Diablo Penne

Filipino Style Recipe: Diablo Penne is a popular tomato-based Italian pasta made of Penne cooked together with Italian sausage in olive oil, tomatoes, red chili, basil and other herbs. Served with Parmesan cheese and crusty bread.

Ingredients:
300 grams Penne pasta
3 tablespoons olive oil
1 big can(350 grams) chopped tomatoes
100 grams tomato paste (optional)
100 grams sliced mushroom
200 grams hot Italian sausage, chopped
5 cloves garlic, minced
1 large onion, minced
1/2 teaspoon red chili flakes
1/2 teaspoon dried basil
1/2 teaspoon sugar
salt and pepper to taste
grated Parmesan cheese(optional)

Procedures:
Part 1
1. In a large pot, prepare the pasta based on cooking instructions. Set aside.

Part 2
1. In a skillet, heat oil then cook sausage and mushroom until evenly brown.
2. Add garlic and onion then sauce until translucent.
3. Add chopped tomatoes and red chili flakes then sauce for 3 minutes.
4. Add tomato paste, basil, sugar, salt and pepper then simmer until nice thick sauce.
5. Add precooked pasta then carefully stir until pasta is well coated.
6. Transfer to serving plate then sprinkle with Parmesan cheese. Serve with crusty bread.

Breaded Butterfly Shrimp

Filipino Style Recipe: Breaded Butterfly Shrimp is another simple yet special shrimp dish that is usually serve as appetizer or pulutan together with your favorite dip. The shrimp were butterflied then coated into flour mixture, eggs and breadcrumbs. Deep fried until golden brown then serve with dipping sauce.

Ingredients:
500 grams large-sized shrimp
2 pieces raw eggs, beaten
2 cups panko breadcrumbs
1 tablespoon fresh parsley, chopped (optional)
1 1/2 cups all purpose flour
1/2 teaspoon garlic powder
1/2 teaspoon ginger powder
1/2 teaspoon paprika powder (optional)
salt and pepper to taste
cooking oil for frying

Procedures:
Part 1
1. Remove head, peel, and devein the shrimp. Tail intact.
2. Using a knife, slice lengthwise then open the cut to butterfly the shrimp.

Part 2.
1. In a bowl, combine flour, paprika, garlic powder, ginger powder, salt and pepper.
2. In a separate bowl, pour beaten eggs then add a littler water.
3. In another bowl, combine panko breadcrumbs and chopped parsley.

Part 3
1. Holding the tail, dredge the shrimp into flour mixture then dip in egg mixture.
2. Dredge again the shrimp into flour mixture then dip in egg mixture.
3. Press into breadcrumbs to coat evenly. Repeat for the remaining shrimp.

Part 4.
1. In a skillet, heat oil then deep fry breaded shrimp for 2 minutes or until golden brown.
2. Drain on paper towel. Serve with dipping sauce.

California Maki

Filipino Style Recipe: California Maki is the most common type of sushi. Sushi is generally made with either nori(seaweed sheets), rice and can be filled with any desire ingredients inside the roll.

Ingredients:
1 Nori sheet(Dried Seaweed Sheet)
6 crab sticks
1 large mango, sliced
1 small cucumber, sliced
Masago (Capelin roe)
Mayonnaise

Rice:
Sushi Rice
sugar and salt
rice vinegar(optional)

Sauce:
Soy Sauce
Wasabi

Utensils:
Bamboo rolling Mat
Sharp knife

Procedures:
Part 1
1. Cook sushi rice with a little salt added.
2. Dissolve sugar into a rice vinegar.
3. When the rice has cooked, add the dissolved sugar and mix thoroughly. The rice will now become even more sticky and clumpy.
4. Let it cool and set aside.

Part 2
1. Wrap bamboo rolling mat with plastic wrap, this is to prevent rice from sticking to the mat.
2. Place 1 sheet of nori into the bamboo rolling mat.
3. Cover the nori of rice about 5/6 of the way up, just enough to cover the nori.
4. Sprinkle with Masago evenly over the top of rice then flip facing down.
5. Add a row of fruit and meat on a small portion on one side of the sheet.
6. Add a little mayonnaise over the fillings to hold meat together.
7. Then roll the nori sheet. Add enough pressure on the bamboo mat to make sure sushi is firm. Don’t include the bamboo mat when you roll the nori sheet.

Part 3
1. Place the roll on a cutting board. Then slice 1-inch interval using a wet sharp knife.
2. Transfer into serving plate then serve with mayonnaise or dipping sauce.

Seafood Three-Cheese Pasta

Filipino Style Recipe: Seafood Three-Cheese Pasta is a simple yet delicious seafood-pasta dish that is made of seafood cooked together with Three-Cheese pasta sauce and herbs. Toss together in pasta then sprinkle with Parmesan cheese.

250 grams spinach spaghetti or any pasta
200 grams shrimps, peeled and deveined

2 pieces tomatoes, cut into cubed
1/8 cup pasta water
1/4 teaspoon dried basil
Parmesan cheese

Procedures:
Part 1
1. In a large pot, prepare pasta based on cooking instructions. Drain and set aside.
2. Reserve 1/8 cup pasta water. Set aside.

Part 2
1. In a pan, saute garlic, onion, ginger and tomatoes.
2. Add shrimp and squid then cook for 3 minutes.
3. Pour pasta water and Three-cheese pasta sauce.
4. Season with dried basil, salt and pepper then simmer until almost thickens.
5. Toss in pasta. Sprinkle with Parmesan cheese. Serve!

Spicy Gising Gising

Filipino Style Recipe: Spicy Gising Gising is an easy and simple Filipino dish popular in Bicol region. This dish has a spicy and creamy taste similar to Bicol Express.

Good for 4-5 servings

Ingredients:
500 grams green beans, sliced into small pieces
1 cup coconut cream(1st extract)
1 tablespoon sauteed shrimp paste(bagoong alamang)
3 cloves garlic, minced
1 onion, chopped
salt and pepper to taste
4-5 pieces red hot chillies(labuyo), sliced into small pieces

300 grams ground pork or pork meat with fat, sliced into small pieces (optional)
2 cups coconut milk(2nd extract) (optional)

Procedures:
1. In a saucepan, cook pork meat until color turns to light brown and start to render oil.
2. Add garlic and onion then saute until translucent.
3. Add shrimp paste and continue sauteing for a minute or until cooked.
4. Pour coconut milk, simmer for 15 minutes or until reduced and thick.
5. Pour coconut cream, green beans and chopped chili, cook for 3 minutes or until tender and crisp.
6. Adjust seasoning with salt and pepper then transfer to serving plate then serve.

Barbecue Pork Ribs

Filipino Style Recipe: Now you don’t need to go to the restaurant and spend a lot for good ribs. The ribs will easily fall of the bone, you don’t even need a knife. The marinade is on the sweet side and the mesquite gives it a smokey flavor. If you need a bit more spice, you can just add some hot sauce on the marinade.

Ingredients:
1 slab pork ribs (800 grams)
2 tablespoon salt
2 pieces bay leaf
1 teaspoon garlic powder
pinch of pepper
Water enough to cover meat

Marinade:
1 cup soy sauce
1/4 cup oyster sauce
1 tablespoon Worcestershire sauce
1 tablespoon mesquite (or hickory)
1/4 cup brown sugar
1 teaspoon garlic powder
1 teaspoon pepper

Procedures:
Part 1
1. In a large pot, put the ribs and fill with enough water to cover the meat. Add salt, pepper, garlic powder, and bay leaf.
2. Boil for 1 to 1 1/2 hours or until the meat is tender. Remove from the pot and set aside.

Part 2
1. In a mixing bowl, combine marinade then mix until well combined.
2. Put the ribs in a pan then pour the marinade. Marinate for 4 hours or overnight.

Part 3
1. Transfer the marinated pork ribs into baking pan then cook in preheated oven at 300 Fahrenheit for 20 minutes in each side. Baste the ribs every time you turn to other side.
2. Remove from oven then transfer to serving plate. Serve immediately with steamed rice.

Baked Cheesy Chicken Rice Mixed

Filipino Style Recipe: Baked Cheesy Chicken Rice Mixed is another easy and simple yet delicious complete meal. It is mainly made up of leftover rice, chicken and veggies mixed together and cooked in margarine. Topped with Cheese then bake until cheese is melted.

Ingredients:
3 cups cooked or leftover rice
1 cup chicken fillet, cut into serving pieces
2/3 cup broccoli florets, steamed
2/3 cup cauliflower, steamed
1/2 carrot, cut into cubes and steamed
76 grams baby corn, cut into serving pieces and steamed
6 cloves garlic, chopped
2 tablespoons margarine
2 tablespoons Parmesan cheese
Mozarella or QuickMelt cheese for toppings
2 tablespoons vegetable oil
salt and ground pepper to taste

Marinade:
1/2 cup soy sauce
1 1/2 tablespoons brown sugar
1 teaspoon peppercorn

Procedures:
Part 1
1. In a bowl, combine chicken, soy sauce, sugar, peppercorns then marinate for 30 minutes. Set aside.

Part 2
1. In a pan, heat oil then fry marinated chicken over low heat for 3 minutes or until light brown. Remove from the pan and set aside.

Part 3
1. In a pan, melt margarine then saute garlic until light brown.
2. Add cooked rice then toss until well coated.
3. Add chicken, veggies and Parmesan cheese then toss. Cook for 3-5 minutes.
4. Seasoned with salt and pepper according to taste.

Part 3
1. In a baking pan, lined with aluminum foil.Transfer the rice mixtures then spread evenly.
2. Top with grated Mozarella cheese then bake in a preheated oven at 300 degrees Fahrenheit for 15 minutes or until cheese is melted.
3. Transfer to serving plate then serve immediately.

Mango Papaya Smoothie

Filipino Style Recipe: Mango Papaya Smoothie is another healthy and refreshing beverage. This beverage is made of mango, papaya, sugar and crushed ice. This refreshing beverage is similar to other healthy shakes and best to serve during summer season.

1 ripe mango
1 1/2 cup ripe papaya
4 tablespoon sugar
1/2 cup water
2 cups crushed ice

Beef Estofado

3/4 kilo beef sirloin, cut into cubes
1/4 cup vinegar
1 tablespoon cornstarch (dissolved in 1/4 cup water)
1 beef bouillon (optional)
4 cups water or beef stock
1/4 cup green peas, cooked
2 pieces potatoes, peeled and quartered
1 large-sized carrot, cut into cubes
salt and pepper to taste

Marinade:
5 cloves garlic, minced
1/2 cup soy sauce
1 1/2 tablespoons brown sugar
3 pieces bay leaves
1 teaspoon whole peppercorn
1/4 cup cooking oil for frying

Procedures:
Part 1
1. In a container, combine beef, garlic, soy sauce, sugar, bay leaf and peppercorn then marinate for 30 minutes.
2. Remove beef and reserve the marinade. Set aside.

Part 2
1. In a pan, heat oil and fry potatoes and carrots until light brown. Drain and set aside.
2. Fry beef for 3-5 minutes or until light brown. Drain and set aside.

Part 3
1. In a same pan, reduce oil to 1 tablespoon then saute garlic and beef.
2. Pour marinade, water and beef bouillon then simmer in a low heat for 40 minutes or until beef is tender. Add more water if necessary.
3. Add vinegar and simmer for another 5 minutes. Do not stir.
4. Add dissolved cornstarch, green peas, potatoes and carrots then cook for another 3 minutes.
5. Adjust seasoning according to taste. Simmer until the sauce has reduced and thicken. Serve.

Beef Chopsuey

Filipino Style Recipe: Beef Chopsuey is another variety of chopsuey originated from Chinese cuisine. Chopsuey also becomes popular in Filipino cuisine and other countries. Normally the beef marinated and stir cooked with beef broth, oyster sauce and cornstarch together with vegetables.

6 cloves garlic, minced
1 onion, quartered

1 cup water
1 1/2 tablespoons sugar
2 tablespoons vegetable oil
salt and pepper to taste

Marinade:
1/4 cup soy sauce
1 tablespoon cornstarch
1 teaspoon sesame oil
1/4 teaspoon ground pepper

Vegetables:
1 cup broccoli florets
1 cup cauliflower
1 carrot, thinly sliced
100 grams snow peas (sitsaro)
100 grams baby corn
1 red bellpepper, cut into strips

Procedures:
Part 1
1. In a bowl, combine beef, soy sauce, cornstarch, sesame oil and pepper. Marinate for 30 minutes and set aside.

Part 2
1. In a pan, heat oil and saute garlic and onion.
2. Add marinated beef then stir cook for 3 minutes.
3. Pour water, beef cube and vegetables then cook for 5-7 minutes or until vegetables are half-done.
4. Pour dissolved cornstarch, sugar and oyster sauce. Simmer until the sauce thickens.
5. Adjust seasoning according to taste.
6. Transfer to serving plate then serve.
