Sichuan Stir-Fried Chinese Long Beans

Filipino Style Recipe: Stir-fried Chinese long beans is another simple and quick recipe. It is consist of Chinese beans and ground meat cooked together in soy sauce, Sichuan peppercorns, and spices.

Estimated time of preparation and cooking: 20-25 minutes
Good for 2-3 persons

Ingredients:
300 grams Chinese beans, trimmed and cut into serving pieces
200 grams ground pork
3 cloves garlic, minced
1 white onion, chopped
3 tablespoons soy sauce
1/4 teaspoon dried chili flakes
4 tablespoons vegetable or peanut oil
1/2 teaspoon Sichuan peppercorns, crushed
fish sauce or salt to taste

Procedures:
Part 1
1. In a pan, heat oil then saute garlic and onion.
2. Add ground pork, fish sauce then stir cook until light brown. Remove and set aside.

Part 2
1. In a same pan, add beans then stir-fry for 5 minutes or until outsides begins to blister and wilted. Add oil if needed.
2. Return the ground meat then add soy sauce, chili flakes and Sichuan peppers.
3. Adjust seasoning with fish sauce then simmer for another minute.
4. Transfer to serving plate then serve immediately.

Adobong Talong at Baboy

Filipino Style Recipe: Adobong talong at baboy or pork and eggplant adobo is another variety of Filipino adobo. The procedures is simple, we fried eggplant until brown and marinate pork then cooked and simmered soy sauce, vinegar, garlic, bay leaves, peppercorns, salt and sugar until tender.

Good for 3-4 persons

Ingredients:
1/2 kilo pork, cut into serving pieces
2 pieces eggplants (talong), cut into serving pieces
1/3 cup vinegar
salt to taste
cooking oil for frying
3 tablespoons oyster sauce

Marinade:
1/2 cup soy sauce
3 gloves garlic, crushed
1 teaspoon peppercorns
3 pieces bay leaves(laurel)
1 tablespoon sugar

Procedures:
Part 1
1. In a bowl, combine pork, garlic, bay leaves, peppercorns, sugar and soy sauce. Marinate for 30 minutes.
2. In a pan, heat oil then fry eggplant until golden brown. Drain and set aside.
3. In a same pan, fry marinated pork until brown. Drain and set aside.

Part 2
1. In a pot, Add pork, marinade, oyster sauce and water then simmer until tender. Add water if necessary.
2. Pour vinegar and simmer for 5 minutes then adjust seasoning according to taste.
3. Add fried eggplant then stir cook for 2 minutes or until sauce is reduce.
4. Remove from heat then transfer to serving plate. Serve with steamed rice. Enjoy!

Pork Adobo Flakes

Ingredients:
1 kilo pork loin, slice into pieces

Curing Mixture:
1 tablespoon salt
6 cloves garlic, minced
2 tablespoons vinegar
1 tablespoon soy sauce
1/4 cup pineapple juice
1/2 teaspoon food coloring(red)
1/2 teaspoon ground pepper

Procedures:
Part 1
1. In a bowl, combine curing mixture then mix together until well combined.
2. Rub and press the meat into curing mixture until evenly distributed.
3. Cover and place in the fridge for at least 3 days.

Part 2
1. To cook, heat oil over medium heat then fry for 3 minutes per side.
2. Transfer into serving plate, then serve with garlic rice and fried egg. Enjoy

Stir Fried French Beans

Filipino Style Recipe: Stir fried french beans is another simple and quick recipe. It is consist of french beans and ground meat cooked together in soy sauce, oyster sauce and spices. Ideally, sauce should be naturally thick and oily but this is very delicious.

1/4 kilo french beans, trimmed
1/4 kilo ground pork
3 cloves garlic, minced
1 onion, chopped
3 tablespoons oyster sauce

2 tablespoons vegetable oil
fish sauce, salt and pepper to taste

Procedures:

4. Add chili flakes, salt and pepper according to taste then simmer for another minute.

Homemade Ham

Filipino Style Recipe: Homemade Ham or hamonado is a popular and special dish during Christmas season. Normally the meat cured and cooked in a special sweet broth until glazed and roasted.

Ingredients:
3 kilos pig’s leg without bones
7 cups pineapple juice
1 cup brown sugar
2 tablespoon salt
3 pieces bay leaves
1 head garlic, pounded

Pineapple Glaze:
1 cup pineapple juice
1/2 cup brown sugar

Procedures:
Part 1
1. In a deep pot, combine pineapple juice, brown sugar, bay leaves and garlic. Stir until dissolved.
2. Add meat then cover and simmer over low heat for an hour. Let it cool then refrigerate inside the fridge overnight.

Part 2
1. Let stand the meat for an hour or until reaches room temperature.
2. Score the meat surface in a diamond pattern.

Part 3 (Pineapple Glaze)
1. In a sauce pan, combine pineapple juice and brown sugar then simmer until thickened. Keep stirring.

Part 4
1. Using a pastry brush, brush the meat with pineapple glaze then bake in a preheated oven over 325 degrees Fahrenheit for at least an hour or until nicely browned. (basting every 15 minutes with remaining glaze)
2. Remove from oven then brush with remaining juices. Slice and serve.

Green Salad Tocino

Filipino Style Recipe: Green Salad Tocino is another variety of green salad incorporated with Filipino twist by adding our favorite breakfast such as tocino or ham. The honey added to the Greek dressing adds to the sweetness of this salad.The anchovies and cheese gives it the right amount of saltiness for contrast.

Ingredients:
1 pack romaine lettuce
1/4 cup leftover cooked tocino or ham
2 tablespoons olives, pitted
2 tablespoons dried tomatoes
6 pieces cherry tomatoes, halved
2 tablespoons capers
6 pieces boneless anchovies
2 tablespoon ground Parmesan cheese

For the dressing:
1/4 cup Greek dressing
2 tablespoon honey

Procedures:
1. In a bowl, combine Greek dressing and honey then mix well.
2. In a big bowl, tear lettuce into serving pieces.
3. Add the olives, dried tomatoes, cherry tomatoes, capers, anchovies and tocino.
4. Add the honey dressing then toss.
5. Sprinkle with Parmesan cheese. Serve immediately.

500 grams ground pork or ground beef
1 tablespoon cornstarch or 1/2 cup bread crumbs
1 raw egg

1 teaspoon soy sauce(optional)
1/2 teaspoon Worcestershire sauce(optional)
1 small carrot, finely chopped(optional)
2 tablespoons cilantro, finely chopped(optional)

Sauce:
1/4 cup hoisin sauce
1 tablespoon soy sauce
2 tablespoons vinegar
1 glove garlic, minced
1/2 teaspoon ground pepper
1/2 teaspoon sesame oil

Procedures:
Part 1(Skip this procedure if you are using premade meatballs from the market)
1. In a bowl, combine meatballs ingredients and mix thoroughly.
2. Scoop and form the mixture into 1 tablespoons ball shaped.
3. In a frying pan, heat oil and deep fry until golden brown. Drain and set aside.

Part 2
1. In a bowl, combine sauce ingredients then mix until well blended.

Part 3
1. In a serving plate, arrange meatballs then pour the sauce on top. Serve and enjoy.

Paksiw na Bagnet

1/4 cup water
salt to taste
1/4 cup liver spread(optional)

Procedures:
1. In a pan, heat bagnet until start to render oil.
2. Add garlic and onions then saute until translucent.
3. Pour water, peppercorn and bay leaf then bring to boil.
4. Pour vinegar and simmer for 5 minutes.
5. Add the sugar, liver spread and lechon sauce then simmer for another 5 minutes.
6. Adjust seasoning with salt according to taste.
7. Remove from heat and serve with steamed rice. Enjoy!

Sugar Glazed Meat Loaf

Filipino Style Recipe: Sugar Glazed Meat Loaf is a mouth-watering dish that can be served in any occasion specially during Holidays. It is budget friendly and foolproof even for those who do not know how to cook. Kids and adults will really love this.

Good for 2 small loaf pan

Ingredients:
1 kilo lean ground pork
3/4 cup milk
2 raw eggs
1 medium onion, chopped
3/4 cup bread crumbs
2 tablespoon brown sugar
2 teaspoon salt
1/2 teaspoon ground black pepper

For the Glaze:
1/2 cup ketchup
1/3 cup brown sugar
1 tablespoon oyster sauce

Procedures:
Part 1
1. In a large bowl, combine the pork, milk, salt, eggs, sugar, ground pepper, onion, and bread crumbs then mix well.
2. Divide the meat mixture equally and put in two 8×4 or in one 9×5 loaf pan.

Part 2
1. To make the glaze, combine the ketchup, sugar and oyster sauce.
2. Pour on top of the meat and spread evenly.
3. Bake in preheated oven at 350 degrees Fahrenheit for 1 hour or until the juices at the side is clear.
4. If not yet done, bake for another 10 minutes. Remove from the pan then slice and serve.
