Seafood Fried Rice Mixed

Ingredients:
2 cups cooked rice(preferably leftover)
400 grams prawns, peeled and deveined
200 grams squid, cut into bite sized pieces, boiled
3 eggs, beaten
1 teaspoon soy sauce
1 tablespoon sesame oil
1/2 cup carrot, thinly slice
3 stalks green onions, chopped
4 cloves garlic, minced
1/2 cup butter
salt and pepper to taste

Procedures:
Part 1
1. In a pan, heat oil and pour egg mixture and scramble until slightly cooked.
2. Transfer to separate plate and set aside.

Part 2
1. In the same pan, melt butter and saute garlic, green onion and carrots.
2. Add shrimp and squid, saute in a minute.
3. Pour soy sauce and sesame oil. Add cooked rice and continue stirring.
4. Add scrambled egg, salt and ground pepper. Mix well until rice is well coated.
5. Adjust seasoning according to taste.
6. Transfer to serving plate and garnish with chopped green onions.

Nilasing na Hipon

Filipino Style Recipe: nilasing na hipon is a simple but tasty shrimp dish, the shrimps marinated in wine or liquor then sauteed in butter with onion and pepper.

Ingredients:
500 grams prawns
1 onion chopped
1 bell pepper, chopped
1 tablespoon butter
2 cups white wine(you may also use sake, tequila, gin, vodka or beer)
salt and pepper to taste
4 tablespoon olive oil

2 red hot chili(siling labuyo),chopped(optional)
1 tablespoon rosemary(optional)

Procedures:
Part 1
1. In a bowl, combine 1 tablespoon olive oil, wine, rosemary, salt and pepper. Marinate shrimps for 1 hour.
2. Drain on paper towel.

Part 2
1. In a pan, heat olive oil and melt butter.
2. Saute onion, bell pepper and red chili.
3. Add shrimps and stir fry for 3-5 minutes. Drain on paper towel.
4. Serve with spicy vinegar.

Pineapple Prawns in Coconut Milk

Filipino Style Recipe: Pineapple prawns in coconut milk is a quick and delicious shrimp strew. The prawns cooked in a few minutes in coconut milk, pineapple juice, turmeric and curry powder together with pineapple chunks and fried eggplants.

Ingredients:
12 pieces tiger prawns, head and shells intact or removed
1 cup coconut milk
1/2 cup pineapple chunks
1/4 cup pineapple juice
1 teaspoon green curry paste
3 bird’s eye chilis(labuyo)
1 teaspoon turmeric powder(luyang dilaw)
3 tablespoons olive oil
salt and pepper to taste
1 eggplant, halves and sliced(optional)

Procedures:
Part 1
1. In a pan, heat 3 tablespoons oil and fry eggplant. Drain and set aside.

Part 2
1. In a same pan, add green curry paste and turmeric powder then stir.
2. Pour coconut milk then bring to boil over low heat.
3. Add pineapple, pineapple juice, chili and prawns then cook for 3 minutes.
4. Adjust seasoning with salt and pepper then add fried eggplant.
5. Remove from heat then transfer to serving plate. Serve.

Prawns Curry with Pineapple

Filipino Style Recipe: prawns curry with pineapple recipe is a quick shrimp strew. It usually consists of prawns cooked in curry sauce together with pineapple chunks.

Ingredients:
10 pieces tiger prawns,(remove the head and legs then trim the tails)
250 grams pineapple chunks
2 tablespoons curry powder(dissolved in 1/4 cup water)
1 thumb-sized ginger, minced
2 gloves garlic, minced
2 tablespoons olive oil
3/4 cup water
Salt to taste

Procedures:
1. In a pan, heat oil and saute ginger and garlic.
2. Pour curry mixture and stir until boiling.
3. Add prawns and stir for a minute, add water and bring to boil.
4. Add pineapple and season with salt according to taste.
5. Simmer for 2 minutes or until cooked.
6. Transfer to serving bowl then serve.

Shrimp and Corn Soup

Filipino Style Recipe: Shrimp and corn soup is a creamy soup dish that usually served during rainy season. Shrimp, corn and potatoes cook in coconut milk which has a creamy and tasty flavor.

Estimated time of preparation and cooking: 10-15 minutes
Good for 2-3 servings

Ingredients:
200 grams medium shrimp, peeled and deveined
1 cup corn kernels
1 cup coconut milk
1 large potato, diced
1 onion, sliced thinly
2 cloves garlic, minced
2 cups water
salt and pepper to taste
spring onion for garnishing(optional)

Procedures:
Part 1
1. In a pan, heat oil then stir fry shrimp for a minute. Strain and set aside.
2. In a same pan, fry potatoes until light brown. Strain and set aside.

Part 2
1. In a same pan, reduce oil then saute garlic and onion.
2. Add coconut milk, water, potatoes and corn then simmer for 2 minutes
3. Add shrimps then season with salt and pepper.
4. Simmer for another minute then transfer to serving plate, garnish with spring onion. Serve.

Sinigang na Hipon

Filipino Style Recipe: sinigang na hipon is another simple and easy Filipino dish. This is similar to sinigang na baboy. Normally the shrimps cooked in a combination of onions, tomatoes, different vegetables and tamarind which gives a sour taste.

Estimated time of preparation and cooking: 30 minutes
Good for 5-6 servings

Ingredients:
1 kilo Shrimps
1 pack sinigang mix or 12 pieces tamarind(sampalok)
5 cups water or ricewash
1 onion, diced
3 large tomatoes, quartered
1 bundle water spinach(kangkong), cut into 2 inches
3 pieces green chili(siling haba)
salt or fish sauce to taste

2 pieces radish, sliced(optional)
1 bundle string beans(optional)

Procedures:
1. In a pot, pour water and bring to boil.
2. Add onions, tomatoes and radish.
3. Add sinigang mix and simmer for 2 minutes.
4. Add shrimps, string beans and green chili then simmer for 3 minutes.
5. Adjust seasoning with salt or fish sauce.
6. Turn off the heat, add water spinach and cover for a few minutes.
7. Transfer to serving bowl and serve with steamed rice. Enjoy!

Tips:
1. You may also add eggplants or pechay.

Notes:
If using tamarind(sampalok) instead of sinigang mix, here’s the procedure:
1. Boil tamarind until soften.
2. Pound and extract the juices.

Pasta in Shrimp and Lemon Sauce

Filipino Style Recipe: angel hair pasta in shrimp and lemon sauce is another simple and low-carbohydrate dish. It is usually consist of pasta and a combination of cream, shrimp and lemon juice.

Estimated time of preparation and cooking: 15-20 minutes
Good for 4-6 persons

Ingredients:
350 grams pasta(I prefer angel hair)
500 grams medium shrimp, peeled and deveined
3/4 cup whip cream
1/4 cup chicken stock or water
3 tablespoons lemon juice
1/2 cup Parmesan cheese, grated
salt and pepper
1/2 cup parsley(kinchay),chopped(optional)
1/4 cup spring onions, chopped(optional)
zest of a lemon(optional)

Procedures:
Part 1
1. In a large pot, prepare the pasta based on cooking instructions. Drain and set aside

Part 2
1. In a sauce pan, pour the chicken stock, cream and lemon juice and simmer in a low heat for 5 minutes.
2. Add shrimp, salt and pepper. Stir and cook for about 3-5 minutes or until the shrimp is done. Add water if needed.
3. Add parsley and green onions and cook for another minute.
4. Adjust seasoning according to taste.

Part 3
1. In a serving bowl, put the pasta and pour the sauce.
2. Add lemon zest and Parmesan cheese. Mix well and serve.

Okoy(Crispy Shrimp Fritters)

Filipino Style Recipe: Okoy or Ukoy(crispy shrimp fritters) is a native Filipino dish originated from the province of Laguna. This dish is usually an afternoon snack but some use it as viand for regular meals. Normally the baby shrimps mixed with flour, egg, salt and pepper. Scope to form a patty then deep fry until crisp and brown.

Ingredients:
250 grams baby shrimps, cleaned
1 cups flour or cornstarch
1 egg, beaten
1/4 cup water
1 teaspoons salt
1/2 teaspoon ground pepper
1 onion, chopped
cooking oil for frying
1 cup bean sprouts(toge) (optional)
1 sweet potatoes(kamote) or turnip(singkamas), peeled and cut into strips(optional)

Spicy Garlic Vinegar
1 cup white vinegar
1 tablespoon garlic, minced
1 teaspoon salt
1 teaspoon sugar
1 piece chili(siling labuyo), chopped

Procedures:
Part 1
1. In a bowl, combine flour, salt, pepper, egg and water to make a smooth batter. Stir to mix well.
2. Add the baby shrimps, onion, bean sprouts and sweet potatoes. Mix until shrimps and vegetables are well coated.

Part 2
1. In a frying pan, heat cooking oil and pour about 1/4 cup of the mixture.
2. Deep fry each sides for about 1-2 minutes or until crisp and brown. Drain on paper towels.
3. Repeat until the entire mixture is consumed.
4. Serve hot with spicy garlic vinegar. Enjoy

Part 3(optional)
1. In a bowl, mix all the ingredients for spicy garlic vinegar.

Creamy Shrimp Salad

Filipino Style Recipe: creamy shrimp salad is comprises a shrimp as main ingredient. Combine with mayonnaise, lemon juice, celery, cucumbers, salt and pepper.

Ingredients:
3/4 cup cooked shrimp, steamed and peeled
2 medium cucumbers, peeled and sliced
1/2 cup celery, diced
1 tablespoon mayonnaise
1 tablespoon fresh lemon juice
1/2 teaspoon Old Bay seasoning
salt and pepper to taste
lettuce leaves(optional)

Procedures:
1. In a medium bowl, mix all ingredients. Refrigerate until ready to serve. Enjoy!

Ginisang Togue

Filipino style recipe: ginisang togue or sauteed sprouted mung beans recipe is a healthy yet affordable dish. Normally the sprouted mung beans sauteed with fried pork, tofu shrimp, green beans and carrots.

Good for 3-4 servings

Ingredients:
1/2 kilo sprouted mung beans(toge)
1/2 cup fried tofu(tokwa), diced
1/4 kilo pork, cut into small pieces
1 small-sized bell pepper, cut into strips
1 small-sized carrot, cut into strips
1/2 head garlic, chopped
1 medium-sized onion, chopped
1 medium-sized tomato, chopped
fish sauce(patis) or salt and pepper to taste
vegetable oil

Procedures:
1. In a frying pan, heat oil and fry pork until golden brown. Set aside.
2. Saute garlic, onions and tomatoes.
3. Add fried tofu and pork then a little water and pork broth cubes. Cook for 1 minute.
5. Adjust seasoning with salt and pepper.
6. Add sprouted mung beans, carrots and bell pepper and cook for 5 minutes or until vegetables are half-cooked.
7. Remove from heat. Serve with steamed rice.

Notes:
1. You may also add shrimp, green beans and sayote.
