Bacon Wrapped Green Beans

Filipino Style Recipe: Bacon wrapped green beans is another simple yet delicious appetizer. Usually the green beans blanch then wrap in bacon strips and season with salt and pepper. Bake or fry until crisp and serve with sour cream.

Ingredients:
500 grams green beans or baguio beans, end trimmed
8-10 smoked bacon strips
olive oil
salt and pepper to taste

Procedures:
Part 1
1. In a pot, boil water with salt then blanch green beans for a minute.
2. Drain and rinse in cold water. Set aside

Part 2
1. Wrap a bacon slice around 5-8 pieces of green beans.
2. Repeat the step for remaining pieces then place in a baking pan.
3. Sprinkle with salt and pepper then drizzle with olive oil.
4. Pre-heat oven over 400 degrees Fahrenheit then bake wrapped green beans for 15 minutes or until bacon is crisp.
5. Transfer to serving plate then serve with your favorite dipping sauce.

Bukayo

Filipino Style Recipe: Bukayo is another popular Filipino dessert made from young coconut strips cooked in a boiling syrup of brown sugar then stir until thicken. This dish is one of the popular delicacy and pasalubong by most Filipinos.

Estimated time of cooking: 20-30 minutes

Ingredients:
4 young coconuts, grate into strips and reserve juice
a knot of pandan leaves
1/2 kilo brown sugar
1 tablespoon vanilla extract
1/4 teaspoon cornstarch(dissolved in 4 tablespoons water)
1 tablespoon cooking oil

Procedures:
Part 1
1. In a pan, heat oil then stir fry coconut strips until light brown. Set aside.

Part 2
1. In pot, boil coconut juice then add pandan leaves and brown sugar. Keep stirring until dissolves and start to thickens.
2. Remove pandan leaves then add vanilla extract. Stir until well blended.
3. Add coconut strips and dissolved cornstarch then stir frequently until thicken and caramelize.
4. While still hot, scoop a spoonful of mixture into a banana leaves or wax paper.
5. Repeat with the remaining mixture then let it cool for a few hours to harden. Serve.

Strawberry Milk Gulaman

Filipino Style Recipe: strawberry milk gulaman is another refreshing beverage and usually serve during afternoon or summer season. This drink is consists of strawberries, syrup, milk, sugar and gulaman then stir with ice.

Estimated time of preparation: 10 minutes

Ingredients:
250 grams fresh strawberries, halves
1/4 cup strawberry syrup
1 cup full cream milk
1 tablespoon strawberry gelatin powder
2 cups boiling water
sugar to taste
crashed ice or ice cubes

Procedures:
Part 1
1. In a square container, dissolved strawberry gelatin powder in boiling water then stir until completely dissolved. Let it cool and place in fridge until firm.
2. Cut into small cubes. Set aside.

Part 2
1. In a blender, process strawberry, strawberry syrup, milk and sugar until smooth.
2. Pour in tall glasses then add strawberry gulaman and some ice. Serve.

Note:
1. You may garnish the drinks with fresh strawberry before serving.

Asparagus Salami Pita Rolls

Filipino Style Recipe: Asparagus Salami pita Rolls is another easy and simple Filipino meryenda(mid-afternoon snack). This dish is made of pita bread or soft tacos stuffed with salami, asparagus, cheese then season with salt and pepper then toast for a few minutes.

Estimated time of cooking: 5-8 minutes(plus preheating time)
Good for 6 rolls

Ingredients:
6 pieces pita bread
6 salami slices
1 bunch medium-sized fresh asparagus, trimmed to 5 inch
quick melt cheese, slice into strips
salt and pepper to taste

Procedures:
Part 1
1. In a pot, boil water with salt then add asparagus. Cook for 1-2 minutes then drain and set aside.
2. In a pan, heat oil then fry salami for a minute. Drain on paper towels and set aside.

Part 2
1. Place pita bread in a flat surface then arrange salami slice.
2. Arrange 4-6 pieces asparagus and cheese slices.
3. Sprinkle with salt and pepper then roll.
4. Repeat the procedures for remaining pieces.
5. Pre-heat oven over 220 degrees Fahrenheit for 10 minutes then toast pita rolls for 5-8 minutes or until the cheese melted. Serve!

Kutsinta(Brown Rice Cakes)

Filipino Style Recipe: Kutsinta or brown rice cakes is another popular Filipino delicacy and pasalubong that is commonly sold along the streets. This Filipino brown rice cakes is made from rice flour, sugar dissolve in water and lye water together with annatto powder for coloring. Then pour in cup molds and cook in a steamer until firm. This delicacy is usually serve as dessert or snack in any special occasions.

Ingredients:
1 cup rice flour
1/2 cup all purpose flour or cornstarch
1 teaspoon annatto powder
2 cups brown sugar
3 cups water
1 teaspoon lye(lihia) water
grated coconut for toppings(optional)

Procedures:
1. In bowl, combine rice flour,all purpose flour, annatto powder and sugar then mix well.
2. Continue mixing while gradually add water and lye water.
3. Pour the mixture into plastic cup molds then arrange in steamer.
4. Cover the steamer with cloth to prevent water from dripping in kutsinta.
5. Cover and steam for 40 minutes or until firm then remove from heat.
6.  Let it cool then remove from molds. Serve with grated coconut.

Chicken Bicol Express

Filipino Style Recipe: Chicken Bicol express is another variety of popular Bicol express which has a creamy and spicy flavor. Like the usual Bicol express made of pork meat, chicken is saute until brown then cook in coconut milk and shrimp paste together with green chili and red chili.

Estimated time preparation and cooking: 30-40 minutes
Good for 3-4 persons

Ingredients:
3/4 kilo chicken fillet, cut into serving pieces
1/2 cup long green peppers(siling pangsigang) or baguio beans, cut diagonally
3 cups coconut milk
1 tablespoon sauteed shrimp paste(bagoong alamang)
3 cloves garlic; minced
1 small onion; chopped
3 pieces red chili(siling labuyo)
2 tablespoons vegetable oil
Fish sauce or salt to taste

Procedures:
Part 1
1. In a bowl with water and salt, soak green peppers for 30 minutes then rinse and drain.

Part 2
1. In a pan, heat vegetable oil then saute garlic and onion.
2. Add chicken then continue sauteing until colors turn to brown.
3. Add the shrimp paste and ground pepper then stir for another minute.
4. Pour coconut milk then bring to a boil until reduced.
5. Add the green peppers and red chili then season with salt according to taste.
6. Remove from heat then serve with steamed rice. Enjoy!

Baked Breaded Fish Fillet

Filipino Style Recipe: Baked breaded fish fillet is another easy and simple fish dish. The fish fillet is usually marinated then dredge in flour, eggs and breadcrumbs. Bake until golden brown then serve with dipping sauce.

Estimated time of baking: 25-30 minutes
Good for 3-4 persons

Ingredients:
1 kilo boneless fish fillet(tilapia, milkfish, salmon, snapper)
1 1/2 cup all purpose flour
1 1/2 cup bread crumbs
2 eggs, beaten
1 tablespoon sesame oil

Marinade:
3 cloves garlic, minced
4 tablespoons calamansi or lime juice
salt and pepper to taste
cooking oil for frying

Procedures:
Part 1
1. Marinate fish in calamansi juice, paprika, salt and pepper for 10 minutes.
2. In a bowl, add beaten eggs and sesame oil. whisk well and set aside.
3. Dredge the fish in flour and shake off to remove excess flour.
4. Dip fish in egg mixture and press into bread crumbs to coat both sides.

Part 2
1. Preheat oven to 375 degrees Fahrenheit.
2. Arrange breaded fish fillet in a baking pan then drizzle with olive oil.
3. Bake for 25-30 minutes or until golden brown.
4. Remove from the oven then transfer into serving plate with sour cream.

Muffin

Filipino Style Recipe: Muffin is popular pastry bread specially in United States. This bread is similar to cupcakes and usually serve during breakfast together with coffee, tea or other meals.

Ingredients:
2 cups all purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1/2 cup unsalted butter, melted
3/4 cup granulated sugar
2 raw eggs
3/4 cup fresh milk
1 teaspoon vanilla

Procedures:
Part 1
1. In a mixing bowl, combine flour, baking powder and salt then mix well. Set aside.

Part 2
1. In an electric mixer, combine melted butter and sugar until well blended.
2. Add eggs, milk and vanilla then mix until to blended.
3. Gradually add the flour mixture then mix until well combined.

Part 3
1. In a muffin pan, grease with cooking spray or place paper cups.
2. Pour batter into each cups until 2/3 full.
3. Preheat oven to 400 degrees Fahrenheit then bake for 20 minutes or until golden brown.(Muffin is done when a toothpick inserted in the center comes out clean.)
4. Remove from the oven and let it cool before serving.

Button Mushroom Adobo sa Gata

Filipino Style Recipe: button mushroom adobo sa gata or adobong kabute sa gata is another variety adobo dish. This dish is healthier because we will use mushrooms instead of meat. We will also include coconut cream to produce creamy and tasty flavor. The procedure is easy and simple, saute button mushrooms in vinegar and coconut cream then cook until thicken.

Estimated time of preparation and cooking : 10 minutes
Good for 2 persons

Ingredients:
400 grams button mushrooms, whole
1 cup coconut cream
4 tablespoons vinegar
1 tablespoon olive oil
3 gloves garlic, minced
salt and pepper to taste
parsley or spring onions for garnishing(optional)

Procedures:
1. In a pan, heat oil and saute garlic and mushrooms until lightly browned.
2. Season with salt and pepper.
3. Pour vinegar and simmer for 1 minutes.
4. Add coconut cream and simmer until thicken. Stir constantly.
5. Transfer to serving plate and garnish with chopped parsley. Serve immediately.

Stir Fried Beef and Togue

Filipino Style Recipe: stir fried beef and togue is another simple yet delicious dish. This dish is commonly serve in Chinese restaurants. The beef strips marinated in a blend of soy sauce, oyster sauce, garlic,  sugar, salt and pepper then cook and simmer together with sprouted mung beans until the meat is tender. This is one of my favorite dish and my family really loves it.

Estimated time of preparation: 10 minutes(plus marinating time)
Estimated time of cooking: 40-50 minutes
Good for 3-4 persons

Ingredients:
300 grams beef sirloin, sliced thinly into strips
2 cups togue(sprouted mung beans)
3 cloves garlic, minced
1 onion, chopped
1 red bell pepper, diced
1/4 teaspoon chili flakes(optional)
4 tablespoons cooking oil

Marinade:
1/4 cup soy sauce
1/4 cup oyster sauce
1/4 cup water or soda
4 tablespoons brown sugar
salt and pepper to taste

Procedures:
Part 1
1. Marinate beef in garlic, soy sauce, oyster sauce, sugar, salt and pepper for 2 hours or overnight inside the fridge.

Part 2
1. In a pan, heat oil then saute garlic, onion and bell pepper.
2. Add marinated beef, marinade, water then simmer in a low heat for 30 minutes or until tender. Add more water if necessary.
3. Season with sugar, salt and pepper according to taste.
4. Add sprouted mung beans, chili flakes then stir cook for 3 minutes.
5. Transfer to serving plate then serve hot with steamed rice.
