Pineapple Prawns in Coconut Milk

Ingredients:
12 pieces tiger prawns, head and shells intact or removed
1 cup coconut milk
1/2 cup pineapple chunks
1/4 cup pineapple juice
1 teaspoon green curry paste
3 bird’s eye chilis(labuyo)
1 teaspoon turmeric powder(luyang dilaw)
3 tablespoons olive oil
salt and pepper to taste
1 eggplant, halves and sliced(optional)

Procedures:
Part 1
1. In a pan, heat 3 tablespoons oil and fry eggplant. Drain and set aside.

Part 2
1. In a same pan, add green curry paste and turmeric powder then stir.
2. Pour coconut milk then bring to boil over low heat.
3. Add pineapple, pineapple juice, chili and prawns then cook for 3 minutes.
4. Adjust seasoning with salt and pepper then add fried eggplant.
5. Remove from heat then transfer to serving plate. Serve.

Prawns Curry with Pineapple

2. Pour curry mixture and stir until boiling.
3. Add prawns and stir for a minute, add water and bring to boil.
4. Add pineapple and season with salt according to taste.
5. Simmer for 2 minutes or until cooked.
6. Transfer to serving bowl then serve.

Shrimp and Corn Soup

200 grams medium shrimp, peeled and deveined
1 cup corn kernels
1 cup coconut milk
1 large potato, diced
1 onion, sliced thinly

Procedures:
Part 1
1. In a pan, heat oil then stir fry shrimp for a minute. Strain and set aside.
2. In a same pan, fry potatoes until light brown. Strain and set aside.

Part 2
1. In a same pan, reduce oil then saute garlic and onion.
2. Add coconut milk, water, potatoes and corn then simmer for 2 minutes
3. Add shrimps then season with salt and pepper.
4. Simmer for another minute then transfer to serving plate, garnish with spring onion. Serve.

Grilled Stuffed Milkfish

Filipino Style Recipe: grilled stuffed milkfish or inihaw na bangus is another popular dish in every occasion that usually served as finger food(pulutan). Normally the milkfish is stuffed with onions and tomatoes then grilled in a hot charcoal. You wrap it with banana leaf or aluminum foil.

Ingredients:
1 large-sized milkfish(bangus)
2 onions, chopped finely
4 tomatoes, chopped finely
1 teaspoon salt

Procedures:
1. Clean fish but keep the scales intact.
2. With a sharp knife, slice the back of the fish and remove innards.
3. Rub the skin with salt.
4. In a bowl, combine soy sauce, tomatoes, onions, salt and pepper. Mix well.
5. Stuff the mixture inside the fish then secure with thread.
6. Wrap with aluminum foil then grilled over hot charcoal for 15 to 20 minutes on each side.
7. Serve with liquid seasoning.

Spicy Mixed Seafood Soup

1/2 kilo mixed seafood(fish balls, kikiam, squid, scallops, shrimps, etc)
2 thumb-sized ginger, sliced
1 onion, quartered
1 tomato, quartered
2 pieces red chili pepper, sliced diagonally
salt and pepper to taste
5 cups water
1 stalk lemongrass, crashed and tied(optional)
1 Chinese Cabbage, quartered(optional)

Procedures:
1. in a saucepan, pour water and bring to boil.
2. Add ginger, onion, tomato and lemongrass. Cover and simmer for 5 minutes.
3. Add mixed seafood and red chili pepper. Simmer for 3 minutes or until seafood is tender.
5. Season with salt and pepper.
6. Add Chinese cabbage and simmer for a minute.
7. Transfer to serving bowl, garnish with celery then serve.

Tips:
1. You may also used kimchi to add color and spicy flavor.
2. You may also add mushrooms and other seafood if you desired.

Sinabawang Tahong

Filipino Style Recipe: Sinabawang Tahong or Mussel Soup is another seafood dish that usually served by Filipinos. This is similar to Halaan Soup. Another simple recipe but very healthy.

Ingredients:
500 grams fresh mussels(tahong)
3 cloves garlic, minced
1 onion, sliced
1 thumb-sized ginger, finely sliced
3 fresh tomatoes, chopped
8 oz Sprite Cola
1 tablespoon vegetable oil
2 tablespoons fish sauce(patis)
salt and pepper to taste
1-2 bundle water spinach(kangkong)

Procedures:
Part 1
1. Wash the mussel thoroughly and drain.
2. Place the mussel in a bowl with water and salt.
3. Cover for several hours or overnight. This will allow the clams to expel sand.

Part 2
1. In a pot, heat oil and saute garlic, onion and ginger.
2. Add tomatoes and saute until soften.
3. Add mussel and stir fry for 2 minutes.
4. Add sprite soda and simmer until shells are opened. Add water if necessary.
5. Add fish sauce and adjust seasoning with salt and pepper.
6. Add water spinach and simmer for 2 minutes.
7. Remove from heat then serve.

Notes:
1. You may also used petchay(bok choy) or chili leaves

Stir Fry Fish Fillet and Bok Choy in Oyster Sauce

Filipino Style Recipe: Stir fried fish fillet and bok choy in oyster sauce is another easy yet healthy food. Normally the fish fillet comes stir fried together with bok choy then cooked in oyster sauce.

Good for 2-3 persons

Ingredients:
300 grams fish fillet, cut into serving pieces
a bunch of Vietnam pechay(bok choy)
1 onion, chopped
3 cloves garlic, minced
1 thumb-sized ginger, sliced thinly
1/4 cup oyster sauce
2 tablespoon vegetable oil
salt and pepper to taste
1 tablespoon sesame oil(optional)

Marinate:
1/4 cup soy sauce
2 tablespoon lemon or calamansi juice
1/4 cup cornstarch

Procedures:
Part 1
1. In a bowl, combine fish, soy sauce, lemon juice and cornstarch. Marinate for 10 minutes.

Part 2
1. In a pan, heat oil and saute garlic, onion and ginger until golden brown. Drain and set aside.
2. In a same pan, stir fry fish for 5 minutes or until tender. Drain and set aside.

Part 3
1. In a same pan, stir fry bok choy and add toasted garlic, onion and ginger. Cook for 1 minutes.
2. Add stir-fried fish, oyster sauce, sesame oil, salt and pepper. Mix well.
3. Transfer to serving plate then serve.

Crabs in Coconut Milk

Filipino Style Recipe: Crabs in coconut milk or ginataang alimango or alimasag is another simple yet tasty and nutritious seafood dish, basically crabs simmered in coconut milk then season with salt and pepper.

Ingredients:
5-6 pieces crabs, halves
2 cans(400 ml) coconut milk
5 cloves garlic, crushed

1/2 squash(kalabasa), peeled and cut into cubes(optional)
1 bundle string beans(sitaw), cut in 3 inches long(optional)

Procedures:
1. In a saucepan, heat oil and saute ginger, garlic and onion.
2. Add crabs, water, salt and pepper. Bring to boil for 5 minutes or until water is almost absorb.
3. Pour coconut milk, cover and simmer for another 5 minutes. Stir occasionally.
4. Add the green chili, squash and string beans. Simmer over low heat until vegetables are tender but not overcooked.
5. Adjust seasoning according to taste.
6. Simmer until sauce is thicken. Serve hot.

Salmon Macaroni Salad Recipe

Sinigang na Hipon

Filipino Style Recipe: sinigang na hipon is another simple and easy Filipino dish. This is similar to sinigang na baboy. Normally the shrimps cooked in a combination of onions, tomatoes, different vegetables and tamarind which gives a sour taste.

Ingredients:
1 kilo Shrimps
1 pack sinigang mix or 12 pieces tamarind(sampalok)
5 cups water or ricewash
1 onion, diced
3 large tomatoes, quartered
1 bundle water spinach(kangkong), cut into 2 inches
3 pieces green chili(siling haba)
salt or fish sauce to taste

2 pieces radish, sliced(optional)
1 bundle string beans(optional)

Procedures:
1. In a pot, pour water and bring to boil.
2. Add onions, tomatoes and radish.
3. Add sinigang mix and simmer for 2 minutes.
4. Add shrimps, string beans and green chili then simmer for 3 minutes.
5. Adjust seasoning with salt or fish sauce.
6. Turn off the heat, add water spinach and cover for a few minutes.
7. Transfer to serving bowl and serve with steamed rice. Enjoy!

Tips:
1. You may also add eggplants or pechay.

Notes:
If using tamarind(sampalok) instead of sinigang mix, here’s the procedure:
1. Boil tamarind until soften.
