Lemon and Mint Water

Filipino Style Recipe: Lemon and Mint Water is a refreshing and healthy drinks made of fresh mint, lemon and water. This drinks is an antioxidant and a great source of vitamin C ideal for those on diet. It helps the body to cleanse any toxins in the system and aids in weight loss.

Ingredients:
2 lemons, thinly sliced
fresh mint leaves
1 2/3 liters water
juice of one lemon
ice cubes
honey to taste (optional)

Procedures:
1. In a large pitcher, combine all ingredients then allow flavors to infuse inside the fridge for a few hours.
2. Serve chilled.

Crab Meat Aglio Olio

Filipino Style Recipe: Crab Meat Aglio Olio is another variety of traditional Italian pasta dish. This dish is made of sauteed garlic in olive oil, chili flakes, crab meat and basil then toss in spaghetti pasta. Aglio olio is usually serve as meryenda(mid-afternoon snack) or in any special occasion.

Estimated time of preparation: 10 minutes
Estimated time of cooking: 6-8 minutes
Good for 3-4 persons

Ingredients:
400 grams spaghetti pasta
1/4 cup olive oil
8 cloves garlic, peeled and chopped
200 grams crab meat or crab sticks, cut into thin slices
1/4 teaspoon dried chili flakes(optional)
1/4 cup white wine
10 leaves basil, finely chopped
salt and pepper to taste
grated Parmesan cheese

Procedures:
Part 1
1. In a large pot, prepare pasta based on cooking instructions. Drain and set aside.

Part 2
1. In a pan, heat 1 tablespoon olive oil then saute garlic, chili flakes until light brown.
2. Add crab stick and then stir cook for 3 minutes. Season with salt and pepper according to taste.
3. Add white wine and simmer for 2-3 minutes or until sauce reduce in half.
4. Add remaining olive oil, pasta and basil then toss until coat evenly.
5. Transfer to serving plate, top with Parmesan cheese and garnish with basil leaves. Serve.

Melon Milk Drink

Filipino Style Recipe: Melon Milk Drink is another refreshing beverage and usually serve during afternoon or summer season. This drink is consists of melon, milk, sugar, and water then stir with ice.

Estimated time of preparation: 10-12 minutes

Ingredients:
1 medium sized melon, scrape the meat
1 1/2 liters water
1 large can low fat or evaporated milk
sugar to taste
ice cubes

Procedures:
1. In a large pitcher, combine melon, milk and water.
2. Add sugar according to taste then serve with ice cubes. Enjoy!

Carrot Muffin

Filipino Style Recipe: Carrot Muffin is a delicious pastry that has a moist, soft, and just the right sweetness. While frosting is sweet and creamy which makes the muffins look like from a gourmet bakery.

Ingredients:
3 cups grated carrots
4 raw eggs
1 cup brown sugar
1 cup white sugar
1 1/4 cup vegetable oil
3 teaspoons vanilla extract
2 cups all purpose flour
2 teaspoons baking soda
2 teaspoons baking powder
3 teaspoons ground cinnamon
1/2 teaspoon salt

For the frosting:
1/2 cup butter, softened
1 pack (8 oz) cream cheese, softened
3 cups powdered sugar
1 teaspoon vanilla extract

Procedures:
Part 1
1. In a large mixing bowl, beat together the eggs, vegetable oil, white sugar, and vanilla.
2. In a separate bowl, combine the flour, baking soda, baking powder, cinnamon, and salt.
3. Combine flour mixture, egg mixture and grated carrots then mix until well blended.

Part 2
1. In a muffin pan lined with paper cups, fill each cups 2/3 full of the mixture.
2. Cook into a preheated oven over 350 Fahrenheit for 30-40 minutes or until toothpick inserted on the middle comes out clean. Remove from oven and let it cool.

Part 3
1. For the frosting, combine the butter cream cheese, powdered sugar, and vanilla and beat until smooth and creamy.
2. Frost the mixture into muffins and refrigerate for at least 3 hours.

Tips:
1. For grating the carrots, use the bigger side of the grater (the one usually used for the cheese).
2. Do not try to open the oven until it is almost done (around 3/4 of the cooking time).

Buko Pandan Drink

Filipino Style Recipe: Buko Pandan Drink is another refreshing beverage and usually serve during afternoon or summer season. This drink is consists of shredded coconut, pandan gelatin, milk and coconut water then stir with ice.

Ingredients:
1 pack green or pandan flavored gelatin
2-3 drops pandan extract
4 cups coconut water
1 big can evaporated or fresh milk
1 big can condensed milk
1 cup young coconut buko, shredded
5 pieces pandan leaves (optional)

Procedures:
Part 1
1. Prepare gelatin based on package instructions. Let it cool and cut into small cubes. Set aside.
2. Boil pandan leaves in 4 cups water over low heat for 20 minutes or until aroma comes out. Let it cool and set aside.

Part 2
1. In a water pitcher, combine all the ingredients then mix well.
2. Serve with ice cubes. Enjoy!

Chocolate Mousse

Filipino Style Recipe: Chocolate Mousse is a popular chocolate dessert made of melted chocolate and milk incorporate together with gelatin then refrigerate until set.

Ingredients:
1 1/2 cup evaporated milk
1-7 gram envelope unflavored gelatin
1/4 cup cold water
1 tablespoon sugar
2 cups semi-sweet chocolate morsels
1 tablespoon vanilla extract
whipped cream and cherries for toppings(optional)

Procedures:
Part 1
1. In a sauce pan, dissolved gelatin in water over low heat. Keep stirring.
2. Add evaporated milk and sugar then continue stirring until steaming hot. Do not boil.

Part 2
1. In a large bowl, combine chocolate morsels, vanilla and milk mixture then mix until blended. I used hand mixer.
2. Pour the mixture into molds then refrigerate for at least 3 hours or until set.
3. Top with whipped cream and cherries then serve chilled. Enjoy!

Cheesy Ground Beef Nachos

Filipino Style Recipe: Cheesy Ground Beef Nachos is a popular Mexican dish made of delicious corn tortilla chips loaded with various toppings and cheese sauce.

Estimated time of cooking: 20 minutes
Good for 2-3 persons

Ingredients:
Corn tortilla chips

Salsa:
2 tomatoes, seeded and diced
100 grams sliced black olives
1/2 cup picked sliced jalapenos

Taco Meat:
500 grams ground beef
1 white onion, diced
1/2 teaspoon ground cumin
1 teaspoon chili powder
1/2 teaspoon garlic powder
1 teaspoon dried oregano
1/2 teaspoon cayenne pepper
salt to taste

Cheese Sauce:
1 cup shredded Cheddar cheese
1 tablespoon butter
3/4 cup low-fat milk, chilled
1/2 cup beef or chicken broth
1 tablespoon flour
1/2 teaspoon chili powder
1/2 teaspoon salt

Procedures:
Part 1
1. In a pan, heat oil then saute onion.
Add beef and seasoning then cook until brown and crumble. Drain and set aside.

Part 2
1. In a same pan, add butter and flour then stir until smooth.
2. Slowly add chilled milk then whisk constantly until smooth. Break any lumps.
3. Add broth and seasoning then simmer until bubbly and thickened.
4. Lower the heat then add shredded cheese, stir continuously until smooth. Set aside.

Part 3
1. In bowl, combine salsa ingredients then toss. Set aside

Part 4
1. In a serving plate, layer the tortilla chips evenly then top with taco meat, salsa then drizzle with cheese sauce. Top with extra salsa. Serve and enjoy!

Lemon Cupcake

Filipino Style Recipe: The original recipe is for simple cupcake but I wanted to add some zing to it, thus the lemon. And guess what? my family raved about them. This cupcake is perfect with your favorite coffee or tea.

Estimated time of baking: 18 minutes (plus preheating time)
Good for 16-18 medium cupcakes

Ingredients:
or the cupcakes
2 egg whites
1 teaspoon cream of tartar
5 tablespoon butter, softened
2 tablespoon vegetable oil
1 cup sugar
2 teaspoon vanilla extract
2 egg yolks
1 3/4 all purpose flour
1/4 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon baking powder
1 cup sour cream
1 lemon (lemon zest and lemon juice)

Procedures:
Part 1
1. In a mixing bowl, combine egg whites and cream of tartar and mix with hand mixer until stiff peaks form. Set aside.

2. Using a stand mixer, mix the butter, vegetable oil, and sugar until well combined, around 3 minutes. Add the egg yolks and vanilla until well blended.

3.Combine the flour, baking soda, baking powder and salt. Alternate adding the sour cream and dry ingredients in 3 parts in to the butter mixture until just blended.Do not overmix. Fold in the lemon zest, lemon juice, and egg whites to the batter until evenly combined.

4. Fill cupcake liners until 1/2 full and bake into preheated oven at 350 farenheit for 15 -18 minutes or until toothpick inserted at the middle of cupcake comes out clean. Remove from the oven and let it cool in rack.

Salted Caramel and Pecan Cupcakes

Filipino Style Recipe: The salted caramel sauce is very easy to prepare compared to the usual cupcake frosting. The salt balances the sweetness of the cupcakes and the pecan gives it a crunch. The cupcakes are also moist and creamy. I would say this is one of my favorite combination for a cupcake.

Estimated time of baking: 18 minutes (plus preheating time)
Good for 16-18 medium cupcakes

Ingredients:
For the cupcakes:
2 egg whites
1 teaspoon cream of tartar
5 tablespoon butter, softened
2 tablespoon vegetable oil
1 cup sugar
2 teaspoon vanilla extract

1 teaspoon salt
18 pieces glaze pecans

Part 2
1. In a pan over low heat, put the caramel sauce and continuously stir until it starts to rapidly bubble and thickens. Remove from heat and stir salt. Let it cool. Scoop about 1/2 teaspoon into the top of each cupcake then top with pecan.

Brown Velvet Cupcakes with Blackberry Cream Cheese Frosting

Filipino Style Recipe: Everybody is fond of red velvet cupcakes! And why not have other colors like brown velvet? This cupcake is as soft and light as the red velvet with just a different color. Plus, the blackberry cream cheese frosting is to die for!

Estimated time of baking: 25 minutes (plus preheating time)
Good for 18-20 medium cupcakes

 

Ingredients:

For the Cupcakes
1 1/2 cup vegetable oil
2 large eggs
1 teaspoon vinegar
1 cup buttermilk
2 teaspoon vanilla extract
1 1/2 cups sugar
2 1/2 cups flour
1 teaspoon baking soda
1 teaspoon salt
1 1/2 tablespoon cocoa powder
2 tablespoon red food color
2 tablespoon green food color

For the Frosting
1/2 cup butter
1 1/3 cup powdered sugar
1 pack (9oz) cream cheese, sliced into 6 pieces
1/8 teaspoon salt
1 cup blackberry jam or pie filling
1/2 teaspoon vanilla

 Procedures:

Part 1

1. Using a stand mixer bowl, combine the vegetable oil, eggs, vinegar, buttermilk, vanilla and sugar and beat until well blended.

2. In another bowl, combine the flour, baking soda, salt, and cocoa powder. Add the dry ingredients to the mixer in 3 parts and mix after adding each part, scrape the sides to make sure there are no left unmixed ingredients. Add the green and red food coloring and continuously mix until the colors are well blended.

3. Fill each cupcake liners 2/3 full of the batter and bake in preheated oven at 350 Fahrenheit for 23-25 minutes or until toothpick inserted at the middle of the cupcake comes out clean.

Part 2

1. Using a stand mixer, cream together the butter, powdered sugar, and salt starting in slow speed for about 2 minutes then at medium to high speed until light and fluffy.

2. Add the cream cheese 1 slice at a time while continuously mixing. Add the blackberry jam and vanilla then mix until the berries are blended. Pipe or simply scoop out the frosting on top of each cupcake. Make sure that the cupcakes are cooled before frosting.
