Chicken Caldereta

Filipino Style Recipe: chicken caldereta or kalderetang manok is another chicken dish that commonly served by Filipinos. This is similar to beef caldereta and chicken afritada. It is basically chicken marinated and sauteed, then cooked with tomato sauce, bell pepper and potatoes. Some may add liver spread to make the sauce creamy. This is a mouth-watering dish that my family loves so much.

Estimated time of preparation: 15 minutes
Estimated time of cooking: 20-30 minutes
Good for 3-4 persons

Ingredients:
3/4 kilo chicken, cut into serving pieces
1/4 cup vinegar or pineapple juice
1/4 cup soy sauce
2 cloves garlic, minced
1 onion, chopped
500 grams tomato sauce
1 small can liver spread
2 medium-sized potatoes, cut into cubed
2 pieces red and green bell pepper, cut into cubed
1/2 cup cheddar cheese, grated or cubed
cooking oil
salt and pepper to taste

1 medium-sized carrot, cut into cubed(optional)
2 pieces red chili(siling labuyo), chopped(optional)
2 pieces bay leaf(optional)

Procedures:
Part 1
1. In a bowl, marinate chicken in soy sauce, vinegar, salt and pepper for 30 minutes.
2. In a pan heat oil and fry potatoes and carrots until golden brown. Drain and set aside.

Part 2
1. In a pan, heat oil and saute garlic and onions until translucent.
2. Add chicken and continue sauteing until light brown.
3. Pour marinade, tomato sauce and water then simmer for 3 minutes.
4. Add liver spread, potatoes, carrots, chili and bell pepper then cook for 2 minutes.
5. Adjust seasoning according to taste then add grated cheese. Mix until cheese has melted.
6. Remove from heat then serve hot with steamed rice.

Notes:
1. You may also include hot dogs cut diagonally and green peas if you prefer.

Sinigang na Hipon

Filipino Style Recipe: sinigang na hipon is another simple and easy Filipino dish. This is similar to sinigang na baboy. Normally the shrimps cooked in a combination of onions, tomatoes, different vegetables and tamarind which gives a sour taste.

Estimated time of preparation and cooking: 30 minutes
Good for 5-6 servings

Ingredients:
1 kilo Shrimps
1 pack sinigang mix or 12 pieces tamarind(sampalok)
5 cups water or ricewash
1 onion, diced
3 large tomatoes, quartered
1 bundle water spinach(kangkong), cut into 2 inches
3 pieces green chili(siling haba)
salt or fish sauce to taste

2 pieces radish, sliced(optional)
1 bundle string beans(optional)

Procedures:
1. In a pot, pour water and bring to boil.
2. Add onions, tomatoes and radish.
3. Add sinigang mix and simmer for 2 minutes.
4. Add shrimps, string beans and green chili then simmer for 3 minutes.
5. Adjust seasoning with salt or fish sauce.
6. Turn off the heat, add water spinach and cover for a few minutes.
7. Transfer to serving bowl and serve with steamed rice. Enjoy!

Tips:
1. You may also add eggplants or pechay.

Notes:
If using tamarind(sampalok) instead of sinigang mix, here’s the procedure:
1. Boil tamarind until soften.
2. Pound and extract the juices.

Pork Tonkatsu

Filipino Style Recipe: Pork Tonkatsu is a Japanese deep fried pork. Normally the pork comes breaded and deep-fried. It is usually served with shredded cabbage and tonkatsu sauce.

Estimated time of preparation: 15 minutes
Estimated time of cooking: 30 minutes
Good for 10 servings

Ingredients:
10 slices boneless pork chops, about 1/2-inch thick
1-1/2 cup all purpose flour
1-1/2 cup bread crumbs
2 eggs, beaten
1 tablespoon oil
cooking oil for frying
Tonkatsu sauce or barbecue sauce
salt & pepper to taste
1/2 head cabbage, thinly shredded and soaked in cold water(optional)

Procedures:
Part 1
1. In a bowl, add beaten eggs and 1 tablespoon oil. whisk well.

Part 2
1. Get rid of the extra fat of the pork chops to keep the meat from curling when fried.
2. Pound the meat with a meat pounder or crisscross the meat using the back of knife.
3. Sprinkle the meat with salt and pepper on both sides.

Part3
1. Dredge the meat in flour and shake off to remove excess flour.
2. Dip in egg mixture and press into bread crumbs to coat both sides.

Part 4
1. In a frying pan, heat oil over a medium heat.
2. Deep fry both sides of breaded pork chops, cook for about 4-5 minutes or until colors turn to golden brown and tender.
3. Drain on paper towels and cut each tonkatsu into bite-size strips.

Part 5
1. Transfer the tonkatsu into serving plate with shredded cabbage.
2. Serve hot with java rice and tonkatsu sauce. Enjoy!

Beef Salpicao

Filipino Style Recipe: beef salpicao is another typical Filipino beef dish made of marinated beef sirloin or tenderloin then stir cook for a few minutes. Beef salpicao is usually serve with fried garlic and almost similar to bistek tagalog.

Estimated time of preparation: 10 minutes(plus marinating time)
Estimated time of cooking: 5-8 minutes

Good for 3-4 servings

Ingredients:
1/2 kilo beef tenderloin, cut into cubes or strips
1/2 tablespoon garlic, chopped
1 tablespoon butter
3 tablespoons olive oil

Marinade:
1 tablespoon olive oil
2 tablespoons Worcestershire
2 tablespoons soy sauce or oyster sauce
1/2 tablespoon garlic, minced
1/2 tablespoon paprika(optional)
1/2 teaspoon cayenne pepper or chili flakes(optional)
1 tablespoons brown sugar
salt and pepper to taste

Procedures:
Part 1
1. In a bowl, combine beef and marinate ingredients. Marinate the beef for 2 hours.

Part 2
1. In a pan, heat 1 tablespoons olive oil and toast the garlic until colors turn to golden brown and crispy. Drain and set aside.

Part 3
1. In the same pan, cook the beef for 5 minutes or until brown and start to render oil.
2. Add butter then stir cook for 2 minutes.(Don’t overcooked, beef will become tough).

Part 4.
1. Remove from heat and transfer the beef to serving plate.
2. Sprinkle with fried garlic then serve with streamed rice.

Beef with Mushrooms Recipe

Filipino Style Recipe: Whenever I pass at the canned goods section of the supermarket, I see the canned mushrooms. Here is one recipe you can make use of that delicious can of goody.

Estimated time of preparation and cooking: 20-25 minutes
Good for 2-3 persons

Ingredients:
1 tablespoon chopped garlic
2 tablespoon chopped red onion
1 tablespoon chopped ginger
250 grams button mushrooms
350 grams beef rump- cut into strips
1/2 cup Thai Chilly sauce
1 teaspoon oyster sauce
1/2 teaspoon light soy sauce
1/2 teaspoon cornflour mixed with 1/4 cup water
1 cup basil leaves
3 tablespoon olive oil

Procedures:
1. In a pan, heat oil then saute onion, garlic and ginger until aroma.
2. Add beef then stir fry for 5 minutes on high heat.
3. Add mushrooms, oyster sauce, soy sauce and chilly sauce then stir well.
4. Add the dissolved cornflour mixture and the basil leaves.
5. Remove from heat thn serve immediately with hot rice and enjoy!

Notes:
1. Do not cook beef too long as it will become chewy. Just wait until it browns lightly.

Stir Fry Fish Fillet and Broccoli

Filipino Style Recipe: Stir fry fish fillet and broccoli is rich in protein and vitamins that is perfect for health conscious individuals. This recipe is originally from Chinese called “Fei Cui Long Li Qiu” which is simple yet healthy dish.

Estimated time preparation and cooking: 15-20 minutes
Good for 3-4 persons

Ingredients:
200 grams white fish fillet, cut into bite sizes
200 grams broccoli florets
1 small carrot, cut into serving pieces
3 gloves garlic, minced
1 thumb-sized ginger, cut into strips
1/8 cup cooking wine(optional)
3 tablespoons olive oil
cooking oil for frying

Marinade:
3 tablespoons calamansi juice
1 teaspoon flour
1 egg white
1/2 teaspoon ground pepper
a dash of salt

Sauce:
1 teaspoon sugar
1 teaspoon sesame oil
2 teaspoon cornstarch
1/2 cup water
salt and pepper to taste

Procedures:
Part 1
1. Blanch the broccoli in boiling water for a minute.
2. Drain and rinse in cold water to cool. Drain and set aside.

Part 2
1. In a bowl, combine fish, calamansi, egg white, flour, salt and pepper then marinate for 10 minutes.
2. In a pan, heat oil then stir fry fish for 2 minutes or until cooked. Drain and set aside.

Part 3
1. In a small bowl, combine all the sauce ingredients then mix until well blended. Set aside.

Part 4
1. In a pan, heat olive oil then saute garlic and ginger.
2. Add carrots and cooking wine then stir cook for a few minutes.
3. Pour sauce mixture, broccoli and fish fillet then simmer until sauce reduce to half and thicken.
4. Transfer to a serving plate and serve with rice.

Bicol Express Recipe

Filipino Style Recipe: bicol express recipe is a popular Filipino dish especially in Bicol Region. Normally the pork cooked with coconut milk, shrimp paste, green chili and red chili.

Ingredients:
1 kilo pork(1/4 fat), cut lengthwise
1/2 cup of long green peppers(siling pangsigang) or baguio beans, cut diagonally
3 cups coconut milk

1 small onion; chopped
3 pieces red chili(siling labuyo)
2 tablespoons vegetable oil
Salt to taste

Procedures:
Part 1
1. In a bowl with water and salt, soak green peppers for 30 minutes then rinse and drain.

Part 2
1. In a pan, heat vegetable oil then saute garlic and onion.
2. Add sliced pork, continue sauteing until colors turn to brown.
3. Add the shrimp paste then mix for another minute.
4. Pour coconut milk then simmer until reduced.
5. Add the green peppers and red chili.
6. Adjust seasoning with salt according to taste.
7. Serve with steamed rice. Enjoy!

Glazed Carrots Recipe

Filipino Style Recipe: glazed carrots recipe is a quick and healthy meal. It is mainly made up of carrots boiled in salted water then cooked in butter and sugar. If using, you may add maple syrup and cinnamon.

Good for 4 servings

Ingredients:
500 grams carrots, peeled and slice into 1/4 inch disks or diagonally.
3 tablespoons butter
1 tablespoon sugar

2 tablespoons of maple syrup(optional)

Procedures:
Part 1
1. In a sauce pan, pour water with salt and bring to boil. Add carrots, cover and then cook for 5-8 minutes or until crisp-tender. Drain well.

Part 2
1. In a sauce pan, melt butter over medium heat then add the carrots.
2. Add the maple syrup then sprinkle with cinnamon, sugar and white pepper. Stir well.
3. Cook until the juices are reduced to a glaze.
4. Remove from heat. Serve hot!

Notes:
1. You may use baby carrots instead.

Filipino Style Recipe: adobong isda or fish adobo recipe is another simple yet delicious dish. Usually the fish marinade, fried then simmer in a blend of soy sauce, vinegar, sugar, salt and pepper.

Ingredients:
1 medium-sized fish(milkfish, tuna, salmon), sliced
4 cloves garlic, minced
2 tablespoons soy sauce
1 cup vinegar
sugar, salt and pepper to taste

1 small onion, minced(optional)
1 thumb-sized ginger, minced(optional)
1 small bay leaf (optional)
1 red chili, sliced diagonally(optional)

Procedures:
Part 1
1. In a bowl, combine fish, garlic, soy sauce, vinegar, salt and pepper.
2. Marinate for an hour in the refrigerator. Drain fish and reserve the marinade.

Part 2
1. In a frying pan, heat oil and fry the fish until golden brown on both sides. Drain and set aside.

Part 3
1. In a sauce pan, heat oil and saute the garlic, onion and ginger.
2. Pour marinade then bring to boil.
3. Add fried fish and bay leaf then simmer for 8 to 10 minutes.
4. Adjust the taste according to taste.
5. Remove from heat and transfer to a serving plate. Serve with steamed rice.

Pork Humba Recipe

1 teaspoon peppercorns
1/2 cup dried banana blossoms(puso ng saging)
salt to taste

Procedures:
1. In a big pot, combine pork belly, water, soy sauce and garlic.
2. Simmer and bring to boil over low heat until pork belly is tender.
3. Add vinegar and simmer for another 3 minutes.
4. Add the bay leaf, banana blossoms, brown sugar, salt and simmer for another 5 minutes.
5. Adjust seasoning according to taste. Remove from heat and Serve. Enjoy!

Notes:
1. You may also add potatoes, hard-boiled eggs or salted black beans.
