Easy Tom Yum Soup

Filipino Style Recipe: Tom Yam or Thai Prawn Soup is a popular Thai soup dish. It consists of shrimps with lemon, fish sauce and some herbs and spices. I love tom yum soup but the only way to have it is in thai restaurants and usually, they are a bit pricey.While I was in the grocery I passed by this aisle with premixes and I decided to try one of the tom yum instant mix. I just added some of the ingredients to enhance the flavors and tadaaa! I have my budget friendly tom yum soup.

Ingredients:
1/4 kilo medium-sized shrimps, washed, peeled, and deveined.(save the head)
1 can shitake mushrooms, halved (you can substitute with button mushroom)
2 stalks lemon grass(tanglad), cut into 2 inch stalks and pounded
1 pack instant tom yum soup mix
1 piece onion cut into quater
1 small ginger cut into small strips
1 tablespoon fish sauce(preferably Thai fish sauce)
2 cups water
Spring onion, cut into 1 inch sticks for garnish

Procedures:
Part 1
1. Put the shrimp head in boiling water and let it boil for 5 minutes to release the flavor. Strain the shrimp head out of the boiling water.
2. Add onions, ginger, mushroom, and lemon grass and let it boil for 3 minutes.
3. Add the tom yum soup mix.
4. Add the shimp and cook until color turns bright orange, around 3 minutes.Season with fish sauce.
5. Remove and transfer to serving bowl. Top with spring onions.

Pork Adobo with Kangkong

Filipino Style Recipe: Pork Adobo with Kangkong is another variety of Filipino pork adobo, we just add water spinach (kangkong) which gives a contrast color and crunchy texture.

Ingredients:
1/2 kilo pork, cut in serving pieces
a bunch of kangkong (water spinach), cut into serving pieces
1/4 cup soy sauce
1/4 cup vinegar
6 gloves garlic, crushed
1 teaspoon peppercorns
2-3 pieces bay leaves
1 teaspoon sugar
salt to taste
1 cup water

Procedures:
Part 1
1. In a pot, combine pork, garlic, bay leaves, peppercorns and soy sauce. Marinate for at least 30 minutes.

Part 2
1. Simmer in a low heat for 40 minutes or until pork is tender. Add more water if necessary.
2. Pour vinegar and simmer for another 10 minutes then season with salt and sugar according to taste.
3. Simmer until the sauce thickens then add kangkong.
4. Wait for another minute then remove from heat.
5. Transfer to serving bowl then serve with steamed rice.

Coffee Cupcakes with Mocha Frosting

Ingredients:
1 tablespoon buttermilk powder dissolved in 1 cup milk
1/2 cup oil
3 eggs
2 teaspoon vanilla extract
1 tablespoon instant coffee dissolved in 1 cup warm water
1 3/4 cups all purpose flour
2 cups sugar
3/4 cups cocoa powder
2 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon salt

Frosting:
1 cup (1 pack) butter, softened but cold
2 teaspoon vanilla extract
1 cup confectioner’s sugar
1 tablespoon unsweetened cocoa powder
1/2 tablespoon coffee dissolved in 1 tablespoon warm water
2-4 tablespoon milk

Procedures:
1. In a mixing bowl, combine the buttermilk, oil, eggs, and vanilla and mix until well combined.

2. In another bowl, sift together the flour,sugar, cocoa powder, baking soda, baking powder and salt. Slowly add dry ingredients into the wet ingredients and mix on low speed until well combined. Add the coffee and mix again until just combined.

3.Scoop the batter into muffin pan with cupcake liners until around 3/4 full.

4. Bake for 18-20 minutes or until toothpick inserted comes out clean.Remove from oven and let it cool for
5 minutes before completely removing from the pan.

5. To prepare the frosting, in a large mixing bowl, cream butter until fluffy, around 5 minutes. Slowly add in confectioners sugar and cocoa powder while continuously mixing.

6. Add vanilla and coffee and blend on low speed. Gradually add milk until you reach desired consistency. Beat at high speed until frosting is smooth and fluffy.

7. Frost cupcakes then serve. Enjoy.

Beef Stew

Filipino style recipe: beef stew is a tomato-based recipe and commonly served as main dish. Normally the beef simmered until tender, then cooked in tomato sauce, bell pepper, carrots and potatoes. Some may add liver spread and cheese to make the sauce creamy.

INGREDIENTS:
300 grams beef sirloin, cut into thin slices
1/2 small can liver spread
1 white onions, cut into rings
3 cloves garlic, minced
250 grams tomato sauce
2 large potatoes, cubed
1 large carrots, cubed
2 red and green bell peppers, diced
5 cups water or beef stock
1/8 cup vegetable oil
2 hot chili(labuyo), chopped(optional)
1/4 cup cheese, grated or cubed(optional)

PROCEDURES:
Part 1
1. In a pan heat oil and fry potatoes and carrots until golden brown.
2. Drain and set aside.

Part 2
1. In a pot, heat oil and saute garlic and onions.
2. Add beef, continue sauteing for 3-5 minutes.
3. Add tomato sauce and water and simmer for 30 minutes or until beef is tender. Add water if necessary.
4. Add liver spread then simmer for another 5 minutes.
5. Add carrots, potatoes, bell pepper and chili. Simmer for 5 minutes or until vegetables are cooked.
6. Adjust seasoning with sugar, salt and pepper according to taste.
7. Add cheese and simmer for another 2 minutes or until the sauce thickens.
8. Transfer to serving plate and serve with steamed rice.

Spicy Shrimp Aligue

Filipino Style Recipe: Spicy Shrimp Aligue is a simple yet mouth-watering seafood dish. The dish is consisting of shrimp cooked in crab fat (aligue), hot sauce, chili flakes, lemon juice. Serve with kangkong.

Ingredients:
500 grams shrimps, cleaned
2 tablespoons aligue (crab fat)
1/2 teaspoon dried chili flakes
1 teaspoon hot sauce
2 stalks onion leeks
1/2 lemon, juice
1/2 cup water
2 tablespoons fish sauce
1/2 teaspoon grind pepper
a bunch of kangkong (water spinach), trimmed

Procedures:
Part 1
1. In a pan, heat oil then sauce garlic.
2. Add shrimps then stir fry until color turns to orange.
3. Add aligue, hot sauce and lemon juice then simmer for a minute.
4. Pour water, chili flakes, fish sauce and grind pepper then cook for another minute. 5. Add kangkong and cook until wilted.

Part 2.
1. In a serving plate, place wilted kangkong then place shrimps and sauce on top.
2. Garnish with remaining onion leeks. Serve.

Sweet Pork

Filipino Style Recipe: Sweet Pork is usually served when we have big occasions in the province where they butcher a whole pig. They get the fatty parts such as the pork belly that is the best cooked for this dish. It can also be stored for several days even without refrigerator.

Ingredients:
1/2 kilo pork belly, sliced thinly
3 cloves garlic
4 teaspoon cooking oil
1/2 cup brown sugar
1/2 cup soy sauce
2 cups water

Procedures:
1. In a pan, saute garlic until translucent. Add soy sauce, water and brown sugar and boil.
2. Add the pork belly.
3. Cook for 1 hour or until the meat is tender with the fat a bit chewy and the sauce caramelizes. Add more water if needed.
4. Serve with rice.

Sweet Beef Teriyaki

Filipino Style Recipe: Sweet Beef Teriyaki is a popular dish in Japanese cuisine. Normally the beef marinade then pan-fried with marinade sauce until tender.

Ingredients:
1/2 kilo beef sirloin, sliced thinly into strips
3 tablespoon teriyaki sauce
1 tablespoon cooking oil
1 tablespoon sesame seeds, toasted(optional)
spring onions for garnishing(optional)

Marinade:
3 tablespoons soy sauce
1/4 cup pineapple juice
2 tablespoon brown sugar
1/2 tablespoon ground pepper
1 tablespoon salt

Procedures:
Part 1
1. In a bowl, marinate beef for 24 hours. Cover with plastic wrap.

Part 2
1. In a pan, heat oil and stir fry beef over low heat until golden brown.
2. Pour the marinade and teriyaki sauce, cover and simmer for 5-10 minutes until tender.
3. Adjust seasoning according to taste by adding more sugar, water or teriyaki sauce.
4. Transfer the beef to sizzling plate and pour thickened sauce on top.
5. Sprinkle with toasted sesame seeds and spring onion. Serve hot with sauteed mung beans and steamed rice.

Caramel French Toast

Filipino Style Recipe: Caramel French Toast is a popular breakfast meal that consisting of sliced bread soak in eggs-milk mixture then coated with sugar. Toast with butter over a low heat then serve with caramel syrup.

Ingredients:
8 slices bread
2 eggs
1 cup milk
1/2 teaspoon cinnamon powder(optional)
a dash of salt
2/3 cup brown sugar
unsalted butter
powdered or confectioner’s sugar(optional)
caramel syrup

Procedures:
Part 1
1. In a large bowl, combine eggs, milk, cinnamon, salt then mix until well blended
2. Soak the sliced bread for a few seconds into mixture one at a time then gently turn to coat the other side.
3. Coat with brown sugar.
Part 2
1. In a frying pan, melt 1 teaspoon butter over low heat.
2. Toast each bread until bottom turns to golden brown then turn the bread over and do the same way.
3. Repeat the procedures for remaining slices.

Part 3
1. Transfer toasted bread to serving plate, then dust with confectioners’ sugar.
2. Serve immediately with caramel syrup together with hot coffee.

Double Chocolate Chip Cookies

Filipino Style Recipe: This chocolate chip cookies recipe gives you a double dose of chocolate goodness.

Ingredients:
1 pack butter or margarine, softened
1 cup white sugar
1/2 cup brown sugar
2 eggs
2 teaspoon vanilla extract
2 cups all purpose flour
2/3 cup unsweetened cocoa powder
3/4 teaspoon baking soda
1 1/2 cup chocolate chips

Procedures:
Part 1
1. In a large mixing bowl, beat margarine and sugar until light and fluffy. Add eggs and vanilla extract and beat again until well combined.
2. In another bowl, combine flour, cocoa powder, and baking soda. Add into the batter and mix well blended. Fold in the chocolate chips.
3. Drop by rounded teaspoonfuls on ungreased cookie sheets.
4. Bake in preheated oven for 10 minutes at 350 degrees Farenheit.Remove from the oven and cool for 3-5 minutes before transferring to wire racks to cool completely.

Breakfast Beef and Potatoes

Filipino Style Recipe: Breakfast Beef and Potatoes is a simple breakfast beef dish similar to adobong giniling. The dish is consisting of marinated beef sirloin cut into thin strips then cooked together with diced potatoes. Best to serve during breakfast together with fried rice.

Ingredients:
500 grams beef sirloin, cut into thin strips
2 pieces medium-sized potatoes, peeled and diced
1 red bell pepper, cut into diced
4 gloves garlic, minced
1 onion, chopped
4 tablespoon vegetable oil
1/4 teaspoon dried chili flakes(optional)
1/4 teaspoon dried basil flakes(optional)
1/4 teaspoon dried oregano flakes(optional)

Marinade:
3 tablespoons lemon juice
3 tablespoons oyster sauce
1/2 cup soy sauce
1/2 teaspoon grind pepper
salt and sugar to taste

Procedures:
Part 1
1. Marinate beef for at least 30 minutes.
2. In a pan, heat oil and fry the potatoes until slightly brown. Set aside.

Part 2
1. In a same pan, heat oil and saute garlic, onion and bell pepper.
2. Add marinated beef then cook until light brown.
3. Add marinade, herbs, and chili flakes.
4. Simmer for 10 minutes then adjust seasoning according to taste. Add water if necessary.
5. Add fried potatoes then cook until sauce is thickens to nearly dry.
6. Remove from heat then transfer to serving bowl then serve with steamed rice.
