Ingredients:
4 pieces tortilla(8-10 inch diameter)
1 1/2 cup pizza sauce or tomato sauce
150 grams mozzarella cheese or quick melt, grated
100 grams sweet ham, cooked and cut into cubes

Procedures:
Part 1
1. Place tortilla in a flat surface, ladle enough pizza sauce into the center and spread it out in a spiral motion. Leave about 1/2 inch of unsauce tortilla at the edges.
2. Sprinkle shredded cheese on top then add and arrange ham evenly.
3. Spread shredded cheese on top of the toppings. Repeat for remaining pieces.

Party 2
1. Pre-heat oven over 200 degrees Fahrenheit then bake tortillas for 8-10 minutes or until the tortillas are crisp and the cheese is melted.
2. Remove from the oven then transfer to round sheet. Cut into 4-6 serving slices then serve with hot sauce.

Ingredients:
180 grams snow peas, trimmed
1 small can corned beef
3 cloves garlic, minced
1 onion, chopped
1/8 teaspoon dried chili flakes
4 tablespoons oyster sauce
1/2 cup water
1 teaspoon vegetable oil
salt and pepper to taste

Procedures:
Part 1
1. In a saucepan, heat oil then saute garlic and onion until soft.
2. Add corned beef then continue sauteing until slightly toasted.
3. Add snow peas then pour water and simmer for a minutes.
4. Add oyster sauce and chili flakes then simmer for another 2 minutes.
5. Adjust seasoning according to taste then transfer to serving plate. Serve with steamed rice.

Spicy Chicken Paprika

For Breading Mix:
1 cup flour

For Paprika Sauce:
1 teaspoon paprika pepper
1/2 cup hot sauce
1/4 cup brown sugar
2/3 cup butter or margarine
1 teaspoon ground pepper
2 teaspoon garlic powder

Dipping Sauce:
1 cup mayonnaise
6 cloves garlic, minced

Procedures:
Part 1
1. In a bowl, combine flour, paprika, cayenne and salt then mix well.
2. Place and toss chicken with the mixture until evenly coated.
3. Refrigerate for 2 hours or overnight.

Part 2
1. In a deep frying pan, heat enough oil to cover the chicken entirely.
2. Fry chicken for about 10-15 minutes in medium heat or until color turns to golden brown.
3. Drain and set aside.

Part 3
1. In a sauce pan, melt butter in a low heat then add butter, hot sauce, garlic powder, sugar and pepper. Stir well then turn off the heat.
2. In a large bowl, place the chicken then add sauce and mix until all the chicken coated evenly.
3. Serve immediately with dipping sauce and steamed rice.

Gyoza Dumplings

Filipino Style Recipe: Gyoza Dumplings is a popular Asian dumplings originated in Japan. This dish is usually made from ground meat, cabbage and other vegetables wrapped in dumpling wrappers. Ingredients:
4 cups cabbage, chopped into small pieces
250 grams ground pork

Dipping Sauce:
2/3 cup soy sauce
1/4 cup vinegar
1 tablespoon chopped green onions
1/2 teaspoon crushed red chili

Procedures:
Part 1
1. In a large bowl, combine cabbage and 1/2 teaspoon salt then let sit for 10 minutes.
2. Squeeze the cabbage firmly to discard excess water.
3. In a large bowl, combine cabbage, ground pork, green onions, soy sauce, sesame oil, salt and ground white pepper then mix evenly with your hand.

Part 2
1. Scoop a spoonful of mixture then place in the center of wrapper.
2. Moisten the entire edge of wrapper with water then fold in half.
3. Seal and crimp the edges then press against bottom into sheet pan.
4. Repeat the procedures to remaining mixture.

Part 3
1. In a pan, heat 1 teaspoon oil then arrange dumplings in it flat side facing down.
2. Cook the bottom for a few minutes until light browned.
3. Slowly pour hot water until half submerged. Cover and cook until the water has evaporated.
4. Transfer the gyoza into plate then serve with dipping sauce.

Sauteed Shrimp Paste

Filipino Style Recipe: Sauteed Shrimp Paste or Ginisang Bagoong Alamang is popular Filipino dip together with raw mango. Filipino shrimp paste is made from fermented krill(alamang) sauteed in ginger, garlic, onion and tomatoes. This is commonly served as side dish or paired with mango, turnip, steamed spinach, etc.

Ingredients:
2 cups raw shrimp paste(alamang)
1 cup pork meat with fat, cut into small pieces
5 cloves garlic
1 onion, chopped
3 tomatoes, chopped
1 thumb-sized ginger, julienned
3 pieces red chili(labuyo), chopped
2 Tablespoons vinegar
3 tablespoons brown sugar
1/3 cup water

1. Wash shrimp paste into running water then drain well.(This will help to reduce the saltiness of shrimp paste).

Part 2
1. In a pan, stir cook pork fat until oil comes out then add pork meat and stir cook until golden brown.
2. Add ginger, garlic, onion, tomatoes then saute for 3 minutes.
3. Add shrimp paste, water, chili, vinegar and sugar then stir cook over low heat for 15 minutes.
4. Adjust seasoning according to taste. Remove from heat then serve as side dish or pair with raw mango.

Kinilaw na Dilis

Filipino Style Recipe: kinilaw na dilis is another variety of raw fish salad made of fresh anchovies fillet mixed with vinegar, chili, onion, ginger, calamansi juice, salt and pepper. 1/4 tablespoon sugar(optional)
1/2 cup vinegar for washing

Part 1
1. Remove the heads of the fish then split the body into two and discard the bones and innards.
2. Repeat the procedure for the remaining fish then rinse and drain.

Part 2
1. In a bowl, combine fish fillet and vinegar then mix. Let stand for 5 minutes then drain vinegar.
2. Add the remaining ingredients then mix well.
3. Cover and refrigerate for 30 minutes. Serve chilled.

Seafood Angel Hair Carbonara

500 grams angel hair pasta or any
800 grams clams
400 grams squid, cut into rings

1 big can evaporated milk
2 x 250 ml all purpose cream
1/2 cup Parmesan cheese, grated
salt and pepper to taste

Procedures:
Part 1
1. In a large pot, prepare pasta based on cooking instructions. Drain and set aside.

Part 2
1. In a pan, heat oil then saute garlic, onion and mushroom then saute for 2-3 minutes.
2. Add squid and stir cook for a minute. Remove and set aside.
3. In a same pan, add clams then cover and simmer until shells open. Remove and set aside.

Part 3
1. In a same pan, add the evaporated milk and all purpose cream then bring to boil while keep stirring.
2. Add the grated cheese then keep stirring for about 3-5 minutes or until beginning to thicken.
3. Put back the clams then adjust seasoning with salt and pepper. Turn off the heat then add squid.
4. In a serving plate, arrange pasta then add the sauce on top. Sprinkle with grated cheese and garnish with parsley. Serve!

Crispy Pata

Part 2
1. In a large pot, pour water then add garlic, onion, bay leaves, salt and pepper.
2. Add pata then bring to boil over medium heat for 50 minutes or until tender. Add water if necessary.
3. Drain and let it cool.

Part 3
1. Rub pata with salt and pepper then deep fry over low heat until crisp and golden brown.
2. Drain then serve with dipping sauce(soy sauce, calamansi, chili, chopped onion).

Mini Calamansi Cheesecake

Ingredients:
Crust:
1/3 cup crushed graham crackers
1 tablespoon white sugar
2 tablespoons butter, melted

Filling:

1/4 cup white sugar
2 1/2 teaspoon calamansi juice
1/4 teaspoon vanilla extract
1 egg

Procedures:
Part 1
1. Grease 6-cup muffin pan and line with muffin cups.
2. For the crust, mix together the crushed grahams, sugar and butter in a bowl until well combined. Scoop a mixture and press into the the bottom of each muffin cup.
3. Bake in preheated oven at 300 degrees Fahrenheit for 5 minutes. Remove from the oven but keep the oven on.

Part 2
1. For the filling, beat together the cream cheese, sugar, calamansi juice, and vanilla until well blended. Do not over beat. Add egg then mix.
2.Pour the filling into the muffin cups. Bake for 25 minutes without opening the oven. Let it cool completely before removing from pan. Refrigerate until ready to serve.

Pininyahang Bistek(Beef Steak with Pineapple)

Procedures:
Part 1
1. Marinate meat in lemon juice, garlic, soy sauce and ground pepper for an hour or overnight inside the fridge.

Part 2
1. In a pan, heat cooking oil over medium heat. Lightly fry the onion rings. Remove from pan and drain. Set aside

Part 3.
1. In the same pan, add the marinated meat then stir-cook over high heat for 5 minutes or until just cook.(Don’t overcook, meat will become tough and rubbery).
2. Transfer the meat to a serving plate then set aside.
3. In the same pan, pour the marinated, onion, oyster sauce, pineapple and pineapple juice then bring to boil.
4. Add dissolved cornstarch, salt and pepper to taste then simmer until reduce in half.
5. Pour the sauce over meat then garnish with onion rings.
6. Serve hot and enjoy!
