cooking oil

Marinade:
4 cloves garlic, minced
1/2 cup soy sauce
2 tablespoons vinegar
2 tablespoons sugar
1 tablespoon oyster sauce
1 teaspoon cayenne pepper(optional)
salt and pepper to taste

Procedures:
Part 1
1. In a bowl, combine chicken and all ingredients except cooking oil. Mix well then marinate for at least an hour inside the fridge.

Part 2
2. In a pan, heat cooking oil over low heat. Fry marinated chicken for 15 minutes or until golden brown.
3. Drain and transfer to serving plate. Serve with fried rice.

Chicken Kare Kare

Filipino Style Recipe: Chicken Kare Kare or Kare Kareng manok is another variety of popular Filipino Kare-Kare. In this recipe we used chicken as alternative meat. Normally the chicken sauteed and cooked in chicken stock with peanut butter and ground toasted rice until thicken. Add the variety of vegetables and often serve with sauteed shrimp paste.

Estimated time of cooking: 30-40 minutes
Good for 3-4 persons.

Ingredients:
1 kilo chicken, cut in serving pieces
1/2 cup peanut butter
1/4 cup ground toasted rice
1 onion, sliced
1 cup string beans(sitaw), cut into 2 inches
1 bundle bokchoy(petchay)
3 pieces egg plant, cut lengthwise
1 teaspoon annatto seeds(dissolved in 2 tablespoons hot water, discard seeds)
3 tablespoons cooking oil
salt and pepper to taste
1 chicken broth cube(optional)
sauteed shrimp paste

Procedures:
Part 1
1. In a pan, heat oil and fry all the vegetables and continue cooking for 3-5 minutes. Do not over cook the vegetables. Drain and set aside.

Part 2
1. In another pot, heat oil and saute onions.
2. Add chicken, water and chicken cube. Simmer until chicken is tender.
3. Add peanut butter, ground toasted rice and annatto water. Keep stirring until the sauce thickens.
4. Adjust seasoning with salt and pepper according to taste.
5. Add banana heart, string beans, eggplants and bok choy. Simmer until vegetables are tender.
6. Transfer to serving bowl, serve with sauteed shrimps paste.

Tips:
1. You may also used leftover roasted or fried chicken.

Chicken Feet Adobo

Filipino Style Recipe: chicken feet adobo or adobong paa ng manok is another popular adobo dish. Normally the chicken cooked in a blend of soy sauce and vinegar, season with sugar, salt and pepper. This dish is similar to other adobo dish.

Estimated time of cooking: 30-40 minutes

Good for 5 persons

Ingredients:
1 kilo chicken feet
1 head garlic, peeled and crushed
1 large onion, peeled and sliced
1 tablespoon ginger, peeled and minced
1/2 cup soy sauce
1/4 cup vinegar
3 cups water
1 1/2 tablespoons brown sugar
1 tablespoon peppercorns
3 pieces bay leaves(laurel)
salt to taste
3 pieces red chili peppers(labuyo), chopped(optional)

Procedures:
Part 1
1. Cut off chicken feet claws then scrub well with salt.
2. Rinse chicken feet thoroughly and drain.

Part 2
1. In a pot, arrange chicken feet, garlic, onion, ginger, soy sauce, peppercorns, bay leaves, sugar and water.
2. Cover and simmer in a low heat for 20-30 minutes or until tender. Add water in necessary.
3. Pour vinegar and season with salt then simmer for 5 minutes.
4. Adjust seasoning according to taste.
5. Add red chili and cook until sauce is thickens.
6. Transfer to serving plate, serve with steamed rice.

Asadong Manok Recipe

Filipino Style Recipe: Asadong Manok or chicken asado is a sweet chicken dish that was originated from Chinese. Normally chicken marinade of seasonings and boil it until tender. This is similar to pork asado.

Estimated time of preparation: 10 minutes
Estimated time of cooking: 30-40 minutes.
Good for 4-6 persons.

Ingredients:
1 kilo chicken legs
2 tablespoons sesame oil
3 tablespoons Honey
250 grams Bok Choy(Chinese Petchay)(optional)

Marinade:
1/2 cup soy sauce
1/2 cup oyster Sauce
1/2 cup brown sugar
4 pieces star anise
1 thumb-sized ginger, grated
1 onion, chopped
5 gloves garlic, minced
1/2 teaspoon salt and pepper

Procedures:
Part 1
1. In a pot, combine all the marinade ingredients and marinate chicken for 1 hour.
2. Cover and simmer in a low heat until meat is tender. Add water if necessary. Set aside.

Part 2
1. In a non-stick pan, heat oil and pour a little marinade sauce.
2. Add bok choy and cook for 1 minute. Transfer to serving bowl.

Part 3
1. In a same pan, pour a little marinade sauce then add honey.
2. Add the chicken and cook again for 2-3 minutes. Transfer to serving bowl with bok choy.

Part 4
1. In a same pan, pour all the remaining marinade sauce. Stir and simmer until thicken.
2. Pour the sauce over the chicken then serve.

Sinampalukang Manok

Filipino Style Recipe: sinampalukang manok or chicken in tamarind is another simple and easy Filipino dish. This is similar to sinigang na hipon and sinigang na baboy. Normally the chicken sauteed and cooked in a combination of onions, garlic, ginger, different vegetables and tamarind which gives a sour taste.

Estimated time of preparation and cooking: 30-40 minutes
Good for 5-6 servings

Ingredients:
1 kilo chicken, cut into serving pieces
12 pieces tamarind(sampalok) or 1 pack sinigang mix
5 cups water or rice wash
3 gloves garlic, chopped
1 onion, chopped
1 thumb-sized ginger, sliced
3 tomatoes, quartered
3 pieces green peppers(siling haba)
1 bundle water spinach(kangkong), cut into 2 inches
1 bundle string beans(sitaw), cut into 2 inches
fish sauce or salt and pepper to taste
2 tablespoons vegetable oil


1 cup tamarind leaves(optional)
2 pieces eggplants, cut into serving pieces(optional)
1 chicken bouillon(broth cube)(optional)

Procedures:
Part 1
In a pot, boil tamarind until soften then pound and extract the juice. Set aside.

Part 2
1. In a pot, heat oil and saute garlic, onions and ginger.
2. Add chicken and pour fish sauce then continue sauteing until chicken is light brown.
3. Pour water, tomatoes and chicken bouillon then bring to boil. Add water if necessary
4. Add tamarind leaves and tamarind juice then simmer for 5 minutes over low heat.
5. Add eggplant, string beans and green chili. Simmer of 5 minutes.
6. Adjust seasoning with fish sauce or salt and pepper.
7. Turn off the heat, add water spinach and cover for a few minutes.
8. Transfer to serving bowl and serve with steamed rice. Enjoy!

Chicken Caldereta

Filipino Style Recipe: chicken caldereta or kalderetang manok is another chicken dish that commonly served by Filipinos. This is similar to beef caldereta and chicken afritada. It is basically chicken marinated and sauteed, then cooked with tomato sauce, bell pepper and potatoes. Some may add liver spread to make the sauce creamy. This is a mouth-watering dish that my family loves so much.

Estimated time of preparation: 15 minutes
Estimated time of cooking: 20-30 minutes
Good for 3-4 persons

Ingredients:
3/4 kilo chicken, cut into serving pieces
1/4 cup vinegar or pineapple juice
1/4 cup soy sauce
2 cloves garlic, minced
1 onion, chopped
500 grams tomato sauce
1 small can liver spread
2 medium-sized potatoes, cut into cubed
2 pieces red and green bell pepper, cut into cubed
1/2 cup cheddar cheese, grated or cubed
cooking oil
salt and pepper to taste

1 medium-sized carrot, cut into cubed(optional)
2 pieces red chili(siling labuyo), chopped(optional)
2 pieces bay leaf(optional)

Procedures:
Part 1
1. In a bowl, marinate chicken in soy sauce, vinegar, salt and pepper for 30 minutes.
2. In a pan heat oil and fry potatoes and carrots until golden brown. Drain and set aside.

Part 2
1. In a pan, heat oil and saute garlic and onions until translucent.
2. Add chicken and continue sauteing until light brown.
3. Pour marinade, tomato sauce and water then simmer for 3 minutes.
4. Add liver spread, potatoes, carrots, chili and bell pepper then cook for 2 minutes.
5. Adjust seasoning according to taste then add grated cheese. Mix until cheese has melted.
6. Remove from heat then serve hot with steamed rice.

Notes:
1. You may also include hot dogs cut diagonally and green peas if you prefer.
