Procedures:
Part 1
1. In a sauce pan, pour water with salt and bring to boil. Add carrots, cover and then cook for 5-8 minutes or until crisp-tender. Drain well.

Part 2
1. In a sauce pan, melt butter over medium heat then add the carrots.
2. Add the maple syrup then sprinkle with cinnamon, sugar and white pepper. Stir well.
3. Cook until the juices are reduced to a glaze.
4. Remove from heat. Serve hot!

Notes:
1. You may use baby carrots instead.

Ingredients:
1 medium-sized fish(milkfish, tuna, salmon), sliced
4 cloves garlic, minced
2 tablespoons soy sauce
1 cup vinegar

1 thumb-sized ginger, minced(optional)
1 small bay leaf (optional)
1 red chili, sliced diagonally(optional)

Procedures:
Part 1
1. In a bowl, combine fish, garlic, soy sauce, vinegar, salt and pepper.
2. Marinate for an hour in the refrigerator. Drain fish and reserve the marinade.

Part 2
1. In a frying pan, heat oil and fry the fish until golden brown on both sides. Drain and set aside.

Part 3
1. In a sauce pan, heat oil and saute the garlic, onion and ginger.
2. Pour marinade then bring to boil.
3. Add fried fish and bay leaf then simmer for 8 to 10 minutes.
4. Adjust the taste according to taste.
5. Remove from heat and transfer to a serving plate. Serve with steamed rice.

Crispy Garlic Chicken Recipe

Ingredients:

Part 1

Part 2
1. Dip each chicken pieces to egg mixture, then thoroughly coat to flour mixture. Set aside.

Part 3
1. In a frying pan, heat vegetable oil and deep fry chicken for 5 minutes or until color turns to golden brown.
2. Drain on paper towel.

Part 4
1. Transfer the chicken to serving plate serve with desired dip such ketchup, mayonnaise or  mustard.

Ingredients:
500 grams pork belly, cut into serving pieces
1 cup water
3 cloves garlic, crushed
1/3 cup vinegar

1 teaspoon peppercorns
1/2 cup dried banana blossoms(puso ng saging)
salt to taste

Procedures:
1. In a big pot, combine pork belly, water, soy sauce and garlic.
2. Simmer and bring to boil over low heat until pork belly is tender.
3. Add vinegar and simmer for another 3 minutes.
4. Add the bay leaf, banana blossoms, brown sugar, salt and simmer for another 5 minutes.
5. Adjust seasoning according to taste. Remove from heat and Serve. Enjoy!

1. You may also add potatoes, hard-boiled eggs or salted black beans.

Macaroni Salad Recipe

1-1/2 cups Nata de Coco(coconut gel), drained(optional)
1 bottle Kaong(Red), drained(optional)
1 bottle Kaong(Green), drained(optional)

Procedures:
Part 1
1. Cook macaroni noodles according to package cooking instructions. Set aside and let it cool down for about 15 minutes.

Part 2
1. In a large mixing bowl, transfer the macaroni and add the rest of the ingredients. Mix well.
2. Cover the mixing bowl and refrigerate for at least an hour.
3. Serve cold. Enjoy!

Sweet and Sour Meatballs

Meatballs:
500 grams ground pork or ground beef

1 teaspoon soy sauce(optional)
1/2 teaspoon worcestershire sauce(optional)
1 small carrot, finely chopped(optional)
2 tablespoons cilantro, finely chopped(optional)

Sauce:
1/2 small onion, diced
1 teaspoon garlic, chopped
1/2 cup water
1/2 cup brown sugar
6 tablespoons vinegar
1/4 cup tomato sauce
2 tablespoons vegetable oil
1 tablespoon cornstarch(dissolved in 1 tablespoon water)
1 small carrot, sliced thinly
1 cup green and red bell pepper, sliced 1/4 inch thick
1 cup pineapple chunks, juice drained(optional)

Procedures:

Part 1(Skip this procedure if you are using premade meatballs from the market)
1. In a bowl, combine all the meatballs ingredients and mix thoroughly.
2. Scoop and form the mixture into 1 tablespoons ball shaped.
3. In a frying pan, heat oil and deep fry until golden brown. Drain and set aside.

Part 2
1. In a sauce pan, heat vegetable oil over medium heat and saute garlic and onions.
2. Add carrots and bell pepper then stir fry for 2 minutes.
3. Add pineapple chunks and stir fry for 1 minute.
4. Add tomato sauce, vinegar, water, brown sugar and a dash of salt. Mix well and let it boil.
5. Add cornstarch mixture and cook until desired thickness is reached.
6. Add fried meatballs and simmer for 2 minutes.
7. Adjust seasoning according to taste.
8. Serve with steamed rice.

Banana Cue

Filipino Style Recipe: banana cue is a popular Filipino meryenda(mid-afternoon snack). It is normally a banana deep fried with a coating of caramelized brown sugar.

Ingredients:
8 pieces Asian plantains(saging na saba)
2 cups brown sugar
1 cup vegetable oil

Procedures:
1. In a pot, heat oil until boiling.
2. Gently add the bananas and fry for 3-5 minutes.
3. Add brown sugar and cook for another 5 minutes or until the sugar has melted and caramelize.
4. Remove the bananas one by one and let the oil drip.
5. Skew each banana on bamboo sticks, 2-3 bananas per stick.

2 cups brown sugar
1 cup vegetable oil

3. Add the sliced sweet potatoes and fry for 5-8 minutes.
4. Remove the sweet potato and let it cool for a few minutes. Done!

Ginataang Hito

1 whole catfish(hito), cleaned and cut into 2 inches
3/4 cup coconut vinegar
3 tsps. annatto powder(achuete),(optional)

2 tablespoons olive oil
2 tablespoons fish sauce(patis)
3 pieces bay leaves(laurel)
4 cloves garlic, crushed and chopped
2 red onions, chopped
3 tablespoos ginger, chopped
1 tablespoon black pepper corns
salt and pepper to taste
1 stalk fresh spring onions, chopped(optional)
3 pieces red hot chili peppers(optional)

Procedures:
Part 1
1. In a large pot, arrange garlic, onions and ginger at the bottom.
2. Arrange sliced catfish then pour vinegar, coconut milk, olive oil and fish sauce.
3. Sprinkle annatto powder, pepper corns and add bay leaves.

Part 2
1. Cook in medium heat until sauce thickens. Carefully turn each side of fish after the sauce started boiling.
2. Season salt and pepper to taste then add hot chili peppers when it is about to finish cooking.
3. Transfer in serving plate and garnish with spring onions.
4. Serve hot with rice. Enjoy

Ginisang Togue

Filipino style recipe: ginisang togue or sauteed sprouted mung beans recipe is a healthy yet affordable dish. Normally the sprouted mung beans sauteed with fried pork, tofu shrimp, green beans and carrots.

Good for 3-4 servings

Ingredients:
1/2 kilo sprouted mung beans(toge)
1/2 cup fried tofu(tokwa), diced
1/4 kilo pork, cut into small pieces
1 small-sized bell pepper, cut into strips
1 small-sized carrot, cut into strips
1/2 head garlic, chopped
1 medium-sized onion, chopped
1 medium-sized tomato, chopped
fish sauce(patis) or salt and pepper to taste
vegetable oil

Procedures:
1. In a frying pan, heat oil and fry pork until golden brown. Set aside.
2. Saute garlic, onions and tomatoes.
3. Add fried tofu and pork then a little water and pork broth cubes. Cook for 1 minute.
5. Adjust seasoning with salt and pepper.
6. Add sprouted mung beans, carrots and bell pepper and cook for 5 minutes or until vegetables are half-cooked.
7. Remove from heat. Serve with steamed rice.

Notes:
1. You may also add shrimp, green beans and sayote.
