Chicken Sopas

Filipino Style Recipe, Chicken Sopas or Chicken Macaroni Soup is an easy Filipino soup dish. It is mainly made up of macaroni pasta and chicken meat cooked in milk and chicken broth.

Estimated time of preparation and cooking: 30-40 minutes
Good for 4 servings

Ingredients:
3 cups uncooked macaroni(elbow or shell)
2 pieces chicken breast
2 cups evaporated milk
3 cloves garlic, minced
1 large onions, minced
3 pieces hot dogs, sliced
1 medium carrot, sliced into strips
3-4 cups water
salt and pepper to taste
1 tablespoon vegetable oil
1 small cabbage, roughly shredded(optional)
1 piece chicken cubes(optional)

Procedures:
Part 1
1. In a pot, pour water and boil chicken, chicken cubes, onion, salt and pepper until chicken is tender.
2. Remove the chicken and save the broth.
2. Shred the chicken into small pieces using your fingers. Set aside.

Part 2
1. In a sauce pan, heat vegetable oil and saute garlic and onion.
2. Add the sliced hot dogs and the shredded chicken meat and saute for about a minute. Stir constantly.
3. Pour the chicken broth and bring to boil. Add water if needed.
4. Add carrots and macaroni pasta. Simmer until the macaroni is almost done.
5. Add milk and cabbage and continue stirring until simmering.
6. Adjust seasoning according to taste.
7. Remove from heat and transfer to serving bowl. Serve hot!

Ginataang Manok Recipe

Filipino Style Recipe: ginataang manok or chicken in coconut milk is another simple and easy Filipino dish. It is usually the chicken sauteed and cooked in a combination of coconut milk, vegetables and seasoning. This is similar to ginataang tilapia and chicken curry but we don’t used curry powder in this recipe.

Estimated time of preparation and cooking: 20-30 minutes
Good for 4-6 servings

Ingredients:
1 kilo chicken, cut into serving pieces
1 can(12-ounce) coconut milk
3 cloves garlic, crushed
1 large onion, sliced
2 tbsp ginger, sliced thinly
1/4 cup vinegar
1/2 cup water
1 tablespoon vegetable oil
salt and pepper to taste
2 pcs large hot chili peppers, sliced(optional)
a bunch of pechay(bok choy)(optional)
1 pieces chayote squash(sayote) or green papaya, cut into small pieces(optional)

Procedures:
Part 1
1. In  a pot, heat oil and saute garlic, onion and ginger.
2. Add chicken and continue sauteing for 3 minutes or until color turns to light brown.

Part 2
1. Pour coconut milk, simmer for 10 minutes or until the chicken is tender. Add water if necessary. Stir occasionally.
2. Add in chayote or papaya. Continue simmering for another 4 minutes.
3. Pour in the vinegar and season with salt and pepper. Bring to boil.
4. Add bok choy and simmer for another minute or until the milk is creamy and oil.
5. Adjust seasoning according to taste.
6. Remove from heat. Serve hot. Enjoy!

Pork Tonkatsu

Filipino Style Recipe: Pork Tonkatsu is a Japanese deep fried pork. Normally the pork comes breaded and deep-fried. It is usually served with shredded cabbage and tonkatsu sauce.

Estimated time of preparation: 15 minutes
Estimated time of cooking: 30 minutes
Good for 10 servings

Ingredients:
10 slices boneless pork chops, about 1/2-inch thick
1-1/2 cup all purpose flour
1-1/2 cup bread crumbs
2 eggs, beaten
1 tablespoon oil
cooking oil for frying
Tonkatsu sauce or barbecue sauce
salt & pepper to taste
1/2 head cabbage, thinly shredded and soaked in cold water(optional)

Procedures:
Part 1
1. In a bowl, add beaten eggs and 1 tablespoon oil. whisk well.

Part 2
1. Get rid of the extra fat of the pork chops to keep the meat from curling when fried.
2. Pound the meat with a meat pounder or crisscross the meat using the back of knife.
3. Sprinkle the meat with salt and pepper on both sides.

Part3
1. Dredge the meat in flour and shake off to remove excess flour.
2. Dip in egg mixture and press into bread crumbs to coat both sides.

Part 4
1. In a frying pan, heat oil over a medium heat.
2. Deep fry both sides of breaded pork chops, cook for about 4-5 minutes or until colors turn to golden brown and tender.
3. Drain on paper towels and cut each tonkatsu into bite-size strips.

Part 5
1. Transfer the tonkatsu into serving plate with shredded cabbage.
2. Serve hot with java rice and tonkatsu sauce. Enjoy!

Filipino Style Recipe: denengdeng or inabraw is a native ilocano dish similar to pinakbet. It is a tasty yet healthy vegetable dish consisting of different fresh vegetables with bagoong.

Estimated Preparation and Cooking Time: 20-30 minutes. Good for 4-5 persons.

Ingredients:
1 cup string beans(sitaw), cut into 2 inch
6 pieces okra
1 cup squash(kalabasa), cut in cubes
1 ampalaya(bitter melon), sliced
1 onion, sliced
2 large tomatoes, sliced
1 thumb-sized ginger; crushed
3 tablespoons fermented fish(bagoong isda)
1 milk fish or tilapia(fried or grilled), sliced
3 cups water or rice washing
1 cup squash flower(bulaklak ng kalabasa)(optional)
1 cup patani (lima beans)(optional)
1 cup jute leaves(saluyot)(optional)
1 cup malunggay leaves(optional)

Procedures:
1. In a big pot, add water and bring to boil.
2. Add onions, ginger and tomatoes. Cook for 3 minutes.
3. Add fermented fish and simmer for another minute.
4. Add vegetables and cook until crisp-tender but not overcooked.
5. Add fried fish. Adjust seasoning according to taste.
6. Remove from heat then serve.

Tips:
1. You can also use or add other vegetables..

Beef Salpicao

Filipino Style Recipe: beef salpicao is another typical Filipino beef dish made of marinated beef sirloin or tenderloin then stir cook for a few minutes. Beef salpicao is usually serve with fried garlic and almost similar to bistek tagalog.

Estimated time of preparation: 10 minutes(plus marinating time)
Estimated time of cooking: 5-8 minutes

Good for 3-4 servings

Ingredients:
1/2 kilo beef tenderloin, cut into cubes or strips
1/2 tablespoon garlic, chopped
1 tablespoon butter
3 tablespoons olive oil

Marinade:
1 tablespoon olive oil
2 tablespoons Worcestershire
2 tablespoons soy sauce or oyster sauce
1/2 tablespoon garlic, minced
1/2 tablespoon paprika(optional)
1/2 teaspoon cayenne pepper or chili flakes(optional)
1 tablespoons brown sugar
salt and pepper to taste

Procedures:
Part 1
1. In a bowl, combine beef and marinate ingredients. Marinate the beef for 2 hours.

Part 2
1. In a pan, heat 1 tablespoons olive oil and toast the garlic until colors turn to golden brown and crispy. Drain and set aside.

Part 3
1. In the same pan, cook the beef for 5 minutes or until brown and start to render oil.
2. Add butter then stir cook for 2 minutes.(Don’t overcooked, beef will become tough).

Part 4.
1. Remove from heat and transfer the beef to serving plate.
2. Sprinkle with fried garlic then serve with streamed rice.

Pasta in Shrimp and Lemon Sauce

Filipino Style Recipe: angel hair pasta in shrimp and lemon sauce is another simple and low-carbohydrate dish. It is usually consist of pasta and a combination of cream, shrimp and lemon juice.

Estimated time of preparation and cooking: 15-20 minutes
Good for 4-6 persons

Ingredients:
350 grams pasta(I prefer angel hair)
500 grams medium shrimp, peeled and deveined
3/4 cup whip cream
1/4 cup chicken stock or water
3 tablespoons lemon juice
1/2 cup Parmesan cheese, grated
salt and pepper
1/2 cup parsley(kinchay),chopped(optional)
1/4 cup spring onions, chopped(optional)
zest of a lemon(optional)

Procedures:
Part 1
1. In a large pot, prepare the pasta based on cooking instructions. Drain and set aside

Part 2
1. In a sauce pan, pour the chicken stock, cream and lemon juice and simmer in a low heat for 5 minutes.
2. Add shrimp, salt and pepper. Stir and cook for about 3-5 minutes or until the shrimp is done. Add water if needed.
3. Add parsley and green onions and cook for another minute.
4. Adjust seasoning according to taste.

Part 3
1. In a serving bowl, put the pasta and pour the sauce.
2. Add lemon zest and Parmesan cheese. Mix well and serve.

Pesang Manok Recipe

Filipino Style Recipe: pesang manok or boiled chicken recipe is another simple chicken dish. This is similar to Tinolang Manok but the procedures are the same in Nilagang Baka. Normally the chicken boiled until tender then add onion, peppercorn, salt, potatoes, bok choy or cabbage.

Good for 4-5 servings

Ingredients:
1 kilo chicken, cut into serving pieces
7 cups water(depends on your preference)
1 onion, sliced
1 tablespoon peppercorns
2 medium-sized potatoes, quartered
1 head bok choy(petchay) or cabbage leaves(repolyo)
1 teaspoon salt
1 bunch green onions(optional)
1 piece chicken broth cubes(optional)

Procedures:
Part 1
1. In a large pot, add chicken, water, ginger, onions, peppercorns and salt.
2. Cover and simmer for 20 minutes or until chicken is tender. Remove the scum as it rises.

Part 2
1. Add potatoes then cook until the potatoes is almost tender.
2. Add bok choy, cabbage and green onions then adjust seasoning according to taste.
3. Cook until vegetables are tender then remove from heat. Serve hot with steamed rice.

Tofu and Mushrooms Recipe

Filipino style recipe: tofu and mushrooms recipe is a healthy yet affordable dish. Normally the tofu comes fried then sauteed with mushrooms, bean sprouts, bell peppers and oyster sauce.

Ingredients:
3 blocks of tofu
1/2 cup button mushrooms, sliced
1 small onion, chopped
4 cloves garlic, minced
1 bell pepper, chopped
1/4 cup oyster sauce
2 tablespoons water
1/4 cup bean sprouts(togue)
salt and pepper to taste

2 tablespoons ground peanuts(optional)
1 small carrot, sliced thinly(optional)
200 grams spinach, chopped(optional)

Procedures:
Part 1
1. In a frying pan, heat oil and deep fry tofu until golden brown. Drain and let cool.
2. Cut tofu into cubes and set aside.

Part 2
1. In a pan, saute onions, garlic, bell pepper and mushrooms. Cook until veggies are half-cooked.
2. Add oyster sauce and water. Add fried tofu and bean sprouts. Simmer for 2-3 minutes.
3. Season with salt and pepper according to taste. Remove from heat.
4. Transfer to serving plate and top with ground peanut. Serve and enjoy!

Ginataang Sigarilyas

Add with pork or shrimp make the recipe more delicious. This is another mouth-watering vegetable dish that is truly enjoyed by most Filipinos.

Estimated time of cooking: 15-20 minutes
Good for 3-4 persons

Ingredients:
300 grams pork belly, cut into small cubes or strips
4 cloves garlic, crushed
1 medium onion, sliced thinly
1 bunch winged beans(sigarilyas), sliced diagonally and ends discarded
1/2 cup coconut cream
1/2 cup of water
salt and pepper to taste
1/4 cup dried shrimp(optional)

Procedures:
Part 1
1. In a pan, heat oil and fry pork until color turns to light brown.
2. In a same pan, saute onion and garlic. Season with fish sauce then mix well.
3. Add dried shrimp and cook for a minute.
4. Pour in coconut cream and bring to a boil.
5. Add winged beans and cook until vegetables are tender but not overcooked.
6. Add water if necessary. Adjust seasoning according to taste. Remove from heat.
7. Serve and enjoy.

Notes:
1. You may also add long beans(sitaw) and red chili if desired.

Beef Adobo with Coconut Milk

Filipino Style Recipe: beef adobo with coconut milk recipe(adobong baka sa gata) is normally the beef marinade. Then sauteed and cooked in a blend of soy sauce, vinegar, salt, pepper and coconut milk.

Estimated time of cooking: 1 hour and 20 minutes

Good for 4 servings

Ingredients:
1/2 kilo beef, cut into cubes
1 can coconut milk
3 tablespoons vegetable oil
1 tablespoon garlic, minced
3/4 cup vinegar
1/2 cup soy sauce
1 teaspoon whole peppercorns
1 tablespoon sugar
salt and pepper to taste

1 piece red chili(siling labuyo)(optional)
2 pieces bay leaves(optional)

Procedures:
Part 1
1. In a large pot, combine beef, vinegar, garlic, soy sauce, peppercorns, ground pepper and sugar.
2. Marinate for 2 hours.

Part 2
1. Bring to boil for an hour or until the beef is tender. Add water if needed.

Part 3
1. In a pan, heat oil and saute the garlic from beef mixture.
2. Add beef meat and cook until browned on all sides.
3. Add coconut milk, red chili and sauce. Bring to boil.
5. Adjust seasoning according to taste.
4. Simmer for 5 minutes.
5. Serve with steamed rice.

Notes:
1. You may also add chayote or green papaya if desired.
