Vegetable Fried Rice

Filipino Style Recipe: vegetable fried rice is a healthy rice dish that is commonly served during breakfast. It is mainly made up of cooked or leftover rice then stir fried with mixed vegetables and seasonings.

Estimated time of preparation: 10-15 minutes
Estimated time of cooking: 10-12 minutes
Good for 4-6 servings

Ingredients:
4-6 cups cooked or leftover rice(I prefer Basmati)
2 cups choice of chopped veggies(carrots, green beans, cabbage, bean sprout, broccoli, cauliflower)
1 onion, chopped
3 gloves garlic, minced
2 tablespoons soy sauce
1 tablespoon olive oil
1 tablespoon sesame oil(optional)
salt and ground pepper to taste
spring onions, finely chopped(half for garnishing)

Procedures:
Part 1
1. In a wok, heat olive and saute garlic, onion and spring onions.
2. Add chopped vegetables and stir and cooked for 3 minutes.
3. Pour soy sauce and sesame oil. Add cooked rice and continue stirring.
4. Season with salt and ground pepper. Mix well until rice is well coated.
6. Transfer to serving plate and garnish with spring onions. Enjoy

Notes:
1. You may also add scramble egg if you prefer.

Chicken Adobo(Adobong Manok)

Filipino Style Recipe: Chicken adobo or adobong manok is the another popular yet easy Filipino dish. Adobo have lots of variations such as pork, chicken, combination of pork and chicken, other meats, vegetables and seafood. In this recipe, we will used chicken then marinated and cooked in a blend of soy sauce, vinegar, garlic, bay leaves, peppercorns, salt and sugar until chicken is tender and the sauce thickens.

Estimated time of preparation: 10 minutes(plus marinating time)
Estimated time of cooking: 30 minutes
Good for 3-4 persons

Ingredients:
500 grams chicken, cut into serving pieces
1/2 cup soy sauce
1/3 cup vinegar
3 gloves garlic, crushed
1 teaspoon peppercorns
3 pieces bay leaves(laurel)
1 tablespoon sugar
salt to taste
1/4 cup cooking oil
1 cup water

Procedures:
Part 1
1. In a pot, combine chicken, garlic, bay leaves, peppercorns and soy sauce. Marinate for at least 30 minutes or overnight.
2. Drain garlic and chicken then reserve the sauce. Set aside.

Part 2
1. In a sauce pan, heat oil and fry marinated chicken for 3 minutes or until golden brown.
2. Pour marinade and add water. Simmer for 20 minutes or until chicken is tender.
3. Pour vinegar and simmer for another 5 minutes then season with salt and sugar according to taste.
4. Remove from heat then transfer to serving bowl. Serve with steamed rice.

Salmon Ginger Teriyaki

Filipino Style Recipe: Salmon ginger teriyaki is another low-carbohydrate dish. It is usually consists of salmon fillet marinated in a blend of grated ginger, teriyaki sauce and other seasonings then baked until tender.

Estimated time of preparation and cooking: 30 minutes(plus marinating time)
Good for 2-3 persons

Ingredients:
500 grams fresh salmon steak

Marinade:
1 cup teriyaki sauce
1 thumb-sized ginger, grated
4 cloves garlic, minced
1/4 cup lime juice
3 tablespoons dark brown sugar
2 tablespoons honey
2 tablespoons olive oil
1 tablespoon grind black pepper

Procedures:
Part 1
1. In a bowl, combine marinade ingredients then mix well.
2. Add salmon and place the marinade on top, Cover and marinate for 30 minutes inside the fridge. Drain and set aside.

Part 2
1. In a non-stick pan, grease with olive oil then place marinated salmon skin side down.
2. Bake over 400 degrees Fahrenheit for about 15-20 minutes or until fish flakes with fork. Brush with remaining marinade from time to time.
3. Remove from the oven then transfer to serving plate. Serve hot with steamed beans. Enjoy!

Pancit Miki Guisado

Filipino Style Recipe: pancit miki guisado is a stir fried noodle dish similar to pancit canton. Like other noodle dish, this recipe is made of pork meat, vegetables and miki noodles which is thinner compared to Lomi noodles. We added shrimps, squid balls and more vegetables to enhance the taste.

Estimated time of cooking: 20-30 minutes
Good for 5-8 persons

Ingredients:
500 grams miki noodles
200 grams pork belly, slice into small pieces
200 grams shrimp, peeled
2 pieces carrots, sliced
1 cabbage, chopped
1/4 kilo green beans or snow peas(sitsaro)
1 cup celery(kintsay), sliced
6 gloves garlic, minced
1 onion, chopped
3 tablespoons oyster sauce
2 cups hot water or chicken broth
2 tablespoons cooking oil
salt and pepper to taste

100 grams squid balls, cut into half(optional)
100 grams mushrooms(taingang daga)(optional)
100 grams chicken breast or liver(optional)
1/4 cup spring onions, diced(optional)

Procedures:
Part 1
1. Wash miki noodles in running water. Drain and set aside.

Part 2
1. In a wok, heat oil then saute the garlic and onions.
2. Add pork, liver and squid balls then cooked until color turns to brown.
5. Add oyster sauce and hot water then stir and bring to boil.
4. Add shrimps and vegetables then stir fry until the vegetables are half-cooked.
5. Add miki noodles then stir and cook for 3 minutes or until the liquid has been absorbed.
6. Adjust seasoning with salt and pepper according to taste.
7. Transfer to a serving plate then garnish with spring onion. Serve and enjoy.

Braised Chicken with Black Beans

Filipino Style Recipe: Braised chicken with black beans is another popular dish in Chinese cuisine. Normally the chicken marinated, fried and then cooked with fermented black beans(tausi), bell peppers and sauce ingredients until thickened.

Estimated time preparation and cooking: 20-30 minutes(plus marinating time)
Good for 3-5 persons

Ingredients:
1 kilo chicken, cut into serving pieces
2 tablespoon black beans(Tausi)
1 medium-sized onion
2 tablespoons garlic, minced
cooking oil for frying
salt and pepper to taste
1 piece red bell pepper, diced(optional)
spring onion for garnishing(optional)

Marinade:
1 tablespoon soy sauce
1 tablespoon cornstarch
1/4 teaspoon salt

Sauce:
2 tablespoons soy sauce
1 teaspoon sesame oil
1 cup water
1 tablespoon cornstarch

Procedures:
Part 1
1. In a bowl, combine chicken and marinade then set aside for 20 minutes.

Part 2
1. In a pan, heat oil then stir fry chicken until golden brown. Drain and set aside.
2. In a same pan, reduce oil then saute garlic and onion then add black beans.
3. Add bell pepper and chicken then cook until tender.
4. In a bowl, mix sauce ingredients until well blended then pour in a pan.
5. Simmer until thickens then season with salt and pepper to taste.
6. Remove from heat then sprinkle with spring onion. Serve hot with steamed rice. Enjoy.

Stir Fried Broccoli and Mushroom

Filipino Style Recipe: stir fried broccoli and mushroom is another healthy low carbohydrate dish. Normally the broccoli blanched then cooked with mushroom, carrots, oyster sauce and other seasonings.

Estimated time preparation and cooking: 15-20 minutes
Good for 2-3 persons

Ingredients:
1 cup broccoli florets
8 shiitake mushrooms, sliced
1 carrot, sliced thinly
2 cloves garlic, minced
1 onion, chopped
1 thumb-sized ginger, sliced thinly
2 tablespoons oyster sauce
2 tablespoons cornstarch(dissolved in 1/4 cup water)
2 tablespoons olive oil
1/4 cup chicken stock or water
salt and white pepper to taste
1/4 cup toasted almonds or peanuts(optional)
spring onion for garnishing(optional)

Ingredients:
Part 1
1. In a pot, boil water with salt. Once boiling, add broccoli and cook for 30 seconds.
2. Drain and rinse with cold water.

Part 2
1. In a pan, heat oil then saute garlic, onion and ginger.
2. Add mushrooms, carrots and pour chicken stock then stir fry for 2 minutes or until half-cooked.
3. Add broccoli, toasted almond, oyster sauce, dissolved cornstarch, salt and pepper.
4. Stir and simmer for another minute or until sauce thickens.
5. Transfer to serving plate then garnish with spring onion. Serve.

Notes:
1. You may also add shrimps or prawns if you prefer.

Dumpling Soup

Filipino Style Recipe: dumpling soup is an easy Chinese soup dish consists of Asian dumplings as main ingredients then cooked in chicken broth together with vegetables and seasoning. This soup is very good specially during rainy season.

Estimated time of preparation and cooking: 15-20 minutes

Ingredients:
20-24 pieces Asian dumplings with filling of your choice
5 cups chicken broth
1 cup shredded carrots
2 cups sliced shiitake mushrooms
1/2 cup chopped scallions
1 teaspoon sesame oil
1/2 teaspoon salt
1/8 teaspoon black pepper
3 cups thinly sliced cabbage or bok choy

Procedures:
1. In a heavy pot, boil chicken stock then add carrots, mushrooms, scallion and dark soy sauce.
2. Add dumplings and sesame oil. Simmer and cooked for 5 minutes. Add more water if necessary.
3. Adjust seasoning with salt and pepper then add cabbage.
4. Boil for another minute or until all vegetables are tender.
5. Transfer to serving bowl then serve hot.

Deep Fried Prawns

Filipino Style Recipe: deep fried prawns is comprises a prawns as main ingredient. Normally the prawns mix with batter and coated with bread crumbs then deep fried until golden brown. It is usually served plain with mayonnaise or sweet and sour sauce.

Estimated time of preparation: 10-15 minutes
Estimated time of cooking: 20-25 minutes

Ingredients:
1 kilo prawn, peeled(tails left on and deveined)
4 eggs, beaten
1/2 cup all-purpose flour
1 teaspoon salt
1/4 teaspoon white pepper
1 cup bread crumbs
vegetable oil for frying
1/2 teaspoon paprika(optional)

Procedures:
Part 1
1. In a bowl, combine flour, paprika, salt and pepper. Mix well.
2. Add prawn and deep in beaten egg then coated onto breadcrumbs.

Part 2
1. In a frying pan, heat oil and fry the prawn for 3 minutes until golden brown. Do not overcooked.
2. Remove prawn and drain on paper towels.
3. Serve with dip.

Hot and Spicy Chicken Wings

Filipino Style Recipe: Hot and Spicy Chicken Wings is another easy and mouth-watering chicken dish. This is usually made of chicken wings marinated then fry until golden brown. The fried chicken wings coated in a blend of spicy sauce and seasonings then usually served as appetizer or pulutan.

Estimated time of preparation: 15 minutes(plus marinating time)
Estimated time of cooking: 30-40 minutes

Good for 3-5 persons

Ingredients:
500 grams chicken wings, tips removed
1 tablespoon salt
1 tablespoon ground pepper
1 tablespoon cayenne pepper
1 cup flour
1/2 cup butter or margarine
1/2 cup ketchup
1/4 cup red hot chili sauce
1 teaspoon chili flakes
1/4 cup brown sugar
cooking oil for deep frying

Procedures:
1. In a bowl, combine chicken wings, cayenne pepper, salt and pepper. Marinate for 30 minutes.
2. In a frying pan, heat oil then dredge the chicken wings in flour then deep fry until golden brown. Drain and set aside.
3. In a pan, melt butter then add ketchup, hot sauce, chili flakes and brown sugar. Stir well.
4. Add chicken wings then toss until well coated. Transfer to a platter then serve.

Pesto Pasta

Filipino Style Recipe: pesto pasta is an easy and healthy Italian pasta dish. Pesto is made of processed basil, pine nuts, extra virgin olive oil, salt and pepper then usually served with pasta or bread.

Estimated time of preparation and cooking: 15-30 minutes.
Good for 3-4 person

Ingredients:
200 grams Penne pasta or any pasta
3/4 cups fresh basil leaves, chopped
3 tablespoons pine nuts or roasted pili nuts or walnuts
1/3 cup extra virgin olive oil
1/2 cup grated Parmesan cheese or feta cheese
salt And pepper to taste
2 chicken breast fillet, fried and flakes(optional)
2 whole tomatoes, diced(optional)

Procedures:
Part 1
1. In a large pot, prepare the pasta based on cooking instructions. Set aside.

Part 2
1. In a food processor or blender, process chopped basil, pine nuts, salt and pepper until blended.
2. Add extra-virgin olive oil then continue blending until combined. Add more olive oil if needed. Set aside.
3. Prepare pasta on pasta tray, pour the pesto sauce on top then add chicken flakes, tomatoes and grated cheese. Toss together then Serve!

Notes:
1. You may also used peeled and deveined shrimps instead of chicken.
2. You may also used pesto pasta sauce mix which is available in grocery stores instead of doing the pesto sauce by yourself.
