Easy Fried Rice

Filipino Style Recipe: Easy fried rice is a simple way to cook left-over rice. This dish is commonly served during breakfast together with other dish. Fried rice is made up of leftover rice stir fried with shrimps, scrambled eggs, sausages, peas, carrots and other vegetables.

Estimated time of preparation: 15 minutes
Estimated time of cooking: 10-12 minutes
Good for 6-7 servings

Ingredients:
6 cups cooked rice(preferably leftover)
1 cup Chinese sausages, sliced
200 grams prawns, peeled and deveined
1/2 cup sweet peas
1/2 cup carrot, diced
2 raw eggs, beaten
2 teaspoons soy sauce
4 cloves garlic, minced
3 stalks green onions, chopped
salt and pepper to taste
3 tablespoons sesame oil

Procedures:
Part 1
1. In the pan, heat oil then stir fry sausages for a minute.
2. Add garlic, green onion and carrots then saute for another minute.
3. Add shrimps and sweet peas then stir cook for another minute.
4. Add cooked rice and soy sauce then mix until rice is well coated.
5. Pour beaten egg then continue stirring until the egg is cooked.
6. Season with salt and pepper according to taste.
7. Transfer to serving plate and garnish with chopped spring onions.

Beef Curry

Filipino Style Recipe: Beef curry is another mouth-watering dish inspired to Indian and Islamic cuisine. This dish is another variety of typical Filipino curry dish which is similar to chicken curry. Beef curry is usually made of beef cooked in coconut milk, curry powder and chilies until tender. Curry is one of the popular spices that gives a spicy and strong flavor.

Good for 4-6 persons

Ingredients:
1 kilo beef sirloin, cut into serving pieces
3 potatoes, quartered
2 carrots, cut into cubes
2 bell peppers(red & green), cut into cubes
1 cup coconut milk or evaporated milk
3 tablespoons curry powder(dissolved in 1/2 cup hot water)
1 onion, chopped
3 cloves garlic, minced
1 1/2 cup water
2 tablespoons fish sauce(patis)
1/4 teaspoon chili flakes(optional)
3 tablespoons vegetable oil
salt and pepper to taste

Procedures:
Part 1
1. In a pan, fry potatoes and carrots until color turns to light brown. Drain and set aside.

Part 2
1. In the same pan, saute garlic and onion until soft.
2. Add beef then stir cook until color turns to light brown.
3. Add fish sauce, dissolved curry powder and water then simmer until meat is tender. Add more water if needed.
4. Add bell peppers, fried potatoes and carrots then simmer for another minute.
5. Add coconut milk, salt and ground pepper then simmer for another 3-5 minutes or until slightly thickens. Keep stirring.
6. Remove from heat and transfer to serving plate. Serve hot with steamed rice.

Sweet Beef Tapa

Filipino Style Recipe: Sweet Beef Tapa is one of the all-time favorite filipino breakfast. Preparing home made beef tapa is healthier because you can avoid the artificial preservatives usually found in frozen goods. This version of beef tapa is a combination of sweet and salty flavor that you will surely enjoy.

Estimated Time of Preparation: 10 minutes (excluding marinating time)
Estimated time of cooking:8-10 minutes per batch

Ingredients:
1/2 kilo beef sirloin, thinly sliced
Cooking oil for frying

Marinade:
6 tablespoon vinegar or calamansi juice
5 tablespoon soy sauce
2 tablespoon salt
1 medium head garlic, crushed and minced
6 tablespoon white sugar
1/2 teaspoon ground black pepper
1 teaspoon cayenne pepper(optional)

Procedures:
Part 1
1.In a mixing bowl, combine all the marinade ingredients and mix until the sugar and salt are dissolved.
2. Put in ziploc or plastic container. Soak each slice of the beef and marinade for at least 4 hours or over night.

Part 2
1. Heat pan with cooking oil over medium fire.
2. Arrange beef slices in 1 layer on the pan. Cook for 3-5 minutes then flip on the other side and cook for another 3 minutes. Remove from pan.
3. Serve with sliced tomatoes or vinegar with garlic.

Adobong Talong at Baboy

Filipino Style Recipe: Adobong talong at baboy or pork and eggplant adobo is another variety of Filipino adobo. The procedures is simple, we fried eggplant until brown and marinate pork then cooked and simmered soy sauce, vinegar, garlic, bay leaves, peppercorns, salt and sugar until tender.

Estimated time of cooking: 40-50 minutes
Good for 3-4 persons

Ingredients:
1/2 kilo pork, cut into serving pieces
2 pieces eggplants (talong), cut into serving pieces
1/3 cup vinegar
salt to taste
cooking oil for frying
3 tablespoons oyster sauce

Marinade:
1/2 cup soy sauce
3 gloves garlic, crushed
1 teaspoon peppercorns
3 pieces bay leaves(laurel)
1 tablespoon sugar

Procedures:
Part 1
1. In a bowl, combine pork, garlic, bay leaves, peppercorns, sugar and soy sauce. Marinate for 30 minutes.
2. In a pan, heat oil then fry eggplant until golden brown. Drain and set aside.
3. In a same pan, fry marinated pork until brown. Drain and set aside.

Part 2
1. In a pot, Add pork, marinade, oyster sauce and water then simmer until tender. Add water if necessary.
2. Pour vinegar and simmer for 5 minutes then adjust seasoning according to taste.
3. Add fried eggplant then stir cook for 2 minutes or until sauce is reduce.
4. Remove from heat then transfer to serving plate. Serve with steamed rice. Enjoy!

Triple Chocolate Cupcakes

Filipino Style Recipe: Triple Chocolate Cupcakes is another mouth-watering pastry made of chocolate cake, chocolate pudding and chocolate chips. This can be served during breakfast together with coffee or during mid-afternoon snack.

Estimated time of baking: 20 minutes (plus preheating time)
Good for 18-20 cupcakes

Ingredients:
1 box (370 grams) chocolate cake mix
1 box (100 grams) instant chocolate pudding mix
1 cup mini chocolate chips
1 cup sour cream
3 eggs, slightly beaten
1 teaspoon vanilla
1/2 cup warm water

Procedures:
Part 1
1. In a large mixing bowl, combine the cake mix, chocolate pudding mix, sour cream, vanilla, and eggs then mix together.
2. Add the warm water then fold in 1/2 cup of the chocolate chips. (The mixture will be a bit thin/watery)

Part 2
1. Put cupcake liners in muffin pan then pour the mixture until almost full.
2. Top with the remaining chocolate chips then bake in preheated oven at 350 degrees Fahrenheit for 18-20 minutes.
3. Remove from the oven and let it cool.

Fish Burger Patties

Filipino Style Recipe: Fish burger patty is consist of fish flakes mixed together with eggs, minced onions, breadcrumbs, Worcestershire sauce, parsley, salt and pepper. Flattened the mixture into a disc-like shape then fried or grilled until tender.

Estimated time of preparation and cooking: 30-40 minutes(plus refrigerating time)

Ingredients:
500 grams fish fillet (tuna, milkfish, etc)
1 onion, minced
1 egg, beaten
2 tablespoons water
1/4 cup bread crumbs
4 cloves garlic, minced
1/2 teaspoon Worcestershire sauce
3 tablespoons fresh parsley, chopped
1/2 teaspoon salt
1/4 teaspoon pepper

Procedures:
Part 1
1. In a pan, arrange fish then cover with water. Bring to boil and simmer until fish is tender. Drain and pat dry.
2. In a large bowl, place fish then mash with a fork into flakes.

Part 2
1. In a bowl, combine all the ingredients then mix thoroughly.
2. Divide the mixture into serving pieces. Roll the mixture into balls and flatten into 1/2 inch on an even surface.
3. In a tray with grease-proof paper, arrange patties then cover with plastic. Place in the fridge for at least 30 minutes.

Part 3
1. Fry or grill patties for 3-4 minutes each side or until color turn to brown.
2. Serve with mushroom gravy or with buns together with sliced tomato, lettuce, cucumber and onion rings.

Oven-Baked Potato Wedges

3. Dip potato wedges in beaten eggs then dredge into dry mixture to coat.
4. Repeat for the remaining pieces.

Part 2
1. In a baking pan, arrange potato wedges then drizzle with olive oil.
2. Bake in a preheated oven at 425 degrees Fahrenheit for 30 minutes or until golden brown and crispy on the outside.
3. Serve with your favorite dipping sauce.

Stir Fry Asparagus with Ham and Mushrooms

1 bunch asparagus, cut into 2 inch
8 ounces button mushrooms, sliced
2 ounces sliced ham

1 cup beef stock
3 cloves garlic, minced
1 onion, chopped
salt and pepper to taste
2 tablespoons olive oil
1 teaspoon sesame oil (optional)

Procedures:
1. In a pan, heat oil then saute garlic and onion.
2. Add ham and mushrooms then stir fry until light brown.
3. Add asparagus and beef stock then season with sugar, salt and pepper.
4. Add dissolved cornstarch and sesame oil.
5. Continue cooking until slightly thicken. Serve immediately.

Kansi

Filipino Style Recipe: Kansi is a popular delicacy in Iloilo specially in Bacolod City. This dish is like a fusion of bulalo and sinigang that has a sour flavor coming from batuan fruit. Kansi most sought after during rainy weather because its hot soup and tender beef gives warmth and comfort.

Ingredients:
1 kilo beef shanks, cut into serving pieces
8 batuan (batwan)
250 grams green jackfruit (langka)
2 stalks lemon grass (tanglad)
6 cloves garlic, minced
2 onions, chopped
fish sauce or salt and pepper to taste
1/2 small cabbage, quartered (optional)
1 tablespoon annato seeds (dissolved in 1/2 cup water)
red chili pepper (optional)

Procedures:
Part 1
1. In a large casserole, heat oil then saute garlic and onion.
2. Add beef and pour water just enough to cover the meat.
3. Set over medium heat and bring to a boil and simmer for at least about 1-2 hours or until meat is tender.
4. Remove the scum as it rises. Add more water if necessary. (Pressure cooker takes less time.)

Part 2
1. Add lemongrass and Batuan, salt and pepper then simmer for another 5 minutes.
2. Add red chili and jackfruit then simmer until it’s cooked.
3. Add annato water then adjust seasoning according to taste
4. Add cabbage then simmer for another 3-5 minutes. Serve

Note:
1. You may use kamias as alternative to batuan.

No Cook Banana Chocolate Pudding

Filipino Style Recipe: No Cook Banana Chocolate Pudding is an easy to prepare dish and does not need any cooking or baking. The pudding tastes like soft ice cream so your kids will really love it.

Ingredients:
2 1/2 cups cold milk
1 pack (5 oz) instant chocolate pudding mix
1 cup whipped cream
1 (240 grams) sour cream
1 (16 oz) cookies such as shortbread cookies
8 bananas, peeled and sliced

Procedures:
Part 1
1. In a bowl, combine the chocolate pudding mix and milk then beat together until it thickens.
2. Add the sour cream and beat again. Fold in whipped cream. Set aside.

Part 2
1. In a rectangular container, arrange a layer of cookies at the bottom.
2. Spread a layer of the pudding mixture, then a layer of slicked bananas.
3. Repeat the layers until all ingredients are consumed.
4. Refrigerate until ready to serve.

Tip: Soak bananas in orange juice or water with vit c to avoid darkening.
