Higadillo

Filipino Style Recipe: Higadillo is a common Filipino stew made from pork meat and liver cook and simmer in a thicken sauce together with desired vegetables and ingredients. This can be served as main dish together with steamed rice.

Estimated time of preparation: 10 minutes
Estimated time of cooking: 40 minutes
Good for 3-4 persons

Ingredients:
500 grams pork, cut into strips
250 grams pork liver, cut similar to pork
2 potatoes, cut similar to pork
1 medium-sized carrots, cut similar to pork
1 cup lechon sauce
2 tablespoons soy sauce
2 tablespoons vinegar
1 cup water
3 cloves garlic, minced
1 onion, chopped
1/2 teaspoon ginger powder
salt and pepper to taste

Procedures:
Part 1
1. In a skillet, heat oil then fry potatoes and carrots until light brown. Remove and set aside.

Part 2
1. In a same skillet, reduce oil then saute garlic and onion.
2. Add pork then continue sauteing for 3 minutes.
3. Add pork liver and ginger powder then stir cook for another 3 minutes or until light brown.
4. Add soy sauce, lechon sauce and water then cover and simmer for 20 minutes or until meat is tender. Add more water if necessary.
5. Put back potatoes and carrots then add vinegar, bring to boil.
6. Adjust seasoning with salt and pepper according to taste then simmer until thickens.
7. Remove from heat then transfer to serving bowl. Serve immediately with steamed rice.

Note.
1. Alternative to lechon sauce, you may use live spread or breadcrumbs to thicken the sauce.

Lemon Bars

Filipino Style Recipe:This pastry is a good contrast of sweet and tangy,and soft and crunchy. Lemon bar is best served with coffee or tea but you can also eat it on its own. Know the best part? The trimmings at the edges!

Ingredients:
For the crust:
Oil for greasing the pan
2 cups flour
1/2 cup granulated sugar
1 cup butter, softened

For the filling:
4 eggs
1 1/2 cups granulated sugar
1/4 cup flour
2 lemons, juiced
lemon zest
1/4 cup confectioner’s sugar for garnish

Procedures:
Part 1
1. Grease 9 x 13 pan with oil,line the pan with aluminum foil and also grease the foil.
2. In a large bowl, combine the flour and sugar. Add the butter and blend until the dough comes together, about 1 minute.
3. Press the dough on the bottom of the greased pan making sure there are no cracks.
4. Bake in preheated oven at 350 degrees Farenheit for 20 minutes or until golden.

Part 2
1. In another bowl, combine the sugar,flour, eggs, and lemon juice and whisk until well blended. Add the lemon zest and mix.
2. Pour into the filling over the prepared crust and return to oven. Bake for additional 20 minutes in the preheated oven at 350 Farenheit.
3. Remove from oven and let it cool. Cut into 1 1/2 inch squares.
4. Put into the refrigerator until ready to serve. Sprinkle with confectioner’s sugar.

Cheesy Paprika Fries

Filipino Style Recipe: Cheesy paprika fries is a popular snacks made of potatoes cut into sticks then deep fried until crisp. Toss with cheese, paprika, garlic and salt powder.

Ingredients:
4 large potatoes, washed and dried
2 cups peanut oil
1/2 cup cheese powder
1 tablespoon Spanish paprika
1 teaspoon garlic powder
1/2 teaspoon kosher salt

Procedures:
Part 1
1. Cut potatoes into 1/2-inch-thick sticks.
2. In a small bowl, combine cheese powder, Spanish paprika, garlic powder and salt until blended. Set aside.

Part 2
1. In deep pan, heat oil then fry potatoes for crisp. Drain.
2. Combine fries and powder mixture, toss to coat then serve with dressing.

Broccoli Fussili Pesto Pasta

Filipino Style Recipe:This is a very healthy dish that will surely fill up your tummy. The spice from the tuna and freshness of pesto and basil is a very nice contrast.

Ingredients:
200 grams whole wheat Fusilli pasta
1 head broccoli
2 tablespoon Olive oil
3 cloves garlic, minced
1 head onion, minced
1 can spicy tuna, drained
3 tablespoon sliced black olives
10 pieces cherry tomatoes, cut in half
180 grams pesto sauce
Handful fresh basil,chopped
Parmesan cheese
Fish sauce to taste

Procedures:
Part 1
1. Cook fusilli according to package instruction. Drain and reserve water. Set aside.
2. Using then water from the pasta, boil again and blanch broccoli for 1 minute or until the color green becomes bright. Drain and dip into a bowl of ice water to stop the cooking.
Part 2
1. In a big pan, heat olive oil and saute garlic and onion until translucent. Add sliced black olives and tuna and cook for 3 minutes. Add cherry tomatoes and cook again until it is slightly softened.
2. Add the pasta on the pan then pour the pesto sauce. Mix until the pesto is evenly combined with the pasta.Add the broccoli.
3. Season with fish sauce according to taste.
4. Remove from heat. Top with fresh basil and Parmesan cheese. Serve and enjoy.

Chocolate Mallows Cupcake

Filipino Style Recipe:I am not a big fan of marshmallows but its a different story when you say melted marshmallows. In this recipe, instead of using the usual frosting, I am using melted marshmallows on top of a rich and bold chocolate cupcake.

Ingredients:
For the cupcake:
1 3/4 cups all purpose flour
2 cups sugar
3/4 cups unsweetened cocoa powder
2 teaspoons baking soda
1 teaspoon salt
1 tablespoon buttermilk powder dissolved in 1 cup milk
1/2 cup vegetable oil
2 eggs
2 teaspoon vanilla extract
1 tablespoon instant coffee dissolved in 1 cup hot water
1 cup chocolate, melted

For the toppings:
24 pieces big white marshmallows

Procedures:
Part 1
1. In a large mixing bowl, mix all dry ingredients(flour, sugar, cocoa powder, baking soda, salt)
2. In another bowl,combine the buttermilk,oil, eggs, and vanilla.
3. Mix the wet ingredients with a mixer on low speed. Slowly add the dry ingredients into the wet ingredients and mix until just combined.
4. Add the coffee and mix with hand until just combined. Fold in melted chocolate.
5. Pour the batter into prepared cupcake pans.
6. Bake in preheated oven at 350 degrees Fahrenheit for 15-18 minutes or until a toothpick inserted on the cupcake comes out clean.

Part 2
1. Remove from the oven and put one marshmallow on top of each cupcake. Press lightly to avoid from falling off the cupcake.
2. Put back in the oven and bake for 1 minute or less when the top is light brown.
3. Remove from the oven and gently press down marshmallows to flatten.
4. Best served warm.

Chocolate French Rolls

Filipino Style Recipe: Chocolate French Rolls is a simple yet special bread dish that can be served together with hot coffee. The bread flatten then fill with chocolate spread. Roll then dip in egg and milk mixture. Coated with sugar and cinnamon powder then fry until golden brown.

Ingredients:
10 slices white bread
1 cup chocolate spread
1 cup corned beef
1 raw egg
1/2 cup milk
1/4 cup brown sugar
1 teaspoon cinnamon powder
1/2 cup butter

Procedures:
Part 1
1. In a bowl, combine sugar and cinnamon powder then mix well.
2. In a separate bowl, combine egg and milk then whisk until combined.

Part 2
1. Remove the crusts from each slice of bread then flatten with a rolling pin.
2. Fill each slice with chocolate spread.
3. Add 1/2 teaspoon corned beef then roll the bread tightly.

Part 3
1. In a pan, melt butter. Dip each roll in egg-milk mixture then roll in sugar-cinnamon mixture.
2. Lightly fry each roll until golden brown.
3. Roll in sugar-cinnamon mixture. serve immediately with hot coffee.

Steamed Okra with Shrimp Paste

Filipino Style Recipe: Steamed Okra with Shrimp Paste is an easy and simple Filipino dish. We usually served this every morning together with fried rice.

Ingredients:
10 pieces okra, trimmed
2 tablespoons sauteed shrimp paste (recipe)

Procedures:
1. In a steamer, steam okra for 10 minutes then transfer to ice water for 3 minutes to stop cooking. Drain.
2. Transfer okra into serving plate then serve with sauteed shrimp paste. Enjoy!

Breakfast Steaks with Creamy Mushroom

Filipino Style Recipe: Breakfast Steaks with Creamy Mushroom is a simple beef dish made of thin beef slices pan fried then served with creamy mushroom sauce.

Ingredients:
500 grams beef breakfast steak
1/2 cup sliced mushroom
2 cups full cream milk
1 beef bouillon cube
1 tablespoon flour (dissolved in 1/4 cup water)
1/4 cup unsalted butter

Marinade:
3 tablespoons oyster sauce
2 tablespoons soy sauce
2 tablespoons calamansi juice
salt and ground pepper to taste

Procedures:
1. Marinate beef in oyster sauce, soy sauce, calamansi juice, salt and ground pepper for 15 minutes. Set aside.
2. In a pan, melt butter then pan fry beef until brown. Transfer to serving plate and set aside.
3. In a same pan, stir cook mushroom until light brown.
4. Pour dissolved flour, beef bouillon, milk then bring to boil.
5. Adjust seasoning according to taste then simmer until start to thicken.
6. Pour the sauce over the beef. Serve immediately.

Adobong Bagnet with Pineapple

Filipino Style Recipe: Adobong bagnet with pineapple is another variety Filipino adobo together with popular Ilocano delicacy “Bagnet”. Bagnet is a popular delicacy in Ilocos made from pork belly deep fried until crispy and blister on skin. Similar to usual adobo dish, bagnet cooked in a blend of garlic, soy sauce and vinegar. I also used oyster sauce and pineapple for salty and sweet flavorful taste.

Ingredients:
1/4 kilo bagnet, cut into serving pieces
3 tablespoons oyster sauce
2 tablespoons soy sauce
1/8 cup vinegar
1 1/4 cup water
1/2 cup pineapple chunks
5 cloves garlic, minced
1 onion, chopped
3 pieces laurel
1 teaspoon peppercorn
salt to taste

Procedures:
Part 1
1. In a bowl, combine oyster sauce, soy sauce, vinegar and oil. Set aside.

Part 2
1. In a pan, heat bagnet until start to render oil. Remove from pan and set aside.
2. In same pan, saute garlic and onion.
3. Pour oyster sauce mixture then bring to boil.
4. Add laurel and peppercorn then adjust seasoning according to taste.
5. Add bagnet and pineapple then simmer until almost thick.
6. Transfer to serving plate then serve with steamed rice.

Sauteed Chayote with Bagnet

Filipino Style Recipe: Sauteed Chayote with Bagnet or ginisang sayote at bagnet is another easy and simple dish. The chayote sauteed together with bagnet that is popular in Northern part of Luzon, Ilocos region.

Ingredients:
350 grams bagnet, cut into serving pieces
2 pieces chayote(sayote), cut into small pieces
3 cloves garlic, minced
1 onion, chopped
2 1/2 cups chicken broth or water
2 tablespoons vegetable oil
fish sauce, salt and pepper to taste

Procedures:
1. In a pan, heat bagnet until start to render oil.
2. Add saute garlic and onion then saute until light brown.
3. Add chayote then stir cook for a minute, pour water then cover and bring to boil.
4. Season with salt and pepper then simmer for 3-5 minutes or until tender.
5. Transfer to serving bowl then serve hot with steamed rice.
