Stuffed Pork Bell Pepper

Filipino Style Recipe: Stuffed Pork Bell Pepper is a simple and easy to do recipe. You may add more or less cheese based on your preference.

Ingredients:
2 big yellow bell pepper, cut the top and remove the seeds
1/4 kilo ground pork
1 medium white onion, minced
3 pieces tomatoes, minced
1 teaspoon Worcestershire sauce
1 tablespoon chopped parsley
1/4 cup cooked rice
4 tablespoon cheddar cheese, shredded
3 tablespoon parmesan cheese, shredded
salt and pepper to taste

Procedures:
Part 1
1. In a large pot, boil water with salt enough to cover the bell pepper.
2. Put the bell pepper on the boiling water then let it boil for 5 minutes.
3. Remove bell pepper from pot, drain, and sprinkle inside with salt. Set aside.

Part 2
1. In a pan, saute onions and ground pork until browned.
2. Add the tomatoes and cook for 5 minutes. Season with salt and pepper.
3. Add cooked rice, worcestershire sauce and parsley. Stir cook until well combined.
4. Remove from heat and stir in parmesan and cheddar cheese.

Part 3
1. Stuff each bell pepper with the cooked pork mixture and top with remaining cheese.
2. Cook in preheated oven at 350 degrees Fahrenheit for 30 minutes or until cheese melted.
3. Remove from oven, serve, and enjoy!

Mushroom Sotanghon Soup with Meatballs

Filipino Style Recipe: Mushroom and Sotanghon Soup with Meatballs is another easy and mouth-watering soup dish that usually during rainy season. The dish is consist of sotanghon noodles boiled in pork soup together with mushrooms and meatballs.

Ingredients:
2 packs sotanghon noodles
100 grams oyster mushrooms, torn into 2-3 pieces
1 onion, chopped
3 cloves garlic, minced
1 pork bouillon
fish sauce or salt and ground pepper to taste
3/4 litre of water
2 tablespoons chopped spring onion (optional)

Meatballs:
300 grams ground pork
1/2 cup bread crumbs
1 raw egg
1/2 small onion, finely chopped
salt and pepper to taste
2 tablespoons cilantro, finely chopped
1 teaspoon soy sauce(optional)
1/2 teaspoon worcestershire sauce(optional)

Procedures:
Part 1(Skip this procedure if you are using premade meatballs from the market)
1. In a bowl, combine all the meatballs ingredients and mix thoroughly.
2. Scoop and form the mixture into 1 tablespoons ball shaped.
3. In a frying pan, heat oil and deep fry until light brown. Drain and set aside.

Part 2
1. In a bowl, soak sotanghon in water until soft then cut into desired length. Set aside.

Part 3
1. In a pot, heat oil and saute garlic, onion and mushroom.
2. Add water and bring to boil then add pork bouillon.
3. Add meatballs and simmer for 3 minutes.
4. Season with fish sauce and ground pepper according to taste.
5. Add sotanghon noodles then simmer for another 2 minutes.
6. Transfer to serving bowl and sprinkle with spring onion then serve immediately.

Caramel French Toast

Filipino Style Recipe: Caramel French Toast is a popular breakfast meal that consisting of sliced bread soak in eggs-milk mixture then coated with sugar. Toast with butter over a low heat then serve with caramel syrup.

Ingredients:
8 slices bread
2 eggs
1 cup milk
1/2 teaspoon cinnamon powder(optional)
a dash of salt
2/3 cup brown sugar
unsalted butter
powdered or confectioner’s sugar(optional)
caramel syrup

Procedures:
Part 1
1. In a large bowl, combine eggs, milk, cinnamon, salt then mix until well blended
2. Soak the sliced bread for a few seconds into mixture one at a time then gently turn to coat the other side.
3. Coat with brown sugar.
Part 2
1. In a frying pan, melt 1 teaspoon butter over low heat.
2. Toast each bread until bottom turns to golden brown then turn the bread over and do the same way.
3. Repeat the procedures for remaining slices.

Part 3
1. Transfer toasted bread to serving plate, then dust with confectioners’ sugar.
2. Serve immediately with caramel syrup together with hot coffee.

Beef Mami

Filipino Style Recipe: Beef Mami is one of the most popular noodle soup dish that can be served during rainy or cold season, because of its hot and delicious soup and the tender of beef brisket gives warmth and comfort.

Ingredients:
500 grams beef brisket, cut into serving pieces
200 grams Asian or egg noodles
1 water or beef stock
3 cloves garlic, minced
1 red onion, chopped
1 beef bouillon cube
3-5 pieces star anise
a bunch of Chinese cabbage or baby bok choy, cleaned and chopped
small handful of spring onion, chopped
3 tablespoons vegetable oil
salt and pepper to taste

Choices of toppings:
steamed dumplings
hard-boiled eggs

Procedures:
Part 1
1. Prepare noodles based on cooking instruction. Set aside.

Part 2
1. In a wok, heat oil then saute the garlic and onions.
2. Add beef brisket then cooked until color turns to light brown.
3. Add water, beef bouillon and star anise then simmer until beef is very tender. Add water if needed.
4. Season with salt and pepper according to taste. Keep warm.

Part 3
1. In a large bowl, arrange noodles and Chinese cabbage.
2. Pour soup then top with beef brisket and other toppings.
3. Sprinkle with spring onions. Serve immediately with fish sauce.

Sauteed Kangkong in Oyster Sauce

Filipino Style Recipe: Sauteed kangkong in oyster sauce is a simple and affordable dish made of water spinach sauteed and cooked together with smoked fish and oyster sauce.

Ingredients:
2 bunch of Kangkong (water spinach), cut into 2inch
3 pieces fried/left-over tinapa (smoked fish), flakes and discard bones
5 cloves garlic, minced
1 onion, chopped
3 tablespoons oyster sauce
1/2 teaspoon cornstarch, dissolved in 1/2 cup broth
1 teaspoon sesame oil
2 tablespoons vegetable oil
a dash of dried chili flakes
fish sauce and ground pepper to taste
sesame seeds, toasted (optional)

Procedures:
Part 1
1. In a bowl, combine oyster sauce, sesame oil, cornstarch and broth then mix until well blended.

Part 2
1. In a pan, heat oil then saute garlic and onion
2. Add tinapa flakes then continue sauteing for a minute.
3. Add kangkong stalks then stir cook for another minute.
4. Pour oyster sauce mixture and chili flakes then bring to boil. Adjust seasoning according to taste.
5. Add kangkong leaves then simmer for a minute.
6. Transfer to serving plate then sprinkle with toasted sesame seeds. Serve immediately.

Broccoli Fussili Pesto Pasta

Filipino Style Recipe:This is a very healthy dish that will surely fill up your tummy. The spice from the tuna and freshness of pesto and basil is a very nice contrast.

Ingredients:
200 grams whole wheat Fusilli pasta
1 head broccoli
2 tablespoon Olive oil
3 cloves garlic, minced
1 head onion, minced
1 can spicy tuna, drained
3 tablespoon sliced black olives
10 pieces cherry tomatoes, cut in half
180 grams pesto sauce
Handful fresh basil,chopped
Parmesan cheese
Fish sauce to taste

Procedures:
Part 1
1. Cook fusilli according to package instruction. Drain and reserve water. Set aside.
2. Using then water from the pasta, boil again and blanch broccoli for 1 minute or until the color green becomes bright. Drain and dip into a bowl of ice water to stop the cooking.
Part 2
1. In a big pan, heat olive oil and saute garlic and onion until translucent. Add sliced black olives and tuna and cook for 3 minutes. Add cherry tomatoes and cook again until it is slightly softened.
2. Add the pasta on the pan then pour the pesto sauce. Mix until the pesto is evenly combined with the pasta.Add the broccoli.
3. Season with fish sauce according to taste.
4. Remove from heat. Top with fresh basil and Parmesan cheese. Serve and enjoy.

Broccoli and Cheese

Ingredients:
2 cups broccoli florets, steamed

Cheese Sauce:
2 cups sharp cheddar cheese, grated
1 teaspoon Dijon mustard
1 cup non-fat milk
1 tablespoon unsalted butter
2 tablespoon all purpose flour
1/2 teaspoon salt

Procedures:
1. In a saucepan, melt butter over low heat then add flour, milk, mustard and salt.
2. Whisk until begins to thicken. Add cheese then continue stirring until completely melted. Remove from heat.
3. Pour cheese sauce over broccoli. Serve.

Fried Anchovy Salad

Filipino Style Recipe: Fried Anchovy Salad is a simple and easy yet delicious salad. The sweetness of the dressing and the saltiness of anchovy makes this salad so special.

Ingredients:
1 pack green and purple lettuce
1/4 cup fried achovies
2 tablespoons black olives, pitted
6 pieces cherry tomatoes, halved
1 small cucumber, thinly sliced
Mayonnaise (optional)

For the dressing:
1/4 cup Greek dressing
2 tablespoon honey

Procedures:
Part 1
1. In a bowl, combine Greek dressing and honey then mix well.

Part 2
1. In a large big bowl, tear lettuce into serving pieces.
2. Add the black olives, cherry tomatoes, and cucumber.
3. Add fried anchovies on top then garnish with honey dressing and mayonnaise.
4. Serve immediately as appetizer.

500 grams shrimp

2. Arrange shrimp in a steamer rack or wire colander then season with garlic powder, salt and ground pepper. (Do not allow water to come through the steamer rack.)
