Ginisang Patola with Miswa

Filipino Style Recipe: ginisang patola with miswa or sauteed gourd with wheat noodles is a vegetable soup dish. Normally the pork or shrimp sauteed then cooked with gourd and wheat noodles. This is similar to ginisang upo and ginisang sayote.

Estimated time preparation and cooking: 30-40 minutes
Good for 3-4 persons

Ingredients:
2 medium-sized sponge gourd(patola), peeled and sliced
1 small pack thin wheat noodles(miswa)
250 grams pork with fat, cut into small pieces
1 onion, chopped
3 cloves garlic, minced
salt and pepper to taste
1 pork broth cubes(optional)

Procedures:
Part 1
1. In a saucepan, cook pork meat until color turns to light brown and start to render oil.
2. Saute onion and garlic. Season with fish sauce then mix well.
3. Add water and pork broth cubes. Bring to boil.
4. Add patola and cook for 2 minutes.
5. Adjust seasoning with salt and pepper according to taste.
6. Add miswa and simmer for 1 minute.
7. Remove from heat then serve.

Notes:
1. You may also add shrimps together with pork.

Ginataang Papaya

Filipino Style Recipe: ginataang papaya or papaya with coconut milk is normally the green papaya cooked with coconut milk and shredded dried salted fish.

Estimated time preparation and cooking: 20-30 minutes
Good for 3-4 persons

Ingredients:
1 medium-sized papaya, cut into serving pieces
2 cups coconut milk
3 cloves garlic, minced
1 onion, chopped
1 thumb-sized ginger, thinly sliced
1 piece dried salted fish(daing or tinapa), shredded
fish sauce or salt and pepper to taste
1 piece chili finger(siling labuyo), chopped(optional)
1 bunch malunggay leaves(optional)

Procedures:
1. In a pan, heat oil and saute garlic, onions and ginger.
2. Pour coconut milk and bring to boil.
3. Add papaya, fish sauce and pepper and simmer on low heat until half-cooked.
4. Add dried salted fish, chili finger and simmer until papaya is soft.
5. Adjust seasoning according to taste. Add malunggay leaves and simmer for 1 minute.
6. Remove from heat and serve with steamed rice.

Ginisang Ampalaya

Filipino style recipe: ginisang ampalaya or sauteed bitter melon with egg is another healthy yet affordable dish. Normally the bitter melon sauteed with ground pork then cook with tomatoes and beaten egg.

Estimated time of preparation and cooking: 15-20 minutes
Good for 4-6 servings

Ingredients:
2 bitter melon(ampalaya), seeded and sliced thinly
2 medium-sized tomatoes, diced
2 pieces egg, beaten
1 medium onion, diced
3 cloves garlic, minced
1 tablespoon vegetable oil
salt and pepper to taste
1 cup ground pork (optional)

Procedures:
1. In a pan, heat oil and saute garlic, onion and tomatoes.
2. Add ground pork and cook until brown.
2. Add water and bring to boil.
3. Add bitter melon, cover and simmer for 3 minutes.
4. Add beaten eggs and season with salt.
5. Continue cooking until eggs are firm.
6. Remove from heat and serve hot!

Tips:
If you want to lessen the bitter taste of ampalaya here the procedures:
1. Rub the sliced ampalaya with salt and leave for 10 minutes
2. Then squeeze the ampalaya until the water comes out.

Denengdeng

Filipino Style Recipe: denengdeng or inabraw is a native ilocano dish similar to pinakbet. It is a tasty yet healthy vegetable dish consisting of different fresh vegetables with bagoong.

Estimated Preparation and Cooking Time: 20-30 minutes. Good for 4-5 persons.

Ingredients:
1 cup string beans(sitaw), cut into 2 inch
6 pieces okra
1 cup squash(kalabasa), cut in cubes
1 ampalaya(bitter melon), sliced
1 onion, sliced
2 large tomatoes, sliced
1 thumb-sized ginger; crushed
3 tablespoons fermented fish(bagoong isda)
1 milk fish or tilapia(fried or grilled), sliced
3 cups water or rice washing
1 cup squash flower(bulaklak ng kalabasa)(optional)
1 cup patani (lima beans)(optional)
1 cup jute leaves(saluyot)(optional)
1 cup malunggay leaves(optional)

Procedures:
1. In a big pot, add water and bring to boil.
2. Add onions, ginger and tomatoes. Cook for 3 minutes.
3. Add fermented fish and simmer for another minute.
4. Add vegetables and cook until crisp-tender but not overcooked.
5. Add fried fish. Adjust seasoning according to taste.
6. Remove from heat then serve.

Tips:
1. You can also use or add other vegetables..

Okoy(Crispy Shrimp Fritters)

Filipino Style Recipe: Okoy or Ukoy(crispy shrimp fritters) is a native Filipino dish originated from the province of Laguna. This dish is usually an afternoon snack but some use it as viand for regular meals. Normally the baby shrimps mixed with flour, egg, salt and pepper. Scope to form a patty then deep fry until crisp and brown.

Good for 2-3 persons

Ingredients:
250 grams baby shrimps, cleaned
1 cups flour or cornstarch
1 egg, beaten
1/4 cup water
1 teaspoons salt
1/2 teaspoon ground pepper
1 onion, chopped
cooking oil for frying
1 cup bean sprouts(toge) (optional)
1 sweet potatoes(kamote) or turnip(singkamas), peeled and cut into strips(optional)

Spicy Garlic Vinegar
1 cup white vinegar
1 tablespoon garlic, minced
1 teaspoon salt
1 teaspoon sugar
1 piece chili(siling labuyo), chopped

Procedures:
Part 1
1. In a bowl, combine flour, salt, pepper, egg and water to make a smooth batter. Stir to mix well.
2. Add the baby shrimps, onion, bean sprouts and sweet potatoes. Mix until shrimps and vegetables are well coated.

Part 2
1. In a frying pan, heat cooking oil and pour about 1/4 cup of the mixture.
2. Deep fry each sides for about 1-2 minutes or until crisp and brown. Drain on paper towels.
3. Repeat until the entire mixture is consumed.
4. Serve hot with spicy garlic vinegar. Enjoy

Part 3(optional)
1. In a bowl, mix all the ingredients for spicy garlic vinegar.

Tofu and Mushrooms Recipe

Filipino style recipe: tofu and mushrooms recipe is a healthy yet affordable dish. Normally the tofu comes fried then sauteed with mushrooms, bean sprouts, bell peppers and oyster sauce.

Ingredients:
3 blocks of tofu
1/2 cup button mushrooms, sliced
1 small onion, chopped
4 cloves garlic, minced
1 bell pepper, chopped
1/4 cup oyster sauce
2 tablespoons water
1/4 cup bean sprouts(togue)
salt and pepper to taste

2 tablespoons ground peanuts(optional)
1 small carrot, sliced thinly(optional)
200 grams spinach, chopped(optional)

Procedures:
Part 1
1. In a frying pan, heat oil and deep fry tofu until golden brown. Drain and let cool.
2. Cut tofu into cubes and set aside.

Part 2
1. In a pan, saute onions, garlic, bell pepper and mushrooms. Cook until veggies are half-cooked.
2. Add oyster sauce and water. Add fried tofu and bean sprouts. Simmer for 2-3 minutes.
3. Season with salt and pepper according to taste. Remove from heat.
4. Transfer to serving plate and top with ground peanut. Serve and enjoy!

Ginataang Sigarilyas

Add with pork or shrimp make the recipe more delicious. This is another mouth-watering vegetable dish that is truly enjoyed by most Filipinos.

Ingredients:
300 grams pork belly, cut into small cubes or strips
4 cloves garlic, crushed
1 medium onion, sliced thinly
1 bunch winged beans(sigarilyas), sliced diagonally and ends discarded
1/2 cup coconut cream
1/2 cup of water
salt and pepper to taste
1/4 cup dried shrimp(optional)

Procedures:
Part 1
1. In a pan, heat oil and fry pork until color turns to light brown.
2. In a same pan, saute onion and garlic. Season with fish sauce then mix well.
3. Add dried shrimp and cook for a minute.
4. Pour in coconut cream and bring to a boil.
5. Add winged beans and cook until vegetables are tender but not overcooked.
6. Add water if necessary. Adjust seasoning according to taste. Remove from heat.
7. Serve and enjoy.

Notes:
1. You may also add long beans(sitaw) and red chili if desired.

Creamy Shrimp Salad

Filipino Style Recipe: creamy shrimp salad is comprises a shrimp as main ingredient. Combine with mayonnaise, lemon juice, celery, cucumbers, salt and pepper.

Estimated time of preparation: 20 minutes. Good for 2 persons

Ingredients:
3/4 cup cooked shrimp, steamed and peeled
2 medium cucumbers, peeled and sliced
1/2 cup celery, diced
1 tablespoon mayonnaise
1 tablespoon fresh lemon juice
1/2 teaspoon Old Bay seasoning
salt and pepper to taste
lettuce leaves(optional)

Procedures:
1. In a medium bowl, mix all ingredients. Refrigerate until ready to serve. Enjoy!

Spicy Green Beans and Pork

Filipino Style Recipe: I first tried this dish when we went to Beijing for a vacation. It was winter then, so the spicyness of this dish is perfect for an additional heat. I tried it when I got back home and they loved it. You can adjust the chili garlic sauce depending on how spicy you want it to be. If you are not a fan of green beans, you can replace it with asparagus.

Estimated time preparation and cooking: 35 minutes
Good for 4 persons

Ingredients:
2 cups vegetable oil for frying
500 grams fresh green beans, trimmed and dried well

Pork Sauce:
1 tablespoon vegetable oil
3 cloves garlic, minced
2 teaspoons ginger, minced
2 green onions, minced
250 grams ground pork
2 tablespoons Asian chili garlic sauce
1/4 cup chicken broth
2 teaspoons soy sauce
2 teaspoons cornstarch
2 tablespoons cold water

Procedures:
Step 1
1. In a large work, heat 2 cups of vegetable oil. Carefully add the beans and fry then stirring occasionally for 3 to 5 minutes  or until the beans are blistered.
2. Dip the beans out with a strainer and quickly rinse them in cold water.

Step 2
1. Leave 1 tablespoon of vegetable oil and remove some of the oil from the wok. Heat in a medium heat.
2. Saute garlic, ginger, and green onion then add ground pork. Cook and stir the color of pork turn to brown.
3. Add chili garlic sauce, chicken broth, soy sauce and bring to a boil.

Step 3
1. Mix the cornstarch with the water in a small bowl then pour and stir into the pork mixture
2. Simmer for another 1 to 2 minutes or until the sauce thickens. Adjust seasoning according to taste.
3. Gently stir the green beans into the pork sauce then heat through.
4. Remove from heat, transfer the spicy green beans and pork to serving plate. Serve with steamed rice.

Stir Fry Fish Fillet and Broccoli

Filipino Style Recipe: Stir fry fish fillet and broccoli is rich in protein and vitamins that is perfect for health conscious individuals. This recipe is originally from Chinese called “Fei Cui Long Li Qiu” which is simple yet healthy dish.

Estimated time preparation and cooking: 15-20 minutes
Good for 3-4 persons

Ingredients:
200 grams white fish fillet, cut into bite sizes
200 grams broccoli florets
1 small carrot, cut into serving pieces
3 gloves garlic, minced
1 thumb-sized ginger, cut into strips
1/8 cup cooking wine(optional)
3 tablespoons olive oil
cooking oil for frying

Marinade:
3 tablespoons calamansi juice
1 teaspoon flour
1 egg white
1/2 teaspoon ground pepper
a dash of salt

Sauce:
1 teaspoon sugar
1 teaspoon sesame oil
2 teaspoon cornstarch
1/2 cup water
salt and pepper to taste

Procedures:
Part 1
1. Blanch the broccoli in boiling water for a minute.
2. Drain and rinse in cold water to cool. Drain and set aside.

Part 2
1. In a bowl, combine fish, calamansi, egg white, flour, salt and pepper then marinate for 10 minutes.
2. In a pan, heat oil then stir fry fish for 2 minutes or until cooked. Drain and set aside.

Part 3
1. In a small bowl, combine all the sauce ingredients then mix until well blended. Set aside.

Part 4
1. In a pan, heat olive oil then saute garlic and ginger.
2. Add carrots and cooking wine then stir cook for a few minutes.
3. Pour sauce mixture, broccoli and fish fillet then simmer until sauce reduce to half and thicken.
4. Transfer to a serving plate and serve with rice.
