Filipino Style Recipe: macaroni and cheese recipe is also known as mac and cheese by British English. Although it’s not a Filipino recipe but more Filipinos are starting to like this dish. Mac and Cheese is traditionally made of macaroni, cream, cheese, roasted onions and some added bacon or ham. Mac and cheese is usually served in many occasion.

Estimated time of preparation and cooking: 25 minutes
Good for 4-6 persons

Ingredients:
50 grams butter
1 small onion, chopped
1-1/2 tablespoons cornstarch
750ml evaporated milk
225 grams macaroni pasta
175 grams Cheddar cheese, grated
salt and pepper to taste

Procedures:
Part 1
1. Prepare pasta by directions on box and drain well.
Part 2
1. In a saucepan, melt butter over medium heat.
2. Add onion and cook until soft. Stir in cornstarch and salt until smooth.
3. Add evaporated milk and cheese, slowly stirring constantly until thick.
4. Adjust seasoning with salt and pepper.
Part 3
1. Prepare pasta on pasta tray, pour the sauce on top of cooked pasta. Top with remaining grated cheese.
2. Serve hot and enjoy!

Tips:
1. Garnish with fried ham cut into small squares makes the recipe more special.

Chicken a la King

Filipino Style Recipe: chicken ala king is a recipe consisting of diced chicken in a cream sauce. Often with mushrooms and vegetables. This is usually served over toasted bread, pasta or steamed rice.

Estimated time of preparation and cooking: 30 minutes
Good for 4 persons

Ingredients:
3 cups pre-boiled chicken fillet, cut into cubes
1 carrot, cut into cubes
1/3 cup sweet peas
1 cup button mushrooms, sliced
2 cups evaporated milk
1/4 cup all-purpose flour
1 1/2 cups chicken broth
1 onion, chopped
3 tablespoons butter or margarine
salt and pepper to taste
1/2 cup green bell pepper, diced(optional)

Procedures:
1. In a saucepan, melt butter the saute onion, mushrooms and bell pepper for 5 minutes.
2. Add flour, milk and chicken both then stir constantly until smooth.
3. Add sweet peas and carrots then stir cook for 3 minutes.
4. Add chicken, salt and pepper then continue cooking until thick and begins to bubble.
5. Transfer to serving bowl then serving with steamed rice. Serve hot!

Tips:
1. If you’d like a thicker sauce: dissolve 2 tablespoons cornstarch in 1/4 cup water, add to sauce a little at a time, until desired thickness is reached.

Chicken Macaroni Recipe

Filipino Style Recipe: chicken macaroni recipe is usually made with shredded chicken meat, macaroni noodles, mayonnaise, salt and pepper. Add with carrots, pineapple tidbits, pickles, hard-boiled eggs and cheese make the recipe more delicious. This is usually served as appetizer.

Ingredients
200 grams macaroni noodles
2 medium-sized carrots
1 big chicken breast
500 ml mayonnaise
1 big white onion, finely chopped
1/2 cup sweet pickle
1 cup cheddar cheese, diced
3 hard-boiled eggs, diced(optional)
1 can(836 grams) pineapple tidbits(optional)
1/2 cup raisins(optional)
salt and pepper to taste

Procedures:
Part 1
1. Cook macaroni noodles according to package cooking instructions.
Part 2
1. In a pot, boil carrots in water for 15 minutes or until cooked.
2. Drain carrots and let cool. Peal skin then dice.
Part 3
1. Boil chicken breast in water with salt. Drain chicken breast, then shred in 1 inch lengths
Part 4
1. Drain pineapple tidbits.
Part 5
1. Combine all ingredients while adding salt and pepper to taste.
2. Refrigerate. Serve with lettuce.

Chili con Carne

Filipino Style Recipe: chili con carne is a spanish dish basically made from chopped or ground beef with dried chili peppers, garlic, onions and cumin. It has a strong flavor and spicy taste which is ideal as dipping sauce or serve with rice.

Good for 4 persons

Ingredients
500 grams ground beef
1 large onion, chopped
4 cloves garlic, chopped
1 tablespoon olive oil
2 teaspoons cayenne or chili powder
1 medium-sized red bell pepper, chopped
2 tablespoons tomato paste
2 large-sized tomatoes, chopped
1 small can(300 grams) cooked red kidney beans, drained(optional)
1-2 teaspoons dried or fresh oregano(optional)
1 teaspoon cumin
1 cup beef stock or water
Salt and pepper to taste

Procedures
1. In a saucepan, heat the olive oil and add the ground beef. Cook over a medium heat until color turns to brown.
2. Saute the onion, garlic and chilli. After sauteing, mix with ground beef and simmer for 2 minutes.
3. Add beef stock, tomato paste and tomatoes then simmer for 20 minutes. Add more water if necessary.
4. Add the beans, oregano, cumin and bell pepper then adjust seasoning according taste.
5. Serve with corn chips.

Paksiw na Pata Recipe

Filipino Style Recipe: paksiw na pata recipe is a Filipino dish basically pork leg cooked in vinegar, soy sauce and dried banana blossom. This recipe has a sweet and sour taste sauce and the meat should almost separates from the bone. The banana blossom makes the recipe well blended that gives an extraordinary taste. Ingredients:
1 pork leg(pata), cut into serving pieces
1/2 cup soy sauce
1/4 cup vinegar
1/2 cup brown sugar
1/2 cup dried banana blossom(bulaklak ng saging), soaked in water
2 bay leaves(laurel)
3 cloves garlic, chopped
1 small onion, sliced
1 teaspoon peppercorn
2 cups water
salt to taste

Procedures:
Part 1
1. In a pot, place pork leg with water(just enough to cover the meat) then bring to a boil. Strain the meat and discard the water.
Part 2
1. In a same pot, Put back the pork leg and add enough water to cover the meat. Bring to boil.
2. Add soy sauce, peppercorn, onion and garlic.
3. Simmer over low heat for 1 to 1 1/2 hours or until pata is tender and sauce is thickens. Add water if necessary.(Cook in pressure cooker takes 30 minutes).
4. Add vinegar and simmer for another 10 minutes.
5. Add the banana blossom and simmer for another 5 minutes.
6. Add brown sugar and salt to taste. Simmer for another 2 minutes.
7. Remove from heat. Serve and enjoy!

Ginataang Sitaw at Kalabasa Recipe

1 can coconut milk
3 cloves garlic, minced
1 small onion, chopped
2 pieces green chili(siling haba)
cooking oil
salt and pepper to taste

Ingredients:
1. In a saucepan, heat cooking oil and fry pork meat until color turns to light brown.
2. In the same pan, saute onion and garlic. Season with fish sauce then mix well.
3. Pour in coconut milk and bring to a boil.
4. Add the squash and string beans then simmer until vegetables are half-tender. Add water if necessary.
5. Add green chili then season with salt and pepper according to taste.
6. Remove from heat then serve and enjoy.

Lumpiang Sariwa Recipe

Filipino Style Recipe: lumpiang sariwa(fresh spring roll) recipe is a Filipino vegetable dish, basically it composed of shredded fresh vegetables wrapped in thinner-than-crepe wrapper, topped with sauce, finely chopped nuts and minced garlic. Ingredients:
Lumpia Sariwa Filling
1/2 cup ground pork
1/4 cup shrimp, chopped
1/4 cup cooked ham, chopped(optional)
2 cups carrots, shredded
2 cups cabbage, shredded
2 cups water chestnuts(sayote) or turnips(singkamas), shredded
1 cup baguio beans, shredded(optional)
1 tablespoon onion, minced
4 cloves garlic, minced
1 cup ground peanuts
Lettuce leaves
Lumpia wrapper
butter or cooking oil
Salt to taste

Lumpia Sariwa Sauce:
1/2 cup sugar
1 tablespoon cornstarch
1 cup chicken broth or water
2 tablespoons soy sauce
2 cloves garlic; minced

Procedures:
Cook the Filling:
1. In a saucepan, heat butter and saute garlic and onion.
2. Add ground pork, ham and shrimp. Simmer until it changes color.
3. Season with soy sauce and sugar.
4. Add vegetables and continue cooking until it is half-done.
5. Adjust seasoning with salt according to taste. Set aside.

How to make the Lumpia Sariwa Sauce:
1. In a saucepan, pour chicken broth and bring to boil.
2. Add sugar and soy sauce then mix well.
3. Dilute the cornstarch in water and pour in the saucepan.
2. Boil in a very low fire, stirring occasionally until the sauce thickens.
3. Add the garlic. Set aside.

To Wrap the Filling:
1. On top of the lumpia wrapper, place a leaf of lettuce and 3 tablespoons of the mixture.
2. You may roll up folding one end and leaving other open or just roll up and place in the platter.
3. Garnish with sauce and minced peanuts.

Adobong Pusit Recipe

Filipino Style Recipe: Adobong pusit(squid adobo) recipe is another variant of Filipino Adobo. Adobo is a mixture of meat cooked in soy sauce and vinegar. This dish is versatile and flexible, the meat can be pork, chicken, squid or any other meat. Here is my recipe for adobong pusit, share and enjoy!

Good for 6-8 Persons

Ingredients:
1 kilo medium-sized squid
1/4 cup vinegar
1/4 cup soy sauce
6 cloves garlic, minced
2 pieces bay leaves(laurel)
1 small piece of ginger, sliced
1 teaspoon sugar
1 tablespoon cooking oil
salt and pepper to taste
3 long green peppers(siling haba), chopped(optional)

Preparation:
Part 1
1. To clean the squid, pull the head and everything that comes along with it from the body tube, including the clear, hard bone.
2. Then push the head in, popping out the hard “beak” and discard it.
3. Rub off scrape with knife the outer skin under running water, leaving the white meat. (If the squid is small no need to rub off)
4. Wash the insides and the surface of the squid very well under running water.
Cut into rings if preferred. Set aside.

Part 2
1. In a pan, heat cooking oil then saute the ginger, onions and garlic.
2. Add the squids, pour in the vinegar and soy sauce.
3. Season with salt and ground pepper.
4. Add bay leaves and sugar.
5. Add long green peppers(optional).
6. Cook uncovered for about 5 to 8 minutes.(Don’t overcooked the squid, it will become rubbery texture and tough.)
7. Remove from heat, serve and enjoy!

Buttered Shrimp with Garlic

Filipino Style Recipe: buttered shrimp with garlic recipe is a tasty Filipino dish, basically shrimp sauteed in butter with lots of garlic and the lemon soda gives the dish the sweet taste flavor. This is another mouth-watering dish that is truly enjoyed by most Filipinos.

Good for 4 persons.

Ingredients:
3/4 kilo shrimp
1/2 cup butter
12 medium cloves garlic, minced
1 can lemon soda
2 teaspoons salt
1/2 teaspoon ground pepper
2 tablespoons chopped parsley, for garnish(optional)

Procedures
Part 1
1. In a bowl, marinade the shrimp in lemon soda for about 20 minutes.
Part 2
2. In a saucepan, melt the butter in a low heat.
3. Saute the garlic until the color turns light brown.
4. Add shrimp including the marinade sauce, cook until the liquid completely absorb.
5. Adjust seasoning with salt and ground pepper
6. Remove from heat and arrange the buttered shrimp on a serving platter.
7. Garnish with parsley, serve and enjoy!

Beef Mechado Recipe

Filipino Style Recipe: beef mechado is another tomato based dish consists of a beef, potatoes, and tomato sauce. This dish is usually seasoned with onion, soy sauce, bay leaves and vinegar. Beef mechado is almost similar to several other beef dishes such as kalderata, adobo and kare-kare.

Estimated time of cooking: 70-80 minutes
Good for 4-6 persons

Ingredients:
1 kilo beef with fat, cut into cubes
2 1/2 cups tomato sauce
2 onions, quartered
3 bay leaves(laurel)
3 medium potatoes, quartered
1 red bell pepper, sliced
1 cup soy sauce
3 cups beef stock or beef cubes dissolved in water
salt and pepper to taste
cooking oil for frying
2 carrots, cut into cubes(optional)
1/4 cup vinegar(optional)

Procedures:
Part 1
1. In a frying pan, heat oil then fry potatoes and carrots until light brown. Drain and set aside.

Part 2
1. In a casserole, combine the beef, onions, tomato sauce, soy sauce, bay leaves and beef stock.
2. Boil for at least 1 hour or until beef is tender, Add water as needed.
3. Add vinegar and simmer for 2-3 minutes. Do not stir.
4. Add bell pepper, potatoes and carrots then cook for 3 minutes or until tender.
5. Adjust seasoning with salt and pepper according to taste. Add sugar if you prefer.
6. Remove from heat and transfer to serving plate then serve with steamed rice.
