Native Chicken Tinola

Filipino Style Recipe: Native chicken Tinola or chicken ginger soup is similar to tinolang manok. We used Philippine native chicken(wild chicken) which delivers more flavorful broth but it takes more time until tender. This simple Filipino recipe is usually served to patients and lactating mothers specially during rainy season.

Estimated time of preparation: 20 minutes
Estimated time of cooking: 60-70 minutes
Good for 5-7 persons

Ingredients:
1 kilo native chicken, cut into serving pieces
2 pieces green papaya or chayote(sayote), cut into small pieces
1 cup malunggay leaves or chili leaves
5 stalks lemongrass(tanglad), knotted and crushed
1 thumb-sized ginger, cut into strips
4 cloves garlic, crushed
1 onion, chopped
1 litre of water or rice washing
4 tablespoons vegetable oil
3 tablespoons fermented fish sauce(sabaw ng bagoong isda)
fish sauce or salt to taste

Procedures:
1. In a sauce pan, heat oil over medium heat then saute ginger, garlic and onion.
2. Add chicken and fermented fish sauce then continue sauteing until the color chicken turn to light brown.
3. Add water and lemongrass then simmer in a low heat for an hour or until chicken is tender. Add more water if necessary.
4. Add papaya then continue simmering for another 5 minutes.
5. Season with salt to taste then add malunggay leaves and simmer for another minute.
6. Remove from heat then transfer to a serving dish and serve. Enjoy!

Nilagang Buto-Buto ng Baboy

Filipino Style Recipe: nilagang buto-buto ng baboy or pork ribs stew is another simple soup dish. Pork ribs boiled until tender then add onion, peppercorn, salt, potatoes, cardava banana, cabbage and green beans. This dish is usually serve as main dish specially during rainy season.

Estimated time of preparation and cooking: 30-40 minutes
Good for 3-5 persons

Ingredients:
500 grams pork ribs, cut into serving pieces
7 cups water(add more if necessary)
1 onion, sliced
1/4 teaspoon peppercorn
1 piece pork bouillon cube(optional)
2 potatoes, quartered
3 pieces cardava banana(saging na saba), cut into 3-4 pieces(optional)
1 bundle green beans, trimmed and cut into 3-4inch(optional)
1 bundle bok choy(pechay) or cabbage leaves(repolyo), cut into serving pieces
fish sauce or salt to taste

Procedures:
Part 1
1. In a large casserole, place meat and add water then bring to a boil and simmer over medium heat or until meat is tender.(Remove the scum as it rises.)

Part 2
1. Add onion, peppercorn, pork broth cubes and sprinkle some salt.
2. Add banana and potatoes and continue cooking until potatoes are cooked.
3. Add the green beans. Simmer for 3-5 minutes then adjust seasoning according to taste.
4. Add pechay then turn off the heat and leave for about 3 minutes before serving.
5. Transfer to serving bowl then serve hot with steamed rice. Enjoy

Chicken Tinola with Sotanghon

Filipino Style Recipe: Chicken tinola with sotanghon is a chicken ginger soup with sotanghon noodles. This soup dish is simple and easy to prepared. Like the usual tinolang manok, the chicken sauteed in ginger, garlic and onion until brown then simmered and cooked in rice washing until tender with chayote, chili leaves and sotanghon noodles. This dish is usually serve  as main dish specially during rainy season.

Estimated time of preparation and cooking: 45-50 minutes.
Good for 4-6 persons.

Ingredients:
1 kilo chicken, cut into serving pieces
2 pieces chayote squash(sayote) or green papaya, cut into small pieces
1 cup chili leaves or malunggay leaves
1 thumb-sized ginger, cut into strips
4 cloves garlic, crushed
1 onion, chopped
2 tablespoon fish sauce(patis)
1 litre of water
4 tablespoon vegetable oil
salt to taste

Procedures:
1. In a sauce pan, heat oil over medium heat then saute ginger, garlic and onion.
2. Add chicken, fish sauce, ground pepper and continue sauteing until the color chicken turn to light brown.
3. Pour water then simmer for 10 minutes or until chicken is tender.
4. Add in chayote then continue simmering for another 5 minutes.
5. Adjust seasoning according to taste then add sotanghon and simmer for another minute.
6. Add chili leaves then turn off the heat, let stand for a few minutes to cook the leaves.
7. Transfer to a serving bowl and serve hot with steamed or garlic rice. Enjoy!

Beef Broccoli and Cauliflower

Filipino Style Recipe: beef broccoli and cauliflower is another easy and healthy beef dish. The beef cut into strips then marinated and stir cooked with broccoli and cauliflower in a blend of oyster sauce, cornstarch, salt and pepper.

Good for 3-4 persons

Ingredients:
1/2 kilo sirloin or flank beef, sliced thinly into strips
1 medium size broccoli, cut into serving pieces
1 medium size cauliflower, cut into serving pieces
1 medium sized onion, chopped
4 cloves garlic, minced
1 small ginger, chopped
1/4 cup soy sauce
1 tablespoon lemon or calamansi juice
2 tablespoons oyster sauce
1/2 cup water or beef stock
1 teaspoon cornstarch or flour(dissolved in 1/4 cup water)
sugar, salt and pepper to taste.
1 teaspoon sesame oil(optional)

Procedures:
Part 1
1. In a bowl, combine beef, soy sauce, lemon juice, salt, ground pepper, sesame oil and marinate for 15 minutes.

Part 2
1. In the same pan, saute garlic, onion and ginger.
2. Add beef then stir cook for 5 minutes or until light brown and start to sizzle.
3. Add oyster sauce, water, sugar, salt and ground pepper then simmer for 3 minutes.
4. Add broccoli and cauliflower then cook for a minute.
5. Pour dissolved cornstarch then simmer until thickens. Adjust seasoning according to taste.
6. Remove from heat then transfer to serving bowl. Serve immediately with steamed rice.

Pork Curry

Filipino Style Recipe: Pork curry is another mouth-watering dish inspired to Indian and Islamic cuisine. This dish is another variety of typical Filipino curry dish which is similar to chicken curry. Pork curry is usually made of pork meat cooked in coconut milk, curry powder and chilies until tender. Curry is one of the popular spices that gives a spicy and strong flavor.

Ingredients:
1 kilo pork, cut into serving pieces
3 potatoes, quartered
2 carrots, cut into cubes
2 bell peppers(red & green), cut into cubes
1 cup coconut milk or evaporated milk
3 tablespoons curry powder(dissolved in 1/2 cup hot water)
1 onion, chopped
3 cloves garlic, minced
1 cup water
2 tablespoons fish sauce(patis)
1/4 teaspoon chili flakes(optional)
3 tablespoons vegetable oil
salt and pepper to taste

Procedures:
Part 1
1. In a pan, fry potatoes and carrots until color turns to light brown. Drain and set aside.

Part 2
1. In the same pan, saute garlic and onion until soft.
2. Add pork then stir cook sauteing until color turns to light brown.
3. Add fish sauce, dissolved curry powder and water then simmer for 15 minutes or until meat is tender.
4. Add bell peppers, fried potatoes and carrots then simmer for another minute.
5. Add milk, salt and ground pepper then simmer for another 3-5 minutes or until slightly thickens. Keep stirring.
6. Remove from heat and transfer to serving plate. Serve hot with steamed rice.

Stir Fried Ginger Beef and Broccoli

Filipino Style Recipe: stir fried ginger beef and broccoli is another simple yet delicious beef dish. This dish is similar to beef broccoli which is usually serve in Chinese restaurants. The beef strips marinated then cooked and simmered together with red bell pepper and broccoli until the meat is tender.

Estimated time of preparation: 15 minutes(plus marinating time)
Estimated time of cooking: 10-15 minutes

Ingredients:
300 grams beef sirloin, sliced thinly into strips
2 cups broccoli florets
2 cloves garlic, minced
1 thumb-sized ginger, grated
1 red bell pepper, diced
1/4 teaspoon chili flakes(optional)
3 tablespoons cooking oil

Marinade:
1/4 cup soy sauce
1/4 cup oyster sauce
1/4 cup water or soda
4 tablespoons brown sugar
1 teaspoon sesame oil
salt and pepper to taste

Procedures:
Part 1
1. In a bowl, combine beef and marinade then stir together. Set aside for 30 minutes.
2. Blanch broccoli in hot water for 1-2 minutes. Drain and rinse with cold water. Set aside.

Part 2
1. In a sauce pan, heat cooking oil and stir fry beef until for 2-3 minutes. Set aside.
2. In a same pan, saute garlic, ginger, bell pepper, chili flakes then pour marinade and bring to boil.
3. Pour dissolved cornstarch and adjust seasoning according to taste.
4. Add broccoli and beef then simmer in a minute.
5. Remove from heat then serve hot immediately with steamed rice.

Chicken Bicol Express

Filipino Style Recipe: Chicken Bicol express is another variety of popular Bicol express which has a creamy and spicy flavor. Like the usual Bicol express made of pork meat, chicken is saute until brown then cook in coconut milk and shrimp paste together with green chili and red chili.

3/4 kilo chicken fillet, cut into serving pieces
1/2 cup long green peppers(siling pangsigang) or baguio beans, cut diagonally
3 cups coconut milk
1 tablespoon sauteed shrimp paste(bagoong alamang)
3 cloves garlic; minced
1 small onion; chopped
3 pieces red chili(siling labuyo)
2 tablespoons vegetable oil
Fish sauce or salt to taste

Procedures:
Part 1
1. In a bowl with water and salt, soak green peppers for 30 minutes then rinse and drain.

Part 2
1. In a pan, heat vegetable oil then saute garlic and onion.
2. Add chicken then continue sauteing until colors turn to brown.
3. Add the shrimp paste and ground pepper then stir for another minute.
4. Pour coconut milk then bring to a boil until reduced.
5. Add the green peppers and red chili then season with salt according to taste.
6. Remove from heat then serve with steamed rice. Enjoy!

Salisbury Onion Burger Patties

Filipino Style Recipe: Salisbury onion burger patties recipe is a popular dish in United States and similar to burger steak. It is consists of beef patties serve with gravy or brown sauce and best to serve with mas potatoes and steamed veggies.

Ingredients:
Burger Patties
1/2 kilo ground beef
1/2 egg, beaten
4 cloves garlic, minced
1/4 cup breadcrumbs
1/4 teaspoon salt
1/2 teaspoon ground pepper

Gravy Sauce
1 large white onion, slice into rings
3 cups beef stock
2 tablespoons flour
3 tablespoons soy sauce
1 1/2 tablespoon butter
1 tablespoon brown sugar
1/2 teaspoon ground pepper

Procedures:
Part 1
1. In a bowl, combine ground beef, egg, garlic, breadcrumbs, salt and pepper. Mix thoroughly.
2. Divide the mixture into serving pieces. Roll the mixture into balls and flatten on an even surface.
3. grill or fry patties until color turns to light brown. Drain on paper towels and set aside.

Part 2
1. In another pan, heat oil then melt butter.
2. Add onion and saute until soft. Remove from the pan and set aside.

Part 3
1. In a same pan, pour soy sauce and beef stock then bring to boil.
2. Add flour then stir constantly until the sauce becomes thick.
3. Add butter, sugar and ground pepper then stir until well blended.
4. Add patties and onion then simmer for another minute.
5. Transfer to serving plate then serve with mash potatoes and steamed veggies.

Pininyahang Baboy

Filipino Style Recipe: Pininyahang Baboy(Pork with Pineapple) is another mouth-watering dish that is commonly served by Filipinos. This is similar to pininyahang manok but we will use pork instead of chicken. The pork is simmer and cook in pineapple juice together with pineapple chunks, fresh vegetables, and spices. I also added evaporated milk to make a creamy sauce. The tender of pork and the sweet and sour taste of pineapple make this dish irresistible. This is truly a mouth-watering dish.

2 red and green bell pepper, cut into cubes
1 medium carrots, cut into cubes

3 tablespoons soy sauce
fish sauce or salt and pepper to taste
3 tablespoons cooking oil or butter

2 medium potatoes, cut into cubes(optional)
2 cups evaporated milk or coconut milk(optional)

Procedures:
Part 1
1. In a pan, heat cooking oil and fry carrots and potatoes until light brown. Drain and set aside.

Part 2
1. In the same pan, reduce oil then saute garlic and onion.
2. Add pork then continue sauteing until light brown. Season with fish sauce and pepper.
3. Pour milk and pineapple juice then simmer for 20 minutes or until the meat is tender. Add water if necessary.
4. Add carrots, potatoes and bell pepper then simmer for 3 minutes.
5. Add pineapple chunks, soy sauce and fish sauce according to taste then simmer for another minute.
6. Remove from the heat then transfer to serving bowl. Serve with steamed rice.

Paksiw na Lechon Kawali

Filipino Style Recipe: paksiw na lechon kawali is a simple and easy Filipino pork dish. This is similar to lechon paksiw but instead of roasted pork we will use fried pork belly. It is consists of fried pork belly or leftover lechon kawali then re-cooked with lechon sauce, vinegar, garlic and some spices.

Ingredients:
1/2 kilo lechon kawali or fried pork belly, cut into serving pieces
1/4 cup lechon sauce
3 cloves garlic, crushed
1 medium onion, chopped
1 teaspoon peppercorn
1 bay leaf(laurel)
2 tablespoon vinegar
1/4 cup brown sugar
1/4 cup water
salt to taste

1/4 cup liver spread(optional)

Procedures:
1. In a pan, heat lechon kawali until start to render oil.
2. Add garlic and onions then saute until translucent.
3. Pour water, peppercorn and bay leaf then bring to boil.
4. Pour vinegar and simmer for 5 minutes.
5. Add the sugar, liver spread and lechon sauce then simmer for another 5 minutes.
6. Adjust seasoning with salt according to taste.
7. Remove from heat and serve with steamed rice. Enjoy!
